The main route of exposure of the human population to polychlorinated dibenzop-dioxins(PCDDs) and polychlorinated dibenzofurans(PCDFs) is through the diet. However in Korea, there are few studies on PCDDs/PCDFs levels in environmental samples and foods. The purpose of this study is to analyze concentration of PCDDs/PCDFs in Korean retail foods and to estimate dietary daily intake of them. 9 samples from animal food and 10 samples from plant food were analysed for PCDDs/PCDFs. Concentrations of PCDDs/PCDFs ranged from 0.02(milk) to 5.39(anchovy)pg/g. TEQ levels appeared in order of fish/shellfish, meat, vegetable, cereal, fruit and milk, and these values ranged from 0.0008 to 0.3153pgTEQ/g. The daily intake of PCDDs/PCDFs via food was calculated to be about 37.7pgTEQ/day and these values are equivalent to 0.75 pgTEQ/kg b.w./day, under consideration of 50kg for body weight. The daily intake of PCDDs/PCDFs via food was lower than that in other countries. From these results, it is important to note that fish/shellfish intake is one of the main sources of PCDDs/PCDFs exposure in Korea.
The primary purpose of this research paper is to study the nutrition intake status of high school students and their physical growth and development. Further, it made an attempt to find and define nutritional problems and assist in their growth and development through proper nutritional management. One hundred students in both sexes, first year grade in senior high school were provided with questionnaires. For six days the respondents filled out the questionnaires. They were asked to keep record of what they ate each meal. Their nutritional intake were analyzed in accordance with what they ate. Findings, conducted on percentage, CR test, t test, and F test, were as follows: 1. For the living circumstance a) Average numbers of brother and sister in sampled family were four. b) Seventy to eighty percent of the students were brought up by mother's milk at their infants and approximately 40% of students were weaned at the age of 7 to 18 months. c) Fifty percent of the respondents revealed irregulity in their meal time. d) Monthly average expenditure for daily food reached $20{\sim}40%$ out of total income. e) The most favorite foods reflect as follows: The most favorite main dish is boiled rice and side dish beaf. Fruits. juice, milk, ice cream are more popular snack among whole students. 2. Nutrition survey a) Calory sad nutrients were found to be below the recommended level, especially in calcium, vitamins A, $B_2$ and C. b) The total calory intake were composed of 73% from carbohydrate, 14% from protein and 13% from fat in the case of boys. The girls were 65%, 14%, 21% respectively. c) Both boys and girls in their animal protein intake averaged about 33% out of total protein intake. d) Meat consumption of the majority respondents were proportionate in $10{\sim}20%$ in their total food consumption. 3. The result of statistical analysis were as follows: a) Statistical significant differences in the relationship between the calory intake and physical growth index were observed at the level of p<0.05. b) Statistical significant differences in the relationship between the protein intake and physical growth index were observed at the level of p<0.05. c) Statistical significant differences in the relationship between meal time and physical growth index were observed at the level of 0.02<0.05. d) No statistical significant differences in the relationship among calory, protein intake and school records as well as intelligence were found. The experiment indicated that there is a direct relationship between nutrition and the physical growth and development, whereas There seems to be an indirect relationship between nutrition and intelligence.

During the period of March, 1976 to December, 1976, 48 raw milk samples were taken from dairy cows at 48 different dairy farms in Korea analyzed by gas liquid chromatography to determine the seasonal variation of the amount of organochlorine pesticide residues. At the same time 80 market milk, 10 beef and 10 pork samples were analyed by the same procedure for checking residual levels. The results were summarized as follows; 1. Milk samples from 17 dairy farms (36 per cent of tatal) were shown to be contaminated with various organochlorine pesticides. The residua lrate of ${\gamma}-BHC$ in tested samples were 44per cent (14 sam ples) that of aldrine was 28 per cent (9 samples) and those of pp'-DDT, dieldrin and heptachlor were 9.3 percent (3 samples) respectively. 2. In raw milk pp'-DDT, ${\gamma}-BHC$, aldrin, dieldrin and heptachlor were detected, and aldrin, dieldrin and heptachlor were detected in the market milk. Any kinds of organochlorine pesticides were not detected in beef samples but dieldrin and heptachlor were detected in pork samples. Average residual values of aldrin, dieldrin and heptachlor in the market milk were 0.0077 ppm (0.0000~1.1100 ppm), 0.0001ppm (0.0000~0.0500 ppm) and 0.0008 ppm (0.0000~2.0520 ppm), respectively, and those of dieldrin and heptachlor in pork samples were 0.0010 ppm (0.0000~0.0100 ppm) and 0.0033 ppm (0.0000~0.0330 ppm). respectively. 3. Residues of organochlorine pesticides in raw milk were extremely variable; in fact pp'-DDT was detected in milk samples from A, B, C and D districts and endrin was not detected from all districts. The ${\gamma}-BHC$ and dieldrin were detected at the district of A, C and D, aldrin at the districts of A and C and heptachlor at the districts of both A and D. 4. Seasonal trends of residual values of organochlorine pesticides were, in general, noticeable. The residual level was much higher in Spring than in other seasons and showed the tendeney of decrease from spring through summer and autumn generally; in the case of pp'-DDT average residual values were 0.0121 ppm in spring, 0.0022 ppm in summer and not detected in autumn. But in winter ${\gamma}-BHC$ and aldrin residues were increased a little. Residual values in raw milk (when cow are fed on hay and silage) were appeared higher in winter than the other seasons. 5. Residues of organochlorine pesticides in raw milk were not related in respect to hygienic conditions of dairy farms pp'-DDT and heptachlor were, in general, detected in all farms and aldrin was more detected in milk from well sanitated farms than poor sanitated ones.
This study was conducted to investigate the effects of supplementation diets of pine needle powder on performance, proximate composition, carcass characteristics, blood cholesterol concentration, TBARS (thiobarbituric acid reactive substance), WHC (water holding capacity), and shear force of chicken meat. Broiler chicks were fed diets for five weeks containing 0% pine needle powder (Control), 0.3% pine needle powder (T1), 0.6% pine needle powder (T2), and 0.9% pine needle powder (T3). Performance was no significant difference among treatment groups, but mortality was decreased in diets by the supplementation of pine needle powder than that of T1 and control. The moisture, crude protein, crude fat, and crude ash were no significant difference. The liver weight and abdominal fat was significantly decreased by the supplementation of pine needle powder compare to the T1 and control (P<0.05). The total cholesterol and LDL-cholesterol concentration of control was higher than treatment groups, and the HDL-cholesterol concentration and glucose of control was lower than treatment groups (P<0.05). The TBARS value was significantly decreased by the supplementation of pine needle compared to the control (P<0.05). In conclusion, these data indicate that 0.6% pine needle powder supplementation (T2) was most effective in decreasing mortality, total cholesterol and LDL-cholesterol and increasing HDL-cholesterol concentration.

A selective method of high performance liquid chromatography with UV detector has been applied to determine 4 tetracycline antibiotics in the animal food, simultaneously. The targets were chlortetracycline (CTC), doxycycline (DC), oxytetracycline (OTC), and tetracycline (TC) that are used routinely in veterinary medicine for prevention and control of disease. Food samples were beef, pork, chicken, milk, whole egg, flatfish (Limanda yokohamae), jacopever (Sebastes hubbsi), seabream (Chrysophrys major), eel (Anguilla japonica) and lobster (Hommarus americanus). After extracting food samples with 20% trichloroacetic acid and McIlvaine buffer, they were purified by a $C_18$ SPE cartridge with 0.01M methanolic oxalic acid solution. The concentrated residue was re-dissolved in methanol, filtered, cleaned up and analyzed on a $C_18$ column. The mobile phase was a mixture of 0.01M oxalic acid and acetonitrile with a gradient ratio from 85:15 to 60:40. The UV wavelength was 365 nm. The overall recoveries were ranged from 71% to 98% and the limit of detections were 0.022 for CTC, 0.012 for DC and OTC and 0.009 mg/kg for TC at signal/noise > 3, respectively. As results, CTC, DC and TC were not detected in all selected food samples, however, OTC was detected in meat and fishes. The determined level of OTC was 0.04 ppm for pork, 0.17 ppm for flatfish and 0.05 and 0.08 ppm for jacopever, that were within the Maximum Residue Limits (MRLs) in the food.
Due to the high incidence of cancer and cancer-related mortality in Korea, there is increased concern and psychological anxiety about this disease, leading to increasing numbers of cancer studies. Despite these, the trend of the cancer incidence rate has shown a significant increase. The detection of colorectal cancer, which has a high incidence rate, often tends to be delayed, causing a high mortality rate. Therefore, the prevention of colorectal cancer has become an important emergent issue. The cause of this cancer has not been confirmed. However, it may be attributable to westernized dietary patterns, which include consuming a high quantity of red meat. Consumption of dietary fiber promotes the production of butyrate short-chain fatty acids by enteric bacteria. In the treatment of cancer, anticancer medications have been shown to lead to the apoptosis of tumor cells, and a strong relationship between apoptosis mechanisms of tumor cells and cancer treatment has been confirmed. The results of many studies have confirmed that butyrate can directly promote the apoptosis of colorectal cancer cells. Therefore, increased consumption of dietary fiber, which promotes the production of butyrate shortchain fatty acids, can be expected to have an effect on the prevention and treatment of colorectal cancer.
Cronobacter species (Cronobacter spp.), previously known as Enterobacter sakazakii, are gram negative food borne pathogenic bacteria. They pose a very high risk of infection to neonates and immuno-compromised individuals and can affect the human central nervous system. Consequently, survivors often suffer from severe neurological impairment including hydrocephalus, quadriplegia, and developmental delays. Cronobacter spp. were not only isolated from plant food and products such as cereals, fruits, vegetables, legume products, herbs, and spices but also from animal source foods such as milk, meat, fish, and products made from these foods. Therefore, rapid detection of Cronobacter spp. is essential for food safety. Many detection methods have been developed since the Cronobacter spp. were first reported. However, the development of more rapid, sensitive, and easy-to-use detection methods for the Cronobacter spp. is required. In this review, our aim was to study and compare the available detection methods for Cronobacter spp., including culture-based, molecular biology-based, and immunology-based methods. This study will contribute to the development of new and rapid detection method for Cronobacter spp.

The Mongolian ger is ideally suited to the mongol's steppe climate and the nomadic way of life. This is a multipurpose dwelling which can be easily collapsed, transported to another place and put up again fully preserving its original shape. The pastoral nomadic ger has two key components: the wooden framework and the felt cover. The wooden parts are the walls(khana), the long poles(un), the smoke escape(toono) and its supports(bagana). One wall consists of 10-15 branches of willow tree. each about 1.5m high bound together in a way making it possible to fold it for transportation and then unfold it like an accordion. The unfolded walls are connected to form a circle. The long poles(un) are fastened to the upper part of the walls, with the other end passed through the toono hole, the only sky window and smoke escape through it from the ger. The toono is propped up by two posts, called bagana. All this forms the wooden framework of the ger, which is covered with felt. When the herders fire up their metal stoves, the temperature inside the ger becomes quite comfortable. Because the nomads live in a climate where there is only one growing season in a year, they do not make long migrations to new pastures. Livestock subsist on standing vegetation for eight months of the year. The basic pasture migration strategy is to leave enough standing vegetation at the end of the growing season in September to suffice until the new growth appears the following May. Mongolians use a type of compressed tea leaf that is called "brick" tea in English because it is rock solid and roughly the shape of a brick. And they consume a larger percent(88%) of fat from animal products such as meat, milk, butter, and cheese than any other people in the world. Milk products made from the milk of sheep, yak, and goats are major foods in the nomad's diet, but they are produced mainly in summer when all the animals are lactating. Mongolians made their special nomadic food culture on the steppe.
Horse fat was vacuum-extracted from fatty tissues of Jeju and Halla horse meat and their physicochemical properties were compared to those of commercial lard and beef-tallow. For color, ${\Delta}E$ was found to be decreased when crystallized. Although acid values of horse fat were higher than those of lard and beef-tallow, p-anisidine and totox values were lower. The iodine value of beef-tallow was the lowest (44.61), and those of horse fat and lard were similar (57.53-57.74). Only horse fat contained ${\alpha}-tocopherol$. The contents of ${\gamma}-tocopherol$ in Jeju and Halla horse fat, lard, and beef-tallow were 7.08, 4.57, 2.13, and 1.91 mg/kg, respectively. Palmitoleic acid ($C_{16:1}$) was found in horse fat. Melting and crystallization curves of horse fat displayed two endothermic and exothermic peaks which were differentiated from lard and beef-tallow. These results indicated that horse fat demonstrates different physicochemical properties compared to lard and beef-tallow, when applied to various types of lipid products.

This study was conducted to investigate the detection rate and serotypes of Salmonella spp. in conventional and welfare poultry farms. Ten welfare (five layer and five broiler) and 15 conventional farms (five layer and ten broiler farms) were visited to collect environmental samples for identification and serotyping of Salmonella spp. The detection rate of Salmonella spp. was higher in the welfare farms than in conventional farms in both layer and broiler farms. In layer farms, Salmonella spp. was detected in 0.76% (1 out of 130) of samples from one of five welfare layer farms, but was not detected in the five in conventional layer farms. No significan ifference (P>0.05) was observed between the welfare and conventional layer farms. In broiler farms, Salmonella spp. was detected in 10.5% (21 out of 200) of samples from four of five welfare broiler farms and 3.5% (7 out of 200) of samples from five of ten conventional broiler farms, and a significant difference (p <0.05) was observed between the welfare and conventional broiler farms. Among 29 Salmonella spp. isolates, five isolates were serotyped to Salmonella enterica subsp. Enteritidis (n=2), Salmonella enterica subsp. Grampian (n=1), Salmonella enterica subsp. Virchow (n=1), and Salmonella enterica subsp. Senftenberg (n=1). These results suggest that microbial risks could be higher in welfare farms than in conventional farms due to easy access to open-air areas, environmental enrichment, and reduced use of antibiotics. Therefore, continuous monitoring and surveillance for Salmonella spp. is necessary to improve the microbiological safety of poultry meat.
