This study was conducted to develop a processing procedure for soft drink and wine from purple sweetpotato and to determine the color stability of purple sweetpotato anthocyanin pigment after production. Purple sweet potato soft drink was found to have 15.6% of total extraction, $11.8\;Brix^{\circ}%$ of sugar and pH 4.1, whereas wine had 12.6% of alcohol, $7.8\;Brix^{\circ}%$ of sugar and pH 4.9.Color stabilities of the soft drink and wine showed little difference after four-month storage from the time right after processing. The public found the soft drink that was made from 90% of purple sweet potato, 5% of citron and 5% of honey, more to their taste, rather than other soft drinks that were either made from 100% purplesweet potato or made from 80% of purple sweet potato, 10% of citron and 10% of honey. The public also found $45^{\circ}C$. of fermentation temperature more agreeable than that of $30^{\circ}C$. Powder, vinegar and anthocyanin pigment earned from purple sweet potato showed high stability, as they showed no change in color after four months in storage.

This study was carried out to establish a regeneration system from leaf explant of purple sweetpotato(Ipomoea batatas L.) The optimal concentrations of plant growth regulators for callus induction and shoot formation were determined. The optimal combination for callus formation was 1$\mu$M 2,4-D 5$\mu$M BM, and highest yield of embryogenic calli were observed on Murashige and Skoog basal medium containing 0.5$\mu$M 2,4-D under light condition after 4weeks of culture. Embryogenec callus was subcultured on medium supplemented with 5$\mu$M ABA for 4 days. Subsequently, regeneration of adventitious shoots occurred when these embryogenic calli were transferred onto medium with 3∼6$\mu$M gibberellic acid. Regenerated shoots were developed into normal plantlets.
Various quality attributes were determined in muffins prepared using purple-colored sweet potato flour. Height of control muffins was 5.8 cm lease clarify. Height decreased with increasing quantity of sweet potato powder. Muffin volume was not appreciably affected. Moisture of control muffins was 21.84. The moisture value decreased with increasing quantity of sweet potato powder. Scanning electron microscopy examination revealed thick cell wall and rough stoma in muffins prepared with purple-colored sweet potato powder. The amount of gluten decreased as the quantity of purple-colored sweet potato powder increased. Brightness L values significantly changed as the amount of powder increased, indicative of a progressively darker product. Red index a values decreased as the quantity of purple-colored sweet potato powder increased. Yellow index b values decreased significantly in the control group as powder quantity increased. Hardness increased with increasing addition of powder, but no significant difference was evident between 6% and 9% amended samples. There were also no significant differences in springing in samples containing 3% and 6% powder but 9% powder produced a significant difference. Cohesiveness did not differ in unamended samples and samples amended with 3% and 9% powder, however a significant difference was evident in samples prepared with 6% powder. Gumminess and chewiness increased as the quantity of purple-colored sweet potato powder increased. Color did not differ appreciably in sample prepared with 3% and 9% Sample prepared with 3% additives showed the highest What? Color score? Something else? Please clarify with 6.4. Callus induction using leaf of purple sweetpotato (PSP) was decreased when subcultured. So we selected habituated callus in MS medium supplemented with $1{\mu}M\;2,4-D$ (2,4-dichlorophenoxyacetic acid) after 6 months of cultures (without subculture). It grew faster and easier than any other callus. It was able to proliferate in MS hormone free solid and liquid medium without any growth regulators and subculture limits. During subculture in liquid medium, a purple mottled spot formed in one of habituated cell aggregates without any treatment. This purple cell aggregates were carefully separated from habituated cell aggregates, and then subcultured by selecting purple cell aggregates for more than 2 years to be isolated. The color value of the pigment extracted of culture was 1.0 mg/mL, which was close to that of a pigment extracted from storage root, which was 1.5 mg/mL. This purple cell aggregates could therefore be used for the industrial mass production of anthocyanin.

In recent, a demand for sweetpotato cultivation technology to expand the cultivated area of field crops in paddy fields is increasing. This research was carried out to establish suitable varieties and cultivation techniques for mass production of sweetpotato for processing raw materials. For the selection of varieties suitable for cultivation in rice fields for each processing purpose, 12 varieties in 2018 (8 varieties for starch, 4 as dried, chips and beverages), and 6 varieties in 2019 (4 varieties for starch including 'Daeyumi'; chips, semi-dried 'Pungwonmi'; beverage and coloring 'Shinjami') were used. Sweetpotato stems were planted in mid-May and harvested after 120 days to investigate the yield. Results revealed that the yield of sweetpotato (2019) for starch production, varied with variety as 'Gogeonmi' 3,926 > 'Jinhongmi' 3,428 > 'Daeyumi' 2,873 > 'Singeonmi' 2,752 kg/10a. The starch content was 20.2% in 'Daeyumi', 18.2 in 'Gogeonmi', 21.2 in 'Singeonmi', and 20.6% in 'Jinghongmi'. The total amount of starch was higher in 'Daeyumi' (730 kg/10a) and 'Gogeonmi' (731 kg/lOa). The yield of chips and edible varieties 'Pungwonmi' was 4,688 kg/10a. The yield of 'Shinjami' of purple variety such as beverages and powder was 3,139 kg/10a. Aaa result of evaluation sweetpotato yield by waterlogging treatments on different growing stages in paddy fields, the yields of 'Daeyumi' and 'Jinhongmi' varieties treated with waterlogging at the storage root formation stage decreased by 11.8% and 11.7%, respectively, compared to the control. In the case of waterlogging treatment at storage root swelling stage, Both varieties showed the lowest yield reduction at 7.0% and 4.8%, respectively. Based on these results, stable production and substitution effect of processing raw materials can be expected by cultivating sweetpotato varieties suitable for paddy cultivation.
'Morningpurple' is a new sweetpotato variety developed by Mokpo Experiment Station, National Institute of Crop Science (NICS), RDA in 2007, for flowering. This variety was selected from the cross between Sinchunmi and Hi-dry in 2004, seedling and line selections were practiced from 2005 to 2006. 'Morningpurple' has morning glory type flowers with purple color. It has triangular leaf, green with purple vine and petiole, elliptic storage root, red skin and yellow flesh color of storage root. The average yield of storage root was 15.0 ton/ha. Number of storage roots over 50 gram per plant was 2.6, and the average weight of storage root was 143 gram.
This research was performed to find out the root characteristics of sweetpotato (Ipomoea batatas LAM.) cultivars according to the cultivation regions. Total 10 sweetpotato culivars, 6 yellow, 2 purple and 2 orange, were used for experiment. Samples were cultivated in Muan, Iksan, Nonsan, Boryeong and Hamyang. Precipitation and average temperature during the growth period of sweetpotato cultivation were 882~1,682 mm and 16.7~$28.2^{\circ}C$, respectively. Accumulated temperature was 3,122~$3,282^{\circ}C$. Soil texture was found of sandy loam in Muan, Iksan and Boryeong, sandy clay loam in Nonsan, and loam in Hamyang. The yield of root, dry matter content, starch value and soluble solids contents were high in Muan. The length/width ratio was high in Hamyang. The color values of sweetpotatoes were high in Nonsan. The protein content of sweetpotato powder was high in the Iksan, crude fat content and ash content were high in the Hamyang. The results of this study, we could see that root characteristics of sweetpotato in the same cultivars appeared differently depending on the cultivated regions.
The anthocyanin biosynthesis in callus culture of purple sweet potato (Ipomoea batatas L. cv. Borami) was investigated under growth in different light intensity and light emitting diodes (LED) treatment. Pigmented calli were induced from leaf explants cultured on MS agar medium supplemented with $0.5\;{\mu}M$ 2,4-D under light condition. The color value of these calli extracted after $2{\sim}4$ weeks of cultures was $0.4{\sim}0.5\;mg/mL$. Irradiation intensity is an important factor for anthocyanin biosynthesis. The optimal anthocyanin accumulation occurred on light intensity of 3000 lux. Light irradiation of 3000 lux and blue light treatment for 2 h resulted in a significant enhancement of anthocyanin accumulation. This value was 1.4 fold that the control.
