  • The objective of this research was to evaluate the ability of water and 80% ethanol extracts from one hundred eight mulberry leaves (Morus alba L.) to influence the inhibitory activity of angiotensin converting enzyme (ACE) and xanthine oxidase (XOase). The total phenol contents were that water extracts of ten species (Kakjayongsan (Morus alba L.), Daejungsun (Morus alba L.) etc.) and 80% ethanol extracts of twenty three species (Waryoung (Morus alba L.), Hasusang (Morus alba L.) etc.) showed more than 15 mg/g. The inhibitory activity on angiotensin converting enzyme (ACE) were that ten species (YamanakkadakKaskke (Morus alba L.), Mijiro (Morus alba L.) etc.) showed 100% inhibition rate both of water extracts and 80% ethanol extracts. The rest, water extracts of thirty four species (Cheongilppong (Morus alba L.) etc.) and 80% ethanol extracts of thirty four species (Wonjukojo (Morus alba L.) etc.) showed inhibitory activity (above 90%) on ACE. Also, to search of xanthine oxidase (XOase) inhibition were that water extracts of five species (Cheongsipjosaeng (Morus alba L.), Suwon 3 (Morus alba L.) etc.) and 80% ethanol extracts of Jeokmok (Morus alba L.) showed inhibitory activity (above 50%) on XOase. This result revealed, strong biological activity in spite of has a little total phenol contents. These water and 80% ethanol extracts from mulberry leaves (Morus alba L.) are expected good candidate for development into anti-hypertentive and anti-gout sources.

  • Physicochemical characteristics and analysis of functional constituents of mulberry (Morus alba L.) fruit juices were investigated according to four different mulberry cultivars, including iksuppong, daeseongppong, cheongilppong and kwasangppong. Among the four mulberry cultivars examined, the small-sized cheongilppong had higher soluble solid content and lower titratable acidity, whereas the big-sized daeseongppong had higher titratable acidity and lower soluble solid content than other mulberry cultivars. Cheongilppong had higher contents of fructose and glucose, while daeseongppong had higher contents of citric and malic acids than the other mulberry cultivars. Kwasangppong had higher contents of two anthocyanins, cyanidin 3-glucoside and cyanidin 3-rutinoside, while cheongilppong had lower contents of two anthocyanins than the other mulberry cultivars. Daeseongppong had higher contents of resveratrols, flavonoids and moracin, whereas cheongilppong had higher levels of protocatechuic, chlorogenic and caffeic acids than the other mulberry fruits. Of the four mulberry cultivars, daeseongppong and cheongilppong had higher contents of GABA and DNJ, respectively, than the other mulberry cultivars. These results provide useful information to food technologists for the development and standardization of high quality mulberry juices as well as their processed foods.

  • New mulberry cultivar, Shinsungppong which was resistant to main mulberry disease was bred and resistered as a commercial cultivar. Local adaptability test has been carried out at three places (Suwon, Kongju, and Jinju) for four years since 2001. Leaf quality was tested by silkworm rearing for two silkworm rearing seasons (spring and autumn) at Suwon in 2000. Shinsungppong was recognized to be superior by 7% in productivity to control cultivar, Sangilppong. The new cultivar, Shinsungppong, has following agronomic characteristics as compared with Sangilppong, which is known as a resistant cultivar to mulberry disease in Korea. It is belonging to Morus alba L. with mixed shapes from the ovate to 5 lobated leaf shape, sprouting in spring nearly the same to the Sangilppong (Morus alba L.), high leaf yielding by 7% compared to Sangilppong (Morus alba L.). It is adaptable to everywhere except the places where cold damage frequently in Korea. Sangilppong is recommended to rear silkworms not only in spring but also in autumn besides for young silkworms.

  • We bred a mulberry cultivar named Suhyang through local adaptability test, which is under registration as a new cultivar for fruit production. Local adaptability test was carried out at four places (Suwon, Kongju, Wanju and Jinju) for six years from 2007 to 2012. This is belonging to (Morus alba L.) crossed between Josaenghongpisang (Morus alba L.) and Kaeryang (Morus alba L.) among mulberry genetic resources preserved in Suwon. Suhyang was high yielding cultivar in fruit productivity by 12% compared to control cultivar 'Chungil (Morus alba L.)' for four years. Although Suhyang was higher in sugar content of mulberry fruits, it was bigger than that of 'Chungil'. It is adaptable to every where except the places where cold damage and sclerotic disease happen frequently.

  • The mulberry (Morus alba L.) root barks were extracted with 80% aqueous methanol at room temperature. The concentrated extract was partitioned as ethyl acetate (EtOAc), n-BuOH, and $H_2O$ fractions. From the EtOAc fraction, five triterpenoids were isolated through the repeated silica gel and octadecyl $SiO_2$ column chromatographies. According to the results of physico-chemical and spectroscopic data including nuclear magnetic resonance, mass spectrometry, and infrared, the chemical structures of the triterpenoids were respectively determined as ${\alpha}$-amyrin (1), ${\alpha}$-acetyl amyrin (2), lupeol (3), betulinic acid (4), and glutinol (5). Compounds 1, 3, and 5 were isolated for the first time from the mulberry root bark.

  • The effects of aqueous calcium oxide (CaO) treatment on the quality characteristics and shelf life of mulberry (Morus alba L.) were investigated. Mulberry fruits were immersed in 0, 0.5, 1, and $2g{\cdot}L^{-1}$ CaO solutions for 0, 1, 3, 6, and 12 min. Mulberries were then rinsed with potable tap water for 1 min and stored at $-1^{\circ}C$ for 14 days. CaO treatment was effective at promoting the retention of titratable acid, pH, and ascorbic acid as well as total flavonoid contents. CaO concentration and treatment time were significant factors affecting the sensory qualities of the fruits, including off-odor, flavor, and texture. For shelf life determinations, the total bacterial count was reduced by CaO treatment so that the samples treated with $1g{\cdot}L^{-1}$ CaO for 12 min had bacterial levels at 14 days comparable to those of the control at 4 day, and no coliform group was detected after CaO treatment. These results indicate that calcium oxide treatment is a promising approach for the preservation of mulberry fruit.

  • We bred a mulberry cultivar named 'Saealchan' through local adaptability test, which is under registration as a new cultivar for fruit production. Local adaptability test had been carried out at four local places (Jeonju, Gongju, Jangseong, and Sangju) for five years from 2013. This variety 'Saealchan' belongs to Morus alba L. selected from seedlings collected from mother mulberry 'Shimheung'. Saealchan was resistant to popcorn disease and high yielding variety in fruit productivity by 194% compared to control cultivar 'Shimheung (Morus alba L.)' for three years. Although fruits of 'Saealchan' was smaller in size and lower in sugar content of mulberry fruits compared to control variety 'Shimheung', it showed strong resistance to sclerotial disease compared to 'Shimheung'.

Local adaptability test had been carried out at three places (Suwon, Cheongju, and Jangseong) for seven years from 2008. This is tetraploidy variety belonging to Morus alba L. made by colchicine treatment on growing point of 'Chungil (Morus alba L.)' winter buds. Sangmaru was high yielding cultivar in fruit productivity by 6% compared to control cultivar 'Chungil (Morus alba L.)' for five years. Although Sangmaru was similar in sugar content of mulberry fruits, it was bigger than that of 'Chungil'. It is adaptable to every where except the places where cold damage and sclerotic disease happen frequently.
