This study was carried out to investigate the experiences of breast milk feeding information and education, breast milk feeding knowledge and attitude and needs for breast milk feeding nutrition education of high school students to encourage breast milk feeding. The subjects were 565 (male: 250, female: 315) high school students from first to third grade. The results obtained were as follows: In this survey, only 30.0% of subjects experienced breast milk feeding information and only 6.1% of subjects had breast milk feeding education. And the subjects showed the average scores of knowledge of breast milk feeding were 0.29 points of 1 point. Subjects knew well about ingredients of breast milk but they didn't know well about the physiology and method of breast milk feeding and benefits of breast milk feeding for mothers. The average scores of attitude of breast milk feeding were 3.03 points of 4 points, showed slight positive attitudes of breast milk feeding, but they had negative attitudes of emotional and practical aspects. The future plan of feeding practices was breast milk feeding 35.9% and 60.0% of formula milk feeding. A concern was that the students showed high ratio of formula milk feeding plan and they decided by incorrect knowledge of breast milk feeding. The 33.5% of students answered high school students will need breast milk feeding nutrition education, and they thought hospital faculties were the proper educators of breast milk feeding education, but dietitians were recomended as educators because of easy access at school and good knowledge of life-cycle nutrition. Therefore, to encourage breast milk feeding by mothers and supporters of breast milk feeding, breast milk feeding nutrition education is needed urgently among high school male and female students. And nutrition education programs will have to contain benefits of breast milk for babies and mothers and physiology and practical methods of breast milk feeding to improve emotional and practical attitudes for breast milk feeding. Nationwide campaign to promote breast milk feeding at public areas will be needed.
Objectives: The objectives of the study were to investigate the school nutrition teachers' perception on their job and to find out recommendations needed for its improvement in order to provide a quality foodservice and nutrition education at schools. Methods: A total of 219 school nutrition teachers in Seoul were surveyed using selfadministered questionnaires. Results: The perceived importance of the 16 job duties was rated 3.8 based on a 5-point scale (1: very unimportant - 5: very important). The importance of six duties including nutrition management, production management, nutrition education, and food safety management were rated over 4 point but that of record-keeping for documents, official reporting, and service management was rated the lowest. Importance-Performance Analysis showed that nutrition management, receiving/storage management, production management, menu management, food safety management, and equipment/facilities management should be emphasized to maintain the current performance of duties. The performance of the nutrition education and counseling needed to be improved since the importance scores were greater than average but the performance scores were lower than the average. Official reporting and miscellaneous jobs were rated the highest for simplification need. More than half of the respondents agreed that equipment/facilities management, miscellaneous jobs, service staff supervision, and service line supervision could be allocated to other school departments. Conclusions: School nutrition teachers should invest more time and resources on their core job duties such as nutrition management, production management, food safety management, and nutrition education for providing quality foodservice and nutrition education. To reflect the environmental changes of school foodservice, a reasonable staffing index of school nutrition teachers needs to be developed. In addition, hiring an assistant or implementing school nutrition teacher internship programs can be useful to reduce workloads of the nutrition teachers.
This study was conducted to develop expanding strategies of nutrition counseling in school foodservices. The study participants were 102 school dietitians in Gyeonggi province, and information on the current status, dietitians' necessity awareness, and practical activation needs for nutrition counseling were investigated. While 78.8% of dietitians were aware that nutrition counseling was in need, it was only 31.3% who understood the necessity of nutrition counseling. The implementation rate of students' nutrition counseling was 26.2%, and 74.0% of counseling dietitians reported that they conducted nutrition counseling because it was on the inspection list by the Office of Education. Overall, dietitians did not have high consciousness of the need for nutrition counseling. The implementation rate of students' nutrition counseling was remarkably low due to the reason of excessive work and insufficient participants, and it was interpreted that dietitians had a low intrinsic motivation for nutrition counseling. So, we suggested several strategies to activate school nutrition counseling as follows. First of all, dietitians needed to increase the students' participation rate by promoting the importance of nutrition counseling to students and by assigning their available work hours for nutrition counseling. Second, in academic communities, standardized counseling manuals and media covering the important nutrition and health issues should be developed and disseminated, and education programs needed to build up dietitians' self-esteem and knowledge on nutrition counseling. Lastly, the Office of Education should have the initiative in activating nutrition counseling in school foodservices by supporting a budget and counseling dietitians who exclusively responsible part-time counseling at schools.
This study was done to come up with a solution to effectively increase nutrition knowledge and education among nursery school teachers in the Gwang-ju metropolitan city area. The scores of teacher's nutrition knowledge were around the average of 9.4 points on a 15-point scale, which is about 63.1 points on a 100-point scale. When the types of subjects were compared, we recognized that the nursery school teachers with a college degree or those who have any training/education in nutrition had the highest scores in nutrition knowledge. Also, the nursery schools who have more than 101 children or public nursery schools had the highest scores in nutrition knowledge (p < 0.05). We can conclude that the knowledge of nutrition of nursery teachers is very lacking and it is not as high as it should be. In addition, we can also see that the dietary guidance and nutrition education time spent towards the children was very short. The lack of professional knowledge and education seems to be due to shortage of educational materials and because the teachers themselves lack the knowledge to pass on to their predecessors. In fact, even the teachers themselves feel the need to set up more nutrition-related education programs, obtain more guides and materials to teach them, as well as implement more organized and systemized teaching methods.
본 연구는 부산지역 산업체 5곳에 근무하는 남성 근로자들 310명을 대상으로 영양교육의 필요성에 대한 요구도를 파악함으로써 직장인들의 영양개선 및 바람직한 식생활을 유도할 수 있는 산업체 영양교육을 위한 기초자료를 제공하고자 시도되었다. 본 연구의 결과는 다음과 같다. 영양교육 경험이 있는 근로자는 11.9%이었고 영양정보를 얻는 경로는 58.1%가 대중매체이었다. 연령별 차이에서 50대 이상의 91.7%가 영양정보를 대중매체를 통해서, 20대와 30대는 각각 42.9%, 46.9%가 인터넷을 통해서 얻었으며 유의적 차이(P<0.001)를 보였다. 영양교육 필요성에 대한 평균 인식 점수는 3.65/5.00점이었고 연령별 차이에서는 30대는 3.60/5.00점, 40대는 3.53/5.00점이었으며, 학력에 따라 전문대졸이 3.67/5.00점으로 고졸, 대졸보다 높았으나 유의적인 차이는 없었다. 조사 대상 근로자들이 받기 원하는 영양교육 내용은 '균형 잡힌 식습관'(4.00/5.00점), '식품 안전성' 3.96/5.00점, '질환과 관련된 식사요법' 3.94/5.00점이었으나 '외식과 건강'은 3.30/5.00점, '건강보조식품'은 3.27/5.00점 이었다. '알코올과 건강'에 대한 영양교육의 필요성은 사무직이 생산직보다 필요성 점수가 유의적(P<0.01)으로 높았고, 전문대졸과 대졸 이상이 고졸보다 유의적(P<0.01)으로 높게 나타났다. 적당한 영양교육 횟수는 6개월에 한 번 29.0%, 일 년에 한 번 25.8%, 3개월에 한 번은 21.0%이었다. 이상의 결과를 통해 산업체 근로자를 대상으로 영양교육을 실시할 때에는 근로자들의 특성을 고려하여 다양한 방법의 영양교육이 실시되어야 할 것이다. 그러나 근로자들의 영양교육에 대한 필요성 인식이 그리 높지 않기 때문에 이들의 영양과 건강에 대한 인식의 전환과 함께 근로자들의 영양개선 및 바람직한 식생활 유도를 이끄는 영양교육이 근로자의 건강 유지를 위해 반드시 시행되어야 할 것이다.
A nutrition education program has been designed for the children of obese or unbalanced dietary habits. A total of 120 children(60-obese and 60-unbalanced dietary habits) who were in 5th-6th grade was chosen for the program and the effectiveness of the nutrition education was evaluated. The nutrition education program was organized into daily lessons(3 wks). A booklet was made for the education and used during the education period, dealing with 5-Basic Food Groups and their functions, excess or deficiency in a human body, food exchange list, importance of health, obesity, unbalance dietary habits and of school lunch program were emphasized in every day session. dietary recall records were collected to assess their daily food intake and the amounts of meals were discussed. During the education period, booklets, wall charts, photographs, food models, VTR films and slide films were utilized. Assessment of effects of the nutrition education program was carried out by a nutrition knowledge test, food habit records, anthropometric measurements and food preference test. The nutrition knowledge scores were significantly improved after the education and the scores were higher on the children in the school with school lunch program. The anthropometric measurements and food preference test revealed no significant influences of the education on the children, showing that the education period was too short to change their eating behavior any may need a long-term education program. Food habit scores were improved after the education in both experimental and control groups. The experimental groups showed higher scores than the control group.
This study was done to investigate the perception and need of the nutrition counseling of the people living in Daejon. Results were as follows: Nutrition knowledge score increased with education level. It showed tendency that women's scores were higher than men's. Only 15.5% of the participants were experienced in nutrition counseling mostly with medical doctor or nurse in the general hospital. Their satisfaction level was above average, which means positive reaction on nutrition counseling. In the case of the people who paid nutrition counseling fee, they thought that fee level was reasonable. Participants whose education level was higher thought less frequently that the nutrition counseling fee charged currently in the general hospital was expensive. The prevalent contents they want in the nutrition counseling included the prevention and the treatment of the specific disease and food safety (pesticides and food-born illness). As means of nutrition counseling they preferred internet (or PC) and interview. The higher the education status and the less the age, the higher preference, there was for internet or PC. As a source of nutrition knowledge, participants gave high credit on the professional books, academic journals, and advices from dietitian, nutritionist, medical doctor and pharmacist; in the other hand, they gave low credit on the newspaper, magazine, TV or radio, and advices from family or relatives, and friends. They thought most of the adult-onset disease (especially obesity, hyperlipidemia, and diabetes) were closely related to diet. However, percentage of the participants who thought that diet and kidney disease were related was relatively low.
Eating behavior change as a result of nutrition education interventions as secondary prevention strategies can contribute to an increase in life expectancy and better health for older adults in the United States (U.S.). Many of the chronic conditions prevalent in older adults are modifiable by dietary changes, including heart disease, diabetes mellitus, hypertension, obesity and osteoporosis. Important demographic observations in the U.S. including the projected large increase in number of older adults by 2030 have implications for nutrition education focus and services. A comprehensive review of nutrition education interventions for older adults in the U.S. published in 1995 identified elements from adult education theories that contribute to the effectiveness of nutrition education. These elements have been the focus of more recent studies with older adults providing additional evidence for relationships between concepts from commonly used behavior change theories and dietary patterns or change. In the U.S, an important program contributing to nutritional adequacy of the diet for older adults is the Elderly Nutrition Program which provides resources for congregate dining and includes a mandatory nutrition education component. Nutrition education is also provided through clinic based programs, and print and broadcast media. Application of the Transtheoretical Model has shown that the level of interest or motivation to comply with dietary guidance may be greater for some older adults due to an increasing burden of chronic disease and poorer quality of life, while others may not feel a need to change lifestyle habits.
The purpose of this study was to evaluate the effects of Web-based nutrition education program for junior and senior high school students. Three materials, which were printed materials on Group I, WBI (Web-Based Instruction) leaflet on Group II and the web-based nutrition education program developed in the antecedent research, were applied for 564 students in 3 junior high school and 4 senior high school in Seoul during 4 weeks. Pre-test was done from October 21 to October 26, 2002 and post-test was done from November 25 to December 13, 2002. The statistical data analysis was completed using SPSS WIN (ver. 11.0) for descriptive analysis, t-test and ANOVA. According to the evaluation of effectiveness for web-based nutrition education program, nutrition knowledge, food attitude, food habit and nutrient intake were not significantly improved but positively. And on the evaluation of effectiveness for nutrition education program by materials, WBI was more effective educational materials than WBI leaflet and printed materials. Consequently nutrition knowledge, food attitude, food habit and nutrient intake were improved positively but not significantly using WBI, which was due to the instructional period of the only 4 weeks. Therefore long-term instruction should be required for effective nutrition program, as well as more WBI nutrition education program for high school students would need to be developed in the near future in that WBI was effective material on nutrition education.
The purpose of this study was to improve the dietary attitudes of elementary students through nutrition labeling education. A class of fifth-grade elementary students was selected and educated for basic nutrition and reading of nutrition labeling for 8 weeks by using education materials from the KFDA. After the education, the children were subjected for the practice of reading nutrition labeling during winter vacation, and the changes in their dietary attitudes and practice were measured by using questionnaires for children and their parents along with measuring physical changes. The results were as follows: The level of nutritional knowledge was improved significantly after the education (p < 0.05). Nutrition labeling education Increased the children's frequency of reading nutrition labeling from 34.2% to 57.9% while purchasing processed foods (p < 0.05), and 92.1% of the children answered that their dietary attitudes improved by nutrition labeling education. However, no improvement in physical measurements was observed after education. This result suggested that 8-week of education were not enough to show the improvement in physical measurements, and long-term and repeated education is necessary. After the education, most children answered that they recognized the benefit of reading nutrition labeling and they would read the nutrition labeling when purchasing processed foods. Parents also recognized the necessity of nutrition labeling education in school and suggested the need of nutrition labeling be easy to read. The above results suggested that nutrition labeling education is an effective way for improving dietary attitudes of children.
