The part one consisted of questions on general characteristics of dieticians and school foodservice operations, and the part two was composed of questions on the importance & performance of food suppliers. Completed questionnaires were received from 286 dieticians of elementary school foodservice operations in Seoul. Statistical data analysis was completed using the SPSS/win for descriptive and t-test. In dieticians' demographic data, 36.6% were over 30 years old, 32.4% were $28{\sim}29$ years of age and 31.0% were below 27years old. Most of the respondents(68.3%) had overall working experiences less than 58 months and almost half of them(56.3%) were married. The school foodservice operations which employed a chef were 50.3%. The food suppliers' attributes that were recognized by the dieticians with high value of mean importance scores were: food quality, maintenance of food quality, accuracy in filling orders, quality of delivery facilities, on time delivery and packaging. Average mean score for importance was 4.33('important') out of 5 and mean score for performance was 3.50('so-so') out of 5. By IPA techniques, the attributes that deserve higher attention were those that ranked high in importance and low in performance(Quadrant A). The coordinates in Quadrant A were geographical location of supplier, maintenance of food quality, provision of information on cost variation and salesman's knowledge.

The results were as follows. Regarding awareness of cooktable setting of traditional foods, 44.67% (88 students) of subjects answered that they had little knowledge. Female students showed a significantly high level of awareness of cooktable setting (p<0.05). Regarding the taste of traditional foods, 64.97% (128 students) of subjects responded appropriately. Regarding the necessity for partial development of traditional foods into a modern style, 61.90% (52 students) of male subjects and 84.96% (96 students) of female subjects were in agreement (p<0.01). Regarding the necessity for traditional food education, 77.16% (152 students) were in agreement, especially female students (86.73%, 98 students) showed considerably higher consent (p<0.05). For the assessment of traditional foods, nutrition (4.57 scores), taste (4.31 scores), and appearance (4.26 scores) were very highly assessed, whereas cookery (3.30 scores) and economic aspects (3.04 scores) scored relatively lower. Traditional desserts were recognized as routine and modern by male students. On the other hand, girls recognized desserts as traditional (p<0.05). Accordingly, we must preserve and pass down Korean traditional foods by increasing awareness through education or experience as well as through planning better cookery and economical aspects by applying certain standards for traditional foods.

  • The purpose of this study is to understand what we have learnt thus far on the sustainable consumption of natural resources by household in Korea. We propose a two-wing model designating households as the main agent of sustainable living where both the production of human resources and the consumption of natural resources take place. In the current study, we focused on the sustainability of natural resource consumption. Undertaking an empirical study, we selected 10 major journals that represent each area of human ecological research and then, identified 120 relevant studies regarding sustainability published since 2000. First, we classified 381 keywords into three categories: production, consumption, and social environment, and the identified studies were then classified in one of the seven categories created by combinations of the abovementioned three categories: production (P), consumption (C), social environment (S), production-consumption (PC), production-social environment (PS), consumption-social environment (CS), and production-consumption-social environment (PCS). The results showed that the sustainability of natural resources has been mainly investigated in the fields of clothing & textiles and food & nutrition. Further, consumer science research has been conducted in the area of consumption-social environment and consumption-production. The current study indicates that the field of human ecology has created and accumulated knowledge to support sustainable living. In the future, we need to conduct more integrated research across disciplines and methods and promote research interest in the underdeveloped area of sustainability research in human ecology.

  • An expert system was developed for the stress diagnosis of cucumber and tomato using FoxPro. The principle points in building the system were integration with Korean, effective processing of mass information, and easy access for non-experts such as farmers. The method of inferencing was forward chaining based on pattern matching. Knowledge base was expressed with IF∼THEN rules and was expressed in the form of tree. Also, the expert system was designed so that additions and modifications of all information could easily be performed on windows. The results tested by farmers with the developed system showed that the expert system was reliable for the practical use. It was expected the expert system could be directly applied to the stress diagnosis of other vegetable plants by modifying only data bases.

The survey was conducted from October 15, 2012 to November 30, 2012 using questionnaires and the data were analyzed with the SPSS program. In general, younger women (20~30 years old) had a lower interest in Korean festival foods than slightly older women (40~50 years old). Most of women over 40 years of age prepared Korean festival foods at home, but many who were in their 20's (45.9%) and 30's (41.1%) obtained their foods from family and relatives. Overall, 62.5% of the subjects wanted to inherit Korean festival food from family and relatives. The dissemination of information and recipes of Korean festival foods were needed for succeeding to Korean festival foods. The taste score was significantly lower for women in their 20's compared to those over 40. Women under 40 reported a lower ease of cooking compared to women over 50. Tangguk (4.93) on Seollal showed the highest perception degree in the order of Namul (4.91), Tteokguk (4.90), and Sikhye (4.90). Jeon, Yaksik, Sikhye, and Gangjeong were the most highly preferred in every group. The preference degree of Pajeon was significantly higher in women under 40 than in those over 60. Tteokguk and Tangguk were more highly preferred in women in their 30's and 40's compared to the other groups. There was a significant positive correlation between preference for festival food and education level, degree of knowledge, degree of interest, will for inheritance, and will for learning (P<0.01). In conclusion, festival foods rich in local tradition should be developed, publicized and used to educate others. The simplification of cooking methods and the development of processed foods are needed to pass on the traditional food culture of Busan.

  • The purpose of this study was to determine the relationship between children's dietary self-efficacy, general characteristics and mother's parenting self-efficacy among elementary school students. Mother's parenting self-efficacy was significantly higher as parents' educational levels increased (p<0.001), as family monthly income level increased (p<0.001), and when father's job was professional or managing work (p<0.001). Children's dietary self-efficacy was meaningfully higher when parents' educational levels were higher (p<0.01), and family income level was higher (p<0.01). Mother's parenting self-efficacy showed a correlation with children's dietary self-efficacy (p<0.001). All factors comprising parenting self-efficacy, such as 'general parenting self-efficacy' (p<0.001), 'healthy parenting self-efficacy' (p<0.001), 'communication parenting self-efficacy' (p<0.001), 'educational parenting self-efficacy' (p<0.001), and 'control parenting self-efficacy' (p<0.001) showed correlation with children's dietary self-efficacy. It is suggested that in order to improve children's dietary self-efficacy and mothers' parenting self-efficacy, families, schools, and communities must put forth a concerted effort. By complementing existing nutritional programs focusing on nutritional knowledge, one can develop a education program and social support to enhance children's dietary self-efficacy and mothers' parenting self-efficacy.
