Comparison of Chestnut (Castanea spp.) Quality Characteristics according to Storage Temperatures and Cultivars (밤 과실의 저장온도 및 품종에 따른 품질 변화 비교)

  • This research was conducted for major cultivated chestnut (Castanea spp.) in Korea to compare chestnut quality characteristics according to storage temperatures ($4^{\circ}C$ vs. $-1^{\circ}C$) and cultivars. Color, hardness, soluble solids content (SSC), rate of decay and sensory evaluation were investigated during 16 weeks storage. Cultivars 'Tsukuba' and 'Ishizuchi' showed the least pericarp color change while cultivars 'Riheiguri' and 'Daebo' showed the most pericarp color change during storage. Chestnut fruits stored at $-1^{\circ}C$ showed less pericarp color change than those stored at $4^{\circ}C$. Cultivars 'Arima' and 'Tanzawa' exhibited the decrease tendency of hardness with lowest hardness during storage at $-1^{\circ}C$. Chestnut fruits stored at $4^{\circ}C$ showed high hardness than those stored at $-1^{\circ}C$. Cultivars 'Riheiguri' showed the highest increase of SSC, while cultivar 'Arima' showed the lowest increase of SSC after 16 weeks of storage. The SSC increased in nuts from all cultivars at both temperatures, but nuts stored at $-1^{\circ}C$ showed higher increases in SSC than nuts stored at $4^{\circ}C$. Cultivars 'Ishizuchi' and 'Riheiguri' showed high rates of decayed nuts in contrast to cultivars 'Daebo', 'Okkwang' and 'Tanzawa' that showed low rates of decayed nuts during storage. The chestnut fruit stored at $-1^{\circ}C$ showed less decay than fruit stored at $4^{\circ}C$. Texture and sweetness were tested for sensory evaluation. Among the tested cultivars, 'Riheiguri', 'Daebo' and 'Tsukuba' showed hard texture and very sweetness, while 'Tanzawa' showed relatively soft texture. 'Arima' and 'Okkwang' showed weak sweetness during storage. Nuts stored at $4^{\circ}C$ exhibited harder texture than nuts stored at $-1^{\circ}C$ while $-1^{\circ}C$ exhibited more sweetness than nuts stored at $4^{\circ}C$. Chestnuts for hard texture and short-term storage (less than one month), $4^{\circ}C$ will be a proper storage temperature, while in order to store long-term (more than 4 month), $-1^{\circ}C$ will be a proper storage temperature. Result from this study provide base-line data of postharvest management for Korean cultivated chestnut as well as contributing increased product value and income for chestnut producers.

Effect of Mixture Media of Red Clay and Peatmoss on Quality and Drainage Solution in Hydroponics of Solanum lycopersicum 'Mascara' (황토와 피트모스 혼합배지가 수경재배 토마토 'Mascara'의 품질과 배액에 미치는 영향)

  • This study was conducted to examine the effects of coir, peatmoss, and red clay (20%) + peatmoss (80%) media on quality and drainage solution in hydroponics of Solanum lycopersicum 'Mascara'. The tomato seedlings were planted in media on 29 April, and supplied with Yamazaki's tomato solution of EC $2.0dS{\cdot}m^{-1}$ and pH 6.5. Tomato fruits were harvested from 13 June to 24 August. Drainage amount decresed when solar radiation and air temperature were high. However, drainage amount were not different among coir, peatmoss, and red clay + peatmoss media. The EC of drainage in red clay + peatmoss medium was higher than that in other media during the cultivation period. Also, soild state and available moisture content was more in red clay + peatmoss mediun than in coir or peatmoss media. The soluble solids of tomato fruits increased by 10~17% at $5.5^{\circ}Brix$ in red clay+peatmoss medium compared with $5.0{\sim}4.7^{\circ}Brix$ in coir or peatmoss media. Also, the acidity of fruits was the highest to 0.66% in red clay + peatmoss medium than the others. The total yield of fruits in red clay + peatmoss medium increased significantly by 9.1% at 8,428 kg than at 7,725 kg in peatmoss medium, and ratio of marketable yield was higher than the other media. Therefore, red clay (20%) + peat moss (80%) medium is recommend for growth and quality of fruits in hydroponics of Solanum lycopersicum 'Mascara'.

Effect of Various Fruit-loads on Yield, Fruit Quality and Growth of 'Seolhyang' Strawberry (착과 정도가 '설향' 딸기의 수량, 과실 품질 및 생육에 미치는 영향)

  • This study aimed to examine the effect of different fruit-loads on fruit yield, quality, and plant growth of 'Seolhyang' strawberry. Fruit loads were adjusted from the first to the fourth flower cluster so that the number of fruits became 20, 25, and 30, and non-flower thinning of some was made. The more the number of fruits per plant was, the greater the total yield obtained, but marketable yield decreased and non-marketable yield increased. Compared to the treatment whose fruit load was adjusted, the control with non-flower thinning had more fruit yield in the first and second flower clusters but tended to have less fruit yield in the third and fourth flower clusters. The lower the fruit load was, the more soluble solids content of fruits increased. The lower the fruit load of a flower cluster was, the faster its harvest time reached. Harvest of fruit load of 20 was faster by 10 days in the second and fourth flower clusters relative to the control. On November 24, 2012, flowering thinning of the first flower cluster was made. On March 7, 2013, fruit dry weight of the second flower cluster was most heavy in the control. Dry weight of roots decreased in the control and the fruit load of 30 compared to November 24. On April 9, fruit dry weight of the third flower cluster did not have significant difference according to fruit load, however the more the fruit load was, the smaller dry weight of leaf, root, and crown became, which were vegetative organs. On May 12, the more the fruit load, the smaller leaf area and dry weight of vegetative organs and differences from varying fruit-loads became considerable in later period of growth. Appropriate fruit load of 'Seolhyang' strawberry were from 20 to 25. Maintaining balance between vegetative and fruit growth by adjusting fruit load is very important for stable fruit production.

Effects of Crop Loads on Vine Growth and Fruit Quality of 'Jinok' Grape in Unheated Plastic House (포도 '진옥' 품종의 무가온 하우스 재배시 착과량이 수체생육 및 과실품질에 미치는 영향)

  • This study was conducted to investigate optimal crop loads of 'Jinok' grape for unheated plastic house culture. The crop loads of 'Jinok' grapes were managed to be 1.3, 1.8, 2.2, 2.4, and 2.6t per 10a from 2012 to 2014. We measured vine growth and berry qualities. Crop loads were not significantly affected on plant height, trunk diameter, shoot length, and the internode length of 'Jinok'. However, the maturation of berries was delayed when the crop load was higher. And the harvest date was earlier about three weeks in an unheated plastic house compared to in an open field. The average berry weight was decreased by the higher crop load although higher crop loads made higher yields showing the lowest weight at 342g with the treatment of 2.6t per 10a and the highest weight at 363g with the treatment of 1.3t per 10a. Also, the soluble solids content showed a tendency that higher crop loads brought to lower degree Brix. The contents of P, K, Ca, and Mg in grape leaves and shoots were not significantly different by crop loads. To sum up, when crop loads were under the 2.4t per 10a, the berries were harvested as a marketable fruit having $15^{\circ}Brix$ in the cultivar 'Jinok' grape. This result could help to increase grower's benefit having improved quality of fruit for the sustainable production by the established cultivation techniques for the newly developed cultivar 'Jinok'.

Effects of Elevated Spring Temperatures on the Growth and Fruit Quality of the Mandarin Hybrid 'Shiranuhi' (봄철 가온처리가 부지화의 생장과 과실품질에 미치는 영향)

  • The effects of elevated spring temperatures on the growth and fruit quality of the mandarin hybrid 'Shiranuhi' [(Citrus unshiu ${\times}$ C. sinensis) ${\times}$ C. reticulata] were investigated in plastic greenhouses, to develop a cropping system to improve the quality of the fruit and increase the income of growers on Jeju Island, South Korea. Under conditions of elevated temperature I ($25/15^{\circ}C$, day/night) and elevated temperature II ($28/18^{\circ}C$, day/night) during early spring, budburst was advanced by 11 and 15 d, and full bloom by 22 and 45 d, respectively, compared to those of the plants grown at ambient air temperature in a plastic greenhouse. Elevated temperatures decreased the number of spring shoots but increased mean spring shoot length and leaf area. Growing 'Shiranuhi' trees at elevated temperatures resulted in increases in mean fruit weight and fruit L/D ratio (> 1.0). In addition, fruit color development was significantly advanced in trees grown under elevated temperatures during early spring, which allowed the fruit to be harvested 1-2 months earlier than trees grown under ambient air temperature. Fruit soluble solids content (SSC) and titratable acidity (TA) at harvest were similar between elevated temperature I and ambient air temperature, but were significantly higher than at elevated temperature II. Considering fruit quality, harvest time, and yield, the elevated temperature treatment regime of $25/15^{\circ}C$ (day/night) during early spring could be useful for cultivation of the mandarin hybrid 'Shiranuhi' to increase the income of growers.

Vine Growth and Fruit Characteristics of 'Jinok' and 'Campbell Early' Grape as Influenced by Cropping System (재배작형에 따른 포도 '진옥'과 '캠벨얼리'의 수체생육 및 과실 특성 분석)

  • This study was conducted for the domestic new cultivar to expand cultivation area and sustainable production. The new domestic cultivar, 'Jinok' and control cultivar, 'Campbell Early', had been investigated on vine growth and fruit quality by different cultivating conditions as open field, rain shelter and unheated plastic house. The growth period of 'Jinok' was faster than 'Campbell Early'. The harvesting date of 'Jinok' was on 13th of Aug. faster than 'Campbell Early' which was on 17th of Aug., and it was on 25th and 29th of Aug. for 'Jinok' and 'Campbell Early' on field cultivation, respectively. The growing length and width of new shoots were similar among the cropping systems. In the result of fruit characteristic evaluation, the soluble solids content of the 'Jinok' and 'Campbell Early' cultivating on the unheated plastic house were $15.4^{\circ}Brix$ and $15.9^{\circ}Brix$, respectively. In the open field condition, those were $15.9^{\circ}Brix$ and $15.8^{\circ}Brix$, respectively. The titratable acidity and chromaticity were similar among the treatments. In the appearance of past and disease, Phomopsis blight was occurred on mid of June and in the end of cultivation period on about early Aug., the damage by Phomopsis blight was the lowest about 14% in the unheated plastic house cultivation on the 'Jinok' cultivar and it was 39% in the open field condition. However, in the open filed cultivation for 'Campbell Early', Phomopsis blight was highly occurred about 49%. During this period, or the end of cultivation, it is necessary for the intensive control.

Growth and Quality of Muskmelon (Cucumis melo L.) as Affected by Fruiting Node Order, Pinching Node Order and Harvest Time in Hydroponics Using Coir Substrate (코이어 배지를 이용한 멜론(Cucumis melo L.) 수경재배 시 착과 절위, 적심 절위 및 과실 수확시기에 따른 멜론의 생육 및 품질 특성)

  • This study was conducted to find out optimum fruiting node order, pinching node order, and harvesting time in hydroponics using coir substrates to produce high quality melon (Cucumis melo L.) fruit. Three plants per coir slab (100 × 20 × 10 cm) were planted for each treatment. Yamazaki standard nutrient solutions for melon were supplied with 1.8, 2.0, and 2.3 dS·m-1 at the early, middle (fruit enlargement step), and late growth stages, respectively. Two cultivars of 'PMR Dalgona' and 'Earl's Aibi' were used for fruiting node order and pinching node order experiments. Fruiting node treatments were conducted three replications (8-10 th, 11-13 th, and 14-15 th nodes) and pinching node treatments treated with three replications (18 th, 21 th, and 24 th nodes). Two cultivars of 'PMR Dalgona' and 'Earl's Crown' were used for fruit harvesting time experiment and treated with in four replications (45, 50, 55, and 60 days after fruiting). In growth characteristics, the leaf width and leaf area of 'PMR Dalgona' were the greatest 28.2 cm and 10,845 ㎠. Respectively, 11-13 th fruiting nodes or more. The node length of 'Earl's Aibi' was the longest by 147.6 cm at 11-13 th fruiting nodes. For fruit quality characteristics, the fruit weight of 'Earl's Aibi' at 11-13 th fruiting node fruiting was the greatest by 2.0 kg. The soluble solids content (SSC) of 'PMR Dalgona' was the highest by 14.5 °Brix at 8-10 th nodes in fruiting node orders and 14.5 °Brix at the 24 th pinching node order, respectively with significant difference. The SSC tends to increase in the same for both cultivars of 'PMR Dalgona' and 'Earl's Aibi' as the position of fruiting node was lower. The SSC and fruit weight of melon harvested at 55-60 days after fruiting was the best. From the results of this study, most of SSC tends to increase in the lower position of fruiting node order and the higher pinching node order, whereas the fruit weight shows a tendency of increasing with higher fruiting node. In addition, the SSC of fruit increased as the number of days after fruiting increased, and further research is needed for more various cultivars. In melon hydroponics using coir substrates, it is needed to figure out the characteristics of each cultivar to determine optimum fruiting node order, pinching node order, and fruit harvest time.

Processing and quality characteristics of salad dressing using jujube puree (대추를 첨가한 드레싱의 제조 및 품질특성)

  • This study was conducted to develop a salad dressing using jujube (Zizyphus jujuba Miller) puree and to evaluate the processing and quality characteristics of the salad dressing containing various amounts (0, 10, 20, 30, 40, and 50%) of jujube puree. Jujube puree was prepared by crushing peeled, deseeded and steamed fruit flesh. The dressing ingredients (jujube flesh puree, soy sauce, vinegar, oligosaccharide, olive oil, and water) were mixed, homogenized, and packaged in glass bottles. The quality characteristics (color property, total titratable acidity, soluble solids, viscosity, phenolic compound content, antioxidant activity, and sensory acceptability) of the dressing were analyzed. The lightness ($L^*$) and redness ($a^*$) of the dressing tended to increase as the amount of the jujube puree increased whereas the hue angle ($h^{\circ}$) decreased. The total titratable acidity, soluble solids, viscosity, phenolic compound content, and antioxidant activity of the dressing increased with the addition of more jujube puree. The sensory acceptability (color, smell, taste, texture, and overall acceptability) were significantly higher in the dressing added with 30% added jujube puree than in the other samples. The results show that jujube flesh puree (approximately 30%) can be utilized as an additive for preparing a dressing with simultaneously high antioxidant activity and acceptability.

Physicochemical and sensory properties of Yakhobak (Cucurbita maxima subsp. maxima) paste under different high pressure heating conditions (가열조건에 따른 약호박(Cucurbita maxima subsp. maxima) 페이스트의 이화학적 관능적 품질특성)

  • For the production of Yakhobak (Cucurbita maxima subsp. maxima) paste under various heating conditions, we steamed Yakhobak for roughly 20 min, followed by heating under high pressure treatment for 0 min (HHP0), 20 min (HHP20), 40 min (HHP40), and 60 min (HHP60). The physicochemical and sensory characteristics were subsequently investigated. Generally, no significant difference was observed in organic acid content and sensory characteristics score between Yakhobak paste treated with and without high-pressure heating. However, there was a significant difference in color value, soluble solids, and free sugar content. The L value for color of the group HHP0, untreated control Yakhobak paste (no high-pressure heating), decreased as time increased from 20 min to 60 min, with L values of 44.33, 44.25, and 42.86, respectively. The b value for the color of Yakhobak paste also decreased, showing a significant difference. Soluble solids and free sugar (fructose, glucose, sucrose) contents of the high-pressure heat-treated groups HHP20, HHP40, and HHP60 decreased compared with untreated group HHP0. Organic acid composition of Yakhobak paste included citric acid, malic acid, and fumaric acid, and the major organic acid was malic acid. Sensory score of HHP40 was the highest among all experimental groups in terms of overall preference, but there was no significant difference.

Quality Changes of Cherry Tomato with Different Chlorine Dioxide ($ClO_2$) Gas Treatments during Storage (저장 중 이산화염소 가스의 처리 조건에 따른 방울토마토의 품질변화)

  • The effects of chlorine dioxide gas ($ClO_2$) treatments between high-concentration-short-time and low-concentration-long-time on maintaining the quality of cherry tomatoes (Lycopersicon esculentum Mill. cv 'unicorn') were investigated. Tomatoes were treated with 5 ppm for 10 min and 10 ppm for 3 min as high-concentration-short-time $ClO_2$ gas treatment conditions and 1 ppm for once a day interval in terms of low-concentration-long-time $ClO_2$ gas treatment condition, respectively. After $ClO_2$ gas treatments, tomatoes were storage at 5 and $23^{\circ}C$ for 7 days. Weight loss, changes in tomato color, firmness, soluble solids content, pH, growth of total microorganism, and decay rate were evaluated. On day 7, tomatoes treated with chlorine dioxide gas showed low values of respiratory rate, total microbial growth, and decay rate compared to those of tomato without chlorine dioxide gas treatment. Additionally, tomatoes treated the chlorine dioxide were kept the values of firmness and soluble solids content during storage. However, chlorine dioxide gas treatment on tomatoes had no direct effect on weight loss, pH, and color. Results showed that both $ClO_2$ concentration and treatment time played the important roles for keeping the quality of tomatoes during storage. Tomatoes with chlorine dioxide gas treatment of low-concentration-long-time had more effective values of firmness, the total microbial growth, and decay rate than those with two chlorine dioxide gas treatments of high-concentration-short-time. Results suggest the potential use of chlorine dioxide gas treatment of low-concentration-long-time as an highly effective method for keeping the freshness of cherry tomato.
