The results of the research were as follows. High school students were found to be more satisfied regarding their culinary arts curriculum than college and university students (p<0.001). In addition, high school students gave a significantly higher score for the 'need for Korean culinary arts major' than college and university students' (p<0.001). University students placed more emphasis on the current policies and business projects of the government for globalization of Korean cuisine as compared to high school and college students (p<0.001). Forty five% of the students responded that the important factor for Korean culinary arts education was the 'curriculum'. More than half of the students perceived 'ability to adapt traditional cuisine style to foreigners and modern customers' as a very important area. In terms of areas required to be included in Korean culinary arts curriculum, ‘basic cooking skills(4.49)' received the highest perceived need score, followed by 'languages(4.46)', 'traditional Korean food(4.33)' and ‘Korean food culture(4.21)'. • This study was conducted for the university students who majored in culinary arts. The effects of students' certifications on class and school life satisfaction and their effects on preparation employment were examined. The results showed that the students with the certifications had a high level of satisfaction in the class satisfaction, but they also had high stress in the school life. In other words, it seemed that the stress was increased in parallel with the school life in obtaining the certificate. In the case of qualification for preparation employment, the certification affects the preparation for employment even for the culinary arts majors. As for the number of certificates and passions, the change was found from 3 certifications, lower in 4, but again in 5. These results suggest that the certification initially increases enthusiasm, but when it reaches a certain level, it reaches its limit and it rises again after passing the interval. Also, students who graduated from cooking related high school showed high passion compared to those who did not.

  • This thesis aims to consider theories of job information on foodstylist, conduct a survey among culinary arts science high school students who are in the most critical period of decision-making for the future career, and analyse the survey results on foodstylist by using SPSS10.0. The analysis shows that culinary high school students mainly get their job information on foodstylist through mass media. Thus, it can be deduced that use of mass media and the Internet can be the most effective to promote the awareness level of foodstylist. Culinary high schoolers' parents were positive about female students' being foodstylists, and those going to college showed more interest than job seekers about being foodstylists. In addition, the result of Bonferroni post-hoc test according to parents' monthly income showed that those with higher monthly income were positive about their children's being foodstylists. However, given that culinary high schoolers' overall satisfaction is low, provision of the information through a variety of information channels is necessary. It is expected that promotion of the information provision will serve a turning point in awareness.

  • This study aimed to provide a desirable way to design culinary education programs at university by investigating the relationship between student satisfaction with education and job preference based on their high schools. The results of this study showed that a high percentage of students decided to choose culinary arts as their major by themselves. Most students found a career in the culinary field demanding, nevertheless, they appeared to have a strong desire to take up the challenge. Students from culinary high schools showed low satisfaction with their practical cooking courses, while students from vocational high schools seemed to be highly satisfied with those same courses. On the other hand, students from academic high schools showed a high satisfaction with their theory courses, which factored into their decision to choose culinary arts as their major. However, there appeared to be no significant difference in job preference according to the students. Most students, regardless of satisfaction with their education, considered working abroad. On the basis of these results, it is suggested that a culinary training program in universities should be divided tin three groups; academic, vocational & culinary. Each group to have classes in theory, practical and English designed with respect to their prior high school training. In addition, an opportunity for overseas employment should be offered to all three categories.

Two hundred culinary arts majors from three universities were sampled and 191 questionnaire copies analyzed. The analysis results are as follows. First, the adaptation level of the group with educational experience was partly higher than that of the group without educational experience. Second, the adaptation level of the group with a relatively high satisfaction level was higher than that of the rest. Third, when the satisfaction level with the facilities for culinary practice was high, the group without educational experience showed a higher level of attachment to university and better physical adaptation than the group with educational experience. Whereas the latter showed a higher level of emotional and social adaptation than the former When the satisfaction level with the facilities for culinary practice was low, the group without educational experience showed a higher level of attachment to university than the group with educational experience. On the other hand, the latter showed a higher level of social, emotional and physical adaptation than former. Therefore, in order to create a future-oriented harmonious teaching and learning experience, a new educational cooking environment that is fully functional and serves to heighten the satisfaction level of students should be designed.

  • This study was carried out to investigate the children's knowledge, attitudes and practices of food safety. A total of 355 data were collected from elementary school students. The concern of food safety was moderate in 5 point Likert scale and relatively high correlated with food safety knowledge(r=0.571) and education(r=0.534). The experience and knowledge of terminology on food safety were estimated. The level of food safety was classified into 5 groups and the consideration of food purchase was classified into 3 groups by factor analysis. A few children were aware of the food safety knowledge and could hardly understood English terminology. And the food safety practices were surveyed, and most of children checked with expiration dates and packaging conditions of food. Personal hygiene practice of children was significantly affected by gender, self hygiene evaluation and the knowledge level of food safety. Providing more food safety information affects personal hygiene and the practices of food purchase, so educational programs on food safety for children were required.

  • In this study, a survey was carried out on 300 students in Korea Culinary Arts Science High School located in Gyeonggi-do from August 1 to August 30, 2011 to figure out how the control of high school students' eating behavior affects the change of their psychological achievement. Analysis showed that attitude toward eating behavior, and perceived behavior that recognize this and act, as eating habits for control of their eating behavior, are the most control factors of eating behavior. It says that the right perception of customary attitude and the correction of habits according to the exposure and performance of repetitive eating behaviors are important. Consequently, an ordinarily regular norm as a social norm, or a rule around it won't act as big positive factors.
