푸드테크 서빙로봇의 서비스 실패에 대한 직업윤리적 대응에 대한 고객 평가 분석 (Analysis of Customer Evaluations on the Ethical Response to Service Failures of Foodtech Serving Robots)

  • 푸드테크 산업 중 서비스 로봇 시장이 커짐에 따라 외식산업의 소비자 행동의도에 영향을 끼치는 로봇 서비스의 품질이 중요하다. 식당 서빙로봇은 직원의 업무를 줄여주기도 하지만, 서비스 실패에 따른 대응이 되지 않기 때문에 고객의 불만족은 물론 직원의 업무를 늘리기도 한다. 주문과 서빙 기능 외에 서비스 품질을 높이기 위해서 직원처럼 서비스 실패 후 복구 노력, 과정의 공정성, 공감, 대응성, 확신성에 대한 기능도 요구된다. 이에 우리는 식당 서빙 서비스 실패 유형을 내적, 외적요인으로 가정하고, 서비스에 실패했을 때 직업 윤리적인 태도로 대응할 수 있도록 직업윤리적 공감모듈이 있는 서빙로봇을 개발했다. 이때 서빙로봇의 표정과 액션은 평상 서비스 모드에 실패복구 노력과 공감을 반영한 실패 모드를 추가하여 개발하였으며, 두 유형의 서비스 실패에 따른 서빙로봇의 직업 윤리적 공감 대응 여부가 로봇평가에 유의미한지를 실험하였다. 실험참가자들은 로봇 실수보다 다른 고객의 실수에 따른 서비스 실패에 더 불편해했으며, 서빙로봇의 직업윤리적 공감과 대응은 적절했다고 응답하였다. 또한 직업윤리적 공감 모듈의 장착여부에 따라 로봇 호감도는 차이가 없지만 안전성은 유의미한 차이를 보였다. 생성형 인공지능을 활용하여 직업윤리적 공감 대응 모듈을 탑재한다면, 국내 서빙로봇산업과 시장은 더욱 성장할 수 있을 것이다.

레스토랑 식중독 예방을 위한 위해 요소 규명 및 위생교육 매체 개발 (Risk Factor Analysis for Preventing Foodborne Illness in Restaurants and the Development of Food Safety Training Materials)

  • 본 연구는 서울 지역에 위치한 객단가 만원에서 이만원 수준의 7개 레스토랑을 대상으로 연구팀이 개발한 위생관리 모니터링 도구를 활용하여 위생관리실태를 조사하고, 위생관리가 소홀히 할 경우에 잠정적으로 식중독 유발 가능성이 있는 주요 리스크 인자를 규명하는 한편, 이를 중심으로 레스토랑의 종사원을 위한 위생관리 교육 매체를 개발하였다. 이에 대한 결과를 요약하면 다음과 같다. 1. 연구에 참여한 외식업체는 한식당 6 업소($A{\sim}F$), 일식당이 1개소(G)이었고, 모두 서울에 위치해 있었다. 업장 면적은 90평($297m^2$)에서 400평($1332.4m^2$) 범위이었고, 주방의 면적은 가장 작은 곳은 4평($13.2m^2$)에서 크게는 120평($396.7m^2$) 범위였으며, 업장면적 대비 주방면적 비율로 환산하면 4.4%에서 30% 수준이었다. 조사에 참여한 외식업체들은 중소 기업형 이상의 업체들로 일일 이용 고객수의 규모는 300명에서 925명이었고, 객단가는 9,000원에서 23,000원 수준이었다. 2. 서울 지역 7개의 외식업소를 대상으로 한 위생 관리 점검 결과, 위생관리 수행도 점수는 100점 만점에 57점 수준으로 많은 개선이 요구되는 수준이었다. 특히 음식의 생산공정을 평가하는 영역인 식품위생 영역에 관한 중점적인 교육이 필요한 것으로 나타났다. 위생평가점수는 G업소가 73.0점으로 가장 높았고, A업소가 51.0점으로 가장 낮았다. 영역별 평균점수는 개인위생이 18점 만점에 9.57점(53.1%), 식품위생은 50점 만점에 26.4점(52.8%), 환경위생은 32점 만점에 19.5만점(61.1%)을 나타났다. 이러한 결과를 바탕으로 영역별로 중요도를 달리하는 위생 교육이 필요하였다. 3. 위생관리 평가 항목별 점수를 근거로 레스토랑에서 식중독 발생의 잠재적인 위험 요소로는 개인위생에서 '수세대 구비 및 손세척의 올바른 실행(0.29/4점)으로 나타났다. 식품위생측면에서는 '올바른 검수관리(0.29/4점)', '냉장 냉동 식자재 검수 시 온도 확인 및 조치(0/4점)', '상온 창고내 물품의 바닥방치 금지(0/2점)', '생채소와 과일의 적절한 세척(1.71/4점)' 으로 나타났다. 환경위생관리측면에서는 '청소, 소독 프로그램의 수립 및 감독(2/4점)', '방충 및 구서 관리(0.84/2점)', '화장실 청결 관리(0.43/3점)' 등으로 나타났다. 4. 이상의 결과를 바탕으로 위생교육 매뉴얼을 개발하였다. 위생교육 내용은 4가지 원칙 -개인위생확보, 교차오염방지, 시간온도관리, 냉장관리- 으로 구성하였고, 8영역으로 세분화하였다. 교육 설계방식은 강의식 교육을 위주로 하고, 주제별로, 실연식 교육, 시청각 교육, 토의식 교육을 위한 강의 자료를 마련하였다. 이상의 결과에서 보여 준 레스토랑에서 식중독 예방을 위한 위생관리 활동 내용으로 실천율이 낮은 활동을 규명하고 이 활동에 대한 지속적인 모니터링과 개선활동을 전개한다면 레스토랑의 식중독 예방에 크게 도움일 될 것으로 사료된다. 또한 본 연구에서 개발된 위생교육 자료를 활용한다면, 외식업체의 전반적인 위생수준을 향상시키고 식품의 안전성을 확보하는데 크게 기여할 것으로 기대된다. 최근에 외식업계에서 발생되고 있는 식중독 사고는 이상 기후의 영향이나 시설미비도 그 원인이겠지만, 무엇보다도 중요한 요인은 경영층의 위생에 관한 인식부족, 교육 프로그램의 부재로 사료된다. 그러므로 양적으로 과포화상태에 이르고 있는 외식업계의 질적인 향상을 위해서는 외식업체는 위생교육의 지속적인 실천과 모니터링을 강화하고, 그 결과를 인사고과시스템에 반영하는 통합적인 노력이 요구된다.

Identification of College Students' Food Safety Awareness and Perceived Barriers to Proper Food Handling Practices

  • The purpose of this study was to investigate culinary arts and hospitality students' food safety practice behaviors, intentions, attitudes, and barriers to food safety compliance. This descriptive study used the self-report questionnaire. The convenience sample was composed of 266 college students majoring in culinary arts and hospitality. The students indicated that they never or rarely use a thermometer to determine if meats have been adequately cooked. Examples of positive food handling behaviors were hand washing, sanitation of fruits and vegetables, discarding of food past its expiration date, counter top sanitation, and proper food storage. Students strongly agreed it is their responsibility to practice food safety and to educate their employees about food safety. The primary barrier to proper food safety as ranked by student respondents is the misunderstanding about food labeling. Previous food safety education and internship experience appeared to improve the student respondents' perceived attitudes toward following the principles of food safety practices (p < 0.05), although behaviors and intentions to use the correct food safety practices were not affected. The findings of this study suggest that programs should consider integrating information and experiential learning opportunities in their courses that would be enhance student understanding about food safety. The outcomes of this study can be applied to develop food safety education materials and programs for culinary arts and hospitality students.

지역 축제와 연계한 향토 음식 개발 방안 - 함평 "나비축제"를 중심으로 - (Development of Native Local Foods Associated with Regional Festival - Focused on Hampyeong "Butterfly Festival" -)

  • This study was conducted to provide the information necessary for the development of native local foods associated with the "2008 World Insect Festival in Hampyeong" and to contribute to the efforts to market the festival as tourist attraction and increase the income of the local community. To assess the local foods and restaurants, we investigated the principal products, inclination for sightseeing and recognition of the "Butterfly festival" by distributing questionnaires to local restaurant operators, employees and general tourists. The result was as follows: 1. The general tourists chose scenery as the most important factor in a sightseeing tour, followed by food, lodging, and transportation. 2. The tourists enjoyed eating native local foods, and they indicated that the taste was important. 3. Regarding the cost of food, 53.6% of the respondents answer that 10 to 20 thousand won was a resonable price, and they also reported wanting to eat seafood in Hampyeong. Thus the Menu of seafood to be served at the Hampyeong festival needs to be developed first followed by that of the healthy food. This result showed that individuals prefer fish to meat and healthy food to high-calorie foods.

남해안 관광 지역 레스토랑의 음식서비스에 대한 고객의 지각된 가치와 만족이 충성도에 미치는 영향 (The Effects of Customer's Perceived Value and Satisfaction with Restaurant's Foodservice on Loyalty Intention in Namhaean Tourist Area)

  • The purpose of this study was to assess the effects of perceived value and satisfaction with employees' foodservice on loyalty intention. A total of 273 questionnaires were completed. Structural equation model was used to measure the mediating role of satisfaction in the causal relationships among perceived sacrifice, service quality, value, satisfaction, and loyalty intention. Results of the study demonstrated that the structural analysis result for the data also indicated excellent model fit. The direct effects of perceived sacrifice and service quality on value were statistically significant. The direct effects of service quality and value on satisfaction were statistically significant. The direct effects of value and satisfaction on loyalty intention were statistically significant. The service quality had a significant indirect influence on loyalty intention through value and satisfaction. In addition, the value played a mediating role in the relationship between service quality and satisfaction. The satisfaction played a mediating role in the relationship between value and loyalty intention.

패밀리 레스토랑의 아웃소싱 도입 현황과 만족도 분석 (The Introduction and Satisfaction in Outsourcing for Family Restaurants)

  • There have not been the best method for improving the management system of an enterprise. Its management system must be changed according to new environment. Therefore, the food service industry had to accept outsourcing strategies to reduce cost and construct the core-capability of enterprise. In this respect, we studied the introduction and the satisfaction in outsourcing strategies for family restaurants, including a post of enterprise, decision on the supply-enterprises, contract preparation, cost of outsourcing, recontract items and outsourcing result estimation. The results of this study were as follows; First, 90.5% of managers for 7 family restaurants felt that outsourcing is needed. Second, the post of the outsourcing for 7 family restaurants was from 1 to 8; supply for raw food material, cleaning and equipment repair. The introduction of outsourcing for 7 family restaurants started in 1995 and it had constantly made progress up to 2003. Thirdly, the advantages of the outsourcing for 7 family restaurants were increase of benefit, improvement of controllable-power for family restaurants and improvement of employees' satisfaction. Fourthly, 42.9% of managers were satisfied and 4.8% of them were not satisfied. 36 to 40 year old vice-managers were very satisfied with the result of the outsourcing. Fifth, 90.5% of family restaurant managers found the outsourcing to be needed and especially managers in their late thirties realized the outsourcing.

변혁적 리더십이 외식기업 조리사의 내재적 동기와 창의성에 미치는 영향에 관한 연구 - CJ푸드빌을 중심으로 - (The Study on Effect of Transformational Leadership on Cook's Intrinsic Motivation and Creativity in Foodservice Firm - Focused on CJ Foodville -)

  • The study intended to investigate the relationship between transformational leadership and creativity of cooks with transformational leadership as antecedent variable. Transformational leadership has been assessed positively in variable studies as a leadership to improve employee's creativity. The authors also tried to explore structural relationships among transformational leadership, intrinsic motivation, and creativity by identifying the meditating role of intrinsic motivation in the relationship between transformational leadership and creativity of cooks. The study subject was CJ FOODVILLE, which is a representative company with its size, sales, and recognition as a domestic restaurant business. A survey was conducted with employees who were working as a cook in restaurants operated by CJ FOODVILLE in metropolitan areas. The results of the study showed that charisma and intellectual stimulation of transformational leadership positively influenced intrinsic motivation, but inspirational motivation and individualized consideration did not significantly influence intrinsic motivation. In addition, the four elements of transformational leadership did not significantly affect creativity. The findings of the study show that intrinsic motivation played a role as a mediation among charisma, intellectual stimulation, and creativity of transformational leadership. Therefore, the findings of the study suggested intrinsic motivation as an important factor affecting creativity of cooks.

쿡방프로그램의 시청동기가 시청 후 행동에 미치는 영향 (Effects of Watching 'Cookbang' Program on Behavioral Motivations)

  • Purpose: This research was undertaken to study the motivational behavioral effects after watching the 'Cookbang'. Methods: Between October 23 to November 7, 2015, 420 adults over the age of 20 were surveyed in the Gyeonggi Province and Seoul. The SPSS Statistics (ver. 18.0) was used for analysis of 401 (95.5%) questionnaires, 19 were excluded on the basis of insincerity. Results: Adult male to female ratio was 150 males (37.4%) and 251 females (62.6%). The maximum adults were in their 20s 166 (41.4%). There were 211 single persons (52.6%). Most of the respondents were employees. Highest number of respondents (192) found Korean cooking to be an interesting field. Many adults responded that they watched the 'Cookbang' program once a week. For companionship, majority of the male and female respondents said that they 'watch alone' and 'watch with their children', respectively. Maximum number of respondents in their 20s-60s said they'watch alone'. There was a significant difference in gender and age. Conclusion: The watching motivations drawn by factor analysis were 'information', 'entertainment' and 'psychology.' Regression analysis showed that 'entertainment' had a big effect on the use of restaurants, the selection of groceries, the desire for gourmet restaurant visit, and the selection of restaurants, whereas 'information' had the biggest effect on nutrition and health care.

외식산업의 서비스 환경 조성을 위한 시설관리에 관한 연구 (A Study on the Creating the Atmosphere of Foodservice Facility)

  • The atmosphere of foodservice facility is considered to be the total environment to which customers are exposed. Atmosphere is sometimes described as everything that makes an impression on people. On the other hand, mood is best described as the response of an individual to the various components that make up the atmosphere. Most people experience some type of reaction to the atmosphere that may be desirable or undesirable. If the individual response to the foofservice facility is favorable, the atmosphere has served to put that person into a good mood. In the highly competitive commercial restaurant field, the planning of the atmosphere for new facilities is going to be more important. The coming generation of potential customers is growing up in an environment that associates dining out with more than just good food. This study is characterized by the right atmosphere offerings. Thus, this study discusses the physical components affecting perception of atmosphere. Many of these components will be discussed in detail to show their relationship to the design of dining areas. This study identified the many physical components of atmosphere that can be manipulated and arrive at a combination that will give the desired sensations. With these backgrounds as a guide, this study presented alternatives which should not only provide atmosphere but should reach a satisfactory level of creating atmosphere from a practical standpoint. these is to maximise the perceptual effect, train the employees, and be reflected and be reflected the advertising and public relations.

The Impact of Workplace Green Behavior and Green Innovation on Green Performance of SMEs: A Case Study in Indonesia

  • Environmental concern has become the focus of various studies, academic research, company policies, and government policies. A business sector, which has seen a high level of urgency in environmental empowerment are small- and medium-sized enterprises (SMEs). These are an economic sector, which is imbedded in society and has become one of the largest economic sectors in Indonesia. Therefore, this study analyzes the relationship between green human resource management (GHRM), workplace green behavior (WGB) and green innovation (GI), and increasing firm performance (FP). This study is using quantitative research methods. The data is obtained through distributing questionnaires to 180 culinary SMEs employees from cafes and modern food restaurant in the Special Region of Yogyakarta (DIY), Indonesia. The data is then analyzed using Structural Equation Modeling (SEM) with Smart-PLS. The results of this study show that GHRM has significant positive effect on workplace green behavior and firm performance, while workplace green behavior also has significant positive effect on green innovation and firm performance. In addition, green innovation has significant positive effect on firm performance. This study contributes to provide and extends the literature related to building green SMEs, which is empirically demonstrated to be able to improve company performance.
