Dog meat was begun to be edible by the Chinese, Japanese, the French, Belginan, German Philippines Vietnamese, North-Americans African-Indians Canadian-aborigines Alaskan aborigines including Kor-eans. According to the record, Korea has a long history to have eaten dog meat from the era of Sam-kug(three kingdoms BC 57∼AC 668) and so there are numerous languages proverbs, and customs re-lated to the dog meat. Over the long history there have been many records and recipes about the edib-leness of dog meat. But at present time only the way of cooking such as Bosintang(a soup) Suyuk(a boiled meat) Duruchighi(boiled meat added spice and slightly roasted) Muchim(boiled meat added by spice and mixed) Gaesoju(an extract) Jeongol(boiled meat mixed with spices vegetables and water on the pot) remains. Koreans eat dog meat following the traditional customs n the Boknal(hottest day in summer). Also the areas of Buyo. Sochon, Boryong adn Chongyang of Chungnam province and the ad-jacent areas like Kongju, Iksan, and Nonsan have customs to kill the dog and offer dog meat to the gue-sts in time of small or big occasions such as funeral ceremony Hoigap(anniversary of one's 60th birth-day) and one's birthday. This range of customs is expanding larger and larger. These areas are the cen-ter of past Baekche(BC 57∼AC 660). In spite of this it is unreasonable, and excessive action for foreig-ner to fine fault with the dog meat or Korean food culture.
We investigated the effects of bean sprouts (Glycine max), dropwort (Oenanthe javanica), and radish (Raphanus sativus var. hortensis for. acanthiformis) extracts on alcohol dehydrogenase (ADH). The extracts from three kinds of vegetables were prepared by extracting with boiling water, distilling water, and ethyl alcohol. Among extracts, boiling water extract showed the highest activating effect on ADH, respectively and distilled water extract had a greater effect on ADH activation than that of alcohol extract. The ADH facilitating effect of bean sprout extract by distilled water was significantly higher than dropwort or radish, hut the effect of the bean sprout extract by ethyl alcohol was lower than others. The facilitating effect on ADH of mixture extracts of bean sprout and dropwort were mixed at 1 : 1 mixture of boiled-water extract showed the highest effectiveness. And bean sprout extract separated below 3000 molecular weight (MW) range of extract fraction had greater ADH activity than large MW parts.

In this research, we screened for glucosyltransferase (GTase) inhibitors that effectively prevent the dental caries from 420 kinds of boiled water extracts of herbs and wild plants and searched for GTase inhibitory activities. Among them, 13 kinds of hot water extracts had high GTase inhibitory activities and especially, we focused on Foeniculum vulgare which showed the highest inhibitory activity on GTase. The boiled water extract of F. vulgare was stable at high temperature and showed as a mixed type of competitive and uncompetitive inhibition kinetic behavior. It did not have antibacterial effect on Streptococcus mutans and had inhibitory activity on GTase. Specially, in the clinical trial, the group treated by boiled water extract of F. vulgare showed more decrease of plague index at 4.8 point than untreated group. These results suggested that boiled water extract of F. vulgare can effectively suppress the plague formation as it inhibits the GTase activity.
Objectives : The purpose of this study was to evaluate boiled rice made from unpolished rice, Job's Tears, and extract from medicinal herbs mixture (HGMCJE) for hypoglycemic effect on STZ-induced diabetic rats. Methods : In the response of glucose tolerance, control and diabetic rats groups was intubated with glucose and HGMCJE. Furthermore, boiled 100% polished rice (P rice), boiled unpolished rice mixed with white rice and Job's tears (polished rice:unpolished rice:Job's tears=60:25:15, UPJ-rice), and UPJ rice made from HGMCJE (HUPJ-rice) were intubated to control and diabetic rats groups, respectively. Then, blood glucose concentration, incremental blood glucose, and area under the curve (${\Delta}AUC$) were analyzed in every experimental groups, and these data were used to evaluate glycemic response. Results : When glucose and p rice were intubated in control and diabetic rats, blood glucose concentration, incremental blood glucose, and incremental response ${\Delta}AUC$ of diabetic groups were significantly increase than control groups. But administraion of a single dose of extract from medicinal herbs mixture and HUPJ-rice in control and diabetic rats inhibited the remarkable increase the level of postprandial blood and ${\Delta}AUC$ at 60, 90, and 120 min Conclusions : These results indicate that when intubation of glucose and P rice were out of control on postprandial glycemic response in diabetic rats. But postprandial glycemic response was well-modulated by administrating a single oral dose of HGMCJE and HUPJ-rice. Therefore, HGMCJE can be developed as an effective hypoglycemic agent.
This study was conducted to evaluate the antioxidative and anti-inflammatory effects of boiled pork powder (BPP) and hot water extract powder (HWEP) from 4 cuts of meat from Landrace × Yorkshire × Duroc (LYD). The highest DPPH radical scavenging activities determined were from BPP of Boston butt (13.65 M TE) and HWEP of loin (19.40 M TE) and ham (21.45 M TE). The 2,2-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging activities of BPP from shoulder ham (39.28 M TE) and ham (39.43 M TE) were higher than those of other meat cuts, while HWEP of ham exhibited the highest ABTS radical scavenging activity. A higher oxygen radical absorbance capacity was determined for BPP from ham (198.35 M TE) and in HWEP from loin (204.07 M TE), Boston butt (192.85 M TE), and ham (201.36 M TE). Carnosine content of BPP and HWEP from loin and were determined to be 106.68 and 117.77 mg/g on a dry basis, respectively. The anserine content of BPP (5.26 mg/g, dry basis) and HWEP (6.79 mg/g, dry basis) of shoulder ham exhibited the highest value as compared to the extracts from the other meat cuts. The viability of RAW 264.7 cells was increased with increasing HWEP from loin and ham treatment. In addition, the expression of IL-6 and TNF-α was significantly reduced by HWEP from loin and ham, in a dose dependent manner. These results suggested that boiled pork and hot water extract of pork have antioxidative and cytokine inhibitory effects.
For selective elimination of salt in the boiled extract of baby neck clam (Tapes variegata, BEBNC), electrodialyzer was used and the desalination conditions of BEBNC were determined at various concentrations, pH's and volumes of BEBNC. The ion-exchange membrane with a molecular weight cut off 100 Da was used for desalting of BEBNC. The desalination times on BEBNC concentrations of 0.5% and 4% were 100 min and 170 min and the final desalting ratio was above 90%. 1'he desalination of BEBNC at pH 4.0 was 12% higher than that at pH 9.0 for 60 min. The electrodialysis process could remove above 90% of the initial salt content in 2% BEBNC of 1 L for 80 min. The results obtained prove that electrodialysis is a practical solution to the problem of selective elimination of salt from BEBNC.

Antioxidant activity of the ethanol extract from boiled-water of Hizikia fusiformis (EBH) were compared with those of BHA, L-ascorbic acid, gallic acid, caffeic acid and (-)-catechin. The free radical scavenging ability against DPPH (1,1-diphenyl-2-picrylhydrazyl), authentic peroxynitrite and reducing power were measured as indices of antioxidant activity. EBH showed the potent DPPH radical and peroxynitrite scavenging activities, showing 85.23 and 96.97% at final concentration of $1000{\mu}g/ml$, respectively. The reducing power increased with the increasing amount of EBH (final concentration of 1, 10, 100 and $1000{\mu}g/ml$). Total phenolic content of EBH was 588 mg (-)-catechin/g at the final concentration $1000{\mu}g/ml$. Total phenolic contents correlated with DPPH radical scavenging activity $(R^2=0.766)$ and reducing power $(R^2=0.944)$. These results suggested that EBH could be a natural antioxidative source containing antioxidative components.
The herb of Geranium sibirium L, a drug knwon as "Chui Sonni Poul" distributed widely, has been used as a folk-medicine for the treatment of diarrhea. The dried entire herb is boiled with methanol and methanol is distilled of from the filtered methanol extract under reduced pressure. Then the extract is boiled with water and filtered off. From the filtrate, the following substances are isolated and identified by treating with organic solvents as ether, ethyl acetate, and etc.: 1. Gallic acid: a colorless needle crystal which is soluble in alcohol and water. mp.235.deg. C, positive (dark blue) against the ferric chloride reagent. 0.76 percent of gallic acid is yielded from the herb. 2. Quercetin: a light yellow crystal. mp.194.deg. C. negative against the ferric chloride reagent. 3. Ellagic acid: a light yellow crystal which is insoluble in ehter and acetone and slightly soluble in alcohol. Positive (blue) against the ferric chloride reagent. The crystal obtained by recrystalisation from pyridine, does not melt by 360.deg. C. Represent a yield of 0.03 percent from the herb. 4. Crude tannin: a approximately 7.6 percent of crude tannin is yielded by treating with ethyl acetate. gallic acid and querceetin are yielded by hydrosis with dliute sulfuric acid. Based on the above results, the following suggestion could be recommendable; Geraed in the Japanese Pharmacoeia VI.acoeia VI.
Objective : We searched and collected the various ways of taking medicine in Naegyeong, Dongeuibogam and studied the possibilities to apply the traditional ways of taking medicine to the current way of taking medicine. Method : We collected all the ways of taking medicine in Naegyeong and classified the ways according to the relative importance, urgency, pathosis, time of disease, and, the conditions of patients. Result : Medicinal forms are decoction, pills, trituration, and thin porridge. Various kinds of water and the prepared rice forms were used. A single herb was boiled and its water was used to take the medicine. Also, liquor and honey were used to take medicine. More than two herbs or special prescriptions were boiled and the extract water was taken. The same medicine was taken by different boiled water according to the condition and age of a patient, time, acute or chronic illness, and, severe or mild disease. Conclusion : There are a lot of pills and trituration prescriptions in Naegyeong, Dongeuibogam. Water, various rice preparations, and several herbs are used to take these prescriptions. The reason is that these ways of taking medicine promote the medicinal effect and fast treatment to maximize the medicinal effects. From now on, the in-depth and mutilple studies are needed based on this research.
This study was conducted to examine quality stability during storage periods, herb high pressure boiled extract(HPBE)(T$_1$), Korean Ogol chicken HPBE(T$_2$), cross-bred Ogol chicken HPBE(T$_3$), cross-bred Ogol chicken meat hydrolyzed with flavourzyme(T$_4$) were pouch packaged and stored at 37$\^{C}$. After each period, TBARS, VBN, pH, total microbial counts and sensory properties were determined and the results were as follows. There was no noticeable difference in TBARS value until 42 days at the ambient environment among the treatments, but T$_4$ showed a significantly higher TBARS value at 56 days. There was a tendency for a higher protein decomposition as storage time increased, and in particular at 56 days, T$_1$ group showed a significantly higher values than other groups. Given to the sensory properties in which overall sensory preference decreased after 42 day, it was considered that the maximum storage time for the extract was less than 42 days at 37$\^{C}$.
