Effects of External Conditions on the Emulsifying Property of Proteins (단백질의 유화작용(乳化作用)에 미치는 외적(外的) 조건(條件)에 관한 연구)

  • The effects of measurement conditions on the emulsifying capacity(EC) and emulsion stability(ES) of proteins were studied in order to develop laboratory standard methods for the evaluation of emulsifying properties. The EC of proteins decreased with the increments of protein concentration and mixing rate. It increased with the increasing oil addition rate up to 0.8 ml/sec, but did not change at $0.8{\sim}1.2\;ml/sec$. The addition of sodiumchloride enhanced EC of proteins, attaining to the highest EC at 0.3M NaCl for Pro-Fam and 0.1M NaCl for Na-caseinate. The ES of Pro-Fam was higher than that of caseinate. The ES was increased by the increments of protein concentration, oil addition volume, mixing rate and mixing time. The EC and ES showed a close relation to the NSI of proteins, reaching to the lowest values of EC and ES at the isoelectric regions of proteins. The laboratory methods for measurements of emulsifying properties of proteins were established. The emulsifying properties of a laboratory-made soybean protein isolate were compared to those of commercial products by using the methods.

A Study on the Design of Solid Lipid Nanoparticles for enhanced Skin Penetration of Pantothenic Acid (Pantothenic acid의 피부 투과 개선을 위한 고형지질나노입자설계 연구)

  • In this study, we designed pantothenic acid (PA) loaded solid lipid nanoparticles (SLNs) for enhanced skin penetration of PA that is used for moisturizing agent in cosmetics with hydrophilic property. SLNs were prepared using various lipids and surfactants. PA loaded SLNs were fabricated using double emulsion method. The fabricated PA loaded SLNs assessed particle size, polydispersity index, zeta potential, loading capacity. Skin penetration study was conducted using artificial skin tissue originated from human epidermis as one of the reconstructed human epidermis models. The mean particle size and zeta potential of SLNs ranged from 192.15 nm to 369.87 nm and -21.39 mV to -40.55 mV, respectively. The loading efficiency and loading amount of PA loaded SLNs were ranged from 44.36% to 57.16% and 12.60% to 16.36%, respectively. The results of penetration demonstrated that all SLNs improved PA skin penetration. In addition, the amount of PA from SLNs were approximately 3.8 - 8.8 times higher than that from PA solution. Therefore, the fabricated SLNs demonstrated the enhancment of skin penetration of PA. Particularly, the SLN, which used glyceryl behenate and Span 60, showed optimal skin penetration of PA.

Effects of Propolis Extract on Quality and Storage Characteristics of Chicken Patty (프로폴리스 추출물이 닭고기 패티의 품질 및 저장특성에 미치는 영향)

  • This study was conducted to investigate the effect of propolis extract on chicken patty. the meat quality characteristics and storage properties of chicken patties without propolis extract were compared to those with 0.1%, 0.2%, and 0.4% propolis ethanol extract. The addition of propolis extract resulted in increased fat and ash content in the chicken patties. There were no differences in pH, water holding capacity, cooking loss, and texture profile analysis, indicating that the propolis extract did not negatively affect emulsification stability. However, sensory evaluation showed that the higher the concentration of propolis extract added, the lower the total preference of the chicken patties. Over a storage period, patties treated with propolis extract exhibited a lower total microbial count, and volatile basic nitrogen (VBN) content compared to those without propolis extract. Therefore, the addition of propolis to chicken patties does not reduce emulsion stability but improves storage properties. However, the unique flavor of propolis decreases the preference for chicken patties, so the amount must be considered when using it.

Functional Properties of Soybean Curd Whey Concentrate by Nanofiltration and Effects on Rheological Properties of Wheat Flour Dough (나노여과에 의한 순물 농축액의 기능적 특성 및 밀가루 반죽의 리올로지 성질에 미치는 영향)

  • This study was designed to investigate the feasibility of utilizing concentrates of sunmul(soybean curd whey), the waste by-product of soybean curd processing, as functional food ingredients. Sunmul was concentrated by nanofiltration fo11owing ultrafiltration and then freeze-dried. The oil adsorption capacity of the nanofiltraion(NF) powder(97.33g/100g) was similar to that of sunmul powder(94.17g/100g), but was lower than that of ISP(isolated soy protein). However, the water holding capacity of NF powder could not be determined because the NF powder completely dissolved in water. The protein solubilities of sunmul powder and ISP in distilled H$_{2}$O, 0.1M and 0.5M NaCl were lowest at pH 4.0 and increased at more acidic or alkaline conditions. However, the protein solubility of NF powder was at its minimum at pH 6.0 and increased at more acidic or alkaline conditions. Emulsifying activity indexes of NF powder in 4% and 6% solution were minimal at pH 4.0 and 6.0, respectively, which were 3 to 8 times lower than that of sunmul powder. The emulsion stability of 4% sunmul solution was lowest at pH 4.0, but that of NF powder was highest at pH 5.0 and decreased at more acidic or alkaline conditions at all concentrations of solution. The total free amino acid contents of protein in sunmul, and NF power were 99.07 and 2,110.10mg%, respectively, and NF powder exhibited especially high threonine content. Rapid viscosity analysis of dough with 1 to 5% added NF powder demonstrated that all of the peak and final viscosities decreased with increasing NF powder concentration compared to the control.

Studies on the Factors Affecting Barley Injury Caused by Herbicides in Drained Paddy Field (제초제에 의한 답리작맥 약해발생 요인구명에 관한 연구)

  • I. The effect of excessive soil moisture(at the time of germination) on germination of barley and crop damage of herbicides was investigated. Machete(Butachlor) and TOK(Nitrofen) were treated, respectively, at the rate of 150g ai/10a on each pot whose different soil moisture content was controlled by suppling 30, 40, 50 and 60ml of water per 100gr of air-dried soil, respectively. The results are summarized as follows: 1. Excessive soil moisture beyond field moisture capacity caused great inhibition, from 20 to 100%, of the germination of barley even at untreated pots(check pots). Also, further development of root and growth of barley were greatly inhibited even though the seeds germinated. 2. The same tendency in inhibition of germination and growth as at untreated pots was observed at treated pots, too. As a whole, however, the damage were heavier at treated pots. II. Wanju naked spring barley was seeded on four different soils and covered with soil to a depth of 1 em, and then Machete, TOK, Saturn and HE-314 were treated at the rate of 180, 150 and 200, 150, and 250g ai/10a, respectively, and the effect of soil texture on crop damage of the herbicides was investigated. The results are summarized as follows: 1. Machete(emulsion and granule, at 180g ai/10a) The degree of crop damage was quite different from one soil texture to another: while almost no crop damage was observed on a clay loam soil regardless of the type of formulation, the damage became heavier as the soil texture became sandier as sandy clay loam, volcanic ash loam and sandy loam, and great inhibition of growth was observed on sandy loam soil. In general heavier damage was caused by the application of emulsion than by granular formulation. 2. TOK(Wettable powder, at 150, 250g ai/l0a) Almost the same tendency as in the application of Machete was observed, and the damage became heavier as the application rate increased. 3. Saturn(at l50g ai/l0a) No great difference in crop damage among soil textures was observed. 4. HE-3l4(at 250g ai/l0a) Almost no difference in crop damage among soil textures was observed at this rate of 250g ai/l0a. III. To study a difference of crop damage on soil covering depth(4 levels), 9 herbicides(TOK, MO, HE-3l4, Machete, Saturn, Simetryne, Simazine, Gesaran, Lorox) were treated on the pots with two different soils, and the effect of soil covering depth on crop damage of the herbicides was investigated. The results obtained in this experiment are summarized as follows: Light Clay Soil 1. The growth of barley in relation to depth of soil covering at check pots followed the order vigorous to weak; lcm>1.5cm>0.5cm>0cm. And in case of 0 and 0.5cm covering the growth of barley was very poor. 2. The damage at 0 and 0.5cm covering at treated pots was very severe, but Saturn, Machete, MO and TOK at 100 to l50g ai/l0a, respectively and He-3l4 at 250 to 375g ai/l0a were relatively safe to barley at the depths of lcm and above. 3. Simazine, Lorox and Simetryne caused slight damage even at 1.5cm covering. Sandy Loam Soil The growth of barley in relation to depth of soil covering at untreated pots followed the order, from vigorous to weak; 1.5cm 0.5cm 3cm 5cm. While MO was safe to barley at 1.5cm covering, for other chemicals more than 3cm covering was require for safe use. Machete and Saturn at 100g ai/l0a, and HE-3l4 at 250g ai/l0a was relatively safe at more than 3cm covering. Simazine, Lorox, Simetryne and Gesaran were unsafe on sandy soil regardless of covering depth.

Composition Ratio Analysis of Transesterification Products of Olive Oil by Using Thin Layer Chromatography and Their Applicability to Cosmetics (올리브 오일의 에스터 교환반응 생성물의 TLC를 이용한 조성비 분석 및 화장품에의 응용가능성 평가)

  • In this study, the physicochemical properties, emulsifying capacity, moisture content and cytotoxicity of the composite material produced by transesterification reactions of the olive oil (olive oil esters) were investigated for cosmetic applications. Olive oil esters with short (S) and long (L) reaction times were studied. From the TLC-image analysis, composition ratios of the olive oil esters S were found to be 5.2, 24.1, 46.4, and 21.9% for mono-, di-, tri-glyceride, and fatty acid ethyl ester, respectively. Those of the olive oil esters L were 4.1, 24.7, 40.6, and 28.8% for mono-, di-, tri-glyceride, and fatty acid ethyl ester, respectively. The iodine value, acid value, saponification value, unsaponified matter, refractive index, and specific gravity were determined and purity tests were also carried out and normalized to establish standards and testing methods for using olive oil esters in cosmetics. To evaluate their emulsifying capacities, the O/W emulsion was prepared without surfactants and the formation of the emulsified particles were confirmed. After 5 days of applying the olive oil esters to human skin, the skin moisture retention was improved by 13.1% from the initial state. For the evaluation of toxicity on human skin cells, the olive oil esters showed 90% or more of the cell viability at $0.2-200{\mu}g/mL$. These results suggested that olive oil esters can be applied as natural/non-toxic ingredients to cosmetics industries.

Physicochemical and Functional Properties of Commercial Whey Powders (시판 유청분말의 이화학적 및 기능적 특성)

  • In order to understand some physicochemical and functional properties of whey powders, imported and domestic products were analyzed. The pH values of imported whey powder solution were $5.85{\sim}6.33$, while those of domestic $5.70{\sim}6.43$. The titratable acidity values of imported whey powders were $0.11{\sim}0.18%$, while those of domestic products $0.10{\sim}0.24%$. The contents of moisture, crude ash, protein, lipid and lactose of the imported whey powder were $1.31{\sim}2.10%,\;7.37{\sim}7.49%,\;11.54{\sim}12.14%,\;0.82{\sim}1.40%\;and\;64.43{\sim}72.66%$, respectively, while those of domestic products $2.11{\sim}2.81%,\;5.39{\sim}8.03%,\;10.41{\sim}20.03%,\;1.88{\sim}2.54%\;and\;54.32{\sim}68.42%$, respectively. The active SH group contents of imported whey powders were $0.36{\sim}0.82{\mu}M/g$, while those of domestic products ranged $0.29{\sim}4.83{\mu}M/g$. The protein solubility of imported whey powders were $54.50{\sim}82.26%$, while that of domestic products $26.93{\sim}68.44%$. The emulsifying capacity and the emulsion stability of imported whey powders were $5.83{\sim}12.53cm^{2}/g$ and $10.24{\sim}12.45%$, respectively, while those of domestic products $6.19{\sim}11.28cm^{2}/g$ and $7.28{\sim}9.93%$, respectively. The foam overrun and stability of imported whey powders were $4.34{\sim}5.54%$ and $0.49{\sim}0.66%$, respectively, while those of domestic products $2.56{\sim}4.24%$ and $0.15{\sim}0.35%$, respectively.

Antibacterial, Antioxidant, and Antiaging Effects of the Ethanol Extract of Dolnamul (Sedum sarmentosum) and the Production of the Oil in Water Cream (돌나물(Sedum sarmentosum) 에탄올 추출물의 항균, 항산화, 항노화 효과와 수중유적형 크림의 제조)

  • This study was performed to investigate the functional properties and characteristics of Dolnamul (Sedum sarmentosum) as a cosmetic ingredient. Lyophilized sedum powder was extracted with ethanol and stored at $-20^{\circ}C$ for the following experiments. Total polyphenol compounds of the ethanol extract of sedum (SE) was $27.98{\pm}0.34g/kg$(dry weight): epicatechin ($162.14{\pm}5.07mg/kg$), epigallocatechin ($55.99{\pm}2.49mg/kg$), and kaempferol ($47.96{\pm}3.02mg/kg$) were contained in the SE. The SE had organic radical scavenging capacity ($78.43{\pm}1.08%$) and metal reducing power (FRAP value $2.54{\pm}0.12$). FTC and TBARS assays confirmed that the SE inhibited the early stage of lipid peroxidation ($62.03{\pm}0.38%$) as well as the final stage of lipid peroxidation ($55.36{\pm}2.05%$), respectively. The SE (5 mg/mL, dry weight) was proved to have antibacterial effect on the growth of Propionibacterium acnes. The inhibitory percentages of the SE on elastase and collagenase activities were $38.94{\pm}7.09%$ and $78.94{\pm}2.49%$, respectively. Compare to the control group, the SE treated group induced an increase of Col3A1 expression and collagen production ($58.11{\pm}1.07%$). The oil in water emulsion (0.5% SE adding group) showed pH 6.88 and 1.47 g/mL of density. The hardness changes of the SE adding emulsions were not detected during the stored periods at various temperatures ($-20-45^{\circ}C$) for four weeks. It is considered that the SE has antibacterial, antioxidant, and antiaging activities.

Electrochemical Performance as the Positive Electrode of Polyaniline and Polypyrrole Hollow Sphere with Different Shell Thickness (껍질 두께가 다른 폴리아닐린과 폴리피롤 속 빈 구형체 양전극의 전기화학적 성능)

  • Polyaniline (PANI) and polypyrrole (Ppy) hollow sphere structures with controlled shell thicknesses can be easily synthesized than those of using a layer-by-layer method for cathode active material of lithium-ion batteries. Polystyrene (PS) core was synthesized by emulsion polymerization using an anion surfactant. The shell thicknesses of PANI and Ppy were controlled by amounts of aniline and pyrrole monomers. PS was removed by an organic solution. This structure increased in contact with an electrolyte and a specific capacity in lithium-ion batteries. But polymers have disadvantages such as the difficult control of molecular weights and low densities. These disadvantages were completed by controlled shell thicknesses. The amount of aniline monomer increased from 1.2, 2.4, 3.6, 4.8 to 6.0 mL, and the shell thicknesses were 30.2, 38.0, 42.2, 48.2, and 52.4 nm, respectively. And the amount of pyrrole monomer was 0.6, 1.2, 2.4 and 3.6 mL, the shell thicknesses were 16.0, 22.0, 27.0 and 34.0 nm, respectively. In the cathode materials with controlled shell thicknesses, shell thicknesses of the PANI hollow spheres were 30.2, 42.2, and 52.4 nm, and discharge specific capacities of after 10 cycle were ~18, ~29, and ~62 mAh/g, respectively. The shell thicknesses of the Ppy hollow spheres were 16.0, 22.0, 27.0 and 34.0 nm, and discharge specific capacities of after 15 cycle were ~15, ~36, ~56, and ~77 mAh/g, respectively. Thus, shell thicknesses of PANI and Ppy increased, the specific capacities increased.
