Fermentation Properties and Inflammatory Cytokines Modulating of Fermented Milk with Curcuma longa L Powder (강황을 첨가한 발효유의 발효특성과 면역조절 효과)

  • Curcuma longa L. (CL), a traditional medicinal plant, is well known as a functional food ingredient. The major component of CL is a curcumin of anthocyanin family that has multi-functions such as antimicrobial, anticancer, and antioxidant activity. In this study, fermented milk containing CL was prepared using a mixed strain culture (Bifidobacterium bifidus, Streptococcus thermophilus, Lactobacillus acidophilus), and its physicochemical properties were characterized. In addition, inflammatory cytokine-modulating effects of the fermented milk were also investigated. As regards the properties of fermented milk, the growth rate of lactic acid bacteria in fermented milk containing CL was found to be remarkably more rapid than control. During fermentation, caseins and whey proteins were observed to be partially hydrolyzed, and lactic acid and acetic acid were produced in larger amounts than in the control. The sensory score of fermented milk containing CL was lower than control, owing to its bitter taste and strong flavor. RAW 264.7 cells treated with CL fermented milk supernatant showed no cytotoxicity. Inflammatory cytokines such as tumor necrosis factor-alpha (TNF-${\alpha}$) and interleukin-6 (IL-6) were significantly produced by fermented milk with CL, compared to control. The secretion of nitric oxide (NO) from RAW 264.7 cells significantly increased relative to the control. Results from the present study suggested that CL could be used as a natural immunomodulating ingredient for making yogurts, beverages, and other products.

Influences of Nutrient Deficiency on the Phytoplankton Community in Pal'tang Reservoir (몇가지 영양염 결핍이 팔당댐의 식물플랑크톤군집에 미치는 영향)

  • To understand the effect of nutrient deficiency on the plankton community in three stations with different water qualities in Pal'tang Reservoir, Korea, phytoplanktons(> 10 ${\mu}m$) were cultured in nutrient enrichment Allen's media (AM) and nutrient-deficient Allen's media. A distinct shift in the species composition and biomass of phytoplankton (as chlorophyll- a) showed in all treatments. In particular, it was very interesting that the new development of cyanobacterium Microcystis aeruginosa occurred by the Fe-deficient AM. Except for Si, a community growth (as chlorophyll- a) was inhibited in all nutrient deficient treatments. Species diversity after nutrient deficiency was changed to below 2.0; slightly increased in N and P-deficiency, while decreased in Si and Fe, respectively. As suggested, dominance was entirely opposite to diversity. Therefore, the nutrient deficient effectively induced the succession of species and biomass, phytoplankton community, suggesting a possibility as a reliable tool to control the algal bloom in eutrophic lakes and reservoirs.

Changes in Fat in Gouda Cheese by the Psychrotrophic Bacterium Acinetobacter Genomospecies 10 (내냉성미생물인 Acinetobacter genomospecies 10에 의한 gouda cheese의 지방의 변화)

  • The presence of psychrotrophic bacteria downgrades the quality of dairy products. This study evaluated the effect of lipolytic psychrotrophic bacteria on the chemical properties of Gouda cheese made from raw milk experimentally inoculated with a psychrotrophic bacterium (Acinetobacter genomospecies 10). Raw milk experimentally inoculated with Acinetobacter genomospecies 10 and refrigerated at $4^{\circ}C$ for 3 or 6 days produced a 6-week ripened Gouda cheese with a significant decrease in total solids (p<0.05) or an increased fat content (p<0.05), respectively. Raw milk inoculated with Acinetobacter genomospecies 10 and refrigerated for 3 days had higher (p<0.05) SCFFA (1.35 times), MCFFA (1.42 times), and LCFFA (1.44 times) than the control 6-week ripened Gouda cheese. The cheese manufactured from the inoculated and refrigerated raw milk had higher (p<0.05) total free fatty acids (1.68 times) compared with the control. Raw milk inoculated with Acinetobacter genomospecies 10 and refrigerated for 6 days had increased SCFFA (1.45 times), MCFFA (1.28 times), and LCFFA (1.38 times) compared with the control 6-weeks ripened Gouda cheese. The 6-week ripened Gouda cheese manufactured from this inoculated milk had higher (p<0.05) total free fatty acids (1.34 times) compared with the control. The results indicated that the production of excessive free fatty acids in dairy products by psychrotrophic bacteria can be critical in predisposing dairy products to off-flavors and in turn degrading their quality.

Change in the Bourse Shoot and Fruit Growth due to the Gibberellins Paste in the Young Fruit of Niitaka Pear (유과기 지벨렐린 도포제 처리에 의한 '신고'배의 과대지와 과실생장 변화)

  • The object of this study was to evaluate the effect of gibberellins (GA) pasting on the bourse shoot, and not just on the fruit characteristics but also on the quality, of Niitaka pear (Pyrus pyryfolia L). The fruit stalk was treated with GA (control, 25mg/fruit stalk) 35 days after reaching full bloom. In the GA-treated tree, the occurrence of abnormal bourse shoot (52.5%) increased, and the spur bud and flower number decreased. The diameter of the GA-paste-treated fruit increased during the pear growth period with GA treatment. The diameter, length, and weight of the GA-paste-treated fruit increased at harvest time, but the hardness was lower than that of the control. The differences in soluble solid, acidity, and fruit color between the control and the GA-paste-treated fruit were not significant. Post-harvest, during the storage period, the hardness of the GA-paste-treated fruit was lower than that of the control, and its weight loss ratio was higher than that of the control on the $60^{th}$ days of storage.

  • The effects of different concentrations of tocopherols on the oxidation stability of evening primrose oil (EPO) in the dark $(35{\pm}2^{\circ}C)$ were evaluated by some physicochemical characteristics such as peroxide, conjugated diene value and fatty acid composition. The results of the present study were as follows; Alpha-tocopherol at all concentrations (0.02%, 0.05%, 0.10%) showed a prooxidant effect during autoxidation of EPO. This prooxidant activity of alpha-tocopherol increased as its concentration increased rapidly. Delta-tocopherol showed antioxidant activity as its concentration increases at an early stage of storage. But the activity was fairly poor antioxidant activity and was not greater than antioxidant activity of BHT. However, the antioxidant effect of delta-tocopherol and BHT showed no apparent differences as compared with result of none.

Potential in the Application for Biological Control of Harmful Algal Bloom Cased by Microcystis aeruginosa (유해성 조류 Microcystis aeruginosa의 생물학적 제어를 위한 미소생물제재의 적용 실험)

  • Growth inhibition of Microcystis aeruginosa was examined with single-or mixed treatment of algicidal bacterium Streptomyces neyagawensis and heterotrich ciliate Stentor roeseli, which isolated from natural freshwater. The harmful Cyanobac-terium, Microcystis aeruginosa density was effectively suppressed by the algicidal bacterium Streptomyces neyagawensis, and the bacterial biomass was few changed. The heterotrich ciliate S, roegeji isolated from the eutrophic Pal'tang riverine, Korea suppressed the algal biomass effectively. But mixed-treatment of both bio-agents was less effective, leading to an increase in algal density.

Effects of Nonylphenol and Diethylhexyl Phthalate on the Population Growth of Freshwater HABs, Microcystis and Stephanodiscus (내분비교란물질이 조류의 성장에 미치는 영향)

  • Effects of two endocrine disrupters (EDs) , nonylphenol (NP) and diethylhexyl phthalate (DEHP), on the population growth and morphology of two freshwater HABs (harmful algal blooms) , Microcystis aeruginosa and Stephanodiscus hantzschii, which frequently evoked the hazard bloom in an eutrophic lakes and reservoirs worldwide, were examined with seven different concentrations of EDs (0.01, 0.05, 0.1, 1,2, 2.5 and 3 ppm). Even at concentration below 0.01 ppm, NP strongly inhibited the algal growth of both M. aeruginosa and S. hantzschii, regardless of the algal growth phase. Morphologically, the algal cell treated with NP gradually lost green color in cytoplasm, became smaller in cell size, and then, was hardly seen in microscopic field. On the other hand, DEHP employed did not affect two algae at all concentrations, and rather stimulated the growth by about 10% with a treatment at 3.00 ppm compared to control. These results indicate that the continuous input of EDs, DEHP into the natural water system plays a crucial role to enhance or help an outbreak of algal bloom in eutrophic waters.

Cholesterol-Lowering Effect of Pine Nut in Plasma of Rats (잣 성분의 혈중 콜레스테롤 저하효과)

  • Cholesterol-lowering effect of pine nut on mice was investigated by examining changes in body weight, feed intake, and triglyceride, total cholesterol, high density liporotein cholesterol (HDL-C), low density lipoprotein cholesterol (LDL-C), and very low density lipoprotein cholesterol (VLDL-C) contents in mice plasma. Changes in body weight and feed intake between pre-designed experimental animal groups fed various contents of cholesterol and pine nut and control group fed basal diet were not significantly different. Food efficiency ratio of experimental groups fed higher than 10% pine nut was significantly higher than that of control group. Apparent differences in atherogenic index representing cholesterol-lowering effect in plasma were not found among all groups fed 0-20% pine nut. Inhibition activities of water and hexane extracts of pine nut on HMG-CoA reductase and cholesterol esterase were examined in vitro. Hexane extract showed 66% inhibition effect on HMG-CoA reductase, whereas none was observed with water extract.

  • This study examines the distribution of power in Northeast Asia based on the balance of power theory, a representative theory of realism, assuming military capabilities as the core power of states. The results of previous studies on the balance of power and military forces are reviewed and used to analyze changes in the strength of the US, China, Russia, Japan, South Korea, and North Korea through 2020 to predict the security environment in 2030. In the balance of power theory, if the balance of power between a nation or a group of powers collapses, the possibility of war is high, and to survive in the international community with high uncertainty and distrust, the theory predicts that states must increase their powers in a self-help world and strengthen cooperation and alliance. Countries in Northeast Asia are also continuing to strengthen their military capabilities, and countries neighboring China are paying keen attention and remaining vigilant due to the rapid changes in the international security environment after the rapid rise of China. To mark the future 100th anniversary of the Chinese armed forces in the 2030s, China aims to realize 'defense and military modernization' and build a 'world-class military force' by the nation's 100th anniversary in the 2050s. The US is busy checking China's rise by strengthening international cooperation and alliances. The security environment and power dynamics in Northeast Asia are slowly changing as the US and China continue to compete for global hegemony. The changes and implications of the distribution of power in Northeast Asia after 2030 are examined based on the balance of power theory.
