Analysis of Food Safety Content in 'Food and Nutrition' Units of Technology and Home Economics Textbooks of the 2015 Revised Curriculum (2015 개정 중학교 기술·가정 교과서 '식생활 단원'의 식품안전 내용 분석)

  • This study aimed at analyzing the food safety units of technology and home economics textbooks, as 'safety' emerged as a key concept in the 2015 revised curriculum. From each textbook, the main text, auxiliary elements(including tables, figures, etc.), and related activities were analyzed. According to the results, first, the main texts emphasized the importance of food selection(3.08 pages), food safety hazards(2.93 pages), safe storage and management of food(2.63 pages), and meal preparation with safety and hygiene(0.98 pages). Secondly, when the auxiliary elements were examined, the food safety content was most often presented in the form of tables/illustrations/pictures, followed by supplementary learning materials, activities, captions, end-of-chapter summaries, the chapter introduction and review quiz, and unit introduction. Thirdly, most activities were individual activities rather than small group or collective activities and were focused on investigation, evaluation, craft, application, implementation, inference and judgment, utilization, and proposition. In conclusion, it is recommended for textbooks to evenly distribute the content in the main texts and auxiliary elements, and include more group activities when developing textbooks in the future.

Development of Dietary Life Curriculum in Elementary and Secondary Schools Home Economics that Integrated Habermas's Three Systems of Action (Habermas의 세 행동체계를 융합한 초·중·고등학교 가정교과 식생활 교육과정 개발)

  • The purpose of this study was to develop curriculum of the elementary, and secondary school home economics that integrates three systems of action and to prepare a plan for convergence education in home economics curriculum. To achieve this goal, the characteristics of elementary, secondary school dietary curriculum integrating three systems of action, the focus of development, core competencies, and goals were derived through the review of literature. In this study, we set up perennial and sub-practical problems and selected content elements. The contents system of the developed curriculum was modified and supplemented by examining the validity of experts, and the achievement standard of the middle school home economics dietary education curriculum was developed by integrating the three systems of action. The content system of the elementary, and secondary school home economics curriculum that integrated the three systems of action is centered on practical problems, and the perennial problem is 'What should we do to practice healthy dietary life?' There are five areas of this curriculum: 'health and diet', 'food planning', 'food purchase and management', 'cooking', and 'meal', and the scope of curriculum is repeatedly expanded to 'personal and family', and 'social'. The practical problems in the five areas are composed of 10 practical problems in the two dimensions (personal & family, and society), and the practical problems and contents elements are spiralled by applying the principle of integration. The contents of this curriculum were compared with the achievement standards and learning elements of the dietary life in the 2015 elementary school practical arts, middle and high school 'technology & home economics', and the 'home economics science' curriculum. The results showed that the developed curriculum encompassed additional content beyond all the content already included in the 2015 revised curriculum.

Analysis of the "Clothing Life" Section of the Technology and Home Economics textbook in the middle school curriculum revised in 2015 (2015년 개정 교육과정에 따른 중학교 기술·가정 교과서의 의생활 영역 분석)

  • This study aims to provide an understanding and information of the new curriculum by comparing 12 kinds of Technology and Home Economics textbooks(Clothing Life section) that reflect the 2015 revised. Results revealed that most of the textbooks' unit arrangements consisted of the introduction, development, and summary. In addition, we examined the advantages of current textbooks and suggested future improvement directions. The analysis of volume revealed that the largest textbook was 38 pages and the smallest was 24 pages. In addition, the learning objectives by unit a little bit differed for each textbook. The illustrations in the textbooks were primarily figures followed by photographs, tables, and graphs. The number of textbooks with the largest amount of illustrations was 69 and those with the least were 38, indicating a significant difference. As for career, 8 textbooks of 12 textbooks reflected related contents. The number of units, volumes of the clothing life section, and ratio of illustrations used in each textbook were different, but the contents were similar. Most of the contents of the 2009 textbooks are mostly included and the meaning of clothing, clothing purchasing, dress code, and creative clothing life are added on 2015 revised textbooks. Furthermore the educational objectives have extended to wide range and provides concrete guidelines to foster human resources that will lead the future society.

Content Analysis of Food and Nutrition Unit in High School Textbooks of Home Economics: Focus on the National Curriculums from 7th to 2015 Revised (고등학교 '기술·가정' 교과 식생활 영역의 교육내용 분석: 제7차 교육과정부터 2015 개정 교육과정까지의 교과서 내용을 중심으로)

  • This study is focused on the examination of changes in textbooks of Home Economics in High school from 7st to 2015 curriculum, especially the 'Food and Nutrition section. We investigated the content elements of the National Curriculum Guide, the changes in learning contents, and the number of pages of Food and Nutrition section. The key words were extracted and the connective relationships between words were visualized using a method of language network analysis through word cloud and Semantic Network Analysis. According to the results of the research, the portion of the Food and Nutrition section has been gradually decreased on the Technology·Home Economics, following the development of the curriculum. Through the whole curriculum, 'invitation', 'Korean food', 'baby·nutrition' are appeared as key words. The education contents of Food and Nutrition section from the 7th to 2015 revised have been developed and advanced with the changes of social needs. However, the reduction of portion and insufficiency of content elements of Food and Nutrition section bring concerns toward the decline of the quality of education on dietary life.

Analysis of Multi-Cultural Education Contents of 'Human Development and Family' Area of Middle School Technology-Home Economics Textbooks in Accordance with the 2015 Revised Curriculum (2015 개정 교육과정 중학교 기술·가정 교과서 '인간발달과 가족' 영역에 반영된 다문화교육 내용 분석)

  • The purpose of this research study was to examine how multi-cultural education contents are reflected in the contents related to the 'Human Development and Family' area of middle school Technology-Home Economics textbooks, based on the multi-cultural education criteria developed by Paek(2014). The sample of the study consisted of the 'Human Development and Family' contents in 'Technology-Home Economics 1·2' textbooks from five publishers (10 volumes) written in accordance with the 2015 revised curriculum. The research results of the study can be summarized as follows: First, all the four multi-cultural education criterion components were shown in the textbooks from five publishers. Cooperation was shown in the highest frequency, followed by Identity, Diversity, and Equality. Second, the analyses of text, image, and learning activities in the textbooks confirmed that Home Economics as a subject contains multi-cultural education contents that allow students to establish self and identity, respect others, accept diverse family patterns, understand family changes from multiple viewpoints, and form family community culture from gender equality perspective without prejudice. Ultimately, it can be concluded that Home Economics is a subject that enables learners to learn how individuals and families can cooperate and care for each other in order to harmoniously coexist.

Development of A Teaching-Learning Plan for Home Economics Education by Integrated Thematic Instruction(ITI) type (주제 중심 통합(ITI: Integrated Thematic Instruction)형 가정과 의생활영역 교수-학습 과정안 개발)

  • At present, the whole world is characterized by openness, cooperation and integration as a society with information and the world, and it requires creative talents for this. The competitiveness of the nation depends on the cultivation of creative talents. It demands anthropological value by improving the competitiveness of the nation through cultivating creative talents to share and care, not to cultivate creative talents for personal desires and accomplishments. The purpose of this study is to develop a teaching - learning process to develop integrated creative talents by applying the characteristics of integrated education curriculum at the base of the 2015 revised curriculum. To do this, we first extracted the content elements of the Clothing Life area of the revised curriculum from the 1st to 2015 and the contents of the Clothing Life area of the technology and home Economics textbooks to which the 2009 revision curriculum was applied. Five topics were extracted according to content selection criteria And The Theme of 'The selection and management of clothing' was selected. Researcher developed a integrated thematic instruction Home Economics Education Clothing Life teaching - learning process (hereinafter referred to as "the process") focused on the theme of 'selection and management of clothing'. The Process was composed of 5 basic classes [basic inquiry - content 1 - content 2 - depth study - application]. The process considers integration within the curriculum and interdepartmental integration, and aims to improve the personality, creativity, and problem solving ability of consideration and sharing in the course of the integrated class. In detail, the curriculum goals of the home Economics Education curriculum and ITI goals are presented separately in the curriculum developed for each process. At the stage of the class, the element of creativity and the element of personal education were exposed and applied to the class. In Korea, new curriculum has been revised and announced from time to time, making it difficult for the teacher to carry out the class in accordance with the paradigm of change. Home curriculum is closely related to real life, so it is an appropriate subject for an integrated subject. It has the educational significance of the subject in that it allows students to integrate the creative and personal elements that are limited in other subjects. ITI process will be helpful to teachers who need to implement the 2015 revised curriculum in which the theme-centered integrated home Economics education teaching-learning process is newly introduced. It is necessary to follow - up research to verify the effectiveness of how to improve students' problem - solving ability and cultivate creativity.

Exploration on the Organization of High School Home Economics Selective Curriculum for the Fourth Industrial Revolution (4차 산업혁명을 대비한 고등학교 가정과 선택 교육과정 편성 방안 탐색)

  • This study explored the organization of high school Home Economics (HE) selective curriculum for the Fourth Industrial Revolution. We critically review the change process of HE curriculum as well as problems based on the understanding of the Fourth Industrial Revolution. The results were as follows. First, regarding the characteristic consistently shown in the revision process of high school curriculum, the huge increase of the number of subject organized resulted from the intensification of the selective-centered curriculum strengthening the choice for school and students. However, HE was reduced to some 'Technology-Home Economics' subject and a single subject 'HE Science' as a selective subject was subsequently combined with Technology after the $7^{th}$ curriculum period. Consequently, HE hard to organize the career-focused curriculum, emphasized by the revised 2015 curriculum due to the insufficient number of subjects. Second, the choice of HE in high school curriculum should be expanded as measures to organize the HE curriculum of high school to cope with changes that result from the Fourth Industrial Revolution. For the operation of the career-focused curriculum, career selective subjects and specialized subjects should be more diversely established. In accordance with changes in a future society that results from the Fourth Industrial Revolution, the HE education community should be prepared in advance to be organized as a selective subject when revising a subsequent curriculum, by newly establishing subjects necessary to students through collective intelligence and deliberation with pedagogists and scholars for subject content as well as by producing/getting approval from government-recognized textbooks.

The Development and Application of Integrating Instruction with Evaluation Materials for Strengthening of Independent Living Competence: Focused on Technology and Home Economics Education (기술·가정과 생활자립역량 함양을 위한 교수학습-평가 연계 자료 개발 및 적용)

  • The purpose of the study was to analyze the home economics education experts' and teachers' perception of ways to align instruction with evaluation, based on the 2015 revised technology and home economics curriculum for the purpose of developing the independent living competencies, and to provide examples of alignment in practice. The analysis is based on the data from a Delphi study (10 experts) and a survey of technology and home economics teachers(n=422). The results of survey indicated that experts and teachers perceived the instruction-assessment alignment to be most appropriate for project learning-project assessment, followed by project learning-portfolio assessment, problem solving learning-portfolio assessment, and problem solving learning-project assessment, in order. Based on the survey results, a model of instruction-assessment alignment and a teaching-learing plan were presented, based on 'Development task of life cycle and Life plan' unit. This was considered to be a proper method of instructional alignment for the purpose of developing 'independent living competence' with project-learning/project-assessment. The model focuses on consistency between instruction and evaluation, unity in methods, and the availablility of feedbacks of assessment for the improvement of independent living competencies. In conclusion, this study contributes as foundational information for teaching and learning-assessment alignment. Diverse methods of instruction-evaluation alignment is expected for future research.

Comparative Analysis of Disaster Safety Education Contents of National Curriculum in Korea : Focusing on the 2019 Revised Nuri Curriculum and the 2015 Revised Curriculum (우리나라 국가수준 교육과정의 재난안전 교육내용 비교 분석 : 2019 개정 누리과정과 2015 개정 교육과정을 중심으로)

  • The purpose of this study is to analyze the 2019 Revised Nuri Curriculum and the 2015 Revised Curriculum for the comparative analysis of disaster safety education contents in the national level curriculum. The main results of this study are as follows: First, the content of disaster safety education for preschoolers in the 2019 Revised Nuri Curriculum was clarified as 'Knowing how to react in case of accident, fire, disaster, abuse, kidnap etc.' in 'Living safety' category of physical exercise and health sections. Second, in the 2015 Revised Curriculum, disaster safety education contents for elementary school students were found to have the difference between school year in same elementary school curriculum. For first and second graders, 'Disaster safety' was cleary presented in one of major categories of 'Living safety', which was newly created at the creative activity in the Revised 2015 Curriculum. On the other hand, for third to sixth graders, safety education is dispersed in the related subjects such as physical education, science, practical courses or in the creativity activity. Third, the safety contents in the Revised 2015 Curriculum for middle school and high school were also found to be dispersed in social studies, physical education, science, technology-home economics and creativity activity. The results of this study showed that the contents of disaster safety education in the national curriculum did not have continuity and systemicity from kindergarten to high school. Therefore, efforts should be made to ensure continuity and systemicity of disaster safety education contents when the national curriculum is revised in the future.

Analysis of ESD-Related Content in Clothing Management Unit of Technology and Home Economics Textbooks of 2015 Revised Curriculum (2015 개정 교육과정 중학교 기술·가정 교과서 '의복관리와 재활용' 관련 내용의 지속가능발전교육(ESD) 연관성 및 탐구적 성향 분석)

  • This study aimed at analyzing the clothing management units of technology and home economics textbooks in terms of their contents related to Education for Sustainable Development(ESD). The inquisitive tendency of the textbooks was also examined adopting the modified Romey's method, because it is known as an important factor in increasing student's class participation in sustainable clothing management and inducing practical behavior. First, the learning contents of clothing management unit were analyzed according to the social/political/cultural, environmental, and economic perspectives of ESD. As a result, ESD contents from social/political/cultural perspectives (safety, and health and food), environmental perspectives (natural resources, energy, and environmental problem), and the economic perspectives (sustainable production and consumption) were identified, with a heavy focus on environmental perspective. Secondly, Romey's inquisitive content analysis method was modified to analyze texts, pictures/charts, and learning activities of the clothing management unit. In all textbooks, facts and definitions were the dominant types of contents, which means less opportunities for development of inquiry ability. In conclusion, the ESD contents of the clothing management unit are inclined to the environmental perspective, and it is necessary that textbook development would need to be balanced between three perspectives. Also, future textbook authors will need to improve the inquisitive tendency of the textbooks to encourage student participation in class and induce practical application in real life.
