Perception of Youku (Domestically Produced Holstein Steer) Meat among College Students Majoring in Food and Nutrition Studies (식품영양 관련 전공 남녀 대학생의 육우고기에 대한 인식조사)

  • A survey was conducted to determine the perception of youku meat among college students majoring in food and/or nutrition. The survey participants were located nationwide, and the responses from the 2,454 students were analyzed. More male and higher grade students answered that they had heard about youku while only 20.0% had learned about Youku from class. Approximately 37.8% of the subjects recognized youku as 'dairy cattle which are too old to produce milk', 54.0% as 'all cattle grown for the purpose of meat', and 23.1% as 'all cattle except for Hanwoo'. Only 37.4% recognized youku correctly. Compared with the same quality grade, 25.3% recognized youku meat as being cheaper than imported beef, and only 25.6% of them recognized that youku meat has less fat than imported beef. As much as 83.3% of subjects did not know whether or not they were served youku meat, and 23.7% of subjects wanted increased availability of youku meat. As much as 22.9% of subjects opposed the increased use of youku meat, and the reasons were "it does not taste good" (18.1%), "it is not Hanwoo" (15.1%), "it is not sanitary" (13.1%), and "it is imported" (6.0%). The findings provide basic information on barriers regarding youku meat promotion among subjects who will be dieticians in food service or managers in purchase departments of catering companies in the future.

Subjectivity Type Analysis Study of Single-person Households on Meal Kit Products of Food Service Industry (외식업체 밀키트(Meal Kit)상품에 대한 1인가구의 주관적 인식유형 분석연구)

  • This study applies Q methodology that can extract subjective opinion or recognition structure for each single household whose Meal Kit products developed and marketed by catering companies according to the demographic structure that changes socially. Implications were analyzed. As a result of subjective recognition type analysis in this study, four types were derived, and each type was named according to its specificity as follows. Type 1 (N = 6): Appearance Assessment Purchase Type, Type 2 (N = 6): Price Comparison Purchase Type, Type 3 (N = 10): Brand Trust Purchase Type, Type 4 (N = 2) : Easy Cooking Purchase Type was analyzed for each unique feature type. In this study, we analyzed the subjective opinion or recognition structure of single-person households whose Meal Kit products are the main demand groups, and suggested the direction and improvement measures for future food product development and launch for single-person households through the analysis by type. The purpose of this study is to provide academic implications based on the analysis results.

A Study that Target Amount of Standardization by Menu Management Effect on the Job Efficiency (메뉴관리에 따른 조리 표준량 목표가 업무 효율성에 미치는 영향 연구)

  • The purpose of this study is to investigate how menu management effect on job efficiency at a hotel restaurant. Target standardization amount is needed to set for effective menu management to give quality menu toward customers to do that bring effective job efficiency. The survey is conducted to employees who are working at hotel restaurant. To verify the hypotheses, set this study up frequency analysis, reliability analysis, factor analysis, and linear regression analysis. The collected questionnaires were analyzed through statistical package SPSS WIN 12.0. Moreover, adjusting regression analysis using multiplying matrix was carried to obtain the results of effectiveness. The results show that menu management is required to apply the target amount of standardization in order to increase the job efficiency. At a menu planning phase, managers are expected to compose menu after having full consultation with employees. During the process, the target standardization amount can play a key role to improve job efficiency. Conclusively, to get effective customer service performance, it is necessary to set the target amount standardization if you are considering a trend and taste of customers who should be kept being adjusted or supplemented in line with a trend.

  • This study is about choice attribution of customers make in food and beverage events. The researcher provided practical plans to uplift food-related enterprises and activate management through surveys and positive analyses, targeting customers who use food services. First of all, all event plans must include customer demands, social changes, special qualities of the business, and market research. Second, low demand season must be customers will be induced to the events. Third, prediction for market variable and solutions must be thoroughly examined and plans should look into the future to maintain a long period of time. Fourth, sufficient communication between planners and employees should be made before the event starts, so that food and beverage businesses can gain trust and quality of event services.Fifth, immaterial service and visible goods/menus in business of food and beverage events must be closely matched. Sixth, menus introducing a variety of merchandise, quality of nutrition and health of the business should be developed. Also, events from countries(regions) should be hold to create a market of cultural exchange. Seventh, for hereafter event plans, feedbacks are needed concerning customers needs and demands through customer care, after the food and beverage events. Eight, faculty management for convenience, kindness, safety, and life preserver accommodations in parking areas must be made, as automobiles are necessaries for people in Mycar era. The ninth, off-line and on-line care through on-line business construction and production of homepage must be done, due to the fact that even the well-made events are bound to fail if they are not delivered to the customers.

Understanding consumer awareness and utilization of local food in Jecheon during the COVID-19 pandemic: a descriptive study (COVID-19 팬데믹 상황에서 제천시 로컬푸드에 대한 지역사회 소비자 인식과 이용 현황: 기술 연구)

  • Objectives: This study aims to explore consumer awareness and usage patterns of local food in Jecheon city during the COVID-19 pandemic, contributing to the establishment of the Jecheon City Food Plan. Methods: Surveys were conducted from July 24 to August 24, 2021, using a combination of web-link and self-administered methods for adults living in Jecheon city (n = 250). Descriptive analysis, t-test, importance and satisfaction analysis (ISA) of local food choice attributes were performed using SPSS Statistics. Results: Participants prioritized freshness when purchasing agricultural products. The freshness of Jecheon local food was the selection attribute with the highest consumer satisfaction and could provide purchase motivation. Approximately 73.6% of respondents understood the concept of local food, and 70% were familiar with Jecheon's local food. Notably, 94.8% expressed an intention to purchase but held negative views on selling local food in other areas. The need to increase the supply of local food to vulnerable populations and public school catering was highly recognized. The ISA identified 'affordable price', 'delivery service', and 'product information' as areas requiring improvement. On the other hand, 'freshness of products', 'quality for the price', and 'support for local farmers and economy' were identified as attributes to be maintained and strengthened. Conclusions: Consumers in Jecheon city recognized local foods as more than just 'consumer goods'. Our findings suggest the need for further research on local food revitalization and more comprehensive local food planning to enhance consumer satisfaction.

Quality Characteristics of Takju added with Seokim (석임을 첨가한 탁주의 품질 특성)

  • The objective of this study was to determine the quality and sensory characteristics of Takju using different levels of seokim (0, 2, 4 and 6%(w/w)) at each fermentation step. The pH of Takju was dramatically reduced according to fermentation period after 1 day and total acidity was shown dramatically increased. The sugar content was increased sharply immediately after fermentation, and showed a tendency to decrease for 2-7 days. Reduced sugar content was increased by up to 2 days of fermentation, and then it was decreased to 2-7 days of fermentation. The alcohol content of all samples were increased until the end of fermentation period. After 7 days of Takju fermentation within Seokim, the addition of 0, 2, 4 and 6% seokim resulted in alcohol content of 10.3, 10.9, 12.1 and 12.2%, respectively. In the present study for the production of Takju, however, 4%(w/w) of seokim and the increase of alcohol content was low (maximum 12.2%, v/v). In Takju fermentation, the best content of seokim was 4%.

A Study on the Damyang Area Restaurants in Bamboo food village (향토음식 특화 거리의 관광상품화와 활성화 방안 연구 - 담양 죽순 푸드빌리지를 중심으로 -)

  • This study intends to provide preliminary data for improving dining experience in the restaurants of Bamboo food village and help draw up guidelines for the improvement of these dining venues by surveying customer perception and satisfaction in 15-restaurants of the food village. The restaurants were surveyed mainly for satisfaction of the menu, especially, on the signature dishes of Damyang, "ddeokgalbi" (grilled short rib balls) and "daetongbab"-the grilled short rib balls and bamboo rice. The two dishes were more liked by people in the the 20- to 29-year age group with a score of 3.92 and 4.11, respectively. Although the 30-49 age group showed the highest satisfaction score on the fixed price menu, there was no statistically significant difference. The age group of 20-29 also showed the highest satisfaction on plating and table setting with a score of 4.09 and 4.04, respectively, and there was significant difference among age groups in this regard (p<0.05). All the age groups surveyed answered "time-honored taste" should be captured when working on menus, which suggests it should be the first choice for the restaurants in the food village when they develop their menus. When it comes to the restaurant environment, satisfaction on sanitary conditions was significantly different among the groups with a score of 4.21 given by 30-49 age group and 3.88 by the 50 and over group (p<0.05). In the category of service satisfaction, the two aforementioned age groups again showed significant difference in catering to customer needs with a score of 3.99 and 3.63, respectively (p<0.05), whereas welcoming customers and serving food was scored without statistical difference by age. Being asked what needs to be done to strengthen competitive advantage of the restaurants, all the age groups answered "taste" would matter the most while the 20 to 29 and 30 to 49 age groups picked "hygiene" and the 50 and over selected "table setting and ambience" next, which was statistically different with a p value of <0.05. Regarding the competitive advantage of the Korean restaurants in Damyang Bamboo food village, the first two younger groups (20 to 29 and 30 to 49) chose "table setting and ambience" and the eldest (50 and over) age group answered "location wise advantage," indicating significant difference by age. More than 80 percent of the people surveyed were willing to revisit the venues, which suggests improving restaurant environment in Bamboo food village and offering customers a better experience are very likely to build a image of culinary tourism for Damyang.

Current status of meal and snack service in elementary care classes in Gyeonggi area (경기도 지역 초등돌봄교실의 급·간식 운영 현황)

  • Purpose: This study aimed to investigate the current status of food service management in elementary care classes. Methods: A focus group interview with seven care class managers and a survey with 101 care class managers using a self-administered questionnaire in Gyeonggi province were conducted. Results: In the focus group interview, purchased meals and snacks were evaluated as low quality by the care class managers. Frequent use of frozen or processed food and products with low prices were also reported as problems. Care class managers were in charge of meal and snack planning without any guidelines or expert advices. The results of the survey show that most schools serve purchased snacks and meals. The average unit costs of one meal and snack were 4,062 and 1,463 Won, respectively. The average unit costs of snacks during semester (p = 0.015) and vacation (p = 0.039) were significantly lower in rural than urban areas. The percentages of schools that prepared nutrition standards for meal and snack planning in elementary care classes were only 7.4% and 10.9%, respectively. The meal menus were mostly provided by catering service companies, and the snack menus were planned mostly by the care class managers. Menu planning by the care class managers was more usual in rural than urban areas (p = 0.054 for meal planning and p = 0.008 for snack planning). Just 33.7% of schools introduced safety standards for food service in elementary care classes, and more than half of the respondents (56.4%) did not do a regular medical check-up. Only 33.7% of the respondents received education for food safety. Conclusion: These results show the necessity for establishment of detailed guidelines for food service in elementary care classes and for the introduction of a food safety and nutrition education program customized for care class managers.

A Study on the Effects of Demographic Characteristics of Consumers on Types of Preferred Menu: Focusing on Daegu and Gyongbuk Region (소비자의 인구통계학적 특성에 따른 선호메뉴 유형에 관한 연구: 대구.경북을 중심으로)

  • The purpose of this study was to investigate the effects of demographic characteristics such as gender, marital status, age, educational level, job and monthly income on the preferred menu classified by type of food, food material, cooking method, taste and food temperature. A survey was performed from the 5th to 10th of January, 2013 among consumers in such places as coffee shops and subway stations located in Daegu and Gyeongbuk region, and finally 307 data sets were used for analysis. The results of analysis showed that the strongest effects of demographic characteristics were observed in preferred menu classified by type of food(i.e. Korean, Western, Chinese, Japanese, buffet, herbal and instant foods), and the differences by marital status, age, educational level, job were statistically significant. In particular, the married consumers tended to prefer Korean and herbal foods, while the unmarried ones preferred western, Chinese, buffet and instant food. Moreover, the younger ones tended to prefer western, Chinese, buffet and instant foods, while the older ones preferred to eat Korean food. The younger unmarried ones liked beef and pork dishes, while the married ones over their forties tended to prefer vegetable dishes. The consumers less than or equal to their thirties tended to prefer roasted and fried foods compared to ones over their thirties.

Effects of APU Noise on Employees on the Ramp (APU 소음이 램프 근로자들에게 미치는 영향)

  • This study examined how the APU noise of an aircraft influences the work efficiency and stress of airport ramp workers. A survey of airport ramp workers was conducted and the results analyzed. In the demographic analysis, men outnumbered women - accounting for 86% of the survey target - and 80% of the respondents were found to be employees with less than 15 years of work experience. The occupational cluster of the total of 160 respondents included 41 aircraft maintenance workers, 70 ground staff (Cargo, Water and Waste services), 19 ramp coordinators, 18 ramp controllers and 12 catering Service workers. The ground staff were the most prevalent, constituting 44% of the occupational cluster. Regarding the APU noise, 74% of the respondents answered that the environment was "always noisy", while 26% answered that it was "sometimes noisy". 85% answered that they are sensitive to and put under stress by the APU noise, while the majority of the respondents answered that the APU noise degrades their work efficiency. In conclusion, this study examined the effect of APU noise on the work efficiency and stress of airport ramp workers by analyzing the survey data by Regression and Chi-square analysis.
