  • LCD 컬러필터에서 안료의 분산은 컬러 강도를 증가시키는 중요한 요소이므로, 안료를 분산시키기 위한 안료 분산제의 첨가는 필수적이라 할 수 있다. 안료 분산제로서의 고분자는 안료와의 친화성을 가지는 anchoring group과 매체와의 혼화성을 가지는 stabilizing group을 포함하고 있다. 원자 이동 라디칼 중합은 잘 규정된 고분자 합성을 가능하게 하는 중합법으로, 이러한 구조를 포함하는 고분자형 안료 분산제를 얻기 위한 적절한 수단이 될 수 있다. Anchor로서 (2-dimethylamino)ethyl methacrylate를, stabilizer로서 oligo(ethylene oxide)methyl ether methacrylate를 각각 선택해 고분자 분산제를 합성하였다. 고분자의 구조 및 조성이 안료 분산에 미치는 영향을 연구하기 위해 다양한 길이의 stabilizing group을 가지는 diblock copolymer를 합성하여 비교하였다.

청각(Codium fragile) 추출물의 항산화성 및 생리활성 (Comparison of Antioxidant and Physiological Activities of Different Solvent Extracts from Codium fragile)

  • The present study investigated the chemical composition, and antioxidant and physiological activities of the Korean marine algae, Codium fragile. The solvent extracts from C. fragile were prepared using 70% ethanol, 80% methanol, and distilled water. Based on the general chemical composition, carbohydrate, crude protein, crude lipid, crude ash, and moisture were 74.22%, 16.73%, 0.66%, 4.39%, and 4.00%, respectively. Calcium, magnesium, sodium and potassium were the main minerals. The extraction yield range of the solvent extracts was 3.51-9.76%. The ranges of total polyphenol and flavonoid contents were approximately 10.97-13.76 mg/g and 8.00-8.69 mg/g, respectively. The ABTS [2,2'-azino-bis(3-ethylbenzthiazoline-6-sulfonic acid)] radical scavenging activity, reducing power and FRAP (ferric reducing antioxidant power) activities were the highest in the ethanol extract, while methanol extract exhibited the strongest nitrite oxide scavenging activity. On the other hand, tyrosinase, elastase, and xanthine oxidase inhibitory activities of the ethanol and methanol extracts were higher than those of the water extract. Furthermore, the ethanol extract exhibited the highest β-secretase inhibitory activity. The results indicate that C. fragile can be used as an antioxidant and a functional ingredient in food and pharmaceutical products.

Assessment of chicken thigh meat quality of Ross 308 broiler of animal welfare certified farm

  • Objective: This study aimed to evaluate the difference in the thigh meat quality of Ross 308 broiler from conventional and welfare farms. Methods: Thigh meat samples of Ross 308 broilers (age, 35 d; carcass weight, 1.1 kg) from conventional farm (RCF, n = 60) and animal welfare farms (RAWF, n = 60) were analyzed. Proximate composition, pH, color (lightness, redness, and yellowness), water-holding capacity (WHC), shear force, total aerobic bacteria (TAB), and volatile basic nitrogen (VBN) were measured and the levels of bioactive compounds such as dipeptides (anserine and carnosine), creatine, creatinine, and their anti-oxidation activity were determined. Results: The RCF and RAWF did not differ significantly in their proximate composition, WHC, color, and creatine and carnosine levels. The pH value was significantly lower in RAWF than in RCF on day 7. The shear force value was significantly higher in RAWF than in RCF throughout the storage duration. TAB in RCF on day 9 were significantly higher than those in RAWF. The VBN content of RAWF was significantly lower than that of RCF after 5 days of storage. Creatinine content was significantly higher in RAWF (3.50 mg/100 g) than in RCF (3.08 mg/100 g) on day 1. Along with higher carnosine and anserine contents of RAWF, it had significantly higher 2,2-diphenyl-1-picrylhydrazyl and 2,2-azinobis (3-ethylbenzothiazoline-6-sulfonic acid) radical scavenging activities than those of RCF. Conclusion: These results imply that the animal welfare farming system beneficially affects the overall oxidative stability of Ross 308 thigh meat.

Effects of Cissus quadrangularis L. Powder on Proximate Composition, Physicochemical and Textural Properties of Tteokgalbi

  • We investigated Cissus quadrangularis L. powder (C) use as a natural additive to Tteokgalbi, a traditional Korean meat-based dish. Five distinct Tteokgalbi samples were treated: one without any additives (negative control, NC), one with 1.00% C (C1), 2.00% C (C2), 4.00% C (C3), and 0.10% ascorbic acid (positive control, PC). C addition resulted in changes in composition, quality, and sensory attributes. Moisture content decreased with higher C levels; crude protein varied among the groups, with C1 having the highest crude protein levels and C3 the lowest. Crude fat decreased with increasing C concentration, whereas the carbohydrate content increased. The water-holding capacity notably decreased in the C3 group, resulting in increased cooking loss with higher C concentrations. C treatment altered color and texture, reducing CIE L* and increasing CIE a* before cooking and increasing CIE L* and CIE a* after cooking. CIE b* decreased before cooking but increased thereafter. C-treated Tteokgalbi was less cohesive, chewy, and brittle compared to the NC. The C treatment increased the total phenolic and flavonoid contents and enhanced radical scavenging capacities. It also affects storage characteristics, lowers pH, and increases 2-thiobarbituric acid reactive substances values. The microbial counts were lower in C2 and C3 after 11 days. These findings suggest the potential use of C as a natural meat additive.

포황(蒲黃)의 성분분석과 생리활성 (Biological Activity and Chemical Analysis of Cattail Pollens)

  • 포황을 기능성 식품의 소재로 이용하기 위한 가능성을 검토하기 위하여 일반 성분, 유리 당, 유리 아미노산, 지방산 조성, flavonoid 등을 분석하고 생리활성을 측정하였다. 포황의 일반성분은 수분 12.7-13.2%, 조단백질 15.7-17.8%, 조지방 1.3%, 유리당 7.5-7.7%, 조섬유 14.7-18.6%, 회분 3.4-4.9%, 가용성 무질소물 49.7-55.9%이었다. 유리아미노산 함량은 애기부들이 1.923 %, 좀 부들이 0.907 %, 큰 부들이 0.333 %로서 품종 간에 큰 차이를 나타내었고 그 조성은 모든 품종이 GABA alanine, glutamic acid, proline의 순이었다. 면역 활성을 높여주고 혈압강하 활성이 높다고 알려진 GABA함량이 50% 이상을 점하고 있어 매우 유용한 기능성 식품 소재로 판단된다. 지방산 조성은 linoleic, palmitic acid, oleic acid, linolenic acid 순으로서 품종 간에 큰 차이가 없었고 불포화 지방산의 비율이 67.2-76.0%로서 매우 높았다. 무기질 함량은 K이 0.354-0.492% 으로서 가장 높았으며 Mg 0.0516-0.0546 %, Ca 0.045-0.0486 %, Na 0.0101-0.0204 % 이었다. 항산화 물질로 알려진 포황 중의 flavonoid는 quercetin이 0.169-0.186 %로서 대부분을 차지하였고 rutin이 0.0094-0.0147 %이었다. SD계 rats에 4주간 포황과 그 추출물을 식이하면서 rats의 혈청에서 DPPH radical 소거활성을 알아 본 결과 소거활성 효과가 유의하게 나타났고, 혈중 cholesterol 함량을 낮추어 주는 효과와 혈중 glucose 함량을 낮추어 주는 결과로 보아 고지혈증의 예방과 당뇨병 치료에 효과가 있을 것으로 판단되었다.

해양 미세조류의 생화학적 조성 및 항산화성 (Biochemical Composition and Antioxidative Activity of Marine Microalgae)

  • 해양 미세조류는 해양의 기초생산은 물론 1차 대사산물인 단백질, 지질 및 당질 뿐만 아니라 2차 대사산물인 생리활성물질을 생산하고 있으며, 또한 그 종류도 매우 다양하다. 이러한 해양 미세조류의 효율적인 이용을 목적으로 비교적 성장이 빠르고 배양이 쉬운 녹조식물문 중 녹조강에 속하는 N. oculafa와 황갈편조식물문 중 규조강에 속하는 P. tricornutum을 선정하여 생화학적 성분 및 항산화성을 검토하였다. N. oculata와 P. tricornutum의 단백질, 지방, 탄수화물의 함량은 각각 $54.91\%,\;11.29\%,\;10.15\%$$38.07\%,\;13.9\%,\;7.13\%$이었다. N. oculata의 무기질 함량은 칼륨, 마그네슘 및 칼슘이 각각 12,906.86, 1,039.15 및 882.57mg/100g이었으며, P. tricornutum의 경우는 각각 11,718.65, 1,570.84 및 2,003.32mg/100g이었다. 두 종 모두 필수무기질 원소인 철분의 함량도 500mg/g 이상 함유되어 있었다. 이들 두 종의 주요 구성아미노산 조성은 glutamic acid, proline 및aspartic acid이었으며, 필수아미노산의 함량은 모두 $45\%$ 이상이었다. 그리고 N. oculata 및 P. tricornutum의 주요 유리아미노산조성은 각각 proline ($35.54\%$) 및 glutamic acid ($24.86\%$)이었다. 특히 P. tricornutum는 성인병에 유효한 생리기능성 아미노산으로 밝혀진 taurine이 $2.78\%$ 함유되어 있었다. N. oculata의 당 조성은 galactose, fucose 및 glucose이 전체 당의 $73.81\%$이었으며, P. tricornutum의 경우는 glucose 및 mannose가 $86.07\%$를 차지하였다. N. oculata는 핵산관련물질 중에서 ADP의 함량이 $4.77{\mu}mol/g$으로 가장 높았으며, P. tricornutum의 경우는 hypoxanthine이 $11.74{\mu}mol/g$으로 가장 높았다 특히 N. oculata의 경우는 맛 성분으로 알려진 IMP의 함량이 $2.71{\mu}mol/g$으로 비교적 많이 함유되어 있었다. N. oculata의 포화, 탄일불포화 및 다가불포화 지방산의 함량은 각각 $66.41\%, 12.56\%$$21.02\%$이었으며, P. tricornutum는 각각 $45.52\%,\;37.35\%$$17.13\%$이었다. N. oculata의 필수지방산 함량은 $17.10\%$로 P. tricornutum의 $0.91\%$보다 훨씬 높았으나 EPA 및 DHA 함량은 각각 $3.29\%$$0.48\%$로 P. tricornutum의 $12.91\%$$1.70\%$ 보다 낮았다. 두 종의 미세조류 추출물의 DPPH radical 소거능으로 측정된 항산화성은 P. tricornutum의 chloroform 획분에서 가장 높게 나타났다.

반응 표면 분석을 이용한 천문동 첨가 막걸리 재료 혼합물의 최적화 (Optimization of Ingredient for the Preparation of Asparagus cochinchinensis Makgeolli by Response Surface Methodology)

  • This study was performed to determine the optimal composition of a makgeolli administered nuruk, water and Asparagus cochinchinensis. The experiment was designed base on BBD (box-behnken design), and an evaluation was carried out by means of RSM (response surface methodology), which included 15 experimental points with 3 replicates for the three independent variables nuruk, water and Asparagus cochinchinensis. The nuruk levels were tested in a range of 10~30 g, the water levels in a range 120~180% and Asparagus cochinchinensis was tested within a range of 2~6% by the weight of cooked-rice. Using the F-test, brix and appearance were expressed as a linear model, whereas the pH, acidity, DPPH radical scavenging, L-value, savory taste, taste, fresh aroma, after swallow and overall acceptability were expressed as a quadratic model. Increased amount of Asparagus cochinchinensis led to the reduction of the sensory scores for appearance, flavor, taste, texture and overall quality. The optimum formulation by numerical and graphical method were similar: nuruk 24.50 g, water 174.95% and Asparagus cochinchinensis 2.40%.

화염 전달함수 및 DMD 기법을 이용한 모형 가스터빈의 연소불안정성 평가 (Evaluation of Combustion Instability in a Model Gas Turbine Adopting Flame Transfer Function and Dynamic Mode Decomposition)

  • To evaluate the combustion instability of a gas turbine combustor, the DMD technique was applied. The mode frequency results for each fuel composition were compared with FFT(Fast Fourier Transform) results. The damping coefficient, which is a quantitative parameter for combustion instability, was evaluated for 5 experimental cases. The flame transfer function (FTF) was calculated in the most unstable test case. In deriving the FTF, gain and phase were calculated using DMD technique. As a result of the analysis of the OH radical perturbation of the DMD, the heat release fluctuation was the highest at 100 Hz, at which the highest value of gain is observed. The frequency of FFT and FTF were different. In order to clarify the reason for this, FTF for various resonance frequencies was performed and it shows that the pattern of gain was similar to FFT.

Synthesis and Characterization of Fe-containing AC/TiO2 Composites and Their Photodegradation Effect for the Piggery Waste

  • In this present study, we have synthesized Fe-containing AC(activated carbon)/$TiO_2$ composites with titanium (VI) n-butoxide (TNB) as a titanium source to Fe treated AC through an impregnation method. The result of the textural surface properties demonstrates that there is a slight decrease in the BET surface area of composite samples with an increase of the amount of Fe treated. The surface properties of scanning electron microscope (SEM) presented a characterization of a porous texture on the Fe-containing AC/$TiO_2$ composites and homogenous compositions for Fe and titanium dioxide distributed on the sample surfaces. Fe compound peaks and a titanium dioxide structure were observed in the X-ray diffraction patterns for the Fe-containing AC/$TiO_2$ composites. The results of chemical elemental composition for the Fe-containing AC/$TiO_2$ composites showed that most of the spectra for these samples gave stronger peaks for C, O, treated Fe components and Ti metal than that of any other elements. From the photo degradation results for the piggery waste, the Fe-containing AC/$TiO_2$ composites showed an excellent degradation activity for the chemical oxygen demand (COD) due to a photocatalysis of the supported $TiO_2$, radical reaction by Fe species and the adsorptivity and absorptivity of porous carbon.

  • The paeonol content in roasted Moutan Cortex was increased about three times compared to that of untreated one. The paeonol content reached at its maximum level $(454.3\;{\mu}g/mg\;ethanol\;extract)$ after roasting at $190^{\circ}C$ for 30 minutes. Roasting processing did not affect on the DPPH radical scavenging activity of Moutan extracts.
