생강에 대한 소비자 인식 및 편의제품 선호도 조사 연구 (Survey on Consumer Concept and Acceptability of Convenient Ginger Product)

  • The consumers' concept and the acceptability of ginger and its processed product were surveyed by premade questionnaire. A total of 447 questionnaires were collected from housewives, restaurant managers and related processors at 7 regions in Korea. The 40.6% of total responsors reacted ginger as spice was necessary for food preparation by flavor(87.5%). The most difficulties of using ginger were peeling and washing(89.8%). The raw ginger purchased for their use was only utilized less than 70% of 46.5% and 50% of 21.3% of total responsors respectively. The processed and convenient style spices including ginger were accepted by 72.8% of qestionnaires and 76.9% of them hoped to have ginger paste. Such a convenient ginger products were more welcomed by younger generation than older.

외식브랜드 PPL의 속성이 브랜드 인지도, 신뢰도에 미치는 영향 (Effects of PPL Attributes on Consumers' Brand Awareness and Brand Credibility)

  • Product replacement (PPL) is used widely in marketing and plays crucial roles but the effects of the PPL attributes on a restaurant brand are not well known. Therefore, this study examined the effects of PPL attributes on brand awareness and brand credibility. In addition, the relationship among brand awareness, brand credibility, and brand loyalty was investigated. The study found that the characteristics of PPL, such as information and entertainment, affected brand awareness. On the other hand, inconvenience did not have any impact on brand awareness. In addition, information, entertainment, and inconvenience affected brand credibility. Furthermore, brand awareness and credibility influenced brand loyalty significantly. These results suggest that PPL can be a very effective way to advertise. Hence, PPL should be done with a sense of information and entertainment than simply with more frequent exposure to consumers, which that might cause inconvenience.

  • 음식은 그것을 둘러싼 조리법과 문화적 감수성, 베풀고-나누는 관계를 통해 내러티브를 확장하는 문화텍스트로 기능한다. 이 연구는 식당을 매개로 한 한일 영상텍스트인 <윤식당>과 <카모메식당>의 특징을 사이공간과 젠더를 중심으로 살펴보고, 한일 영상문화 텍스트의 보편성과 특수성을 살펴보는 데 목표가 있다. 사이공간의 입장에서 영화 <카모메 식당>이 현실의 세계를 허구적으로 재현했다면 예능 <윤식당>은 허구적 세계를 현실적으로 재현함으로써 차별성을 보이지만, 보편적으로는 하이퍼리얼리티를 창조한 것을 알 수 있다. 둘째, 젠더의 차원에서 두 영상은 성역할의 해체가 역설적으로 상품이 되는 보편성을 제시한다. 다만 윤식당의 경우 젠더평등의 양상을 좀 더 구체적으로 제시했다는 데서 차별성을 갖는다.

외식광고로 인한 인지부조화가 소비자의 구매 만족도 및 구매 후 행동에 미치는 영향 (Effect of Cognitive Dissonance in Franchise Foodservice Advertisement on Customer Satisfaction and Post-purchase Behavior)

  • The purpose of this study was to analyze the post-purchase behavior of customers who experienced cognitive dissonance after exposure to a franchise foodservice advertisement. The study adopted cognitive dissonance theory to explain the dissonance resulting from the combination of advertisements and actual product that consumers received. In detail, the research hypothesized that cognitive dissonance will affect consumers' post-purchase behavior as well as their efforts to reduce dissonance. Exactly 274 questionnaires were used in the analysis. The results showed that more than 80% of respondents were influenced by advertisements when purchasing menus, and 50% were unsatisfied when the provided menu "was not the same as the advertisement shown". It was found that advertisement type did not significantly affect either group that experienced dissonance. In terms of satisfaction, however, the former group showed greater dissatisfaction when dissonance occurred (p<.001). Finally, there was a significant difference between the two groups regarding post-purchase behavior (p<.05). Customers with dissonance were likely to 'express dissatisfaction directly to the store', 'leave negative reviews', and 'participate in negative word-of-mouth'. Thus, the results revealed that cognitive dissonance could significantly influence customer satisfaction and consequently lead to negative post-purchasing behaviors.

외식 프랜차이즈의 광고 모델 특성이 모델 만족도, 브랜드 이미지 그리고 구매 의도에 미치는 영향 (Effects of Foodservice Franchise's Advertising Model Characteristics on Model Satisfaction, Brand Image, and Purchase Intention)

  • Purpose: Marketing communication with customers is essential for companies to survive and grow in a fiercely competitive environment. Advertising is one of the most readily accepted marketing communications by consumers. Unlike a company that owns a distribution network, advertising is vital for a franchise. In general, many advertising models select celebrities. Celebrities are more likely to attract audience attention and influence consumers' purchase intentions. Customers satisfied with advertising are more likely to stay loyal and buy again when the company launches a new product. In addition, customers form a brand image through advertisements. Therefore, in this study, the effect of the characteristics of the foodservice franchise advertising model characteristics on model satisfaction, brand image, and purchase intention. Research design, data, and methodology: The survey of this study was conducted among consumers over the age of 20 who had seen a restaurant franchise advertisement and visited a store within the last 2 months. 305 copies were collected for 7 days during the survey period, from October 21 to October 27, 2021. Among the collected questionnaires, 12 insincere questionnaires were excluded, and 293 were used for analysis. SPSS 25.0 and Smart PLS 3.0 were used as data collected to test the hypothesis. Result: As a result of the study, among the advertising model characteristics of a foodservice franchise, reliability, attractiveness, expertise, and closeness all had a significant positive (+) effect on model satisfaction. In addition, reliability and closeness were found to have a significantly positive (+) effect on brand satisfaction, but attractive and expertise did not significantly affect brand image. Finally, model satisfaction was found to have a significant positive (+) effect on brand image and purchase intention. Brand image also appeared to have a significant positive effect on purchase intention. Conclusions: Research Results First, this study verified the effect of a restaurant franchise advertising model using celebrities by using the characteristics of the advertising model. Second, this study developed a conceptual structure for model characteristics - model satisfaction - brand image - purchase intention. Third, the restaurant franchise marketer needs to select a model in consideration of the privacy of the advertising model. Fourth, consumers tend to equate advertising models with advertising

커피전문점의 문화 마케팅이 고객만족에 미치는 영향 : 제주도 카페를 중심으로 (The Effects of Cultural Marketing on Customer Satisfaction of Coffee Shops: Focused on Jeju Island Cafe)

  • Purpose - Since the number of cafés operated by using cultural marketing in Jeju Special Self-Governing Province is increasing, this study emphasizes the necessity of cultural marketing, which is a different strategy of specialty coffee shops, focusing on Jeju Island. The purpose of this study is to investigate the effect of positive effects of service quality and brand image on customer satisfaction through cultural marketing. Research design, data, and methodology - It emphasizes the necessity of cultural marketing of specialty coffee shops, and how the positive effects of service quality and brand image brought through cultural promotion, culture support, cultural support, cultural enterprise influence customer satisfaction. The results of this study are as follows. In order to verify the research hypothesis of this study, Jeju residents who have experience using cultural marketing conducted in coffee shops in Jeju Island are targeted. The cafe in Jeju area, which runs from April 4 to April 14, 2018. A total of 110 copies of the questionnaire were distributed, and the final 100 copies were used as final empirical analysis data. Result - The results of the study are as follows. First, promotion and culture business activities have positive influence on brand image. Second, production and cultural business activities had positive effects. Third, brand image has a positive effect on customer satisfaction. Fourth, service quality has a positive effect on customer satisfaction. Conclusions - The implications of this study are following as: First, if you want to grow into a cultural enterprise in the province by enhancing your brand image, you need to prioritize cultural direction and business direction for cultural companies among sub-factors of cultural marketing. Second, it is necessary to improve the customer satisfaction through the improvement of the brand image considering the composition of the stores in the city, the facilities and the atmosphere, and the consumer tendency such as product and customer age.

상업공간 실내조경이 경영적 효과에 미치는 영향 (Influence of Interiorlandscape in Commercial Spaces on the Management Benefits)

  • The purpose of this study is to examine influence of interior landscape in commercial spaces on the management benefit. In the course of this study, objects of survey were selected from interior landscaping specialist, manager and consumer who had experiences to visit to the hotel, bank, department store and restaurant. The main method of data collection was interview, questions and gathering materials. The cronbach's alphas program was used to measure the reliability of likert scales. The analysis program was applied a statistical methods. The results of this study can be summarized as follows: The factors considered by consumer who visits to the commercial space are design, interior landscape, traffic, parking capacity, cleanness, price, kindness of employee and event. Factors concerned with the product include branch size, traffic, parking capacity, kindness of employee. Factors concerned with facilities include branch size, traffic, parking capacity, kindness of employee. Major factors of those effects to management benefit are accessibility, time of stay, sales, efficiency of space, attractiveness and difference. In conclusion, overlap style gets the highest degree of satisfaction among total factors. Results of the survey show that factors which improve sales are overlap style and planter type. Among four commercial spaces, hotel is most effected by interior landscape. To enhance the sales of hotel, further study of interior landscape about hotel necessary. For bank and restaurant, further study of economic planter type and style is necessary. For department store, optimal use of spaces and case of maintenance are necessary.

음식업 창업자들의 경영성과 요인 실증분석 (An empirical analysis of business performance factors of restaurant business start-up)

  • 연구는 음식업 분야의 창업자들의 창업 요인, 제품/서비스 수준, 그리고 경영 성과의 관련성을 파악하기 위하여 실증분석을 수행하였다. 그러나 본 연구는 조사대상 업소의 선정과 측정은 전국에 분포하고 있는 전 업종을 대상으로 진행되어야하나, 강원도 지역으로 한정한 점과 창업 요인을 네 가지 요인으로 제한 점, 그리고 경영 성과를 다른 재무적 성과 지표를 제외시키고 순이익 증가와 고객 증가만을 측정하였다는 한계를 지닌다. 다음 연구에서는 설문에 의한 실증분석과 병행하여 산업 분야별 특성을 고려한 객관성이 있는 연구를 위해서는 성공적이라고 평가되는 대상군과 성공적이지 못한 대상군을 대상으로 한 심층적인 사례연구도 필요할 것이다.

  • In this paper, in order to clarify the effect and characteristics of rural women enterprise in rural areas, AWATAKE Restaurant at Kita Ward, Kobe is taken as a case study, and its management and operation condition, and the effects towards the region are analyzed. As a result, it can be concluded that: 1) according to the local employment and purchase of local food products, the economic effect towards the area shows a returning 73% of the gross sales to the area, 2) lifestyle technology which is empowered by women and food culture which is used as a start in the enterprise activities, are functioning as new workplace to cultivate technologies own by the women, moreover, members have never decreased, and most of them stayed for as long as 10 years, 3) however, the average age of the members are high and decreasing, leaving a new task on how to encourage participation of young members, 4) lastly, rural women enterprise is easy to manage, and also received cooperation from family in the members' working environment.

자갈치 수산관광단지 조성방안에 관한 연구 - 먹거리를 중심으로 - (Developing the Jagalchi Marine Tour Complexes - Focusing on Foods -)

  • The objective of this study is to suggest development methods of marine tour complexes by specializing and modernizing the renowned Jagalchi Fish Market. This study tries to suggest the ways of overcoming limitations of the traditional market place and making a unique tourism destination with affluent attractive culture elements. To preserve its position as the most famous fish market in Korea, Jagalchi market needs to more differentiate its position over competitors. To do that, it needs to avoid over-lapping of product categories among different sectors and specializing each zone according to the assigned theme. Improving tourism environments by expanding entertaining aspects, building landmark facilities and a seaside park, and tourism infrastructures. In addition, the development scheme needs to be planned unified with other city development plans to create a unified image, and a connection program with other tourism resources surrounding the target area needs to be created in order to pursue synergy effects. In the aspect of food, a large seafood center which offers various seafood from all around the world, a traditional night market street, various theme restaurants can be suggested. Successful development of the Jagalchi marine tour complexes not only has ripple effects on the region's culture, society, and other related industries but directly influences related regional tourism and commercial industry.
