Nutritive and Economic Values of Corn Distiller's Dried Grains with Solubles in Broiler Diets

  • A feeding trial was conducted to investigate the effects of the addition of corn distiller's dried grains with solubles (DDGS) to broiler diets on growth performance and meat characteristics. A total of 3,200 d-old, unsexed Cobb-500 broiler chicks were randomly allotted to 16 pens (replicates), with 200 chicks per pen. There were four diet treatments (0, 5, 10, and 15% DDGS), and four replicates per treatment. From 8 to 21 d of age, the birds were fed broiler starter diets containing similar energy (TMEn 3,100 kcal/kg) and protein (21.6%) contents. From 22 to 35 d of age, they were fed grower diets containing similar nutrients (3,150 kcal/kg, 19.5% crude protein). No significant difference was found in growth performances among the four treatments. As the DDGS level increased, the concentration of unsaturated fatty acids in meat increased (p<0.05). The color scores of breast and thigh muscles were not significantly influenced by DDGS, however, the yellowness of shank increased significantly by the addition of DDGS. The hardness of breast and thigh meats was not affected by the addition of DDGS. It was shown that the use of DDGS in broiler diets up to 15% could decrease the feed cost by replacing part of corn and soybean meal, without any negative effect on growth performance and meat qualities.

죽초액의 첨가가 육성오리의 생산성 및 육질에 미치는 영향

  • 죽초액을 사료내 0%, 1%, 2% 및 4%로 첨가하여 5주 동안 급여했을때 육성오리의 생산성 및 육질에 미치는 영향을 조사한 결과는 다음과 같다. 증체량과 일당증체량은 죽초액 1%구에서 비교적 증가하였으나 유의성은 인정되지 않았다. 사료섭취량은 죽초액을 첨가함에 따라 약 간 증가하는 경향이였다. 도체중은 1%구가 비교적 증가하는 경향이였다. 죽초액 2%와 4%구에서 육성오리 가슴육의 단백질함량의 유의적인(P<0.05) 증가와 지방의 유의적인(P<0.05) 감소를 나타냈다. 콜레스테롤 함량과 TBA는 죽초액을 첨가함으로써 유의적(P<0.05)으로 감소하였다. 지방산 조성은 죽초액 2%구에서 콜레스테롤의 전구물질이며 포화지방산의 가장 높은 비율을 차지하는 palmitic acid가 죽초액을 급여함으로써 감소하는 경향인 반면에, 맛과 풍미에 영향을 주며 불포화지방산의 가장 높은 비율을 차지하는 oleic acid는 죽초액을 급여함으로써 증가하는 경향이었다. 관능평가 결과 맛과 풍미 그리고 외관에 있어 죽초액 1%와 2%구에서 유의적(P<0.05)으로 높게 나타났다. 장내 살모넬라균과 대장균의 수가 죽초액의 첨가수준의 증가에 따라 감소하는 경향으로 항균작용 효과가 있음을 알 수 있었다.

Changes of Cholesterol and Selenium Levels, and Fatty Acid Composition in Broiler Meat Fed with Garlic Powder

  • Effect of garlic on cholesterol and selenium (Se) levels, and fatty acid composition in the broiler chicks (Indian River) fed diet containing 0, 2, 4, 6, and 10% lyophilized garlic powder (GA) for 6 weeks were determined. Supplementation of garlic powder significantly decreased cholesterol level in broiler compared to the control (p<0.05). Se levels were not significantly different (p>0.05) among treatment groups. Percentages of $C_{16:0}$ and $C_{18:1}$ were gradually decreased ($C_{16:0}$;20.62% of total fatty acid in the control to 17.71 % in 10% GA; $C_{18:1}$;34.08% in the control to 30.71 % in 10% GA), while that of $C_{18:2}$ was increased from 28.69% in the control to 35.89% of 10% GA diet (p<0.0l). These results demonstrate some active components of garlic reduce cholesterol level and affect fatty acid metabolism.

사료에 Conjugated Linoleic Acid 첨가수준이 계육의 품질에 미치는 영향 (Effects of Various Levels of Conjugated Linoleic Acid Supplementation on the Quality of Chicken Meat)

  • 본 연구는 CLA를 육계사료에 첨가하여 그 급여수준(0, 0.5, 1.0, 1.5 및 2.0%)에 따라 CLA를 급여한 계육의 일반성분, 관능평가, pH, TBARS, 가열감량, 보수력, 전단력 및 육색의 변화를 검토하고자 육계 200수(Arbor Acre Broiler, male)를 공시하여 사양한 후 대퇴부위 근육을 이용하여 분석하였다. 계육의 일반성분 중에 조단백질 함량은 1.5%와 2.0% 급여구에서 유의적으로 높은 함량을 보였고(p<0.05), 수분, 조지방 및 조회분은 CLA 급여에 의한 영향은 없었다. 관능평가 결과 연도, 다즙성, 육향의 유의적인 차이는 관능검사요원에 의해 감지되지 못하였다. pH는 대조구보다 CLA 급여구에서 높게 나타났다(p<0.05). TBARS는 CLA 급여구에서 유의적으로 낮은 결과를 보였고, CLA급여량이 증가할수록 낮은 TBARS값을 나타내어(p<0.05), CLA는 계육의 저장성의 향상 가능성이 보였다. 보수성과 전단력 및 육색은 처리구간에 유의성이 없었다. 결론적으로 CLA를 급여함으로서 육질 변화 없이 2%까지 CLA 급여 가능성이 있는 것으로 판단되어 차후 CLA 급여에 의한 계육의 CLA축적에 관한 추가 실험이 필요하다고 생각된다.

농장 내 특정 음원 노출이 육계의 출하 체중과 닭고기 등급에 미치는 효과 (Effects of Music Enrichment on Live Body Weight and Meat Quality Grade of Broiler Chickens)

  • 본 조사는 육계에게 특정 음원에 장기간 노출시켜 출하 후 비정상계 비율 및 등급판정에 따른 A급 비율을 파악하고자 실시하였다. 음원을 제공하는 4개의 육계농가를 선정하여 클래식 음악을 입추일부터 출하일, 일출시부터 일몰시까지 동일한 시간동안 틀어주었다. 4개 농장에서 총 7회의 걸쳐 현장 조사를 진행한 결과, 음원 노출 여부와 상관없이 육계의 출하 체중은 평균 1.5 kg 내외를 나타내었으며, 처리간 차이는 발생하지 않았다(P>0.05). 음원 노출에 따른 닭고기의 신선도(토리미터 수치), 멍/파계 발생율, 이상율 및 A 등급 발생율에도 차이가 발견되지 않았다. 결론적으로 농장단위에서 육계에 특정 음원을 틀어주어도 출하 체중과 닭고기의 품질 등급에는 영향이 없는 것으로 조사되었다. 향후 특정 음원에 따른 육계의 행동, 스트레스, 면역 등 복지를 나타내는 지표에 대한 추가 연구가 필요하겠다.

사후 저장온도가 온도체 발골 육계 가슴육의 이화학적 특성에 미치는 영향 (Effects of Post-mortem Temperature on the Physicochemical Properties of Hot-boned Chicken Breast Muscles)

  • The objective of this study was to examine the effects of high and low chilling temperature on the water-holding capacity (WHC) and tenderness of hot-boned breast meat of broiler chickens. Breast meat was obtained from 32 broiler chickens within 15 min post-mortem (PM), and then divided into two groups. One group was chilled at $-1^{\circ}C$ and the other group was stored at $30^{\circ}C$ for 3 hr, and then all the samples were chilled at $2^{\circ}C$ until 24 hr PM. During the storage, their physicochemical characteristics were tested at 15 min, 3 hr and 24 hr PM. These included pH, R-values, cooking losses, sarcomere length, MFI, and shear force of the breast meat, none of which was different (p>0.05) between the two temperature treatments at $-1^{\circ}C$ and $30^{\circ}C$. However, sarcomere length was shortened more at $-1^{\circ}C$ than at $30^{\circ}C$, MFI was larger at $30^{\circ}C$ than at $-1^{\circ}C$, drip loss was greater at $30^{\circ}C$ than at $-1^{\circ}C$, and WHC was lower at $30^{\circ}C$ than at $-1^{\circ}C$(p<0.05). In brief, in terms of yield and tenderness, broiler breast meat stored at $-1^{\circ}C$ was superior to that stored at $30^{\circ}C$.

Use of Vitamin D3 and Its Metabolites in Broiler Chicken Feed on Performance, Bone Parameters and Meat Quality

  • The objective of this experiment was to assess the use of different vitamin D metabolites in the feed of broiler chickens and the effects of the metabolites on performance, bone parameters and meat quality. A total of 952 one-day-old male broiler chicks were distributed in a completely randomised design, with four treatments, seven replicates and 34 birds per experimental unit. The treatments consisted of four different sources of vitamin D included in the diet, $D_3$, $25(OH)D_3$, $1,25(OH)_2D_3$, and $1{\alpha}(OH)D_3$, providing 2000 and 1600 IU of vitamin D in the starter (1 to 21 d) and growth phases (22 to 42 d), respectively. Mean weight, feed:gain and weight gain throughout the rearing period were less in animals fed $1{\alpha}(OH)D_3$ when compared with the other treatments (p<0.05). No significant differences were noted among the treatments (p>0.05) for various bone parameters. Meat colour differed among the treatments (p>0.05). All of the metabolites used in the diets, with the exception of $1{\alpha}(OH)D_3$, can be used for broiler chickens without problems for performance and bone quality, however, some aspects of meat quality were affected.

  • 효모(Saccharomyces cerevisiae)의 급여가 육계의 생산성과 몇 가지 육질요인들의 개선효과가 있는지 알기 위하여 사양 실험을 실시하였다. 갓 부화한 160수의 수컷 병아리 (Ross strain)를 두 처리로 나눈 후, 각각 0%와 3.0%의 S. cerevisiae를 함유한 사료를 5주간 급여하였다. S. cerevisiae 급여구는 무급여구에 비하여 체중이 무거운 경향을 보였으나 유의성은 없었다. S. cerevisiae 첨가는 신선한 다리근육 (drumstick meat)의 전단력을 유의하게 감소시켰으나(P<0.05), 삶은 다리근육에서는 이러한 효과가 관찰되지 않았다. 흉근과 다리근육 및 피부조직의 산화 안정성은 S. cerevisiae 첨가에 의하여 유의하게 개선되었다 (P<0.05). 결론적으로 사료에 3% 수준의 S. cerevisiae 첨가는 계육의 연도와 산화 안정성을 개선시키는 것으로 나타났다.

Evaluation of black soldier fly larvae oil as a dietary fat source in broiler chicken diets

  • The present study was conducted to evaluate the effects of black soldier fly larvae oil (BSFLO) from the black soldier fly larvae (BSFL) as a partial or total replacement of soybean oil (SBO) on growth performance, fatty acid (FA) profile, and meat quality of broiler chickens from 1 to 5 wk of age. A total of 210 male broiler chickens (Ross 308) at one-day of age were randomly allotted to 3 dietary treatments (10 replicates and 7 birds/group): a basal control diet (CON), the basal diet in which the SBO was replaced by 50% (50 BSFLO) or 100% (100 BSFLO) of BSFLO. The growth performance, physical measurements and chemical traits of leg meat, and sensory analysis of breast meat were not influenced by diets. However, the relative weight (g/kg) of gizzard of CON was significantly higher (14.85, 12.52, and 13.02 for CON, 50 BSFLO, and 100 BSFLO; p < 0.05) than that of other treatments. As expected, the FA profile of breast meat was affected by BSFLO inclusion. The proportion (%) of saturated fatty acid (SFA) was increased (27.16, 27.58, and 28.72 for CON, 50 BSFLO, and 100 BSFLO; p < 0.05) by BSFLO inclusion and the percentage (%) of MUFA was also increased (43.36, 44.58, and 48.55 for CON, 50 BSFLO, and 100 BSFLO; p < 0.01). On the contrary, the proportion (%) of PUFA was decreased (29.49, 27.84, and 22.74 for CON, 50 BSFLO, and 100 BSFLO; p < 0.01). In conclusion, the present study suggests that the replacement of BSFLO did not show an adverse effect on growth performance and it could be an ingredient as a dietary fat source for a broiler diet.

두충잎의 첨가가 육계의 성장 및 육질에 미치는 영향 (Effects of Dietarv Supplementation of Eucommia ulmoides Oliver Leaves on Performance and Meat Quality in Broiler Chicks)

  • The present study was conducted to investigate the effects of dietary Eucommia ulmoides Oliver leaves(EUOL) on the growth performance and meat quality of broiler chicks. The dietary treatments consisted of the control diet(corn-soybean meal basal), and EUOL 2, 4, and 6% diets. The latter three diets were prepared by adding 2, 4, and 6% EUOL to the control diet. Ninety-six Arbor Acre male broiler chicks were randomly allotted to 16 pens; four pens per treatment and 6 birds per pen. The growth performance and carcass weight of broiler chicks fed EUOL diets were not significantly different(P>O.05) from the control birds. Also, the muscle color degrees(L*a*b *)in brolier chicks were similar to each other. The blood concentrations of protein, sugar and glutamic-pyruvic transarninase(GPT) were not different(P>O.05) between control and treatment groups. The blood total cholestrol content was significantly(P<0.05) decreased by the addition of EUOL. However, the addition of EUOL did not change the muscle components significantly. The bone hardness of broiler chicks fed EUOL was significantly(P<0.05) higher than that of control chicks.
