The Comparative Understanding between Red Ginseng and White Ginsengs, Processed Ginsengs (Panax ginseng C. A. Meyer) (홍삼과 백삼의 비교 고찰)

  • Ginseng Radix, the root of Panax ginseng C. A. Meyer has been used in Eastern Asia for 2000 years as a tonic and restorative, promoting health and longevity. Two varieties are commercially available: white ginseng(Ginseng Radix Alba) is produced by air-drying the root, while red ginseng(Ginseng Radix Rubra) is produced by steaming the root followed by drying. These two varieties of different processing have somewhat differences by heat processing between them. During the heat processing for preparing red ginseng, it has been found to exhibit inactivation of catabolic enzymes, thereby preventing deterioration of ginseng quality and the increased antioxidant-like substances which inhibit lipid peroxide formation, and also good gastro-intestinal absorption by gelatinization of starch. Moreover, studies of changes in ginsenosides composition due to different processing of ginseng roots have been undertaken. The results obtained showed that red ginseng differ from white ginseng due to the lack of acidic malonyl-ginsenosides. The heating procedure in red ginseng was proved to degrade the thermally unstable malonyl-ginsenoside into corresponding netural ginsenosides. Also the steaming process of red ginseng causes degradation or transformation of neutral ginsenosides. Ginsenosides $Rh_2,\;Rh_4,\;Rs_3,\;Rs_4\;and\;Rg_5$, found only in red ginseng, have been known to be hydrolyzed products derived from original saponin by heat processing, responsible for inhibitory effects on the growth of cancer cells through the induction of apoptosis. 20(S)-ginsenoside $Rg_3$ was also formed in red ginseng and was shown to exhibit vasorelaxation properties, antimetastatic activities, and anti-platelet aggregation activity. Recently, steamed red ginseng at high temperature was shown to provide enhance the yield of ginsenosides $Rg_3\;and\;Rg_5$ characteristic of red ginseng Additionally, one of non-saponin constituents, panaxytriol, was found to be structually transformed from polyacetylenic alcohol(panaxydol) showing cytotoxicity during the preparation of red ginseng and also maltol, antioxidant maillard product, from maltose and arginyl-fructosyl-glucose, amino acid derivative, from arginine and maltose. In regard to the in vitro and in vivo comparative biological activities, red ginseng was reported to show more potent activities on the antioxidant effect, anticarcinogenic effect and ameliorative effect on blood circulation than those of white ginseng. In oriental medicine, the ability of red ginseng to supplement the vacancy(허) was known to be relatively stronger than that of white ginseng, but very few are known on its comparative clinical studies. Further investigation on the preclinical and clinical experiments are needed to show the differences of indications and efficacies between red and white ginsengs on the basis of oriental medicines.

Antirapakivi Mantled Feldspars from Sanbangsan Trachyte Lava Dome, Jeju Volcanic Field, Korea (산방산용암돔 조면암에서 산출되는 장석의 안티라파키비 조직)

  • The compositions of the phenocrystic feldspars of the Sanbangsan trachyte range from labradorite(An53.6) to andesine(An35.4), and of the microphenocrysts and laths range from andesine(An31.2) to oligoclase(An18.7). Mantled feldspar which forms a thin rim around the phenocrysts and microphenocrysts, is anorthoclase(Or20.5An9.4) to sanidine(Or49.2An1.4). Phenocrystic plagioclase, which shows a distinct zonal structure, represents an oscillatory zoning in which the An content of the zone repeatedly increases or decreases between andesine (An39.3) and labradorite (An51.3) from the core toward the rim, and the rim of the phenocrysts is surrounded by alkali feldspar(Or31.9-39.4Ab63.2-57.0An4.9-3.7), showing the antirapakivi texture. Microphenocryst which does not represent the antirapakivi texture, shows the normal zoning with a decreasing An content (An36.4→An25.6) as it moves outward from the center of a crystal. As a result of X-ray mapping of K, Ca, and Na elements for the feldspar phenocrysts representing the typical zonal structure, shows the oscillatory zoning that six zones show the distinctive compositional differences, and the rims are mantled by alkali feldspar to indicate the antirapakivi texture. The groundmass is composed of K-enriched, Ca-poor alkali feldspar. The antirapakivi texture of feldspar which appears in Sanbangsan trachyte, may have been formed in mixing systems as a result of the juxtaposition of near liquidus melt, rich in alkali feldspar components(trachytic magma), with plagioclase phenocrysts and microphenocrysts already crystallized in a more mafic system.

A hybrid algorithm for the synthesis of computer-generated holograms

  • A new approach to reduce the computation time of genetic algorithm (GA) for making binary phase holograms is described. Synthesized holograms having diffraction efficiency of 75.8% and uniformity of 5.8% are proven in computer simulation and experimentally demonstrated. Recently, computer-generated holograms (CGHs) having high diffraction efficiency and flexibility of design have been widely developed in many applications such as optical information processing, optical computing, optical interconnection, etc. Among proposed optimization methods, GA has become popular due to its capability of reaching nearly global. However, there exits a drawback to consider when we use the genetic algorithm. It is the large amount of computation time to construct desired holograms. One of the major reasons that the GA' s operation may be time intensive results from the expense of computing the cost function that must Fourier transform the parameters encoded on the hologram into the fitness value. In trying to remedy this drawback, Artificial Neural Network (ANN) has been put forward, allowing CGHs to be created easily and quickly (1), but the quality of reconstructed images is not high enough to use in applications of high preciseness. For that, we are in attempt to find a new approach of combiningthe good properties and performance of both the GA and ANN to make CGHs of high diffraction efficiency in a short time. The optimization of CGH using the genetic algorithm is merely a process of iteration, including selection, crossover, and mutation operators [2]. It is worth noting that the evaluation of the cost function with the aim of selecting better holograms plays an important role in the implementation of the GA. However, this evaluation process wastes much time for Fourier transforming the encoded parameters on the hologram into the value to be solved. Depending on the speed of computer, this process can even last up to ten minutes. It will be more effective if instead of merely generating random holograms in the initial process, a set of approximately desired holograms is employed. By doing so, the initial population will contain less trial holograms equivalent to the reduction of the computation time of GA's. Accordingly, a hybrid algorithm that utilizes a trained neural network to initiate the GA's procedure is proposed. Consequently, the initial population contains less random holograms and is compensated by approximately desired holograms. Figure 1 is the flowchart of the hybrid algorithm in comparison with the classical GA. The procedure of synthesizing a hologram on computer is divided into two steps. First the simulation of holograms based on ANN method [1] to acquire approximately desired holograms is carried. With a teaching data set of 9 characters obtained from the classical GA, the number of layer is 3, the number of hidden node is 100, learning rate is 0.3, and momentum is 0.5, the artificial neural network trained enables us to attain the approximately desired holograms, which are fairly good agreement with what we suggested in the theory. The second step, effect of several parameters on the operation of the hybrid algorithm is investigated. In principle, the operation of the hybrid algorithm and GA are the same except the modification of the initial step. Hence, the verified results in Ref [2] of the parameters such as the probability of crossover and mutation, the tournament size, and the crossover block size are remained unchanged, beside of the reduced population size. The reconstructed image of 76.4% diffraction efficiency and 5.4% uniformity is achieved when the population size is 30, the iteration number is 2000, the probability of crossover is 0.75, and the probability of mutation is 0.001. A comparison between the hybrid algorithm and GA in term of diffraction efficiency and computation time is also evaluated as shown in Fig. 2. With a 66.7% reduction in computation time and a 2% increase in diffraction efficiency compared to the GA method, the hybrid algorithm demonstrates its efficient performance. In the optical experiment, the phase holograms were displayed on a programmable phase modulator (model XGA). Figures 3 are pictures of diffracted patterns of the letter "0" from the holograms generated using the hybrid algorithm. Diffraction efficiency of 75.8% and uniformity of 5.8% are measured. We see that the simulation and experiment results are fairly good agreement with each other. In this paper, Genetic Algorithm and Neural Network have been successfully combined in designing CGHs. This method gives a significant reduction in computation time compared to the GA method while still allowing holograms of high diffraction efficiency and uniformity to be achieved. Characteristics of Granitic Flagstone from the Trifurcated Path at Jongmyo Royal Shrine, Seoul, Korea (종묘 어도박석 화강암의 재질특성 연구)

  • For the characteristics of rock material and standardization, flagstones of the trifurcated path in Jongmyo Royal Shrine, registered as World Cultural Heritage, were studied on the basis of petrographic, petrochemical and magnetic properties. The flagstones are composed mainly of pale gray fine to medium grained hornblende biotite granite, pale gray fine to medium grained biotite granite, pale pink medium to coarse grained biotite granite, pink medium to coarse grained biotite granite and minor pegmatite and schist. Flagstone represents the average size of $65cm{\times}4cm$ (standard deviation $12cm{\times}7cm$) and suitable (34.7%), common (41.4%) and unsuitable (23%) in roughness. It is interpreted that pale pink and pink granite, pegmatite, schist and other flagstones with unsuitable state are not original rock materials and were exchanged during restoration, in the past. The number of these non-original rock materials is about 560 flagstones. We suggests that the standard flagstone of the trifurcated path is pale gray fine to medium grained biotite granite (${\pm}$hornblende in trace), 70wt.% in $SiO_2$, content, and ${\pm}0.1{\times}10^{-3}\;SI$ in magnetic susceptibility.

Application of Potassium Feldspar pIR-IRSL Method to Dating Quaternary Marine and Fluvial Terrace Sediments in Korea: A Case Study on a Fluvial Terrace and Gusan Fault in Uljin, Korea (한반도 해안-하안단구 퇴적층에 대한 K 장석 pIR-IRSL연대측정법 적용가능성 고찰: 울진 하안단구와 구산단층 연대측정)

  • In this paper, in order to test the possibility of applying K feldspar $pIR-IRSL_{290}$ signal(read out at $290^{\circ}C$) to date old terrace sediments(up to ~ 200 ka, MIS 7) in Korea, we investigated luminescence properties of $pIR-IRSL_{290}$ signals in K feldspar extracts from 27 marine and fluvial terrace sediment samples, and these were compared with those of quartz OSL and conventional K feldspar $IRSL_{50}$ (readout at $50^{\circ}C$) signals. The averaged $2D_0$ value of K feldspar $pIR-IRSL_{290}$ growth curves was ~ 700 Gy, which is consistent with that of $IRSL_{50}$ signal, and this is 3 times higher than that for quartz OSL (~ 250 Gy) on average. Where possible, K feldspar $pIR-IRSL_{290}$ ages were compared with quartz OSL and conventional $IRSL_{50}$ ages. Our preliminary K feldspar $pIR-IRSL_{290}$ ages were older than quartz OSL ages by about 200%, while fading rate-corrected conventional $IRSL_{50}$ ages are in good agreement with those based on quartz OSL. This seems to indicate the possibility of K-feldspar $pIR-IRSL_{290}$ age overestimation due to the presence of unbleachable $pIR-IRSL_{290}$ signals, even with a prolonged exposure to sunlight. Both quartz OSL and K-feldspar $pIR-IRSL_{290}$ signals for the samples from Noeum fluvial terrace and Gusan fault site were all in dose saturation level, thus unable to estimate the formation ages of the sediments. However, $2D_0$ values derived from the dose response growth curves strongly indicate that the Noeum fluvial terrace sediments have formed before 109-140 ka, while the fluvial sediments from Gusan fault were desposited before 100-105 ka. Further, this seems to suggest that the previous quartz OSL ages of ~40-50 ka for Gusan fault sediments should be the underestimated ones due to dose saturation problem.

Storage Period of Milled Rice by Packaging Materials and Storage Temperature (온도와 포장재에 따른 백미의 저장가능기간)

  • This study was carried out to investigate the quality characteristics by packaging materials and storage temperature to predict safe storage period for milled rice. Mechanical taste value and whiteness of milled rices stored at room temperature were severely decreased than those of the stored at low temperature, but fat acidity and b value of those at room temperature was rapidly increased than those of stored at low temperature. Milled rice packed in LDPE film bag were smelled stale flavor after 4 months storage at room temperature, Hojinbyeo was not produced flour in the rice grain surface but Dongjinbyeo was showed production of flour. pH of milled rice of Dongjinbyeo and Hojinbyeo packed in LDPE film bag were the lowest showing 5.3 and 5.6, respectively after 6 months at mom temperature. Safe storage period of Dongjinbyeo and Hojinbyeo packed in craft paper bag were 1 month at room temperature, those of packed in LDPE film bag were 2 months. At low temperature safe storage period of Dongjinbyeo and Hojinbyeo packed in craft paper bag were 2 months, those of packed in LDPE film bag were 5 and 4 months, respectively.

Monitoring on Physicochemical Properties of Liriope platyphylla by the Use of Four Dimensional Response Surface (4차원 반응표면분석을 통한 맥문동의 이화학적 특성 모니터링)

  • Four dimensional response surface methodology was used to monitor the extraction conditions and predict the optimum extraction conditions on physicochemical properties of Liriope platyphylla. Maximum yield of total soluble solid was 66.02% into range of 35.06~65.70%, and maximum extraction conditions were 16.86 mL/g in ratio of solvent to sample, $99.55^{\circ}C$ in extraction temperature and 3.20 hr in extraction time. Maximum extraction conditions of total phenolics were 18.78 mL/g, $97.09^{\circ}C$ and 3.71 hr. Maximum content of crude saponin was 6.51% into range of 2.22~6.21 %, and maximum extraction conditions were 21.33 mL/g, $95.49^{\circ}C$ and 3.00 hr. Maximum content of reducing sugar was 6.75% into range of 2.43~6.51%, and maximum extraction conditions were 22.93 mL/g, $89.64^{\circ}C$ and 3.75 hr. Electron donating ability was maximized in 16.74 mL/g, $99.63^{\circ}C$ and 3.16 hr. The range of optimum conditions gained by the superimposed four dimensional response surfaces on total soluble solid, crude saponin and reducing sugar of Liriope platyphylla was 15~23 mL/g, 92~$100^{\circ}C$ and 2.4~5.0 hr. And total soluble solid, total phenolics, crude saponin, reducing sugar, browning color intensity and electron donating ability at the given conditions(20 mL/g, $100^{\circ}C$, 3 hr) within the range of optimum conditions were 65.75%, 1.30 mg/g, 6.33%, 5.93%, 0.11 and 10.52%, respectively.

Effect of the extracts from Schisandra chinensis Fruit and Morus alba Leaf on Insulin Secretion in Glucose-induced HIT-T15 Cells (오미자와 뽕잎 추출물이 glucose에 의해 유도된 HIT-T15세포의 인슐린 분비능에 미치는 영향)

  • This study aimed to examine the effect of the Schizandra chinensis fruit and Morus alba leaf on insulin expression in HIT-T15 cells, which is exposed by glucose. The total polyphenol contents of the S. chinensis fruit ethanol extract and the M. alba leaf hot-water extract were $20.11{\pm}0.35$ mg/g and $50.02{\pm}0.62$ mg/mL, respectively. The S. chinensis fruit ethanol extract and the M. alba leaf hot-water extract contained $2.85{\pm}0.15$ and $8.76{\pm}0.43$ mg/g flavonoids, respectively. The antioxidant ability of the M. alba leaf hot-water extract was found to be superior to that of the S. chinensis fruit ethanol extract. Compared to the HIT-T15-treated 10 mM 2-deoxy-D-glucose, the $100{\mu}g/mL$ S. chinensis ethanol extract was found to have a two fold increase in insulin productivity. Moreover, the $100{\mu}g/mL$ M. alba leaf hot-water extract promoted the insulin secretion of high-glucose-damaged HIT-T15 almost ten fold. The above results showed that the S. chinensis fruit ethanol extract and M. alba leaf hot-water extract may improve the insulin productivity of the beta cell with glucose-induced oxidative damage. These data suggest that the S. chinensis fruit ethanol extract and the M. alba leaf hot-water extract can be used as food materials for the regulation of insulin secretion.

Quality Characteristics of Doenjang Meju Fermented with Aspergillus Species and Bacillus subtilis during Fermentation (Aspergillus속과 Bacillus subtilis를 이용한 된장메주 발효 중 품질 특성)

  • To industrialize meju, four kinds of meju (Korean-style soybean koji) were made with humidity-controlled fermentation for 12 days at $28^{\circ}C$ after they were inoculated with selected strains such as Aspergillus otyzae (AO meju), Aspergillus sojae (AS meju), combined Aspergillus sojae and Bacillus subtilis (ASBS meju), and combined Aspergillus oryzae and Bacillus subtilis (AOBS meju) as starter microorganisms. The changes in the quality characteristics in the four kinds of meju were investigated during fermentation. Their enzyme activities were compared with those of the traditional meju that is made in Sunchang Folk Village according to the traditional method. In the meju that were inoculated with selective strains, the aerobic bacteria counts and mold counts exceeded 8 log cfu/g and 6 log cfu/g respectively, which were the highest fermentation values after 2 days. The aerobic bacteria counts were maintained from 2-day to the 12-day fermentation. The mold counts tended to decreased gradually after the 2-day fermentation. The amino-type nitrogen contents reached 430.5-577.5 mg%, which were the highest values after 2-day fermentation. The neutral protease activities of these mejus had the highest levels in the following order: traditional meju, $1,258.0{\pm}38.8$; AS meju, $1,238.3{\pm}38.6$; AO meju. $1,204.1{\pm}24.1$; ASBS meju, $1,040.6{\pm}10.6$; and AOBS meju, $1,033.5{\pm}11.2$ unit/g. The acidic protease activities of these meju had the highest levels in the following order: AO meju, $1,030.1{\pm}19.1$, traditional meju, $1,007.7{\pm}30.5$; AS meju, $990.9{\pm}25.0$; AOBS meju, $910.9{\pm}15.3$; and ASBS meju, $888.2{\pm}15.7$ unit/g.

Comparison of the Quality Characteristics of Radish by Soaking Using Sun-dried Salt and Leuconostoc starter (무 절임 제조 시 천일염과 스타터 첨가에 따른 품질특성 비교)

  • In this study, the effects of the use of a starter on radish soaked at $4^{\circ}C$ for 28 days using two kinds of domestic sun-dried salt (white and gray salt) were determined. As a result, the moisture contents of the radish soaked with white and gray salt were 7.93 and 4.50%, respectively. The salinity levels were found to be equal (90%). No significant difference was found between the two groups in terms of the mineral contents of the salts therein ($37812.41{\pm}1922.95$ and $39755.13{\pm}1205.70$ mg/100 g, respectively). However, iron and zinc contents of gray salt were higher than those of white salt while the calcium, potassium, and magnesium contents were lower than those of white salt. After the addition of the starter, the sugar content increased, the pH decreased, and the total acidity rapidly decreased compared with the non-starter group during fermentation. The total microorganism count of the two groups increased during the fermentation period of 28 days. From the initial fermentation for 7 days, the lactic acid bacteria in the non-starter group increased while those in the leuconostoc starter group steadily increased within the whole fermentation period. The Leuconostoc spp. in non-starter group increased, but that in the starter group decreased to pH 4.0 on day 14.
