A Study on Gamification Consumer Perception Analysis Using Big Data

  • The purpose of the study was to analyze consumers' perceptions of gamification. Based on the analyzed data, we would like to provide data by systematically organizing the concept, game elements, and mechanisms of gamification. Recently, gamification can be easily found around medical care, corporate marketing, and education. This study collected keywords from social media portal sites Naver, Daum, and Google from 2018 to 2023 using TEXTOM, a social media analysis tool. In this study, data were analyzed using text mining, semantic network analysis, and CONCOR analysis methods. Based on the collected data, we looked at the relevance and clusters related to gamification. The clusters were divided into a total of four clusters: 'Awareness of Gamification', 'Gamification Program', 'Future Technology of Gamification', and 'Use of Gamification'. Through social media analysis, we want to investigate and identify consumers' perceptions of gamification use, and check market and consumer perceptions to make up for the shortcomings. Through this, we intend to develop a plan to utilize gamification.

The Impact of Franchise Education on Corporate Performance and CEO Competency

  • The purpose of this paper is to divide franchise education and restaurant education programs into three factors: educational content, educational techniques, and educational environment. After completing the franchise curriculum, we will identify what educational programs affect corporate performance and CEO's capabilities. A total of 99 copies were used as statistical analysis data by conducting a survey of those who completed the training from May 01 to May 15, 2023. The survey used the Likert 5-point scale, and for data analysis, hypothesis verification was conducted using frequency analysis, demographic analysis, and reliability analysis using SPSS23. As a result, it was confirmed that all three factors of franchise education are factors that affect performance and competency. Therefore, among franchise education programs, it is necessary to be faithful to the contents of education, use appropriate educational techniques, and prepare an educational environment well.

  • 2022년도 현재 디저트 카페 트렌드는 더 빠르게 변화하고 고객의 니즈는 점점 더 까다로워지고 있으며 한국인의 소비성향은 빠르게 변화하여고객의 눈높이를 맞추고 고객에게 더 나은 서비스를 제공하는 물리적 환경을 개선하려는 꾸준한 노력이 필요하므로 본 연구는 디저트 카페에 대한 서비스스케이프, 고객인게이지먼트 요인을 선행연구들을 바탕으로 빅데이터를 통해 디저트 카페 정보에 대한 키워드를 조사하여 서비스스케이프 요인, 고객인게이지먼트의 관계성을 규명한다.

사삼병의 제조조건에 따른 품질특성 (Quality Characteristics of Sasambeong according to Processing Conditions)

  • 본 연구에서는 수문사설에 수록된 '사삼병'의 제조법 및 기호성을 개선하기 위하여 전처리 조건과 튀김온도에 따른 품질특성을 비교 분석하였다. 거피한 더덕을 2 mm 두께로 펴고 찹쌀가루를 묻히고, 상온에서 0, 30 min간 예비건조한 후 $160^{\circ}C$에서 1 min, $180^{\circ}C$에서 40 sec간 각각 튀겼을 때, 예비 건조 시 조지방 함량 및 경도는 유의적으로 높았고, 튀김 온도에 따른 차이는 크게 나타나지 않았다. 예비건조 후 튀김 처리 시 예비건조 전에 비해 관능특성이 전반적으로 높게 평가되었다. 수침시간에 따른 사삼병의 조지방 함량 및 경도는 감소하는 경향을 보였고, 색도는 큰 차이를 보이지 않았으며, 외관, 색, 향미, 질감 및 전반적인 기호도 등의 관능특성도 유의적인 차이가 없는 것으로 나타났다. 이상의 결과로부터 30 min간 예비건조 후 $160^{\circ}C$에서 1 min간 튀김 처리 시 사삼병의 관능특성이 양호한 것으로 나타났다.

시.도 및 지역교육청 학교급식 업무 담당자의 직무분석 (Job Analysis of School Foodservice Officials in City, Province and District Offices of Education)

  • The purpose of this study was to analyze roles and duties of officials in charge of school foodservice in city, province and district 'Offices of Education'. For this purpose, the list of roles/duties of officials was developed through in-depth interviews, content analysis, and delphi technique. The list which includes 56 duty items in 8 dimensions was used for developing a questionnaire. A total of 282 questionnaires from 102 Offices of Education were used for the analysis. The school foodservice officials regarded 'budget management', 'facilities & labor management', 'developing long-term plan', and 'inspection & evaluation' as important. 'Education and research' and ‘management of nutrition, diet, and food materials' showed higher level of importance and need for support compared to its frequencies of work. There was no significant difference among city, provincial, and district Offices of Education on the levels of importance for each area/category. However, 'Officials in the District Offices of Education' needed more support in the area/category of 'facility & labor management'(p < .01). In addition, there was a significant difference between actual and ideal proportion of work in 'education & research'(p < .001), 'management of nutrition, diet and food'(p < .01), 'other supports for school foodservice'(p < .05) amongst the officials in 'City & Province Offices of Education'. For 'officials in the District Offices of Education', actual and ideal proportion of work was different in 'planning & coordination'(p < .01), 'school foodservice program management'(p < .001), 'education & research' (p < .001), 'management of nutrition, diet and food materials'(p < .001), and 'budget management'(p < .001). The results of this study showed that the areas of 'budget management', 'facility & labor management', and 'developing long-term plan', inspection & evaluation' needed more support for 'City & Province Offices of Education'. 'Officials in the District Offices of Education' also needed more support in the areas of 'budget management' and 'facility & labor management'.

우리나라 국민의 유전자재조합식품에 대한 인지도 및 수용도 변화 (Changes in Korean Consumer's Perception and Attitudes toward Genetically-modified Foods)

  • 유전자재조합식품에 관한 일반 국민의 의식을 설문 조사하여 연차별 변화추이를 살펴보았다. 2007년 조사 결과 65.1%가 유전자재조합식품에 관한 정보를 접한 경험이 있다고 응답하여 과거 3년(2000-2002년)동안의 평균 66.2%와 큰 차이가 없었다. 유전자재조합식품 개발의 큰 이익이 식량난 해결일 것이라는 응답은 모든 조사에서 가장 높았지만 2000년 이후 계속해서 줄어드는 경향을 보여 식량난 문제에 대해 기대치가 낮아진 것으로 해석되었다. 약 95% 이상의 응답자가 유전자재조합식품에 대해 표시하기를 바라는 것으로 나타나 과거 3년의 결과와 매우 유사하였으며 유전자재조합식품에 대해 소비자들이 알권리와 선택할 권리에 대한 강한 의지를 가지고 있음은 변함이 없었다. 유전자재조합식품의 구입 여부는 주변의 추이를 보고 결정하겠다는 응답이 50% 이상으로 나타나 표시를 희망하면서도 결정을 유보하는 사람의 비율이 높았다. 생물학의 기본지식이 매우 미흡한 상태인 것도 차이가 나타나지 않았다. 유전자재조합기술로 개발된 제초제 내성 콩을 먹겠다는 사람보다 같은 방법으로 개발된 비타민 함량이 높은 콩을 먹겠다는 사람이 여전히 상대적으로 많은 것으로 보아 제품의 특성은 중시하지만 유전자재조합 여부에는 큰 관심을 두지 않는 것으로 나타났다. 우리나라 식품의 안전성을 위협하는 가장 큰 요인으로 농약 등의 화학물질 오염이나 기업인의 윤리의식을 들었고 식품을 구입할 때 표시 내용 중 가장 관심 있게 보는 내용은 조사시간 동안 유효기간이라고 응답한 사람이 가장 많았으나 과거 3년에 비해 크게 감소하는 뚜렷한 변화를 나타내었다. 전체적으로 유전자재조합식품에 대한 일반 국민의 인식이나 태도에 변화가 없었는데 이는 유전자재조합식품과 관련하여 사회 전반적으로 유의할 만한 변화가 수반되지 않았기 때문에 개인의 인식에도 변화가 없는 것으로 추정되었다.

서울시내 고등학교 위탁급식의 급식비와 투자비의 실태 및 위탁업체의 기대수준 비교 분석 (The Comparative Analysis of the Present and Expected Level on Meal-Price and Facilities Investment Cost Perceived by Foodservice Managers of Contract-Managed Highschools in Seoul)

  • The purposes of this study were to a) find out the operational characteristics of the contract-managed highschool foodservice in Seoul, b) investigate the expected level of meal-price and facilities investment cost perceived by contract-managed highschool foodservice managers c) compare the present level and expected level of meal-price and facilities investment cost. From October 12 to November 13 in 2001, the questionnaires were mailed to 249 high schools which was managed by contract foodservice company with respondent rate 40.2%. Data were analyzed using SPSS Win(10.0) for descriptive analysis and one group paired t-test. The results of this study were as follows ; 1. The student enrollment of highschools run by contract-managed foodservice was 1,243 with 72.6% participation rate of school lunch program. The average meal-price was 2,138 won. The average annual period of school foodservice operation was 156.78 days per year. The average contracting period was about 3 years. 2. The average cost concerned in the facilities investment amounts 169,578,180 won at the initial investment and 25,204,092 won at the repairs and maintenance cost in the course of operation. 3. The present level of meal-price and facilities investment cost were respectively 2,136won/meal and 171,157,336.72 won. And expected level of meal-price and amount of facilities investment cost were 2,418.75 won and 121,353,215.19 won. Comparing the present level with the expected level of the meal- price and facilities investment cost, expected level of meal-price was significantly higher than the present level of meal-price(p<.001) and expected level of facilities investment cost was significantly lower than present level of facilities investment cost(p<.001).

패스트 푸드 레스토랑 방문자들의 행동의도, 고객 만족 브랜드 가치들에 대한 관계성의 연구 (An Exploration of the Relationships among Brand Value, Customer Satisfaction and Behavioral Intention in Fast Food Restaurant Visitors)

  • 패스트푸드 레스토랑은 급속도록 성장하고는 산업들 중에 하나이다. 이렇게 급성장하고 있는 분야임에도 불구하고, 패스트푸드 레스토랑에 대한 고객들의 브랜드에 관한 평가, 만족도, 그리고 이에 따른 행동 의도에 관한 연구는 소수에 불과했다. 그래서 본 연구는 패스트푸드 레스토랑에서 브랜드 가치를 형성하는 어떤 요인이 고객 만족도에 영향을 미치고, 그 고객만족도가 어떻게 고객의 행동의도에 영향을 미치는지를 조사 연구하였다. 이 연구는 부산에 있는 대학생 528명을 대상으로 자기기입식 설문 조사법을 통해 자료를 수집하였다. 통계분석에 적절하지 않는 35명의 데이터를 제외한 후, 493명의 자료를 최종분석에 사용하였다. 이 연구가 시사하는 바는 다음과 같다. 다중 회귀분석의 결과, 음식의 질(Food quality), 브랜드 이미지(Brand image), 브랜드 인식(Brand awareness), 브랜드 연관성(Brand association)들은 고객 만족에 중요한 요인이 된다. 또한 단순 회귀분석을 통해 고객 만족은 행동 의도에 긍정적인 영향을 미친다는 알아내었다. 그러므로 이 연구는 고객들의 행동 의도와 그들의 만족도를 증가시키기 위하여 노력하는 패스트푸드 매니저들에게 특별한 방법들과 가치 있는 정보를 제공할 수 있다.

고압/효소분해 처리에 의한 멸치 가수분해물의 제조 및 특성분석 (Preparation and Physicochemical Characteristics of Anchovy Hydrolysates Produced by High Hydrostatic Pressure and Enzymatic Hydrolysis Treatment)

  • 천연조미소재 개발을 위하여 고압/효소분해 시스템에서 멸치 단백질의 분해 품질특성을 탐색한 결과, 최적 조건은 효소농도 0.6%, 온도 50$^{\circ}C$, 처리시간 24시간 및 압력 50MPa로 확인되었다. 멸치 단백질의 처리방법에 따른 품질 특성을 비교한 결과, 최적조건하에서 고압/효소 처리한 멸치 가수분해물의 품질특성이 가열추출물인 대조구에 비하여 2.8배, 2배, 1.4배 증가하여 고압/효소 처리에 의한 단백질 가수분해물 생산은 가열추출법이나 고압반응에 비하여 효율적인 방법으로 나타났다. 효소종류에 따른 분해력은 복합효소로 가수분해한 경우 상업효소에 비하여 큰 증가율을 나타내어 복합효소의 분해력이 상업효소에 비하여 우수 하였다. 고압/효소 처리 후의 멸치 가수분해물은 정미성 아미노산으로 알려져 있는 glutamic acid, glycine, arginine 및 alanine 등의 함량이 대조구나 압력 처리구의 유리아미 노산 함량에 비하여 증가하였다. 결론적으로 고압/효소분해 처리공정은 멸치 단백질의 효과적 분해와 정미성 아미노산 생산에 효율적인 기술임을 확인하였다.

How Retirees' Evaluation of Starting Food Service Business Affects Effectiveness of Their New Business and Quality of Life

  • This study surveyed how retirees' evaluation of starting food service business affects the effectiveness their new business and quality of life, based on personal factors such as entrepreneurship and business-starting capability and environmental factors by using questionnaires. Bootstrapping was carried out in order to find out factors affecting rapidly changing new business environments and retirees' initial intent to start a business so as to verify basic hypothesis about relation between retirees' evaluation of starting food service business (social, economic, and psychological effects) and the effectiveness of their new business and quality of life and confirm whether the effectiveness of the new business acts as a medium between the evaluation of starting food service business and quality of life. In addition, PLS-MGA was performed in order to verify whether the correlations among test factors can be varied according to the kind of job the target retirees had. Having examined the basic thesis, it was found that social and economic factors had significant positive effect on the effectiveness of the new business, and social and psychological factors had significant positive effect on the quality of life. Having analyzed whether the effectiveness of new business acted as a media between evaluation of starting food service business and quality of life, there was no significant effect as a medium. Having studied whether the kind of job of the retirees controlled or affected the relations among evaluation of starting food service business, effectiveness of new business and quality of life, the results were as follows: in the office job retiree group, the greater economic factor led to increase of effectiveness of new business, while social and psychological factors influenced the quality of life; In the physical labor group, the higher social factor resulted in higher effectiveness of new business, which showed significant positive effect on the quality of life. Having researched about which element is considered to be most important in starting food service business, the most important element was found to be dish/menu, followed by staff management, accounting management, business management, and service education. Having analyzed relation between accomplishment and important consideration for starting food service business, "managers with entrepreneurship," "appropriate distribution of time to prepare for starting business," and "operation of practical field education programs" showed higher importance compared to the degree of satisfaction, so it is needed to more concentrate on the above matters. This study intends to raise retirees' awareness of starting business and help them live better life based on the analysis results, and further suggest detailed mechanism and specific operations of factors affecting retirees' decision making on starting business, such that they can use the information as basic materials to make better choices that can lead to successful business.
