영양교육 실시교와 미실시교 초등학생들의 영양지식ㆍ식행동 및 영양소 섭취 상태 비교 연구 (A Comparative Study on Nutrition Knowledge, Eating Behavior and Nutrient Intake for Students at Elementary Schools with and without Nutrition Education Program)

  • This study was conducted to investigate the effect of the nutrition education on the nutrition knowledge, eating behaviour and nutrient intake of the children. Questionnaire and dietary record were executed to 105 children in the 4th and 5th grade in elementary school with nutrition education and 107 in the same grade without nutrition education. The results were as follows; In nutrition aspect, higher acknowledgement and precision level was observed(p<0.001) in the educated group. Higher practice will of nutrition knowledge, lower rate of skipping meal, better appetite were also observed in the educated group. In the aspect of food group intake, meatㆍfishㆍegg, tofu and bean, fruits, milk and milk products intake frequency were higher in the educated group. Most nutrient intake except fat and vitamin B₂ were observed to be higher in the educated group. Therefore, it was concluded that continuous nutrition education was recommended in order to put positive effect on the eating behaviour and nutrient intake of the children.

서울시내(市內) 여학생(女學生)의 도시락 실태조사(實態調査) (Survey Study on lunch box of Senior High School Girls in Seoul City)

  • To evaluate the results of nutrition education in high school, the contents of the lunch box of senior high school girls were surveyed. Among 540 students in Attached Senior High School, College of Education, Seoul National University, 403 girls who had carried a lunch box were selected as a subject. All the nutrients except vitamin D given in Recommended Daily Dietary Allowances were calculated for the foods in lunch box and compared with the Recommended Allowances for Korean people, and foods in lunch box were also considered as a food groups. To see how many students had an interest about their own nutrition, people who packed lunch box were also checked. Results are as follows 1) all the nutrients except iron and niacin of lunch box were low when compared with Recommended Daily Dietary Allowances for Korean people 2) Over 50% of calorie, protein, vitamin $B_1$, and niacin were provided by main food-rice, although other nutrients were principally from side dish. 3) Side dishes were few in kinds and chiefly salty foods such as preserved and processed foods were in the lunch box. There was no consideration in cooking method. 4) There may be a fault in nutrition education in high school because, there were only few students who had an interest in their own nutrition.

대구.경북지역 여고생의 영양지식, 식습관 및 식생활교육 만족도 조사 (A survey on the nutrition knowledge, dietary behavior and satisfaction of dietary education of high school female students)

  • 본 연구는 학교교육에서 여고생을 대상으로 한 식생활교육의 방향을 알아보기 위해 대구 경북지역 1, 2학년 여자고등학생 409명을 대상으로 영양지식, 식습관, 식생활교육 수업에 대한 만족도, 가정교과의 식생활교육이 실생활에서 도움을 주는 정도에 대하여 자기기입식 설문조사로 실시되었다. 영양지식 점수는 9.2/15.0점으로 계열, 학년, 형제 수, 성적과 유의적 상관관계를 나타내었다(p<0.05). 아침식사(85.8%), 적절한 식사속도(82.9%) 항목의 점수는 높았으나 병원성 미생물(43.0%), 열량영양소(40.3%), 당뇨병 식이관리(21.3%) 항목은 매우 낮은 정답률을 보였고, 쌀의 조리원리와 병원성 미생물에 대한 항목은 잘 모르겠다고 응답한 학생이 각각 51.8%, 49.1%로 가장 높았다. 식습관 점수는 3.3/5.0점으로 계열, 부의 직업, 경제적 수준과 유의적인 차이를 보였다(p<0.05). 식품구매 시 영양표시 및 유통기한, 원산지 확인 항목의 점수가 가장 높았으나(3.86/5.00점) 싱겁게 먹기 항목은 2.93/5.00점으로 가장 낮았다. 식생활교육 수업에 대해서는 42.1%가 만족하고 있었으나 8.3%가 불만족한 것으로 조사되었고, 불만족한 가장 큰 이유는 수업시간이 적다가 8.3%로 가장 높았다. 실험 및 실습수업을 가장 선호하였으며, 식생활교육 만족도 점수는3.39/5.00점, 식생활교육이 실생활에 도움을 주는 정도도 3.39/5.00점으로 대체로 낮았고, 음식 만들기(3.81점), 위생적이고 안전한 식생활(3.71점), 건강한 생활(3.68점) 항목점수가 높았다. 식생활교육 수업에 대한 만족도가 높을수록 실생활에 도움이 되는 정도, 영양지식, 식습관의 점수가 유의적으로 높았으며(p<0.01), 영양지식과 식습관 점수가 높을수록 실생활에서 도움이 많이 된다고 생각하였고(p<0.001), 영양지식 점수가 높을수록 식습관 점수가 높은 것으로(p<0.001)로 조사되었다. 따라서 여고생을 대상으로 한 가정교과의 식생활교육은 학부모와 연계하여 실생활에서의 활용도를 높이고, 학생의 진로와 요구를 반영한 효과적인 수업전략 및 식생활교육 시간 확보 등으로 식생활교육 만족도를 높이기 위한 교사의 적극적인 활동이 요구되었다.

중등학교 가정교과 식생활교육을 위한 청소년의 우유 섭취, 영양 섭취 및 체력과의 관계 연구 (A Study on the Relationship between Milk Consumption, Dietary Nutrient Intake and Physical Strength of Adolescents in Middle and Small-Sized Cities in Korea for Dietary Education of Home Economics Subject at Middle and High Schools)

  • 본 연구는 청소년의 우유 섭취, 영양 섭취 및 체력 간의 관계를 알아보고자 실시되었다. 시도교육청과 학교의 협조를 받아 선정한 중소도시에 거주하는 298명의 청소년을 대상으로 평소 식사 및 체력장 기록을 조사하였다. 우유 유제품 섭취는 식사조사를 이용해 파악하였고, 우유 유제품으로 섭취한 1일 평균 칼슘 섭취량을 우유 200 mL 중의 칼슘 함량과 비교해 1일 평균 우유칼슘당량을 구하였다. 식사조사는 식사기록법에 의해 주중 2일과 주말 1일을 포함하는 3일간 실시하였고, 식사조사지의 식사 내용을 CAN-Pro 3.0에 입력해 영양소 섭취량을 구한 후 1일 평균 영양소 섭취량을 산출하였다. 체력장 기록은 학교에서 정규적으로 실시하는 자료에 따랐다. 조사 대상 청소년의 1일 평균 우유칼슘당량은 우유칼슘당량을 기준으로 분류한 저섭취군(${\leq}0.29$/일), 중섭취군(0.30-0.78/일), 고섭취군(0.79-5.66/일)에서 모두 권장 수준인 '2'보다 낮아 조사대상자의 우유 섭취가 전반적으로 부족하였다. 1일 평균 우유칼슘당량이 높을수록 50 m 달리기와 제자리멀리뛰기 기록이 유의적으로 높았다. 그리고 대부분의 에너지 영양소, 비타민, 무기질의 1일 평균 섭취량과 50 m 달리기, 제자리멀기뛰기, 오래달리기 기록이 높은 방향으로 유의적인 상관관계가 있었다(p<0.05). 따라서 청소년기에 우유 섭취와 함께 균형잡힌 영양 섭취를 하면 체력 향상에 도움이 되므로 중등학교 가정교과의 식생활교육에서 청소년기에 1일 2컵의 우유 섭취를 실천하도록 지도해야 하며 아울러 중등학교의 학교우유급식 활성화를 위한 제도적 뒷받침도 이루어질 필요가 있다고 하겠다.

라이프스타일과 식생활양식 (Life Style and Dietary Pattern)

  • The aims of this study are to classify the life styles of urban housewives, to see their relationship between life style and demorgaphic variables, and also to see the relationship between life style and dietary patterns. This study has been performed by a questionsire about life style, demographic variables and dietary pattern. The selected samples were 475 housewives. The data were analyzed by factor analysis, cluster analysis, Duncan test, X-test and F-test. Life style is classified into 4 types: temporary enjoying type, passive irrational type, realistic conservative type, actual progressive type. The housewives who are in temporary enjoying type usually do randomly and don't think seriously something. And they have tendency to enjoy themselves. Therefore they don't have any plan for dietary behavior. The passive irrational type's housewives have no consistancy in their life and they do everything temporarily. The housewives who are in this type have relatively low incom, low level of education and they are high in age. The people who are in realistic conservative type act reasonably and elastically everything. They use convenient food very much, because they are willing to save time to make them. The housewives who are included in actual progressive type are well organized and planned in dietary behavior than others, when they dine out, they eat with family together in general, they usually use only a kind of western sauces and convenient food. They are relatively young, highly educated, and they are high income group. In conclusion realistic conservative type and actual progressive type are both relatively desirable type in dietary behavior, but in temporary enjoying type and passive irrational type, there, have to do some guide and education about managing family resources and dietary behavior.

중년 여성의 라이프스타일에 따른 가정내 지속가능한 식생활 실천 (Sustainable Meal Practices of Middle Aged Women at Home According to Their Lifestyles)

  • Sustainable meal management at home will be affected by the lifestyle of the housewife. This study examined the lifestyle of middle aged women and identified their practice levels of sustainable meal management at home. A total of 438 women, aged 35 to 59, managing the family's dietary life at home and living in Seoul, Gyeonggi Province, Daejeon, and Chonnan area participated in the survey. The middle aged women showed a higher performance level of hygiene-oriented (4.15) and health-oriented dietary life (3.59), but a less convenience-oriented dietary life (2.57). Based on their lifestyle, 3 clusters were extracted: Low-interest dietary life meal manager, health and quality pursuit meal manager, and convenience and eating-out pursuit active meal manager. Among them, the cluster of health and quality pursuit meal manager showed the highest sustainable practices in 7 dimensions of sustainable practices in the home except for the saving practices (p<0.001). The criteria suggested from the study can be applicable to the guidelines of sustainable meal management at home. The study can also be helpful for educators to identify the education themes for improving housewife's sustainable meal practices, having different lifestyle and sustainable meal practices.

충남 일부 지역 대학생의 거주형태에 따른 식생활에 관한 연구 (The Dietary Life by Residence Types of University Student in Chungnam)

  • This study examined the dietary life by residence type of 409 university students (198 male and 211 female) in Chungnam They were divided into five groups according their residence: living in the family home a short distance from the university, living in the family home a long distance from the university, boarding house, self-boarding house, and university dormitory. In this study, the intake of food and nutrients and health, and dietary behaviors of each group were investigated through two-week questionnaire. The average age, height, weight, and BMI were 21.4, 175.3 cm, 68.9 kg, 22.3 in males, and 19.9, 162.3 cm, 53.3 kg, 20.2 in females, respectively. Dietary attitude of the students living in home was higher than that of the other student groups. The rate of breakfast intake and the frequency of eating 10 food items of subjects except processed food of self-boarding house group were lower than those of the other 4 student groups. These results suggest that university students of self-boarding house might have low ability of meal management and more reasonable nutrition education is needed for desirable food behaviors.

중학교 기술·가정 교과서 다중지능 활용 활동과제 분석 - 2015 개정 실과(기술·가정) 교육과정에 따른 '식생활' 단원을 중심으로 - (Analysis of activities task using multiple intelligence in middle school 「Technology·Home Economics」 textbooks - Focusing on the 'Dietary Life' unit according to the curriculum of the 2015 revised Practical Arts(Technology·Home Economics) curriculum -)

  • 본 연구의 목적은 2015 실과(기술·가정) 교육과정에 따라 개발된 중학교 교과서에서 '식생활' 단원의 활동과제를 다중지능 활용 교수·학습방법을 기준으로 분석하는 데 있다. 이러한 목적을 이루기 위해서 12종의 중학교 기술·가정 교과서에서 '청소년기의 영양과 식행동', '식사의 계획과 선택', '식품의 선택과 안전한 조리'를 내용 요소로 하는 본문 내용과 읽을거리, 평가 문항을 제외하고 학생들이 활동할 수 있는 과제를 다중지능 활용 교수·학습방법을 기준으로 분석하였다. 분석방법은 내용분석 기법을 사용하여 학습 활동에 중심을 두고 분석하였고, 활동과제의 하위 질문들도 모두 각 한 가지의 활동으로 분리시키되, 연속선상에 있는 활동을 준비하는 과정은 한가지로 묶어서 분석하였다. 3인이 활동과제를 분석하고 협의를 통해 분석기준을 수정·보완하는 과정을 2회 진행한 후 다른 연구자 3인이 확인하였다. 12종의 교과서를 분석한 결과 활동과제의 수는 교과서 종류별로 25~74개로 나타났으며, 활동과제의 수는 총 527개였다. 다중지능 영역별 비율을 살펴보면, 논리수학지능을 활용한 활동과제가 35%로 가장 많은 것으로 나타났으며, 언어지능 26.8%, 개인내적지능 23%, 대인관계지능 7.2%, 시각운동지능 3.8%, 신체운동지능 2.7%, 음악지능 1.5% 순으로 나타났다. 반면, 자연탐구지능을 활용한 활동과제는 없는 것으로 분석되었다. 자연탐구지능을 제외하고 전반적으로 다중지능을 활용하고 있었는데 이는 가정 교과가 실천을 본질로 하면서 식생활과 관련된 다른 교과의 내용이나 방법을 추출하여 새롭게 재조직한다는 점에서 가정 교과의 융합적 성격을 나타내는 것으로 해석된다. 본 연구는 다양한 교수·학습방법의 틀을 마련하여 학생 참여형 수업을 활성화하고, 가정 교과에서 융합 교육을 실현하는 데 대안을 제공할 것으로 기대된다.

Effect of Weight-Related Concerns and Dietary Behavior on Eating Disorder Risk in Korean Women

  • This study investigated the relationships between eating disorder risk, body image perception, weight control, and dietary habits in Korean women. Body shape perception, the Eating Attitude Test (EAT-26) and dietary habit information were collected by a self-administered questionnaire to 373 adult women and the data were analyzed by the Chi-square test. 31.4% of the women were classified in the eating disorder group by a score of over 20 points on the EAT-26. Compared to the normal group, more women in the eating disorder risk group perceived that a thin body shape was the ideal body shape and were dissatisfied with their body shape. This group was also more interested in weight control and more likely to try weight control methods. The eating disorder risk group was more likely to skip meals and snacks than the normal group. In addition, they had a greater appetite and a higher frequency of overeating than the normal group. Over 30% of the Korean women surveyed were categorized at high risk of eating disorders. They were more likely to overestimate body weight and shape and tried to control their weight by inappropriate methods. To prevent eating disorders in adult women, nutrition education programs should incorporate strategies to change inaccurate self-body image and to disseminate information about healthy weight control methods.
