함초 추출물의 장 기능 개선과 변비 해소 효과 (Effects of Slander Glasswort (Salicornia herbacea L.) Extract on Improvements in Bowel Function and Constipation Relief)

  • 함초 추출물의 장내 이동 효과를 살펴보기 위하여 함초 추출물을 식수에 첨가하여 장 이동률을 살펴본 결과 대조군에 비해 함초 추출물을 처리한 군에서 활성탄 식이의 장 이동률은 8.5-16.4% 증가되었다. 함초 추출물의 변비해소효과는 함초 추출물을 식수에 녹여 공급한 결과 대조군에 비해 함초 추출물을 3 mg/mL 처리한 군에서의 변량이 식수 섭취량과 관련하여 최대 156% 증가하였다. 또한 함초 요구르트의 변비해소효과는 0.25% 함초 요구르트의 공급으로 변비 유발기간 내 변량이 최대 150% 증가되었으며 처리군에 비해 loperamide를 계속 섭취함에도 불구하고 변비가 해소되었음을 알 수 있었다. 이상의 결과로 볼 때 함초 추출물은 장 이동률을 증가시켜 장운동을 촉진할 수 있으리라 생각되며 또한 변비 해소작용까지 나타내어 장 기능 개선에 효과를 나타내는 물질이라 생각된다.

옴가열이 전분의 열적 특성과 흡수력에 미치는 영향 (Effect of Ohmic Heating on Thermal and Water Holding Property of Starches)

  • Ohmic heating uses electric resistance heat which occurs equally and rapidly inside food when the electrical current is transmitted into. Prior to the study, we have researched the potato starch's thermal property changes during ohmic heating. Comparing with conventional heating, the gelatinization temperature and the range of potato starch treated by ohmic heating are increased and narrowed respectively. Herein, we have studied thermal property changes of wheat, corn, potato and sweet potato starch by ohmic heating as well as conventional heating. And then we measure the water holding capacity of starches. Annealing of starch is a heat treatment method heated at 3~4% below the gelatinization point. This treatment changes the starch's thermal property. In the DSC analysis of this study, the $T_o$, $T_p$, $T_c$ of all starch levels have increased, and the $T_c$-$T_o$ narrowed. In the ohmic heating, the treatment sample is extensively changed but not with the conventional heating. From the ohmic treatment, increases from gelatinization temperature are potato ($8.3^{\circ}C$) > wheat ($5.3^{\circ}C$) > corn ($4.9^{\circ}C$) > sweet potato ($4.5^{\circ}C$), and gelatinization ranges are potato ($7.9^{\circ}C$), wheat ($7.5^{\circ}C$), corn ($6.1^{\circ}C$) and sweet potato ($6.8^{\circ}C$). In the case of conventional treatment, water holding capacity is not changed with increasing temperature but the ohmic heating is increased. Water holding capacity is related to the degree of gelatinization for starch. This result show that when treated with below gelatinization temperature, the starches are partly gelatined by ohmic treatment. When viewing the results of the above, ohmic treatment is enhanced by heating and generating electric currents to the starch structure.

게껍질에서 추출한 chitosan 필름의 이용에 관한 연구 1. 도포재로써의 chitosan 물성에 영향을 미치는 인자 (A Study on the Properties and Utilization of Chitosan Coating 1. Affecting Factors on the Rheological Properties of Chitosan Film as a Coating Agent)

  • Chitosan을 이용하여 필름을 제조하여 chitosan의 탈아세틸화도와 분자량, chitosan의 농도, pH등에 따른 chitosan 필름의 인장강도, 인장율 및 수분 투과도 등을 조사한 결과는 다음과 같다. Chitosan 조제조건으로는 $47\%$ NaOH로 $130^{\circ}C$에서 3시간이상 처리시켰을 때 탈아세틸화도의 변화는 적은데 비해 분자량의 감소는 크게 나타나 상업적으로 이용시 3시간 이하로 처리하는 것이 바람직하였다. Chitosan의 탈아세틸화도, 분자량, pH, 농도에 따른 필름의 인장강도, 인장율 및 수분 투과도의 결과는 탈아세틸화도가 높아짐에 따라 인장강도, 인장율, 수분 투과도 등은 감소하였으며, 분자량이 적어짐에 따라 인장강도, 인장율, 수분 투과도등은 감소하는 것으로 조사되었다. pH가 높아짐에 따라 인장강도와 수분 투과도는 감소하였으나 인장율에 있어서는 증가하는 것으로 나타났다. 그리고 chitosan 농도가 높아짐에 따라 인장율과 수분 투과도는 감소하였으나 인장강도는 증가하는 것으로 조사되었다.

  • The effect of water extract in fruits of Omija (Schizandra chinensis Baillon) on alloxan-induced diabetic rats were determining the contents of metabolites and enzyme activities in the liver and serum of rat. The treatment with water extract in fruits of Omija showed increased in contents of protein, glycogen, and activity of glucose-6-phosphate dehydrogenase and a decreased in pyruvate content in the hepatic tissue from the alloxan treated group. These treatments were decreased contents of glucose, urea nitrogen, free fatty acid and activities of GPT, GOT, LDH.

Protective effect of enzymatic hydrolysates from highbush blueberry (Vaccinium corymbosum L.) against hydrogen peroxide-induced oxidative damage in Chinese hamster lung fibroblast cell line

  • Blueberry was enzymatically hydrolyzed using selected commercial food grade carbohydrases (AMG, Celluclast, Termamyl, Ultraflo and Viscozyme) and proteases (Alcalase, Flavourzyme, Kojizyme, Neutrase and Protamex) to obtain water soluble compounds, and their protective effect was investigated against $H_2O_2$-induced damage in Chinese hamster lung fibroblast cell line (V79-4) via various published methods. Both AMG and Alcalase hydrolysates showed higher total phenolic content as well as higher cell viability and ROS scavenging activities, and hence, selected for further antioxidant assays. Both AMG and Alcalase hydrolysates also showed higher protective effects against lipid peroxidation, DNA damage and apoptotic body formation in a dose-dependent fashion. Thus, the results indicated that water soluble compounds obtained by enzymatic hydrolysis of blueberry possess good antioxidant activity against $H_2O_2$-induced cell damage in vitro.

쌍화차의 추출조건에 관한 연구 (Studies on the Extraction Condition of Ssang Wha Tea)

  • 쌍화차의 제조공정중 추출은 용매를 50% etanol 로 하고 그 첨가량은 원료량의 10배로 하였을 때 가장 수율이 높았고, 추출온도 및 시간은 $90^{\circ}C$ water bath에서 8시간 추출하는 방법이 가장 효과적으로 생산비를 절감할 수 있었다. 또한 특수성분의 HPLC분석 결과는 50% ethanol로 추출한 제품이 물로 추출한 것보다 높은 양을 나타내었고 특히 Decursinol성분의 경우에 물추출로는 38.59 PPM, 50% ethanol추출로는 298.02PPM으로 가장 현저한 차이를 나타내었다.

호박꿀차의 개발 연구 (A Study on the Development Pumpkin-Citron-Honey Drink)

  • This study was conducted to develop pumpkin-citron-honey(PCH) drink. The product is made fro natural ingredients : pumpkin, citron and honey. It does not contain any kind of food additives. It's characteristics and effectiveness are as follows. The product is a water soluble pumpkin(WSP) paste from natural ingredients only. It is easily soluble in water, and becomes a PCH drink with a good taste and a beautiful color. Dried pumpkin powder and dried WSP paste powder contain β-carotene which contents are 1/3 of total carotenoids. The result of sensory evaluation of WSP paste and PCH drink showed good response to number of people.

Reduction of histamine and heavy metals in mackerel hydrolyzates produced by catalysts associated-subcritical water hydrolysis

  • Various catalysts such as formic acid, acetic acid, sodium hydroxide, sodium bicarbonate, carbon dioxide and nitrogen gas were used for hydrolyzates production from deoiled mackerel muscle by subcritical water hydrolysis. Above 99% hydrolysis yield was obtained using sodium bicarbonate catalyst at $260^{\circ}C/70bar$. Histamine and heavy metals concentration were reduced in hydrolyzates. Highest amount of amino acid (400.36 mg/g) and reducing sugar (24.75 mg/g) were found in hydrolyzate obtained at $260^{\circ}C/70bar$ and $220^{\circ}C/30bar$, respectively with sodium bicarbonate catalyst. Antioxidant and ACE-inhibitory activities were significantly higher in hydrolyzates obtained using sodium bicarbonate than that of others.

Preparation of Carrageenan-based Antimicrobial Films Incorporated With Sulfur Nanoparticles

  • Carrageenan-based functional films were prepared by adding two different types of sulfur nanoparticles (SNP) synthesized from sodium thiosulfate (SNPSTS) and elemental sulfur (SNPES). The films were characterized using Fourier transform infrared spectroscopy (FT-IR), X-ray diffraction spectroscopy (XRD), and thermal gravimetric analysis (TGA). Also, film properties such as UV-visible light transmittance, water contact angle (WCA), water vapor permeability (WVP), mechanical properties, and antibacterial activity were evaluated. SNPs were uniformly dispersed in the carrageenan matrix to form flexible films. The addition of SNP significantly increased the film properties such as water vapor barrier and surface hydrophobicity but did not affect the mechanical properties. The carrageenan/SNP composite film showed some antibacterial activity against foodborne pathogenic bacteria, L. monocytogenes and E. coli.

  • 가수량이 120%에서 300%로 증가하면서 pH는 4.6에서 4.2로 산도는 6.0에서 5.2로, 아미노산도는 6.0에서 2.5로, 가용성 고형분 함량은 18.4에서 $7.4^{\circ}Brix$로 낮아졌다. 술덧의 알코올 농도는 150%에서 17.6%로 가장 높았고 알코올 생산수율은 각각 59.7, 74.5, 80.8, 82.8, 89.4, 90.6%로 가수량에 의존적으로 증가하였다. 술덧의 유기산 총량은 각각 207.85, 222.38, 222.06, 204.56, 194.34, 204.34 mg/100 mL로 150%와 180%에서 높게 나타났다. 유리아미노산 총량은 각각 474.60, 317.32, 241.89, 244.51, 189.00, 208.12 mg/100 mL로 가수량에 의존적으로 감소하였고 arginine, alanine, glutamic acid, glycine, isoleucine, leucine, lysine, phenylalanine, proline, serine, tyrosine, valine이 주요 성분이었다. Iso-butanol은 154.88~182.62 ppm, iso-amylalcohol은 320.59~394.47 ppm, 1-propanol은 91.50~170.91 ppm, 2-phenylalcohol은 108.93~144.26 ppm농도로 분포하고 있고 ethyl acetate, acetaldehyde, furfural, butyric acid가 검출되었다.
