  • The purpose of this study is to develop and evaluate a dietary education program to improve the caring ability and multicultural acceptance of middle school students. Based on the instructional system design of ADDIE model, the dietary education program was developed to contain five sessions including four theoretical lectures and one lab session. Visual thinking technique was used to train students to express their thoughts and emotion by writing and drawing. The dietary education program was conducted for four weeks (from November 19 to December 14, 2018) at a middle school located in Seoul on a total of 69 middle school students, out of which 34 were assigned to an experimental group and 35 were assigned to a control group. Separate paired t-test were conducted for the experimental group and the control group, respectively, to determine the changes in caring ability and multicultural acceptance scores before and after the dietary education. There were significant increases in caring ability (dietary-, emotional-, behavioral- and cognitive caring) and multicultural acceptance (diversity, relationship and universality) scores among the experimental group after the dietary program. However, no differences were observed among the control group. The results indicate that the dietary education program can be an effective tool to improve caring ability and multicultural acceptance of middle school students.

The study showed that there were no significant differences in parenting stress according to the socio-demographic variables. However, there were some significant differences in children's problematic behavior according to the mother's education. Correlation analysis indicated that the mother's parenting stress and children's problematic behavior in multicultural families had significant positive correlations in all sub-variables. It was also found that the mother's education, the mother's stress caused by a difficult child, the mother's stress caused by dysfuntional interactions between parents and children and educational distress, were all significant predictors of the preschool children's problematic behavior in multicultural families.

However, the response of breakfast absence for a week was higher than the rate of the absence of lunch and dinner. For eating instant foods at least more than once a week, there was a significant difference for carbonated drinks, snacks, ramen and fast food in multicultural adolescents. More multicultural adolescents also noted "never ate fruits and vegetable within the recent week." Conclusion: For the healthy diet of adolescents, more careful observation and nursing education should be implemented. Furthermore, parents should also be included in the education altogether.

  • This study investigated effects of college students' multicultural contacts on multicultural competency. This study also examined mediating effects of perspective taking and prejudice. Multicultural contacts were divided into quality of contacts and quantity of contacts. Effects of quality and quantity of contacts on multicultural competency through perspective taking and prejudice were separately analyzed using two models. For the purpose, 642 Korean college students completed the questionnaires including multicultural contacts, multicultural competency, perspective taking, prejudice and demographic information. The results indicate that both quality and quantity of contacts are associated with multicultural competency, but quality of contacts are more strongly associated with multicultural competency. Also, perspective taking and prejudice mediate the relationship between quality of contacts and multicultural competency while mediators did not mediate the relationship between quantity of contacts and multicultural competency. The results indicate that intimate and positive contacts with outgroup members help enhance college students' multicultural competency through increased perspective taking and prejudice reduction. Future multicultural education for undergraduate students should focus on increasing the quality of multicultural contacts and help them with perspective taking, and reducing prejudice.

  • Maternal interaction behavior, language input and children's language of 34 multicultural families were compared with those of ordinary families. MLU's of multicultural mothers and their children were shorter than those of ordinary Korean mothers and children. Positive maternal interaction behaviors of multicultural mothers were significantly lower than those of ordinary mothers. Correlational analyses revealed that there were positive correlations among maternal interaction behaviors, mother's MLU and children' MLU in multicultural families. However, there were no such correlations in ordinary families. Findings suggest language education and support for multicultural mothers be an effective policy for their children's language development.
