  • Recently, the domestic food service industry has grown in quantity and quality. Among them, the foodservice market in the group has grown to become infinitely competitive as well as the growth, and the role of the dietitian has been diversified. The professional self-concept refers to the feeling of self-own work as a professional person and his or her opinion, and the professional worker with a positive professional self-concept improves his / her ability to perform his or her job. The purpose of this study is to analyze the effect of dietitian's professional self-concept on job satisfaction and customer orientation. Among the subordinate factors of professional self-concept, leadership, usability, technology, and communication showed that technology and communication had a significant effect on job satisfaction. The results of this study are as follows. First, the effect of technology was found to be significant. Customer orientation is significantly influenced by communication and technology. In other words, the attitude of trying to satisfy the needs and desires of the customers as a nutritionist was found to be higher when the self-evaluating ability of the customer or other people is high.

  • The purpose of this study is the suggestion of tempos and genres to make a effective mood in a hotel and restaurant. As a result of this study, it was verified which genre and tempo is the most effective at each case of various restaurant. The result of this study shows that the genres and tempos of background music effect to a mood of customer, and a satisfaction related to a return visit and a recommendation. This paper offer a useful method when a manager want to change a ambience of business place. For example, a manager will be able to choose a change of background music instead of remodeling requiring much money. At the other case, a manager will be able to maximize a expression effect of business concept as following the suggestion of this study. This thesis suggests how a managers can simultaneously achieve a customer's satisfaction and a financial benefit by selection of music.

  • The purpose of the study is to investigate how customer reward programs that are provided strategically to develop customer favors are assessed by customers, if they affect customer loyalty and what effect using membership card(how many possess and use it) takes. The findings from the study can be summarized as follows. Firstly, customer loyalty showed high when shared value and convenient value are felt for preference and referring effect and when shared value and allied value were felt for revisit. Secondly, when the number of cards in possession was a lot, high customer loyalty existed. Thirdly, when the number of cards in use was a lot, the customer loyalty was high. The customer's awareness of values, e.g. economic, shared, use, convenience and allied values, put a very meaningful positive effect on loyalty, i.e. preference, referring effect and revisit. The more the number of food service provider's' membership cards in use and in possession was, the higher customer loyalty was. This implies that continued development of business partners and quality control are critical for various benefits and shared value of the customer reward pro-grams and service upgrade.

  • The International Monetary Fund (IMF) crisis introduced a system for easy layoffs. With recent economic downturn, employees have been asked to retire early and less new jobs have become available. More small businesses as a result have been started. The purpose of this research is to study weight and ranking on SWOT factors of korea food service franchise industry using the SWOT analysis. The Analytic Hierarchy Process (AHP) and Analytic Network Process (ANP) were used to analyze the SWOT found by the surveys. First, the SWOT analysis shows that the franchise owners and the expert group view the industry positively overall and there are more strengths, opportunities than weaknesses, threats. While there are negatives and threats to the industry overall, many people think that there are more opportunities and positive aspects. Second, the franchise owners rank proven business model and platform (S3) as the strongest strength of food service franchise businesses while the expert group ranks management supports (S2) from headquarters as the strongest strength. Third, the expert group and franchise owner group indicate that the weight on unfair franchise contracts with headquarters(W3) and high penalty from breaking a franchise agreement(W4) are 60% of weaknesses. Fourth, both the expert group and franchise owner group indicate that change in people's lifestyle, value system and consumption pattern(O3) as the most important opportunity. Fifth, both groups indicate that changes in consumption pattern(T1) due to ever changing food service industry as the biggest threat. It is ranked higher than the entry of korea food service franchises.

  • This research uses the Analytical Hiararchy Process (AHP) to scientifically and systematically calculate the weightings of attributes as well as dimensions considered for assessing an informational website. The present paper aims at observing and using the computed weightings to comparatively examine the perceptions of customer users and business users. We use the 3C-D-T (i.e., Content, Community, Commerce, Design, and Technology) framework to conduct a case study where we review and assess restaurant websites and calculate attribute weightings on these websites. Data used for website review was collected in two phases. Data in the first phase was collected from customer users, and data in the second phase was from business users who had registered in the same websites. Users were instructed to perform a pairwise comparison of the relative importance of website attributes. Our data analysis revealed that the customer users and business users demonstrated different views on the relative importance of the individual attributes. Based on the findings, we suggested that business users of restaurants should adapt their views to the customers' views to minimize perceptional differences, thereby increasing customer satisfaction and accomplishing successful business outcomes.

  • Market players have realized the importance of brand power and tried to develop effective marketing programs which focus on consumer's brand experience. This study aims to investigate brand experience and brand personality effect on brand attitude which is overall consumer's faith toward brands and repurchase intention in food-franchised by Structural Equation Model. As results, both brand experience and brand personality affect brand attitude although brand experience has more influence than brand personality. As consumers show positive brand experience and attitude, repurchase intention is higher. Brand attitude plays a mediation role in the relation of brand experience and personality, and repurchase intention. Also brand experience shows more influence than others on repurchase intention.

The Effect of Attributes of Selecting Korean Restaurants Pursuant to Food Service Consumption Propensity on Behavioral Intent (외식 소비성향에 따른 한식당 선택속성이 행동의도에 미치는 영향)

  • This study is aimed to identify the relationship between Korean restaurant selection attributes and behavioral intention regarding foodservice consumption tendency. In order to achieve the purpose of research, frequency analysis, factor and reliability analysis, correlation analysis, cluster analysis, chi-square test, variance analysis, and multiple regression analysis were conducted using SPSS 18.0. As a result of variance analysis, accessibility did not appear to have a significant difference in all clusters, food quality appeared to have a significant result (F=5.587, $p{\leq}.001$), employees' service appeared to have a significant difference (F=5.186, p<.01), and price discounts also showed a significant difference (F=4.921, p<.01). Therefore, the first hypothesis that the foodservice consumption tendency has a difference in the Korean restaurants selection attributes was partially selected. In order to verify the hypothesis that the Korean restaurants selection attributes affect behavioral intention, the sub-factors of the Korean restaurant selection attributes (accessibility of restaurants, food quality, employees' service, price discounts) were set as independent variables, and the behavioral intention of foodservice consumers was set as a dependent variable. As a result, the accessibility of restaurants (${\beta}=.092$) and price discounts (${\beta}=.299$) have a non-significant effect on behavioral intention. However, a significant result was shown in food quality (${\beta}=.379$, p<.001) and employees' service (${\beta}=.251$, p<.001). Thus, the hypothesis that the Korean restaurant selection attributes have a positive effect on behavioral intention was partially selected. Based on the results, foodservice managers need to build up strategic management to improve food quality with better ingredients, sanitation, adequate quantity, and consistent taste of food. In addition, they should provide better service with well-trained employees.

The Effect of Recovery Justice according to the Types of Service Failure on the Quality of a Customer-Brand Relationship (서비스 실패 유형에 따른 회복 공정성이 고객-브랜드 관계의 질에 미치는 영향)

  • In order to find how the recovery justice from the service procedure and result failure affects the quality of customer-brand relationship, we conducted this study following pre research, its correction and supplement of the customers who experienced some service failures in food restaurant. We selected the best five brands in Korean food franchise in the rank of the sales on basis of data of Korean Food Restaurant Information in year 2009. The participants of this research were the people who live in Seoul metropolitan area and ever experienced any service failure within recent 6 months. Of the 500 copies of survey questionnaires distributed, 391 were used for the analysis. The method used for this analysis was the SPSS for WIN 12.0 program and the analysis such as technical statistics analysis, reliability analysis, research element analysis and regression analysis were applied. As a result, the service shortage factor which is one of the service process failures was confirmed to affect procedural justice and distributive justice. It has been confirmed that procedural justice and distributive justice are influenced by the hygiene deficiency which is one of the result failures. It was also found that the product factor affects distribution justice. As for the effect of the quality of recovery justice and a customer-brand relationship, procedural justice and distributive justice were found to affect the mutual dependency while procedural justice affects a familiarity.

  • In recent years, a number of Korean-themed restaurants have opened in China. It is necessary to know present situation in China and attract Chinese people so that restaurant managers can carry out marketing communication strategies to make the restaurants result in a stronger position in China. The primary objective of this research is to explore the important selection attributes when choosing a Korean-themed restaurant to dine out and to identify which attributes are critical in influencing customers' overall satisfaction. The target sample was Chinese who had visited a Korean-themed restaurant in Shenyang, China. The results of this study stated that the importance of the selection attributes varied with consumer's age, marital status, education, occupation, and the average monthly family income. Meanwhile, the satisfaction of the selection attributes varied by consumer's age, marital status, occupation, and the average monthly family income. Regression analyses demonstrated that both 'value and service' and 'food' importance factors had direct and positive impacts on the level of customers' overall satisfaction. Furthermore, 'food and price' and 'atmosphere and service' satisfaction factors have positive impacts on customers' overall satisfaction with the restaurant. Marketing implications for restaurateurs along with suggestions for future research were provided in this research.

The Impact of Service Providers's Nonverbal Communication on Brand Image, Customer Satisfaction, Revisit Intention : Focused on Fast Food Restaurants (서비스 제공자의 비언어적 커뮤니케이션이 브랜드 이미지, 고객만족, 재방문의도에 미치는 영향 : 패스트푸드점을 중심으로)

  • This study was conducted to investigate the effects of non - verbal communication of fast - food service provider on brand image, customer satisfaction, and revisit inquiry. For this purpose, 309 respondents from fast food restaurants in Daegu area were collected and used for analysis. For data analysis, frequency analysis, factor analysis, and multiple regression analysis were used using SPSS program. Through factor analysis, non - verbal communication of fast food restaurant service providers was identified as four components: facial language, appearance language, pseudo - language, and spatial act. The multiple regression analysis showed that the four components of nonverbal communication had a positive effect on brand image, customer satisfaction, and revisit inquiry. This study confirms the influence of non - verbal communication of fast - food service provider and suggests practical and theoretical implications.
