A Survey on the Hand Washing Awareness and Behavior in Elementary Schools Serving Food in a Classroom in Busan (부산지역 교실배식 초등학교생들의 손 씻기 인식 및 이행 실태)

  • The principal objective of this study was to evaluate elementary students' awareness of the importance of hand washing, as well as their hand-washing behavior. The data was collected by self-reported questionnaire from 697 students in elementary schools with serving food in a classroom in Busan. Their hand-washing frequency was high, at '3~4 times per day (37.0%)'. 51.0% of the respondents did not wash their hands that often because they were 'not accustomed' to washing their hands, and 35.9% of respondents regarded washing their hands as 'annoying'. The most frequently reported hand washing agent was 'soap and water (71.4%)'. Approximately 95~98% of the respondents always washed their hands after using the bathroom, 87.9% of them washed their hands before eating food, and 86.7% of them washed their hands upon returning home. However, 27.3%, 34.1% and 65.9% of the respondents did not wash their hands after handling money, after eating, and after coughing or sneezing, respectively. Significant factors related to increased hand-washing frequency were gender (p<0.001) and the period of attendance at kindergarten (p<0.05). The mean scores of importance and performance of hand washing were significantly higher for girls than for boys. The group with higher rate (over 4.5/5.0) for the importance of sanitary hand-washing behavior showed significantly higher scores in hand-washing behavior before serving food and before eating than those of the lower rated group (below 4.0/5.0). This study shows that sanitation education is required not only for food handlers but also for students in school foodservices.

A Study of Children's Dietary Habits, focusing on Parental Influences (자녀((子女)의 식습관(食習慣) 육성(育成)에 미치는 부모(父母)의 영향(影響)에 관(關)한 조사연구(調査硏究))

  • In order to determine nutrition education needs and related problems, a study was conducted of children's dietary habits, focusing on parental influence and degree of agreement between parent and child on foods liked, accepted, or disliked, in addition to a general survey of food atiitudes. This study was conducted throughout a two-month period, June to July of 1974. One thousand children of both sexes, from the fifth grade, junior and senior high schools of Seoul city, and their 2,000 matched parents, were surveyed, Teachers distributed questionnaires in the classroom and assisted the children in answering. Questionnaires also were distributed to the parents through their children, after the teachers explained the procedure of study. As to the influence of parents' food preferences, the following conclusiolns can be reached, in light of the results of chi-square tests conducted: 1. Agreement between mother and child on food preference was much higher than that between father and child, regardless of sex or birth order of the child. This observed difference in degree of agreement was greatest for children in the middle birth order, and greater for girls than for boys. 2. Various food attitudes: a. Food preferences: Beef, milk, and mandoo (boiled or steamed, filled dumplings) were extremely well liked by all subjects, regardless of age or sex. Cucumber, lettuce, and spinach also were lied. Most disliked foods were fatty layers of pork and liver. Cooked rice in the too wet or too dry state and pork were low preference items. b. Socioeconomic background and dietary practice: Higher educational background of the wife and higher income level of the family were associated with greater knowledge of nutrition, and interest in family nutrition and in introducing new foods to the family. But use of food as prize or punishment was found, regardless of the mother's educational and economic status. c. Change of food habit: Over 70 percent of subject had changed ad improved their dietary habits, mostly by reason of husbands' and wives' mutual influence after marriage. This study emphasized the great importance of nutrition eudation for mothers, and their prominent role and responsility in guiding the family to better nutrition, whatever the mother's educational background.

An Analysis of Referrals, Nursing Diagnosis, and Nursing Interventions in Home Care - Wonju Christian Hospital Community Health Nursing Service - (가정간호 기록지 분석 - 원주기독병원 가정간호 보건활동을 중심으로 -)

  • Home Health Care is one part of the total health care system. It includes health care services that link the hospital to the community. While it is important for early discharge patients, home care is also important for people with chronic illnesses or handicapping conditions. In 1989 the Korean government passed a law that opened the way for formal development of home health care services beginning with education programs to certify nurses for home care, and then demonstration home care services. Part of the mandate of the demonstration projects was evaluation of home care services. This study was done in order to provide basic data that would contribute to the development of records that could be used for evaluation through a retrospective audit and to examine the care that had been given in Home Care at Wonju Christian Hospital over a twenty year period from 1974 to 1994. The purposes of the study were : to identify to characteristics of the clients who had received home care, to identify the reasons for client referrals, to identify the nursing problems of these clients, to identify the nursing care provided to these clients, and to identify differences in these areas over the twenty year period. The study was a descriptive study involving a retrospective audit of the client records. Demographic data on all clients were included : 4,171 clients from 2,564 families. Data on referrals, nursing diagnosis and nursing interventions were from even numbered records which had a patient problem list included in the record, 2,801 clients, Frequencies and ANOVA were used in the analysis. The results of the study showed that the majority of the clients were from Wonju city /county. There were more women than men related to the high number of postpartum clients(1,300). The high number of postparttum clients and newborns was also evident in the age distribution. An the number of maternal-child clients decreased over the 20 years, the mean age of the clients increased significantly. Other factors also contributed to this change ; as increasing number of clients with brain injuries or with cancer, and fewer children with burns, osteomyelitis and tuberculosis. There was a decrease in the mean number of visits and mean length of coverage, reflecting a movement towards a short term acute care model. The number of new clents dropped sharply after 1985. The reasons for this are : the development of other treatment alternatives for clients, the establishment of an active wellbaby clinic, many more options plus a decreasing number of new cases of Hansen's Disase, and insurance that allows people with burns to be kept in hospital until skin grafts are healed. Socioeconomic changes have resulted in an increase in the number of cases of cancer, stroke, head injuries following car accidents, and of diabetes. Of the 2,801 client records, 2,541(60.9%) contained a written referral but for 1,802 it contained only the medical diagnosis. The number of records with a referral requesting specific nursing care was 739(29.1%). Many family members who were identified as in need of nursing care had no written referral. Analysis of the patient problem list showed that 41.9% of the enteries were nursing diagnoses. Others incuded medical diagnosis, symptoms, and plans. The most frequently used diagnoses were alteration in nutrition, less than body requirements(115 entries), alteration in skin integrity(114), knowledge deficit(111), pain(78), self-care deficit(66), and alteration in pattern of urinary elimination(50). These are reflected in the NANDA categories for which the highest number of diagnosis was in the Exchanging pattern(446), followed by Moving(178), Feeling(136) and Knowing (115). Analysis of the frequency of interventions showed that exercise and teaching about exercise was the most frequent intervention, followed by teaching concering the need for follow-up care, checking vital signs, managing nutritional problems, managing catheters, giving emotional support, changing dressings, teaching about medication, teaching (subject not specified), teaching about diet, IM and IV medications or fluid, and skin care, in that order. Recommendations included: development of a record that would allow for efficient recording of frequently used nursing diagnoses and nursing interventions: expansion of the catchment area for Home Care at Wonju Christian Hospital ; expansion of the service to provide complication prevention, rehabilitation services, and support to increase the health maintenance /health promotion of the people being served as well as providing client dentered care ; and development of a clinical record that will allow efficient data collection from records, even though the recording is done by a variety of health care providers.

A Study of the Levels of Serum Lipid, Insulin and Plasma Ascorbic Acid in Obese College Men (비만 남자 대학생의 혈청 지질, 인슐린 및 혈장 아스코르브산의 농도에 관한 연구)

  • The purpose of this study was to investigate the blood concentrations of lipids, insulin and ascorbic acid, and their correlations in obese college men in Gyeongnam area. The blood pressure was significantly higher (p<0.001) in the obese group($127.8{\pm}7.2/86.7{\pm}9.2\;mmHg$) than the control group($112.8{\pm}6.6/71.9{\pm}6.6\;mmHg$). The serum triglyceride (p<0.01), total cholesterol (p<0.01), LDL-cholesterol (p<0.05), insulin (p<0.001) concentrations and atherogenic index (AI) (p<0.001) were significantly higher in the obese group ($158.8{\pm}79.7\;{\mu}U/L$, $185.0{\pm}26.8\;{\mu}U/L$, $111.9{\pm}28.1\;{\mu}U/L$, $15.2{\pm}5.6\;{\mu}U/L$, $3.6{\pm}1.0$) than the control group($111.9{\pm}35.8\;{\mu}U/L$, $165.9{\pm}19.4\;{\mu}U/L$, $97.0{\pm}16.4\;{\mu}U/L$, $8.9{\pm}4.4\;{\mu}U/L$, $2.6{\pm}0.3$), but HDL-cholesterol concentration was significantly higher (p<0.01) in the control group($46.5{\pm}7.2\;{\mu}U/L$) than the obese group($41.3{\pm}6.9\;{\mu}U/L$). On the other hand, there was no significant difference in the plasma ascorbic acid concentration in both groups. The ascorbic acid concentration was negatively correlated with total cholesterol level in the control group, and with triglyceride, total cholesterol levels and diastolic blood pressure in the obese group (p<0.05). These data show that young adult obesity might be related to hyperlipidemia, atherosclerosis, hypertension and diabetes mellitus, and that the nutrition of ascorbic acid is more important for obese males than normal weight males.

Association among Serum Lipid, Apolipoprotein Levels and Related Factors in Healthy Adults (중.장년층의 혈청 지질 및 아포지단백질의 농도와 관련된 요인 분석)

  • This study was carried out to examine the association of age, nutrient intake, alcohol drinking and smoking on serum lipid and apolipoprotein levels in 100 healthy adults (54 males and 46 females). The serum total cholesterol, low density lipoprotein cholesterol (LDL-C) (p<0.05), apolipoprotein B (Apo B) levels, LDL-C:high density lipoprotein cholesterol (HDL-C) ratio, Apo B:apolipoprotein(Apo A-I) ratio and atherogenic index (AI) (p<0.001) were significantly higher in males than females, but HDL-cholesterol level was significantly lower (p<0.01) in males than females. The plasma ascorbic acid concentration had no difference in both genders. Most of nutrient intakes except Ca, vitamin A and vitamin $B_2$ were higher than RI (Recommended intake) in both males and females. The meal frequency per day was significantly higher (p<0.01) in males than females, while meal speed, the heaviest meal, meal quantity and meal regularity had no significant differences. The rates of drinking and smoking were significantly higher (p<0.01) in males (59.3%, 37.2%) than females (17.3%, 6.9%). The age was positively correlated with triglyceride level in males (p<0.05), and with total cholesterol (p<0.001), LDL-cholesterol (p<0.001), Apo B (p<0.01), LDL-C:HDL-C ratio (p<0.01), Apo B:Apo A-I ratio (p<0.05) and AI (p<0.01) in females. The levels of serum lipid and apolipoprotein were more correlated with protein intake than other macronutrient intakes in males, while those in females were more correlated energy, carbohydrate and lipid intakes than protein intake. The effect of drinking on serum lipid and apolipoprotein levels was bigger in males than females, while the effect of smoking on those was bigger in females than males. The plasma ascorbic acid concentration was positively correlated with HDL-cholesterol (p<0.05), Apo A-I levels (p<0.001), whereas negatively correlated with Apo B:Apo A-I ratio (p<0.05) in males. And that was positively correlated with HDL-cholesterol (p<0.05) in females. These results suggest that moderate macronutrient intake, less alcohol consumption and non-smoking were necessary to maintain healthy lipid profile with aging in adults.

College Students' Dietary Behavior, Health-Related Lifestyles and Nutrient Intake Status by Physical Activity Levels using International Physical Activity Questionnaire (IPAQ) in Incheon Area (국제신체활동설문(IPAQ)을 이용한 신체활동도에 따른 인천지역 대학생의 식행동, 건강관련 생활습관 및 식이섭취 조사)

  • The purpose of this study was to investigate the dietary behavior, health-related lifestyles and nutrient intake status of college students according to physical activity levels. The physical activity levels were measured using the Korean version of the International Physical Activity Questionnaire (IPAQ) short form. The subjects of this study were 438 college students (243 males and 195 females) in Incheon area and were divided by gender and by physical activity levels, which included low, moderate and high physical activity groups. The average age of male and female students were 23.7 and 21.0 years old, respectively. The prevalence of the low physical activity group was 11.5% for males and 30.8% for females and that of the high physical activity group was 38.7% for males and 22.6% for females. According to the criteria for obesity in Asia-Pacific region, 39.1% of the males and 64.1% of the female students investigated were in the normal range of BMI and 30.9% of the males and 4.6% of the female students were in the obesity category. However, percent of body fat in the female students was significantly higher than that of the male students. The soft lean mass of the high physical activity group was higher compared to the other groups. In the low physical activity group, frequency of “eating out” was lower compared to the other groups. The average consumption of energy was 74.4% for males and 80.1% for females of the estimated energy requirement (EER). The mean intakes of vitamin C, vitamin B2, folic acid and Ca were 67.3%, 84%, 52.7% and 36.7% for males and 64.8%, 99.9%, 51.1% and 40.1% for females of recommended intake (RI), respectively. Therefore, it was necessary for obesity prevention as well as health promotion to increase physical activity and to eat an adequate, balanced diet in female college students.

Effects Unripe and Ripe Rubus coreanus Miquel on Peritoneal Macrophage Gene Expression Using cDNA Microarray Analysis (미숙과와 성숙과 복분자의 섭취가 복강 Macrophages의 유전자 발현에 미치는 영향)

  • Rubus coreanus Miquel (RCM) has been used as one of the Korean traditional medicines for prostate health. In addition, recent studies have reported that RCM reduced chronic inflammatory diseases such as cancer, and rheumatoid arthritis. Therefore, in this study, we investigated the effects of unripe and ripe RCM on inflammationrelated gene expressions in LPS-stimulated mouse peritoneal macrophages. Mice were fed with 2% unripe RCM (U2), 10% unripe RCM (U10), 2% ripe RCM (R2), and 10% ripe RCM (R10) for 8 weeks. Peritoneal macrophages were isolated and stimulated with LPS then proinflammatory mediators (TNF-${\alpha}$, IL-$1{\beta}$, and IL-6), and prostaglandin E2 ($PGE_2$) productions were assessed. Moreover, gene expression profiles were analyzed by cDNA microarray method. Unripe and ripe RCM significantly reduced TNF-${\alpha}$ production but only unripe RCM decreased IL-$1{\beta}$ and IL-6 production. RCM intake significantly reduced inflammatory-related gene expressions such as arachidonate 5-lipoxygenase, interleukin 11, and nitric oxide synthase 2. Furthermore, unripe and ripe RCM significantly decreased ceruloplasmin, tissue plasminogen activator, thrombospondin 1, and vascular endothelial growth factor A expression which modulates symptoms of chronic inflammatory diseases. RCM intake also significantly increased hypoxia inducible factor 3, alpha which is the negative regulators of hypoxia-inducible gene expression. Furthermore, only unripe RCM reduced chemokine (C-C motif) ligand 8, chemokine (C-X-C motif) ligand 14, and phospholipase A2 expression. In this study, we showed that RCM had anti-inflammatory effects by suppression of pro-inflammatory mediator expressions and may reduce chronic inflammatory disease progress through regulation of gene expressions. These findings suggest that RCM might be used as a potential functional material to reduce chronic inflammatory responses.

Research Trends in Dietary Factors Related to Obesity and Metabolic Syndrome in Koreans: A Scoping Review of Studies using Data from the Korean National Health and Nutrition Examination Survey and the Korean Genome and Epidemiology Study (스코핑 고찰 방법을 활용한 한국인의 비만과 대사증후군 관련 식생활 요인 연구동향 분석: 국민건강영양조사 및 한국인유전체역학조사사업 자료를 활용한 연구를 중심으로)

  • This study investigated the potential role of dietary factors associated with obesity and metabolic syndrome (MetS) in Koreans. The scoping review method was used to evaluate the studies that utilized the secondary data sets comprising the Korean National Health and Nutrition Examination Survey (KNHANES) and the Korean Genome and Epidemiology Study (KoGES). Articles published between 2012 and 2022 were identified using RISS, KISS, DBpia, PubMed, and ScienceDirect databases. In all, there were 32 published articles on obesity and 119 on MetS. Obesity research included eight articles on nutrients, 12 on food items/food groups, two on dietary patterns, nine on dietary behavior/eating habits, and one on the dietary index. MetS studies comprised 34 articles on nutrients, 43 on food items/food groups, seven on dietary patterns, 25 on dietary behavior/eating habits, and 10 on the dietary index. Carbohydrates, alcohol, and coffee consumption were the most frequently studied dietary factors for obesity and MetS. The primary areas of study were largely focused on nutrients and food items/food groups. Thus, to overcome the paucity of information on the relationship of dietary patterns and dietary indexes with obesity and MetS, there is a need for further research using the KNHANES and KoGES data sets.

A Study of Mothers' Nutritional Knowledge on Weaning of Breast-fed Infants, the Age of 6 Months (평균 6개월 모유영양 영아 어머니의 이유지식에 관한 고찰)

  • This study was conducted to investigate the mothers' nutritional knowledge on weaning of 101 infants (8 for 4 mo, 44 for 5 mo, 45 for 6 mo, 4 for 7 mo) at a public health center of Incheon. Informations on the mothers' nutritional knowledge were obtained by questionnaires. In this survey $41.6\%$ of infants were breast-feeding, $43.6\%$ of them were bottle-feeding, and $14.9\%$ of them were mixed feeding right after birth. The rate of breast-feeding right after birth was significantly higher in mothers of high school graduate than mothers of college/university graduate (p < 0.05). The infants of mothers graduated high school began to be weaned significantly earlier than the infants of mothers graduated college/university (p < 0.05). $95.1\%$ of infants (n = 101) began to be weaned 4 to 6 months. $83.1\%$ of infants were fed home-made weaning foods. $66.7\%$ of infants were fed rice gruel, $18.5\%$ of them were fruit juice, $6.2\%$ of them were mixed grain, and $4.9\%$ of them were commercially prepared weaning foods as their first supplementary foods. As main supplementary foods, $32.8\%$ of infants were fed vegetable, $30.5\%$ of them were rice gruel, and $27.7\%$ of them were fruit juice. Mothers' nutritional knowledge related to weaning was significantly higher among mothers of college/ university graduate than mothers of high school graduate (p < 0.05). $86.1\%$ of mothers disagreed with the questionnaire in which breast-fed infants aged over 4 months needed to be fed iron sufficient food. For the improvement of nutritional status especially iron nutritional status of infants, nutritional education for mothers with weaning aged infants has to be increased and related programs have to be operated effectively.

Factors that Influences Daily Toothbrushing Frequency and Use of Oral Health Care Products for Adolescents (청소년의 칫솔질 횟수 및 구강관리용품 사용에 영향을 미치는 요인)

  • This study utilizes raw data from the first-ever Korea National Health and Nutrition Examination Survey (KNHANES) conducted in 2017 and its purpose is to identify factors that influences Daily toothbrushing frequency and use of oral health care products for adolescents aged 13 to 18 years in conjunction with their mothers. Factors affecting Daily toothbrushing frequency of adolescents are: Whether the mother smokes or not, and Daily toothbrushing frequency for the mother. The more the mother younger and smoked and brushed her teeth, the higher the number of sessions increased for the adolescent child. The higher the mothers' level of education and use of oral care products were the greater the adolescent child's use of oral care products became. As a result, the study determined that the oral health of adolescents and of their mothers are closely related. A program to educate adolescents and mothers to promote the oral health of adolescents should be developed, and continuously and systematically implemented at home and school.
