50세 이상 남성의 식품 및 영양소 섭취실태와 골밀도와의 관계 (Associations Between Daily Food and Nutrient Intake and Bone Mineral Density in Men Aged 50 Years and Older)

  • Osteoporosis is a rising problem, as the older age population is increasing due to prolongation of life. Genetic and environmental factors play key roles in bone metabolism, and diet is also an important factor. We investigated the relationship among factors affecting bone mineral density (BMD), including daily food intake and nutrient intake in men aged >50 years. Seventy-eight men, who visited the health promotion center at one of the university medical centers, were divided into normal and osteopenia groups according to their BMD. The body weight of the normal group was significantly higher than that of the osteopenia group. The osteopenia group showed significantly higher carbohydrate intake and lower calcium and vegetable calcium intake compared to those in the normal group. Lumbar spine BMD was negatively correlated with energy, fat, vitamin B1, and sodium intake in the normal group. Additionally, femoral neck BMD was negatively correlated with total animal protein, energy, protein, fat, phosphorous, iron, animal iron, potassium, vitamin B1, B2, B6, and niacin intake. Lumbar spine BMD was positively correlated with fruit, calcium, vegetable calcium, animal calcium, and vitamin C intake in the osteopenia group. Femoral neck BMD was negatively correlated with meat, dairy product, total animal protein, plant protein, animal protein, vitamin A, and cholesterol intake. A stepwise multiple regression analysis revealed that several dietary factors affected BMD, including energy, fat, vitamin B1, B2, B6, niacin, sodium, protein, iron, animal iron, phosphorous, potassium, and animal protein in the normal group and zinc, calcium, vegetable calcium, animal calcium, vitamin C, fruit, protein, animal protein, meat, dairy product, carbohydrates, cholesterol, vegetables, mushrooms, and seasonings in the osteopenia group. These results indicate that adequate nutrient intake plays an important role maintaining optimum bone health in middle aged men.

짠맛 미각 판정 도구 개발 및 타당성 검증에 관한 연구 (Study on the Development and Evaluation of Validity of Salty Taste Assessment Tool)

  • The purpose of this study was to assess and evaluate salty taste preferences. Samples for the salty taste test were made by adding sodium chloride to soybean sprout soup at five different concentrations: 0.08% (unsalty) ; 0.16% (slightly unsalty) ; 0.31% (neither unsalty nor salty) ; 0.63% (slightly salty) ; and 1.25% (salty). Over 4,210 subjects were randomly selected and tested over a three-year period from 2005 to 2007 in Daegu. The results of the taste test were as follows: Forty-five percent of the subjects preferred soup with a salty taste and slightly salty taste. Most subjects preferred soup with a 0.31% concentration of sodium chloride. There were positive relationships between intensity and preference in 0.08%, 0.16%, and 0.31% concentrations, but there were negative relationships between intensity and preference in 0.63% and 1.25% concentrations (p<0.01). Upon examining a relationship between the taste assessment results and salty eating attitude scores, it was found that the subjects who preferred slightly salty and salty taste showed higher total scores in terms of habitual preference for/enjoyment of eating salty foods than the other groups. Comparing the taste test results with the subjects' stated preference, it was found that 70.3% of the subjects who were classified as preferring salty taste recognized this preference and 53.3% of the subjects who were classified into the population than tends to eat slightly salty food responded that they also tend to prefer a salty taste. Based on these results, this salty taste assessment study can be used as a practical and useful nutrition education tool for assessing and possibly reducing salt intake.

초등학생 대상 싱겁게 먹기 영양교육 프로그램의 개발 및 효과평가 (Development and Evaluation of a Nutrition Education Program on Sodium Reduction in Elementary School Students)

  • This study was to develop and evaluate a nutrition education program to reduce dietary sodium. The school children (218 boys, 226 girls), from 8 elementary schools in the city of Daegu, Korea, were involved in this study. This research was based on the data from two groups of elementary school children, the "education" group (n = 240), and "no-education" group (n = 204). Educational media and programs were developed to educate the education group for four weeks and were presented on the web (www.saltdown.com). After education, the preference for a non-salty taste in the education group increased 10%, compared with those who preferred a non-salty taste before education. There was a significant change away from a preference for a salty taste and a rise in the mean score for nutrition knowledge and dietary attitude in the education group compared to the no-education group (p < 0.05). This study indicates that school children can reduce their dependency on preference for a salty taste and change their high-salt dietary behavior after the education.

이온성 액체를 이용한 메탄 하이드레이트 생성 촉진효과 연구 (Study on the Promotion Effect of Ionic Liquid on CH4 Hydrate Formation)

  • 본 연구에서는 가스 하이드레이트 생성 시 첨가된 이온성 액체가 미치는 생성속도의 향상효과를 조사하였다. 이온성 액체로는 Hydroxyethyl-methyl-morpholinium chloride (HEMM-Cl)을 사용하였다. 메탄 하이드레이트의 상평형 곡선을 구하고 생성유도시간과 메탄가스의 소모량을 측정하였다. 20~20,000 ppm의 HEMM-Cl을 준비하여 하이드레이트가 생성될 수 있는 70 bar, 274.15 K 조건에서 실험을 수행하였다. 하이드레이트 생성 속에 대한 비교를 위해 순수한 물과 대표적인 촉진제인 sodium dodecyl sulfate를 같은 조건에서 실험하였다. 실험 결과, 이온성 액체인 HEMM-Cl은 상평형 곡선을 더 높은 압력과 낮은 온도 쪽으로 이동시켰다. 이온성 액체의 첨가 시에는 메탄 하이드레이트의 생성유도시간이 거의 나타나지 않는 것을 알 수 있었다. 메탄가스의 소모량은 모든 농도에서 향상되었고 1,000 ppm에서 가장 많은 양의 가스를 흡수하는 것으로 나타났다. 이온성 액체는 가스 하이드레이트 생성 촉진을 유도하는 것으로 나타났으며 가스저장, 수송 등의 응용기술 개발에 적용이 기대된다.

만성질병 예방 측면에서 본 30세 이상 한국 성인의 과일과 채소 섭취 평가: 2005년 국민건강영양조사 자료를 이용하여 (Evaluation of Fruits and Vegetables Intake for Prevention of Chronic Disease in Korean Adults Aged 30 Years and Over: Using the Third Korea National Health and Nutrition Examination Survey (KNHANES III), 2005)

  • Korean diet is high in plant foods but also high in salted vegetables. World Cancer Research Fund (WCRF) recommends consumption of fruits and vegetables excluding salted vegetables for prevention cancer. This study aimed to analyze relations between intakes of salted and non-salted vegetables and socioeconomic factors, providing a data for targeted groups in promotion of fruits and vegetables consumption. Dietary and socioeconomic status data of the 5,400 subjects over 30 years of age from the 2005 Korea National Health and Nutrition Examination Survey (KNHANESIII) were used. Dietary intake data from KNHANESIII was obtained by one day 24-hour recall method. Mean daily intakes of salted vegetables, non-salted vegetables and fruits of subjects were 151 g, 237 g, and 71 g respectively. Mean daily intake of salted vegetables was significantly higher in men than women for daily amount (173 g vs. 133 g) as well as percentage of total food intake (9.9% vs. 9.6%). Subjects living in rural area consumed more salted vegetables. Salted vegetables as percent of total food were lower in subjects with higher education levels (p < 0.001). Intakes of non-salted vegetables were significantly affected by age and gender. Intake levels of fruit were significantly higher in younger groups, in females, and subjects with higher income and education levels (p < 0.05). Average intake of fruits and non-salted vegetables was 307 g, lower than WCRF recommended level of 400 g for personal guideline. Intake of salted vegetables was positively correlated with sodium intake (Pearson's correlation coefficient, r = 0.43) but less so with potassium (r = 0.16) and other micronutrients intake (r < 0.1). On the other hand, non-salted vegetables had higher correlations with potassium (r = 0.45), carotene (r = 0.38), vitamin A (r = 0.37), iron (r = 0.34) and low for sodium (r = 0.13). Fruits intake was highly correlated with vitamin C intake (r = 0.46). Proportion of subjects satisfying WCRF personal guideline of fruits and non-salted vegetables was 25.7%. Results of this study indicate that intake of salted vegetable is considerably high among Koreans, and it is highly correlated with sodium intake and less so with other micronutrients.

자가제조 배추김치와 시판 김치의 이화학적 품질 실태 조사 (Survey Research of Homemade and Commercial Cabbage(Baechu) Kimchi on Physicochemical Quality Characteristics)

  • In order to develop and propagate the low sodium kimchi for preventing high sodium related diseases, the salinity, pH and acidity of cabbage(Bachu) kimchi sampled from home located in 6 big cities(Pusan, Daegoo, Kyungjoo, Daegoo, Jeonjoo, Daejeon, and Seoul) and commercial 6 manufacturers(A~F) distributed in markets were monitored and analyzed in the current study. Salinity was significantly (p<0.05) higher in homemade($3.03%{\pm}0.60$: 1.79~4.40) kimchi than in commercial($2.38%{\pm}0.60$:1.04~2.87) kimchi. Also, salinity was significantly(p<0.05) higher in Pusan($3.45{\pm}0.60%$) kimchi than in Kyungjoo($3.11{\pm}0.39$), Daegoo($3.19{\pm}0.42$), Jeonjoo($2.98{\pm}0.32$), Daejeon($3.00{\pm}0.38$) and Seoul ($2.52{\pm}0.46%$) kimchi. However, there was no significant difference(p<0.05) of salinity in 6 kinds of commercial kimchi. Related to this result, pH of kimchi from homemade and commercial was $4.40{\pm}0.29$(3.72~6.03) and $5.45{\pm}0.76$ (4.23~6.35), acidity of kimchi from homemade and commercial were $0.99{\pm}0.30%$(0.28~2.17) and $0.45{\pm}023$(0.17~0.93), respectively. Thus, the current study provides evidence that we may need to manufacture the low sodium kimchi because all homemade kimchi, especially Pusan and Daegoo kimchi and commercial brand kimchi contained over 2% salinity.

알긴산 소다에의 MMA유화 그래프트 중합 : 메커니즘 및 용매효과 (Emulsion Graft Polymerization of MMA to Sodium Alginate : Mechanism and Solvent Effect)

  • 생성을 목적으로 하는 그라프트 중합체를 유화제로 하여 유화 그라프트중합을 실시하는 경우는 대체로 그라프트 효율 및 % 골격(backbone) 중합체의 전환율 값은 높으나, 메칠메타아크릴레이트(MMA) 전환율 및 % 그라프트율값 들이 낮다. 이와 같은 결점을 보완하기 위하여 중합계에 비 수용성 용매 및 수용성 용매를 사용하여서 이들 용매의 각각의 효과 및 두종의 용매를 조합한 복합효과 그리고 용매 공존하에서의 교반속도의 영향을 고찰하는 한편, 고분자 유화제의 조성에 따른 MMA의 유화용량, 평균 입경 및 그라프트된 알긴산의 입자 표면 밀도 등을 조사하여 그 중합 메카니즘을 고찰하였다. 그 결과, 고분자 유화제의 그라프트된 폴리메칠메타아클레이트(PMMA) 함량이 클수록 중합체 콜로이드의 MMA 유화용량 및 평균입경은 커지는 반면, 입자 표면의 그라프트된 알긴산의 밀도는 감소하였다. 비 수용성 용매를 MMA에 혼합시켜 중합시키는 경우는 그라프트 효율 및 골격 중합체의 전환율 값들의 저하없이 MMA 전환율 및 % 그라프트 값을 향상 시킬 수 있었으며, 그 효과는 PMMA에 대하여 침전제가 되는 용매가 양용매인 용매에 비하여 컸다. 수용성 용매는 그라프트 효율, 골격 중합체의 전환율을 다소 저하시키는 상태에서 MMA 전환율 및 % 그라프트 값을 보다 크게 향상시켰으며, 그 효과는 PMMA에 침전제인 메탄올에서 보다 현저하였다. 용매 첨가에서 교반속도의 변화에 용매 무첨가시의 MMA 전환율값은 2배 이상, % 그라프트값은 거의 3배로, SA 전환율과 그라프트 효율값은 95% 이상 향상시킬 수 있었다.

참당귀의 무기성분, 유리당, 아미노산 및 지방산 함량 특성 (Characterization of Inorganic Components, Free Sugars, Amino Acids, and Fatty Acids in Angelica gigas Nakai)

  • Background : The major compounds of Angelica species are decursin, decursinol angelate, nodakenin, umbelliferone and ${\beta}$-sitosterol, which act anti-inflammatories, reduce pains, protect the liver and enhance the immune system. This study investigated the chemical compositions, minerals, metals, sugars and overall amino acid composition in Angelica gigas Nakai. Methods and Results : Powder of Angelica roots smaller than 30 mesh were used. Physico-chemical analysis revealed the presence of carbohydrates (62.0%), crude proteins (13.9%), moisture (11.4%), crude fats (7.3%) and ash (5.4%). Results showed that potassium was present in the highest amount (1,859 ppm), followed by magnesium (214.5 ppm), calcium (147.3 ppm) and sodium (6.0 ppm). Free sugar profiles showed the presence of sucrose (29.3 g/100 g). The total amino acids concentrations was 9,752 mg/100 g, the most common and dominant amino acids were arginine (2,181 mg/100 g), glutamic acid (1,212 mg/100 g) and aspartic acid (834 mg/100 g). The total free amino acids contents was 1,476 mg/100 g, in which the most common amino acid were arginine (932 mg/100 g), glutamic acid (127 mg/100 g), and ${\gamma}$-aminobutyric acid (80.4 mg/100 g). The fatty acid composition of A. gigas showed a higher concentration of unsaturated fatty acids such as linoleic acid (443.9 mg/100 g) and palmitic acid (181.3 mg/100 g) according to gas chromatography. Conclusions : These results showed that Angelica roots can be used in various fields of foods and medicines, and in the preparation of cosmetics.

고열량.저영양 식품의 TV 광고 제한에 따른 식품회사의 제품 및 촉진 활동 변화 (Changes in Food Companies' Product and Promotion Activities after Restriction of TV Advertising of Energy-Dense and Nutrient-Poor Foods in Korea)

  • This study determined the effects of television (TV) advertising restriction of Energy-Dense and Nutrient-Poor Foods on product and promotion activities by food companies producing or selling children's favorite foods. A survey using a selfadministered questionnaire was conducted via on-line or fax by marketers or R&D managers from 108 food companies. The data from 55 respondents (50.9%) were analyzed. Restriction exerted positive effects on food products with respect to compliance with labeling requirements (4.0 out of 5 points) and reinforcement of nutritional contents examination of new products (3.7 out of 5 points). Reformulations of products such as reduction of nutrients like sodium, sugar and fat were also reported. In addition, food companies underwent diverse changes in promotional activities, including modification of package designs and displays in stores, offering free gifts, discounts, etc. In conclusion, restriction of TV food advertising may contribute to improvement of children's food environment by encouraging food companies to make favorable product changes. On the other hand, the results also revealed that food companies adopt diverse marketing channels that are not yet under regulation. Hence, to make policies more effective, regulation needs to be extended from TV to other marketing channels to which children are easily exposed.

어린이 기호식품의 당, 나트륨 및 지방류의 영양기준안 설정에 관한 연구 (A Study on the Guideline Amounts of Sugar, Sodium and Fats in Processed Foods Met to Children's Taste)

  • 최근 우리나라는 어린이를 중심으로 급격한 식생활 변화(nutrition transition)를 겪고 있으며, 이로 인해 나트륨, 당류, 지방 및 포화지방산의 섭취 증가로 인한 질병 발생 위험이 높아질 것으로 우려되고 있다. 현재의 영양표시가 어린이들이 이해하기에 어려운 측면이 있어 건강에 좋은 식품의 섭취를 진작시키기 어려운 상황이다. 본 연구는 어린이들이 보다 건강에 좋은 식품을 선택하는 정보를 쉽게 제공하기 위하여 어린이 기호식품의 영양위해성분(당, 나트륨 및 지방류)의 함량에 따라 고, 중, 저로 표시하는 영양기준(안)을 설정하는데 목표를 두었다. 국내는 물론 제외국의 영양섭취기준, 영양표시를 위한 일일 영양소 기준치, 영양소함량강조 표시, 영국의 GDA(guideline daily amounts)와 신호등표시제, 식사지침 및 영양소섭취량 자료들을 검토 및 비교하였고, 제외국 어린이의 기호식품과 가공식품의 영양위해성분 영양기준 자료를 수집 및 평가하였다. 이를 바탕으로 하여 어린이 기호식품과 가공식품 중의 영양위해성분을 선정하고 고, 중, 저로 표시하는 영양기준 근거를 마련하였다. 또한 서울지역 11개 중학교와 10개 고등학교 내 판매식품 가공식품에 대한 현황 조사와 1,812명의 청소년을 대상으로 한 섭취실태 조사를 통해 다소비가공식품을 선정하였으며, 145개의 대표 가공식품을 본 연구에서 제안하는 영양기준안에 따라 분류하였다. 그 중 85개가 고지방식품으로 분류된 반면에 11개만이 고나트륨식품으로 분류되었다. 그러나 본 연구에서 제시한 영양기준안과 분량의 기준단위에 대한 타당성을 검증하기 위하여 더 많은 식품들에 대해 시뮬레이션 등의 검토가 필요하며, 산업체 등 이해당사자들의 의견 수렴 과정을 거쳐 현실적인 영양기준안으로 다듬어져야 할 것이다.
