In the present study, we investigated the chemical composition, antioxidant activities and nitrite scavenging ability in leaf and root of Youngia sonchifolia Max. The leaf powder contained 4.3% of water, 53.9% of crude carbohydrate, 21.6% of crude protein, 3.5% of crude fat and 16.7% of crude ash. The root powder contained 4.8% of water, 65.9% of crude carbohydrate, 17.4% of crude protein, 3.2% of crude fat and 8.7% of crude ash. The major mineral elements both in leaf and root powder were potassium, calcium, and magnesium. Contents of unsaturated fatty acids were higher than those of saturated fatty acids both in leaf and root powder. Total polyphenol and flavonoid contents of methanol extract in leaf were 3,922.4 mg/100 g and 1,903.2 mg/100 g respectively. In comparison, total polyphenol and flavonoid contents of methanol extract in root powder were 1,898.4 mg/100 g and 359.8 mg/100 g. The antioxidative activities of several solvents extract of leaf and root powder were investigated by measuring electron-donating ability using 1,1-diphenyl-2-picrylhydrazyl (DPPH). Of the each extracts, ethyl acetate extract of leaf and root powder showed relatively higher antioxidant activity; 94.3% in the leaf powder and 92.9% in the root powder. Nitrite scavenging ability was also highest in the ethyl acetate extract of leaf (45.4%) and root powder (28.8%). These results suggest that ethyl acetate extract of Youngia sonchifolia Max. can be used as a functional materials.
Doenjang (fermented soybean paste) is one of the korean traditional fermented soybean product which is consumed with cooked rice as a soup or paste. During the fermentation, soybean protein hydrolyzed into amino acids and various peptide, and various organic acids by mirobes related and enzymes produced by meju fermentation. Some commercial products locationally samples give more sour taste than normal due to abnormal fermentation which the reasons are not clear. Three samples that gave sour taste organoleptically were collected and analyzed their characteristics such as pH, moisture content, acidity and microbial counts. The pH of the sour sample were lower than the normal with higher acidity as pH 5.39 (normal) to pH 4.36 (S2) and 15.80 ml of(0.lN NaOH consumed) to 21.80 ml (S1) respectively. Salt and moisture contents were different with sour and normal Doenjang as 16.38% (normal) to 8.92% (S3) in salt and 55.94% (normal) to 49.34% (S1) in moisture content. Total viable counts were $4.1{\times}10^8$ (normal) to $8.0{\times}10^5$ (S2), and $3.4{\times}10^8$ (normal) to $8.0{\times}10^5$ (S2) in acid producing microbes at BCP plate. Yeast and mold were not detected. The composition of acids as mainly lactic acid and acetic acid of sour Doenjang. Total free amino acids content were lower the sour Doenjang than the normal.
Rheum tanguticum has long been used in oriental medicine as antipyretics, analgesics, anti-inflammation, aperient, hypertension medicine and medicine for skin disease. This study has investigated the effectiveness of defense for gastritis making use of Rheum tanguticum and its similar plants, Rumex cripus, Rheum officinale, Rhem palmatum and Rheum undulatum. Chysophanol, chrysophanol-8-O-glc, Desoxyrhaponticin desoxyrhaponti-genin, emodin, isorhaponticin, 2-methoxy-4-hydroxyanthraquinone-5-O-glc, physcion, pirace-tannol-3'-O-glc, resveratrol, rhaponticin and rhapontigenin are used as the components of Rheum tanguticum. In HCl ethanol-induced gastritis in rat, the most effective extract was 70 percent ethanol which is of Rheum tanguticum, showing the inhibition of 91.8 percent to the gastric lesions. 70% ethanol extract of Rhem palmatum and Rumex cripus shown inhibition of 75.6 percent and 73.2 percent, respectively. This effectiveness is considered as acid-neutralizing capacity, anti-H.pylori and anti-oxidant activity. 70% ethanol extract of Rheum tanguticum and its component, piracetannol-3'-O-glc exhibited higher free radical scavenging activity than others. These results suggest that Rheum species extracts and their active components could be utilized for the treatment of gastritis. Furthermore, these results are expected to contribute the standardization with objectivity and reliability for Rheum species, medicinal herbs. In addition, it can contribute to the prevention of indiscriminate distribution of imitation, and the rising rate of dependence on imports of medicinal herbs, and mixing prevention of low-quality goods.

Seakso 1, a maize hybrid, was developed in 2008 by Gangwon Agricultural Research and Extension Services in Korea and registered in 2011. It is single-cross hybrid, semi-flint, deep-purple variety of corn, variety of are yellow, while the husks and cobs are purple. Due to the sensitivity of Seakso 1 to excess moisture after seeding, water supply should be carefully managed, and it should be harvested at a suitable time to obtain the highest anthocyanin content. This study investigated the hepatoprotective effect of Saekso 1 corn husk and cob extracts (EHCS) in oleic acid-induced non-alcoholic fatty liver disease (NAFLD) in HepG2 cells. EHCS showed a high level of lipid accumulation inhibiting effect. EHCS also suppressed triglyceride accumulation and inhibited expression of lipid marker genes, such as sterol regulatory element binding protein-1c (SREBP-1c) and sterol regulatory element binding protein-1a (SREBP-1a). Analysis by western blot of the expression of p-AMPK, p-SREBP1, PPARα, and FAS proteins showed that the incidence of SREBP1 protein, a major factor involved in lipid metabolism in the liver, has decreased significantly after treatment with the extracts. Moreover, the protein-induced expression of FAS, a major enzyme involved in the biosynthetic pathways of fatty acids, was decreased significantly in all concentrations. These results suggest that EHCS is a potent agent for the treatment of NAFLD.

This study was conducted to monitor the residual pesticides on a total of 320 stalk and stem vegetables from January 2019 to December 2019 in the Incheon metropolitan area. Pesticide residues in samples were analyzed by the multi-residue method for 373 pesticides using GC-MS/MS, LC-MS/MS, GC-ECD, GC-NPD and HPLC-UVD. Risk assessment was also carried out based on the amount of stalk and stem vegetables consumed. The linearity correlation coefficient for the calibration curve was 0.9951 to 1.0000, LOD 0.002 to 0.022 mg/kg, LOQ 0.005 to 0.066 mg/kg and recovery was 82.0 to 108.0%. According to the monitoring of pesticides, 36 (11.3%) of 320 were detected with pesticide residues and 3 (0.9%) samples exceeded the maximum residual limit. The detection frequency for Chinese chives and Welsh onion was higher than that for other stalk and stem vegetables. The frequently detected pesticides were etofenprox, procymidone, fludioxonil, and pendimethalin. As a tool of risk assessment through the consumption of pesticide detectable agricultural products, the ratio of estimated daily intake (EDI) to acceptable daily intake (ADI) was calculated in the range of 0.0062-24.1423%. These results indicate that there is no particular health risk through consumption of commercial stalk and stem vegetables detected with pesticide residues.
In order to investigate the classification and antibiotic resistance of Salmonella species,718 isolates were isolated from patient in Seoul from 1996 to 2001. The two hundred and ninety eight isolates (41.5%) were identified as Sal. Enteritidis, followed by Sal. Typhi 218 isolates (30.4%), and Sal. Typhimurium 87 isolates (12.1%). The identified Salmonella species were most resistant to tetracycline (32.7%), followed by streptomycin (28.0%), ticarcillin (18.1%) and ampicillin (12.4%). Among isolates,34.7% of Sal. Enteritidis were resistant to tetracycline, 32.3% to streptomycin,23.2% to ticarcillin,13.5% to ampicillin, respectively. 13.8% of Sal. Typhi were resistant to streptomycin,10.6% to tetracycline, respectively.66.7% of Sal. Typhimurium were resistant to tetracycline, 42.5% to streptomycin, 28.7% to ticarcillin, 26.4% to ampicillin and 17.2% to chloramphenicol, respectively. Of 718 isolates, 324 isolates (45.1%) were resistant to 1 or more drugs and 64 isolates (19.8%) were resistant to 1 drug, 132 isolates (40.7%) were resistant to 2 drugs,50 isolates (15.4%) were resistant to 3 drugs, 27 isolates (8.3%) to 4 drugs,27 isolates (8.3%) to 5 drugs,22 Isolates (6.8%) to 6 drugs. The most prevalent multiple resistant pattern was tetracycline-kanamycin (35.5%), followed by tetracycline-kanamycin-ticarcillin (8.3%), and tetracycline-kanamycin-ticarcillin-ampicillin (7.4%) . Antibiotic resistant rate of Sal. Typhimurium was 73.6%,1311owe4 by Sal. Enteritidis 53.7% and Sal. Typhi 19.3%. Most Sal. Enteritidis was resistant to 1 drug o.2 drugs, whereas Sal. Typhi. and Sal.. Typhunurium were more .resistant to 5 (16.7%) or 6 drugs (26.6%). The old generation antibiotics such as ampicillin, tetracycline, and streptomycin were annually more resistant than the new generation antibiotics such as ceftriaxone, ciprofloxacin or cefoxitin.
With the incidence of antibiotic resistant bacteria there is increasing interest in natural products such as herb extract and probiotics to control antibiotic resistant bacteria. This study was focused on the determination of antimicrobial activity of Opuntia ficus-indica var. saboten against Salmonella enetrica serovar Enteritidis (S. enterifidis), S. enterica serovar Typhimurium (S. Typhimurium) DT 104 and Escherichia coli 0157:H7. Though bactericidal effect of 0. ficus-indica var. saboten was not observed, it had significant inhibitory activity against Salmonella spp. and E. coli O157:H7 on the Moulter Hinton agar containing its solution dissolved in deionized water. To investigate the antimicrobial activity in vivo, mice were challenged with 5. Typhimurium DT104 (3.7$\times$108 cfu/mouse) after pre-feeding 0. ficus-indica var. saboten solution. The fecal shedding of S. Typhimurium DT104 was more dramatically decreased and not detectable in feces and intestines 3 days after challenge in mice fed with 0. ficus-indica var. saboten. Antibody responses of the intestinal IgA were also significantly increased in mice fed with 0. ficus-indica var. saboten. These findings suggest that Opuntia ficus-indica var. saboten decreased the shedding of S. Typhimurium DT104 in vitro and also in the gastrointestinal tract in mice. In addition, administration of the product might enhance the mucosal immune response against S. Typhimurium DT 104. In conclusion, Opuntia ficus-indica var. saboten might be useful to control antibiotic resistant bacteria in vivo and in vitro.
The purpose of this study is to evaluate microbiological contamination of leafy vegetables. Total aerobic bacteria and coliforms were monitored to get the contamination levels and Staphylococcus aureus, Bacillus cereus, Clostridium perfringens, Escherichia coli, Escherichia coli O157:H7, Salmonella spp., Vibrio parahaemolyticus, Listeria monocytogenes, Yersinia enterocolitica, Campylobacter jejuni to detect pathogens with risk of foodpoisoning from fresh vegetables. The colony count of total aerobes and coliforms was also performed to determine the efficacy of washing with tab water by common consumers. 124 samples which are divided into 8 kinds of vegetables - Sesame leaf, Dropwort, Chinese cabbage, Korean leek, Lettuce, Crown daisy, Pimpinella brachycarpa, Chicory were sampled in 2 wholesale markets in Incheon. Mean counts of total aerobic bacteria for individual vegetables ranged from $2.2\times10^6\;CFU/g\;to\;6.0\times10^7\;CFU/g$ and total coliforms were from $4.1\times10^5\;CFU/g\;to\;9.8\times10^6\;CFU/g$. Both show the peaks in summer on this study from March to September. Decrease rates after washing with tab water averaged 81.0% and 82.5% in total aerobic bacteria and coliform counts respectively. Staphylococcus aureus was isolated 8.1%, Bacillus cereus 14.5%, Clostridium perfringens 5.6%, Escherichia coli 18.5%. 11 samples showed overlapped bacterial contamination. For respective vegetables Staphylococcus aureus isolated from 0.0% to 22.2%, Bacillus cereus from 0.0% to 29.4%, Clostridium perfringens from 0.0% to 23.1 %, Escherichia. coli from 0.0% to 35.0%. Escherichia coli O157:H7, Salmonella spp., Vibrio parahaemolyticus, Listeria monocytogenes, Yersinia enterocolitica, Campylobacter jejuni were not isolated. This study is expected to be available as the reference for the basal data of pathogens in fresh vegetables.

The halophilic bacterium Vibrio vulnificus is known to be a foodborne pathogen that causes septicemia in human. V. vulnificus infection is characterized by the high fatality rates and the primary attack against a person who have underlying diseases such as liver cirrhosis. However, there is no effective treatment for V. vulnificus septicemia except for classical treatments such as antibiotics. Recently, it has been known that lipoprotein (LDL) plays a major role in the protection against infection and inflammation. Consequently in this paper we analyzed the effects of LDL on V. vulnificus septicemia. We purified V. vulnificus cytolysin, a major virulent factor of V. vulnificus infection and measured inhibitory effects of mouse serum, cholesterol, and LDL on its hemolytic activity. Next experiments were performed to investigate whether LDL has a protective role against septicemia induced by V. vulnificus in mice. Intraperitoneal injection of LDL (1mg as protein) into mice 3hr before V. vulnificus $(1\times10^6\;CFU)$ injection, and V. vulnificus -induced lethality was determined. For the determination the relationship between LDL or cholesterol and prognosis, we determined serum levels of cholesterol and lipoprotein from V. vulnificus septicemia patients (n=15) who had visited the Chonbuk National University Hospital in Chonju. V. vulnificus cytolysin -induced hemolysis of mice erythrocytes was completely inhibited by serum, cholesterol, and low-density lipoprotein. V. vulnificus- induced lethality of mice injected with LDL showed only 40% compared to 100% of control. In survival groups (n=4) of V. vulnificus septicemia patients (n=15), their serum LDL and cholesterol revealed normal levels ($153.3{\pm}40.7,\;LDL;\;190.8{\pm}16.3$, Total cholesterol). However, in death groups (n=11) showed very low levels ($35.6{\pm}13.9,\;LDL;\;59.2{\pm}15.1$, Total cholesterol). Our study indicates that cholesterol and LDL are a prognosis indicator of V. vulnificus septicemia as well as an inhibitor of virulent action of V. vulnificus cytolysin. We suggested that the serum levels of cholesterol or LDL would be major index in the treatment and prevention of V. vulnificus septicemia.
