  • Interactions between meat proteins and hydrocolloids in a model system may play an important role for the improvement of textural properties in low-fat sausage mixtures. The objective of this study was to determine gel properties as affected by the type and level of hydrocolloid, various pH values of meat protein-hydrocolloid mixture before cooking, and internal cooking temperatures. The desirable heat-induced gels (HIGs) were formed at least pH values above 6.0. The addition of konjac flour (KF), kappa-carrageenan (CN) and locust bean gum (LBG) to extracted salt soluble proteins (2%) improved the gel strength with increased levels (0.5∼1.5%) and HIGs containing CN had the highest (p<0.05) gel strength. The increase of cooking temperature increased gel strength, depending on pH and type of hydrocolloid. However, the minimun internal cooking temperature to make viscoelastic HIGs was 70$^{\circ}C$. These results indicated that desirable HIGs were manufactured with each hydrocolloid concentration of 1% and minimum cooking temperature of 70$^{\circ}C$ with pH values higher than 6.0.

  • In the present study, we investigated the effects of Rubus coreanus Miquel (RCM) on memory ability of senescence-accelerated mice (SAM). Prone 8 strains of SAM mice (SAMP8), which is a useful animal for investigating the mechanism of brain aging and senile dementia, were fed a diet containing 100 mg/kg body weight/day of RCM for 8 weeks. Memory ability of mice was examined by using passive avoidance test and Morris water maze test. SAMP8 mice showed remarkable memory impairment compared with senescence-resistant 1 strains of SAM (SAMR1). RCM significantly improved memory ability of SAMP8 mice. In addition, acetylcholineasterase activities decreased in the brain of SAMP8 mice treated with RCM. Taken together, these results suggest that RCM may act as an acetylcholineasterase inhibitor, thereby improving senescence-related memory impairment.

  • This study was conducted to compare the microbial and physico-chemical quality characteristics in Kimchi-fermented sausages added with sodium nitrite (SN) and green tea extract (GTE). The sausages were fermented at $24^{\circ}C$/RH 89% for 17 hr and then dried at $10^{\circ}C$/RH 70~80% for 9 days. The total bacteria count, lactic acid bacteria count and pH value ranged from 8.7 Log CFU/g sausage, 8.1~8.3 Log CFU/g sausage and 4.35~4.36, respectively, at 9 d of ripening, but did not show significant differences during ripening among all sausages. The lipid oxidation (TBARS) was inhibited by both GTE and SN, but GTE had lower (p<0.05) inhibitory effect, compared with SN. The $b^*$ value of GTE-added sausage was higher than that of the control sausage, but $a^*$ and $b^*$ values of SN-added sausage remained higher than other sausages during ripening. Therefore, it had lower effect on lipid oxidation and color stabilities than SN while GTE improved the lipid oxidation stability in Kimchi-fermented sausage. However, both GTE and SN did not influence the growth of lactic acid bacteria.

  • Yoga has been known to have stimulatory or inhibitory effects on the metabolic parameters and to be uncomplicated therapy for obesity. The purpose of the present study was to test the effect of an 8-week of yoga-asana training on body composition, lipid profile, and insulin resistance (IR) in obese adolescent boys. Twenty volunteers with body mass index (BMI) greater than the 95th percentile were randomly assigned to yoga (age $14.7{\pm}0.5$ years, n=10) and control groups (age $14.6{\pm}1.0$ years, n=10). The yoga group performed exercises three times per week at 40~60% of heart-rate reserve (HRR) for 8 weeks. IR was determined with the homeostasis model assessment of insulin resistance (HOMA-IR). After yoga training, body weight, BMI, fat mass (FM), and body fat % (BF %) were significantly decreased, and fat-free mass and basal metabolic rate were significantly increased than baseline values. FM and BF % were significantly improved in the yoga group compared with the control group (p<0.05). Total cholesterol (TC) was significantly decreased in the yoga group (p<0.01). HDL-cholesterol was decreased in both groups (p<0.05). No significant changes were observed between or within groups for triglycerides, LDL-cholesterol, glucose, insulin, and HOMA-IR. Our findings show that an 8-week of yoga training improves body composition and TC levels in obese adolescent boys, suggesting that yoga training may be effective in controlling some metabolic syndrome factors in obese adolescent boys.

  • This study was aimed to investigate the effect of dietary ${\beta}$-glucan obtained from bacterial fermentation on the adiposity and serum lipids level in rats. Sprague-Dawley rats fed high fat diet for 6 weeks to induce obesity, and subsequently fed with 0% (high fat control group), 0.1% or 0.5% ${\beta}$-glucan supplemented high-fat diets (w/w) for another 5 weeks. For comparison, normal control groups fed AIN-76A diet. Supplemented with 0.1% ${\beta}$-glucan resulted in a significant reduction of high-fat induced peritoneal fat and visceral fat development by 16%, 19%, and 28%, respectively(P<0.05). Serum free fatty acid levels were reduced(by 19%), whereas the HDL cholesterol level was increased(by 50%) by 0.1% dietary ${\beta}$-glucan(P<0.05). In conclusion, dietary ${\beta}$-glucan reduced adiposity and improved serum lipids in obese rats fed high fat diet. The present study suggest that ${\beta}$-glucan supplementation to the diet is beneficial in suppressing diet-induced obesity and dyslipidemia.

  • This study investigated the effect of functional MA films (FMA) masterbatched by zeolite powder treated with 1 N HCl solution and anti-fogging agent (CA) on the freshness extension of 'Fuji' Apples. Preference, weight loss, total ascorbic acid, sugar content, acidity, change of gas composition in package were evaluated during storage at $15^{\circ}C$. After 150 days of storage, the weight loss of LLDPE film (control, L) apples was 0.4%, and that of apple in FMA film (CA) was 1.1%. Total ascorbic acid content of apples in control after 150 days was 2.09 mg%, and those of apple in FMA film was 2.94 mg%. The titratable acidity of apple in FMA film was higher than that in control, while soluble solids content of packages was lower than that in control after 150 days. Ethylene gas adsorbability in control package was 192.2 ppm and those in FMA film was 165.6 ppm. Overall, apples in FMA film was better than that of control. It was verified that apples packed with LLDPE film(control) lasted about 130 days, while those with FMA film lasted about 170 days. Also, FMA film treated with anti-fogging agent achieved no significant effect on freshness extension compared to non-treated film, but quality of 'Fuji' Apples was improved by anti-fogging agent when compared to that of non-treated anti-fogging agent.

  • Purpose: This study was carried out to determine the protective effects of vitamin C on the hepatotoxicily induced by radiation. Materials and Methods : The Spraque Dawley rats were randomly divided into 3 groups; the control group, the radiation exposed group, aud the radiation and vitamin C-treated group. SOD activity, ca-talase, malondialdehyde and liver enzymes were analyzed to assess the antioxidant effects of vitamin C. Results: The increased level of malondialdehyde and the decreased catalase activity that were induced by radiation were improved after vitamin C but there was no statistical significance among three groups. The superoxide dismutase activity of the liver was increased by vitamin C, but there were no statistically significant differences between the vitamin C-treated group and the non vitamin C-treated group. The level of liver enzymes in sera such as glutamic oxaloacetic transaminase, glutamic pyruvic transaminase, lactate dehyrogenase and alkaline phosphatase were remarkably elevated by radiation. The levels of those enzymes were decreased in the vitamin C-treated group and statistical significance was noted for the GPT level ($p<0.01$). On the electromicrographic findings, the hepatic cell destruction was considerably decreased in the vitamin C-treated group. Conclusion: Vitamin C is thought to be an effective antioxidant against the hepatotoxicity induced by radiation.

  • Prunella vulgaris, well-known traditional medicinal plant, is used for the cure of abscess, scrofula, hypertension and urinary diseases. Diabetic nephropathy is the most common cause of end-stage renal disease. The pathological characteristics of diabetic nephropathy are glomerular and tubular basement membrane thickening. The aim of the present study was to evaluate the effect of Prunella vulgaris, on diabetic glomerular injury in streptozotocin-induced diabetes rats. Diabetes mellitus was induced by a single intraperitoneal injection of streptozotocin (STZ; 45 mg/kg) and confirmed by random glucose level higher than ${\leq}300mg/dL$. The experimental rats were divided into five groups: control group (Male SD rats), STZ group (Male SD rats injected STZ), Aminoguanidine group (Male SD rats injected STZ + AG 100 mg/kg/day), Low dose group (Male SD rats injected STZ + APV 100 mg/kg/day), High dose group (Male SD rats injected STZ + APV 300 mg/kg/day). AG or APVs were administered once a day for 8 weeks. Body weight and food/water intake were measured every four weeks. At the end of study, the kidneys were collected and cut into pieces for immunohistochemistry and western blot analysis. Our study showed that body weight and water/food intake were no significant differences between untreated STZ-induced diabetic rat and APV treated-STZ rat. However, phosphorylation of receptor-regulated Smads (Smad3) was significantly decreased in APV treated-STZ rat as compared with the diabetic group. In addition, APV was improved nephrin level in kidney tissue. Therefore, we suggest that APV has a protective effect against STZ-induced diabetic glomerular injury.

  • Imported seaweeds Gracilaria sp. and Gelidium sp. from the Philippines and Gracilaria sp. from Brazil were subjected to the examination of yield and quality of agar according to various pretreatment conditions. As pretreatment condition for alkali-treated Gracilaria sp. from the Philippines, $0.05{\sim}0.1%$ concentration of sulfuric acid was proper to obtain the higher yield of agar for which a reverse proportionality was shown between the acid concentration and the strength of extraction condition. Highest yield from Gelidium sp. from the Philippines was obtained by pretreating with 5% sodium hydroxide at $90^{\circ}C$ for one hour, followed by 0.1% sulfuric acid treatment. Gracilaria sp. from Brazil gave the highest yield of agar by pretreatments with 1% sodium hydroxide followed by 0.05% sulfuric acid, both at room temperature for one hour. Acid treatment of alkali-treated Gracilaria sp. from the Philippines brought about the decrease of total nitrogen, total sulfur and crude ash, the increase of jelly strength and no marked change in gelation point and gelation ability. In general, acid-treatment conditions to give rise to high yield of agar improved the quality of product.
