  • The objectives of this study are to introduce a critical perspective of the multicultural education in home economics education, to develop teaching-learning materials and to apply them in classes for the purpose of enhancing students' multicultural competence for a validity test. For these purposes, family life culture sections from six high school technology and home economics textbooks were analyzed based on the contents and elements of multicultural competence. After recomposing the family life culture sections, this study developed 12-session teaching-learning materials with an emphasis on media literacy. Among them, 4-session plans were taught in classrooms for 247 students in the 10th grades. To test the validity of the plans, a questionnaires was given to the students as a pre- and post-test. The data were analyzed with paired t-tests. The results showed significant pre and post differences in all sections of multicultural competence except the section of 'general cultural understanding'. This implied that the developed teaching-learning materials were effective in helping students overcome ethnocentrism and enhance the understanding of cultural differences.

  • Information technology and globalization are two main forces that will bring in a social transition in the new millenium. Human Ecology, as a discipline to study the interaction between individuals and families and their environment, needs to define a new mission in changing social environments. This paper analyzes the forces behind this social transition and their influences to the lifestyle of individuals and families. It also defines new missions of Human Ecology in terms of education, subjects and methods of research, and public responsibilities. As the society changes, the paradigm of Human Ecology should be expanded to cover newly appearing environmental factors. It should be emphasized that these expanded areas should be under the unified field of Human Ecology to offer the integrated approaches that other specialized field may not offer.

  • This study was conducted to analyze recognition, applicability, class satisfaction, and needs as well as students' attitudes for eating behavior by 1st and 3rd graders of a mixed middle school located in Gyeonggi area in relation to food and nutrition section of the Technology and Home Economics curriculum and thereby provide basic data for development of strategies of educational effect maximization of food and nutrition in the curriculum. 522 questionnaire were collected and statistically processed. Findings from this study are as follows. Both 1st and 3rd graders were found to exhibit relatively low preference for technology and home economics curriculum. While 1st graders were more interested in the subject than 3rd graders, the frequency of practical use of the food and nutrition section in every day life was higher in 3rd graders than that in 1st graders. For food and nutrition section of the subject, preference level of the 1st graders was higher than 3rd graders. The 1st graders were higher than 3rd graders in the needs for food and nutrition section as well as in usefulness in every day life of the unit. The applicability in every day life of the unit was found to be generally higher, with 1st graders having a higher level of applicability than 3rd graders (p<0.001). Class satisfaction of the unit was higher in 1st graders than 3rd graders, with the most satisfactory unit being 'basics and practice of cooking' both for 1st and 3rd graders. Needs for food and nutrition unit were higher in 1st graders than 3rd graders, with the unit highly needed being 'basics and practice of cooking' both for 1st and 3rd graders. Regarding interrelation of the degree of preference, need, applicability and class satisfaction, as the preference was high on food and nutrition, the degree of need, applicability, and class satisfaction was high. As respondents recognized food nutrition section necessary, they were more satisfied and showed high applicability for the section. Therefore, contents of food and nutrition section should be improved with re-organization of educational and subject contents so that they will be best fit for students by grade, to increase preference, applicability and necessity in every life. In addition, to maximize the applicability of the subject in everyday life, sufficient class-time should be assigned for the purpose of experiment- and practice-based education, and a wide range of teaching strategies are needed to increase students' interest in the subject.

  • BACKGROUND/OBJECTIVES: Nelumbo leaves have been used in traditional medicine to treat bleeding, gastritis, hemorrhoids, and halitosis. However, their mechanisms have not been elucidated. MATERIALS/METHODS: The present study prepared two Nelumbo leaf extracts (NLEs) using water or 50% ethanol. Inflammatory response was induced with LPS treatment, and expression of pro-inflammatory mediators (inducible nitric oxide synthase, cyclooxygenase-2, tumor necrosis factor-${\alpha}$ (TNF-${\alpha}$), interleukin (IL)-$1{\beta}$, and IL-6 and nitric oxide (NO) and prostaglandin $E_2$ ($PGE_2$) productions were assessed. To determine the anti-inflammatory mechanism of NLEs, we measured nuclear factor-${\kappa}B$ (NF-${\kappa}B$) activity. Major metabolites of NLEs were also analyzed and quantified. RESULTS: NLEs effectively reduced the expression and productions of pro-inflammatory mediators such as IL-$1{\beta}$, IL-6, TNF-${\alpha}$, $PGE_2$, and NO. NLEs also reduced NF-${\kappa}B$ activity by inhibiting inhibitor of NF-${\kappa}B$ phosphorylation. Both extracts contained catechin and quercetin, bioactive compounds of NLEs. CONCLUSIONS: In this study, we showed that NLEs could be used to inhibit NF-${\kappa}B$-mediated inflammatory responses. In addition, our data support the idea that NLEs can ameliorate disease conditions involving chronic inflammation.

  • The rapid development of science and technology has brought about a quantitative expansion and a decrease of practical life span of information. Food science, a kind of life science and practical science, can not be an exception. Analysis of food components is the fundamental basis of the Food Science. So I would like this to be of some help to the following researches through the quantitative and qualitative analysis of the contents of the food analysis research papers in food science related Korean journals. Five hundred seventy four research papers published from 1984 to 1993 in the three journals, that is, Korean Journal of Food Science & Technology. The Korean Journal of Nutrition, The Korean Journal of Home Economics, which is three major journals read by people in Home Economics area are analyzed in this study. The method applied in this study is content analysis. Followings are the results of the content analysis : 1) When categorize the material foods into food groups, cereal group is analyzed most often(15.8%), followed by fish and shellfish group(12.4%), oil and fat group(11.8%). The least often analyzed food group is egg group. Among the food soybean is most often analyzed(6.0%), followed by polished rice(3.7%), glutinous rice(2.2%), cabbage(2.1%) and human milk(1.8%). 2) About the analyzed food components, the general components such as moisture, crude protein, crude fat, carbohydrate and ash has been analyzed very often but the trace nutrients such as vitamins and minerals has scarcely been analyzed. 3) The method used in the food components analysis is usually AOAC(Association of Official Analytical Chemist, USA). HPLC was applied to the analysis of many food components like amino acids, fatty acids, vitamin A, thiamin, riboflavin, niacin, vitamin C and vitamin E.

  • The purpose of this study was to suggest a standard sizing system for college female students' head wears according to their head types. The subjects were 193 college women, of 20 to 25 years-old. The subjects were directly measured anthropometrically and indirectly analyzed photographically. In previous tudy (Lim, 2004), 3 clusters as their head types were categorized. the sizing system, which had frequencies more than $4\%$ was classified 6 cases, 7 cases and 9 cases, respectively, by head 3 types. 3 types of size system, which were 56-28-38, 56-30-38 and 57-28-38(Eds note: which of the measurements are head girth, surface length 1 and surface length 2), which were included in 3 clusters. Although head girths were as the same, head surface length was different in size. On the contrary, head surface length was same, head girth was different. The result will contribute to fitness of head wear fitness of consumer, and the amount of production.

  • The objective of this study is to apply the modular furniture system, which has been developed actively in western Europe and America since 1970's, to Korean contemporary furniture having converted into western style gradually. The factors requiring the modular furniture system in today's residential environment are as follows; 1. Population increase and urbanization 2. Development of industrial technology 3. Improvement of living condition and change of life style. As these factors increase the problem of diminishing space, multiple functional modular furniture concept has become a solution. Reviewing the current scene of the western modular furniture system, it is classified into modular seating system, mopular wall system, modular commode system and modular storage system. Korean wardrobe, which is am mixed style of traditional and contemporary furniture, should change to a closet eventually because of the grand size and unpractical use of space. Since most Korean family, however, have wardrobes already, it will be necessary to have a turning period to systemized the closet space in Korean residential interior. For the turning period, application of the modular wall system would be one answer to substitute the wardrobe.

  • We investigated the extent of recognition and the class practice rate of environmental education-relevant contents of the unit of 'Clothing Life' of the 7th 'Technology-Home Economics' curriculum in the students in Korea. Five hundred fifty students in the second and third grade in the middle school and in the first grade in high school, who had taken the course of 'Clothing Life' and responded to the questionnaires, were enrolled in this study. Questionnaires were sent and collected by mail from December 2007 to January 2008. Most students recognized that the environmental problems in their residences were serious enough to affect their own lives. Only 36.4% of the students, however, expressed the intention to join to the environmental groups and change their clothing lives in order to improve those problems. Also they conceived that the unit of 'Clothing Life' of the 7th 'Technology-Home Economics' curriculum containing only a few statements on the environmental pollution had little relevance to environmental education. According to the results on the class practice rate of environmental education-relevant contents of the unit of 'Clothing Life', the quality of the classes on the environmental education, except the unit of 'Planning and Purchasing Clothes', and the degree of practice of environmental preservation were proved to be low. Subgroup analysis showed that the second grade middle school students as well as female students had the higher interest and class practice rate. Teachers have to try to raise the recognition and the class practice rate of environmental education-relevant contents in the unit of 'Clothing Life' of the 7th 'Technology-Home Economics' curriculum of middle school in the class.
