This study was designed to determine the usability of lemon fiber (LF-2%, 4%, 6%) and carrot fiber (CF-2%, 4%, 6%) to produce lowfat beef hamburgers. To that end, a certain amount of fat was replaced with each fiber. The proximate composition, pH value, cholesterol content, cooking characteristics, color, texture profile, and sensory properties of low-fat beef hamburgers were investigated. LF increased moisture content and cooking yield due to its better water binding properties, while CF caused higher fat and cholesterol contents owing to its higher fat absorption capacity (p<0.05). LF resulted in a lighter, redder, and more yellow color (p<0.05). Hardness, gumminess, springiness, and chewiness parameters decreased when the usage level of both fibers increased (p<0.05). However, more tender, gummy, springy, and smoother hamburgers were produced by the addition of CF in comparison with LF (p<0.05). Moreover, hamburgers including CF were rated with higher sensory scores (p<0.05). In conclusion, LF demonstrated better technological results in terms of cooking yield, shrinkage, moisture retention, and fat retention. However it is suggested that CF produces better low-fat hamburgers since up to 2% CF presented sensory and textural properties similar to those of regular hamburgers.
This study was carried out to compare of yield, physico-chemical and sensory characteristics for chicken surimi manufactured by alkaline (pH 11) adjustment with different raw materials. Four experimental groups were surimi with chicken breast (T1) and chicken leg (T2) by spent hen, SF-MDCM (T3) and JY-MDCM (T4). Yield was higher in order of T1>T2>T3>T4 (p<0.05). The yield, physico-chemical and sensory characteristics of T1 were significantly higher than those of other treatments. Especially, $L^*$ and W value, shear force, textural properties, folding test, breaking force, gel strength, breaking $force{\times}deformation$, flavor, color and overall acceptability were higher in T1 but ar value, cooking loss, collagen and myoglobin content of T1 were lower than those of other treatments (p<0.05). Deformation, aroma, juiciness, tenderness were higher but met-myoglobin and yield of T4 were lower than those of T2 and T3 (p<0.05). Crude fat cooking loss and met-myoglobin content were higher in T2 but $b^*$ value, brittleness, hardness, gumminess, chewiness, folding test, breaking $force{\times}deformation$ and aroma of T2 were lower than those of other treatments (p<0.05). pH, collagen and moisture content and br value were higher but crude protein, folding test, $L^*$ and W value, cohesiveness, tenderness of T3 were lower than those of other treatmene (p<0.05). Correlation coefficients (r>0.8) between folding test and other items was positive in crude protein $L^*$ value, shear force and cohesiveness but negative in moisture content (p<0.05).
The Korean frozen pork loins in vacuum packaged were obtained from three different Korean export companies and investigated for pH, proximate composition, cooking loss, physico-chemical and sensory characteristics. The frozen pork loins were stored at -20$^{\circ}C$ for 40 days. The results were as follows: The protein contents were relatively higher in the samples from the company II and the ash contents were relatively higher in the samples from the company I than those from the other companies. The samples from the company Ⅱ had highest pH and water-holding capacity, and cooking loss and shear force were lowest in the company II. The total plate counts and coliform bacteria for loins from 3 companies were in the range of 3.04${\sim}$3.75 log cfu/$cm^2$ or g and 0.37${\sim}$1.32 log cfu/$cm^2$ or g in average, respectively. The TBARS values were 0.35${\sim}$0.38 mg malonaldehyde/kg sample. There were no significant differences in sensory characteristics for raw and cooked loins from all companies.
Effects of supplemental charcoal powder and vitamin A on physico-chemical properties in 24 Hanwoo steers were investigated. The Hanwoo steers were randomly assigned to one of the three dietary treatments : 1) Control (commercial feed) 2) T1 (commercial feed supplemented with 2% charcoal powder and 0.2% vitamin A) 3) T2 (commercial feed with 2% charcoal powder). Crude fat content of proximate chemical composition in longissimus muscle was increased at control but moisture of control was rather lower than that of treatment groups (p<0.05). The WHC (water holding capacity) in longissimus muscle was tended to increase in control and shear force was higher in T2 (p<0.05). However, effects of diets charcoal power and vitamin A on pH were not found (p>0.05). Tenderness and flavor of sensory evaluation was improved significantly in control with peculiar and savory taste of Hanwoo being more emphasized. But Juiciness were not difference by treatments. When Hanwoo steers were fed with dietary charcoal powder and vitamin A, the palmitoleic acid and linoleic acid contents were higher compared with that of control (p<0.05), but oleic acid was higher in control than others.

This study was conducted to investigate the physico-chemical meat quality and sensory properties of Holstein steers(n=18, 4 months old, average body weight 160kg) which were divided into 3 groups and fed 2 different energy levels of total mixed rations(TMR)(T1, TDN 74~84%; T2, TDN 77~85%) until 18, 20 or 22 months old, respectively. For loin muscles, 22-month group of T1 and 20- and 22-month groups of T2 had higher fat contents than the other groups (P<0.05). T2 had higher WHC values for 18-month groups among 3 feeding groups (P>0.05). In sensory properties, T1 had higher tenderness, flavor-likeness and overall likeness for 20-month group than the other groups (P<0.05). T2 had higher tenderness, juiciness, flavor likeness and overall likeness in 20- and 22-months groups than 18-month group (P<0.05). For top round muscles, 22-month group had higher fat contents than the other groups of T1 and T2 (P<0.05). T1 had higher in redness(a* value) and yellowness (b* value) of 22-month group (P<0.05). T2 had higher WHC values, lower WBS and CL values in 18-month group than the other groups (P<0.05). In sensory properties, T1 had higher tenderness for 18 and 20-month groups and overall likeness (P<0.05). T2 had higher tenderness in 18-month group. The results of this study showed that longer feeding of agricultural by-product TMR increased the intramuscular fat contents, however, the 18 and 20-months finishing groups were advantageous for the meat quality and sensory properties of Holstein steers.
Effects of irradiation on physical and chemical properties of chicken were investigated. Chicken was irradiated at dose levels of 0, 0.5, 1, 3 and 5 kGy using Co60 source. Irradiation increased drip loss and TBA value. Irradiation decreased L value, and increased a value and b value, indicating that irradiation made chicken darker, more reddish and more yellowish. Irradiation induced the degradation in salt-soluble protein, not water-soluble protein. Any differences in color, odor and tenderness between irradiated and non-irradiated chicken were not perceived by sensory panels.
The objective of this study was to investigate the effects of supplemental levels of Bamboo vinegar (BV) on meat quality characteristics of Hanwoo. A total of 15 cows $(400.0\pm15.0\;kg)$ was fed with a commercial diet (control) or $3\%$ bamboo vinegar supplemented diets $(3\%\;BV),\;6\%$ BV for four months. Then, cows were slaughtered and M. longissimus dorsi (LD) was collected from each treatment group During storage at $4^{\circ}C$ for 21day, physico-chemical, microbiological and sensory characteristics were determined It increased (p<0.05) in at 3 and 9 days of the refrigeration storage. Hunter a value decreased (p<0.05) in the meat fed with $3\%\;and\;6\%$ BV at 1, 3 and 9 days. Hunter b value increased (p<0.05) in $3\%\;and\;6\%$ BV at 1 and 3 days. TBA and total bacterial count were significantly (p<0.05) low in $3\%\;and\;6\%$ BV at 1 and 3 days. Supplementation of $3\%\;or\;6\%$ BV showed a significant (p<0.05) decrease in cooking loss at 9 and 15 days. $3\%\;and\;6\%$ BV showed a significant (p<0.05) decrease in shear force at 1, 3 and 9 days; it tended to decrease throughout the whole storage period The treatments $3\%\;and\;6\%$ BV scored high in area of taste; taste increased significantly (p<0.05) at 1 and 3 days.
The pork cutlets containing different concentrations of dried ginseng powder (1%, 2% and 3%) were manufactured and compared the physico-chemical and sensorial properties with control containing no dried ginseng powder. The color(CIE, L, a, b) values were not significantly different between the treatments and control. The TBA values were lower for pork cutlet containing dried ginseng powder than those for control at the beginning stage (5 days) when they were vacuum packaged and stored at 4$^{\circ}C$ or 15days, however, there were not significantly different after 5 days of storage. The TBA values were remained low level (<0.5mg malonaldehyde/kg sample) when the pork cutlets were vacuum packaged and stored at -20$^{\circ}C$ for 90 days. In fatty acid composition, pork cutlet containing dried ginseng powder contained higher ratios of PUFA/SFA and lower ratios of MUFA/SFA when compared to those of control. Sensory panels evaluated that pork cutlet containing 1% of dried ginseng powder had the highest preference scores in flavor and overall palatability.

The purpose of this study was to determine the optimal mixing ratio of olive oil, parmesan cheese, and nuts for preparation of pesto with spinach. Based on a surface response methodology (RSM), the independent variables were olive oil (100~300 g), parmesan cheese (25~75 g) and nuts (12~36 g). The dependent variables were physico-chemical properties as pH, color values (L, a, and b values), viscosity and sensory evaluation. pH decreased with increasing parmesan cheese levels. The L value decreased and the a and b values increased with increasing olive oil levels. Viscosity was negatively correlated with olive oil levels but positively correlated with the amounts of parmesan cheese and nuts. The addition of oil exerted a positive effect on gloss, and oily taste. In the sensory evaluation, the values of appearance, color, flavor, taste and overall acceptance were in the range of 4.4~7.2, 3.7~7.4, 4.4~7.1, 3.9~7.3 and 3.5~7.6, respectively. The sensory evaluation results showed significant values in appearance (p<0.01), flavor (p<0.01), taste (p<0.01) and overall acceptance (p<0.05). The optimal amounts of spinach pesto with olive oil, parmesan cheese, and nuts were determined by numerical optimization of a canonical model and graphical optimization. The optimal amounts were 175.29 g of olive oil, 49.51 g parmesan cheese, and 27.37 g of nuts per 100 g of spinach.
As meat consumption increases, consumers have demanded meat products containing functional ingredients which beneficial health effect rather than a normal food. The objective of this study was to investigate the physico-chemical and sensory properties of pork Bulgogi product(PB) containing different concentrations of ground ginseng such as 0%, 0.5%, 1.0% and 2.0%. The cooked PB containing ground ginseng had low TBA values when stored at 5$\^{C}$ for 7 days and showed high L and b values (CIE) in meat color when compared to those of control. The PB containing ground ginseng had lower scores in hardness than control, but there were no significant differences in cohesiveness, springness, and chewiness. In fatty acid compositions, the percentages of PUFA/SFA were highest in the PB containing 2% of ground ginseng. The sensory panels preferred PB containing ground ginseng in flavor, tenderness, juiciness and overall acceptability to those of control. In conclusion, the addition of ginseng enhanced flavor and palatability of PB without any adverse effect on meat quality.
