This study aimed to develop, and evaluate the effectiveness of, a home economics dietary education program that could be used to improve high school students' sustainable dietary competencies. To achieve this goal, learning objectives and elements were selected for the education program to improve the students' sustainable dietary competency. The content validity of this program was verified with numerous experts. After implementing the new educational program, its effect on high school students' sustainable dietary competencies was assessed through pre- and post-tests. The results of this study are summarized as follows. First, through the textbook analysis, the necessity of developing an educational program that can cultivate the three areas that constitute a sustainable diet (environment, health, and consideration) was confirmed. Second, a total of nine teaching and learning plans for sustainable dietary education programs were developed. From there, content validity verification was conducted by experts, indicating that the developed educational program was highly applicable in the field. Third, after the implementation, a survey was conducted based on a questionnaire consisting of 20 items related to three areas of sustainable diet, while the pre- and post-test assessment indicated statistically significant differences in all three areas: environment (pre: 3.40, post: 4.46, p<.001), health (pre: 3.15, post: 4.32, p<.001), and consideration (pre: 3.46, post: 4.48, p<.001). It is expected that the educational program developed in this study will be used as a basis for dietary education that fosters food citizenship in high school home economics courses.
The purpose of this study is the systematization of the contents analysis to develop school dietary education based on the government-published textbooks for elementary school students. The components of the content are divided into several categories that include a general perspective of the pages, illustrations, table of contents, introductory remarks, summary evaluation, and etc. This study carried out as basic fundamental research to propose a theoretical framework for the elementary school dietary education. We examined and analyzed the nature and characteristics, the educational goals, and the structural framework of the contents of the textbooks. We have developed a systematic structure with 4 large content elements for dietary education as foods & cooking, nutrition & health, dietary environment & consumption, and food culture & industry. This analysis will definitely play an important role in establishing a standard framework and the curriculum contents for school dietary education in elementary school.
The purpose of this study was to develop children-friendly education materials based on food replicas for the dietary education of lower grade elementary students. Through a literature review on current dietary problems and dietary education for children, five education themes were chosen: balanced diet, seasonal food, traditional food, noodle culture, and making instant noodles. A total of 304 key food items for food replicas were selected based on the themes: six basic food groups (113 items), balanced meals (37 items), dietary habits (74 items), spring foods (13 items), summer foods (17 items), autumn foods (16 items), winter foods (11 items), Korean traditional foods (52 items), Korean native noodles (18 items), noodles from foreign countries (19 items), and making instant noodles (46 items). Next, a food replica database was developed consisting of name of the food, picture, size, ingredient, recipe, reference, and attached code. Powerpoint slides and teaching plans for all education themes were developed utilizing the food replicas in order to raise interest and understanding of serving size and intake amount. This research provides a basis for the development of food replicas as effective dietary education materials for elementary students and their use in extra-curricular activities, after school programs, community health centers, or food companies.

Therefore this study is suggested effective Community-Based Participatory Research public health program and this program can be used at school and at public health centers.
The principal objective of this study was to assess the current status of elementary students' intake of dietary supplements, in an effort to diagnose any overnutrition, and to employ the results as basic data for the establishment of a balanced nutritional education. A survey was conducted by using a questionnaire administered to 734 elementary students’ parents in Seoul, and the analyzed results were as follows: Most parents believed that their nutritional knowledge was better than the norm(91.5%). However, almost half of the parents(49.2%) were feeding certain dietary supplements to their children, despite their perception that their children were already healthy, and were not recognizing any significant beneficial effects from those supplements. The most popular dietary supplements being fed were vitamin complexes. The majority of children took at least one type of dietary supplements at a monthly cost of approximately 10,000${\sim}$30,000 won. These results revealed the potential for overnutrition in some of the elementary students as the result of dietary supplement intake; thus, further studies involving assessments of risk for dietary supplement overconsumption in children and proper dietary education for the parents are suggested.

The purpose of this study was to evaluate the effectiveness of nutrition education with nutrition services provided by dietitians who were placed in child care facilities from the Korean Dietetic Association. For this, we investigated the levels of nutrition knowledge and dietary intakes of children who attended child-care centers as well as dietary practices of children assessed by their parents. The treatment for children consisted of nutrition education and food service activities that are provided by the dietitian who have 3 to 5 years experience. Nutrition education was implemented during 10 weeks, 20 times, and a total 400 min and it's effectiveness was evaluated by questionnaire. Data were obtained for 123 children aged 4 to 5 years old who attended four child-care centers, one for a control group and 3 for intervention groups. Dietary intakes were investigated by measuring one-serving size and plate waste a of child for one-day dietary records before and after nutrition education. The levels of nutrition knowledge of children improved showing 70.80 points before to 83.45 points after nutrition education (p<0.001). Dietary intakes of the children after nutrition service increased significantly on cooked rice (133.66 g), Kimchi (19.41 g), side dish of meat/fish (48.40 g), and side dish of vegetables (24.88 g). Dietary practices of children after treatment also improved especially 'eat diverse meat, fish, egg, and bean' and 'never leave plate waste'. To summarize, this study pointed out that nutrition service and nutrition education provided by dietitians had influences on increases of the nutrition knowledge, dietary intake, and dietary practices. Therefore, placement of dietitians needs to extend to child care facilities from the 100 persons-over-capacity facility to the 50 persons-over-capacity facility, for providing professional service such as nutrition education and nutrition counseling.

As for change in nutritional knowledge after nutrition education, 4th-grade students showed improvement by 24.3points(p<0.001), 5th-grade ones by 18.0(p<0.001), and 6th-grade ones by 16.7(p<0.001). With regard to change in dietary habits after education, no effect was observed in the improvement of dietary life but the score of dietary habits was improved as a whole. Nutritional knowledge and dietary habits were in a positive correlation with each other before education(r=0.406, p<0.001), but in no correlation after education. Nutritional knowledge and dietary habit practice plan were in a positive correlation after education(r=0.310, p<0.01). With regard to nutritional knowledge after nutrition education by children’s body type measured using Rohrer Index, knowledge increased significantly in normal children(p<0.001), obese children(p<0.001) and highly obese children(p<0.05) but not in slim children. the effect of education was not significant for children’s dietary habits. Practice plan showed significant changes in all of children(p<0.001). This suggests that nutrition education should be executed from early age.
