  • This study was performed to provide scientific information for consumers and to increase the quality and consumption of Sullungtang prepared with bone from Hanwoo. The physico-chemical, sensory, nutritional properties of Sullungtang by different parity were investigated. The extracting extents of blood were significantly higher for heifer among Hanwoo cows with different parity(none, the second or the fourth) and for back bones among different bone portions (round, hind shank, arm, fore shank or back bone) (p〈0.05). For Sullungtang extracted from bones of heifer was higher in collagen contents than those extracted from cows with the second or the fourth parity. Sullungtang extracted from bones of heifer and cows with the second parity had significantly higher contents of condroitin and viscosity than those of cows with the fourth parity, however there was no significant difference between heifer and cows with the second parity. In color, L values were significantly high, and a and b values were significantly low for Sullungtang extracted from bones of heifer when compared to those extracted from the other cows with the second parity. The contents of total nitrogen, sodium, or calcium were higher for Sullungtang extracted from heifer than those from the cows with the second or the fourth parity. In amino acid compositions, the percentages of glycine were highest and proline and glutamic acid were followed fro all Sullungtang samples from Hanwoo. The results showed that the overall quality of Sullungtang significantly decreased as the parity increased for Hanwoo cows. The Sullungtang extracted from bones of heifer had the best sensory scores as well as nutritional quality when compared to those extracted from the cows with parity. Therefore, the labeling and price for cow bones should be differently evaluated by their parity and age in marketing system.

  • This study was conducted to investigate the effect of different raising days (30, 36, 42) on physico-chemical meat quality properties of chicken breasts and legs stard with 1 day old. In chemical compositions, moisture and protein contents (%) were decreased whereas fat contents (%) were increased as the raising days. In mineral contents, there was not significantly different in calcium contents. However, there was a decrease of potassium contents (p<0.05) as raising periods increased. Nucleotide-related compounds were 121.0 mg/100 g at 30 day, 130.4 at 36 day and 131.2 at 42 day, respectively. However, they were not significantly different during the raising periods (p<0.05). The similar tendency was observed in leg parts. $L^*$ values were decreased especially for chicken raised for 42 days. $b^*$ values were gradually increased as the raising periods increased. Cooking loss (%) was decreased whereas Warner-Bratzler shear forces (WBS) were increased as the raising periods increased.

  • This paper was prepared to characterize a physico-chemical and mineralogical examination on blast furnace slag as a source of silicate fertilizer, which was quenched with high pressure water stream in process of iron refinery at Pohang Iron and Steel Manufacturing Inc. Quenched slag was more coarse in particle size compared to present commercial silicate fertilizer milled from air-cooled slag and mostly generated in size of 1 to 2 mm. The total chemical composition of quenched and air-cooled slags was same but mineralogical composition was quite different. The former was composed of amorphous materials resulting in more soluble silica content, however, the latter contained dominantly crystalline minerals such as akermanite, gehlenite and wollastonite which meant less soluble ones. Latent cementing property and angular surface of gain of the slag made it difficult to apply the slag directly, however, it could be used as a source of silicate fertilizer and soil ammendment.

  • The physico-chemical properties of fresh milt of marbled sole, Limanda yokohamae, brown sole, Limanda herzensteini, starry flounder, Platichthys stellatus and olive flounder, Paralichthys olivaceus among flatfishes, and the fine structure of their cryopresserved spermatozoa were investigated. The highest concentration of sperm among these four species was $3.60\pm1.35\times10^{10}/mL$ in marbled sole. Osmolality and pH of seminal plasma in four flatfish species were approximately 330 mOsm/kg and 7.6-8.1, respectively. Seminal plasma compositions showed interspecific differences. The sperm heads of marbled sole, brown sole and starry flounder were ellipsoidal and that of olive flounder was round. The numbers of mitochondria of these four species were eight in marbled sole, seven in brown sole and starry flounder, and six in olive flounder. Cross-sectional view of flagellum showed typical 9+ 2 structure in all species. Most of sperms cryopreserved with a proper method had no visible ultrastructural changes after freeze-thawing, compared with the fresh sperm, but in a few cases, swelling of their heads and midpiece regions were observed.

  • To search the potent pig pheromonal odorants through receptor-based approach methods, molecular dockings between 680 Flavomets as substrate molecule and pig odorants binding proteins OBP (1HQP) and PBP (1GM6) as receptor, and QSPR (quantitative structure-property relationship) analyses from physico-chemical parameters of Flavomets and their docking scores (DS) were performed and discussed quantitatively. From the basis on the findings, the optimal value $(MSA)_{opt.}=407.595\;{\AA}^2$ of MSA (molecular surface area; ${\AA}$), and RB (number of rotational bond) had the Flavomets will be able to increase DS. Therefore, it is expected that the stearyl alcohol from DS and H-bond type between substrate and receptor would be shows the character as potent pig pheromonal odorant.

  • Butea monosperma Kuntze, commonly known as 'Palash', is employed in various indigenous systems of medicine against several diseases and almost every part of the plant has diversified medicinal properties. The seeds are used as anthelmintic, aperient, digesti and to treat piles, skin diseases and abdominal troubles. They also have the property of reducing 'Kapha' and 'Vata' (in Ayurveda). In the present paper a detailed pharmacognostical evaluation of seeds has been undertaken. The study includes macro- and micro-scopical details, fluorescence powder study and HPTLC fingerprinting. The seed is characterized by finely ridged seed coat and palisade-like malpighian cells, discontinuous transparent linea lucida in upper half of malpighian layer and simple & oblong hilum. The study also concludes that the seed samples procured from different places have similar morphological and physico-chemical characteristics. These observations are also supported by similar TLC profiles. The estimation of heavy metals (to detect permissible toxic limits), and fatty acid composition have been carried out. An attempt has also been made to see the ecological and edaphic variations, if any.

  • In India, Gymnema sylvestre due to the unique property of the plant to antagonize the sweet taste is known as 'Gur-mar'. It has several ethnomedicinal values as various tribals/traditional communities and rural peoples of India find diverse medicinal uses viz. antidiabetic, stomachic, diuretic, and is useful in cough and throat troubles. Besides, it has strong effect on reducing blood sugar. The present communication deals with the detailed pharmacognostical evaluation of the aerial parts of G. sylvestre collected from three places of the country-Varanasi (U.P), Panchmarhi (M.P), Salem (Tami Nadu) and commercial sample procured from local market. The botanical and physico-chemical parameters of all the samples were quite similar though little variations were observed in foaming index, alcohol and water soluble extractives of local sample. The microscopic characteristics of the drug are horse shoe shaped petiole with 3 amphicribal vascular bundles, sieve tubes well developed; anomocytic stomata only on the abaxial surface of the leaf, the fan shaped amphicribal vascular bundle, presence of intraxylary phloem. The TLC fingerprint profile of all the samples was more or less similar only the quantity of some of the compounds varied.

  • This study was carried out to investigate the addition of water-soluble isoflavone into milk by means of microencapsulation technique. The yield of microencapsulation, sensory attributes, and capsule stability of water-soluble isoflavone microcapsules in milk were measured. Coating materials used was polyglycerol monostearate (PGMS), and core material was water-soluble isoflavone. The encapsulation yield of water-soluble isoflavone with PGMS was 67.2% when the ratio of coating material to core material was 15 : 1. The rate of water-soluble isoflavone release from capsules was 18, 19, and 25% when stored at 4,20, and $30^{\circ}C$ for 12 days in milk, respectively. In sensory evaluation, beany flavor and color of microencapsuled water-soluble isoflavone added milk were significantly different from uncapsuled water-soluble isoflavone added milk, however, bitterness was not significantly different. In vitro study, micro-capsules of water-soluble isoflavone in simulated gastric fluid with the range of 3 to 6 pHs were released 3.0∼15.0%, however, the capsules in simulated intestinal fluid with pH 7 were released 95.7% for 40 min incubation time. In conclusion, this study provided that PGMS as coating materials was suitable for the microencapsulation of water-soluble isoflavone, and the capsule containing milk was almost not affected with sensory attribute.
