A study on the improvement of the score system in the hazard analysis and critical control points prerequisite program for meat shops in Korea

  • This study is to develop a new scoring system for rating Hazard analysis and critical control points prerequisite evaluation items for meat shops to provide a more objective and accurate evaluation of food safety compliance. The importance of each item was measured by looking at the hazard severity level and the rate of non-compliance associated with it. It was found that the new scoring system is more stringent and gives a clearer picture of compliance with the most critical safety standards, and therefore is expected to have a positive effect on the hygiene and safety of livestock products.

  • Technical high school aims at educating students to acquire fundamental skill and technology required for being competent technicians, to be creative in adjusting themselves to the changing industrial society, and to do self-realization and find their ways toward the future on their own. To attain that goal and maximize learning effect, mathematics education is very important as prerequisite learning for technical subjects, as most technical courses in technical high school are basically based on mathematics. The purpose of this study was to discuss how mathematics education could be successfully linked to technical courses in an attempt to make it function properly as prerequisite learning for major subjects and facilitate students' technical learning. For that purpose, what problems the mathematics components of major subjects and the curriculum had was examined and the way to offer better education was presented. And there are some suggestions regarding mathematics education: First, technical mathematics should be newly inserted into technical high school curricula to help students learn major subjects in more efficient way. Second, most technical high schools are expected to just require tenth graders to complete a 10-stage mathematics course. In that case, they might find difficulties in learning major subjects when they are in their 11st and 12th grade. The curriculum should be designed to have 11st and 12th graders take mathematics education. Third, many students find a job after graduation, but the growing number of students go on to university to receive more education in the same field. Accordingly, there is a need to enlarge continuous progress plan, rather than completion-type one, to make students well-grounded technically. And mathematics should be taught in more classes as prerequisite subject for major courses. Fourth, mathematics elements necessary for each major subject should be outlined and announced to schools so that they could reorganize mathematics and major courses appropriately.

병원 급식소와 영양사의 특성이 HACCP 선행요건 수행도에 미치는 영향 (Influence of Characteristics of Hospital Foodservice Operation and Dietitian on Performance of HACCP Prerequisite Program)

  • 병원 급식소 선행요건 관리 수행도에 영향을 주는 요인을 분석하고자 서울 경인, 대구 경북지역에 위치한 종합병원 규모 100병상 이상 병원 급식소 총 65곳을 대상으로 설문조사를 실시한 후 통계처리 한 결과는 다음과 같다. 직영으로 운영하는 경우가 위탁으로 운영하는 경우에 비해 작업환경관리(p<0.01), 폐기물관리(p<0.05), 세척 소독관리(p<0.05)에 대한 중요도 평가점수가 유의적으로 높았다. 개인위생관리 영역의 중요도 평가점수는 300병상 미만인 경우가 300병상 이상인 경우에 비해 중요도 점수가 유의적으로 낮았다(p<0.05). 또한 영양사의 조리과정 감독시간이 3시간 이상인 경우가 3시간 미만인 경우에 비해 폐기물관리에 대한 중요도 점수가 유의적으로 높았다(p<0.05). 선행요건 수행도 총점을 종속변수로 하고 선행요건 수행도 총점과 유의미한 상관관계가 있다고 분석된 영양사의 경력과 조리과정 감독시간, 직무만족도와 병원 급식소의 허가 병상 수와 위생기기 보유율 등을 독립변수로 하여 다중회귀분석을 실시한 결과 회귀모형의 설명력은 45.9%였고, 회귀식은 통계적으로 유의한 것으로 분석되었다(F=10.172, p<0.001). 회귀분석 결과 선행요건 수행도에는 '영양사의 직무만족도(p<0.001)'와 '위생기기 보유율(p<0.05)'이 유의한 양(+)의 영향을 주는 것으로 분석되었다. 따라서 병원 급식소 선행요건 관리 수행도 향상을 위해서는 영양사의 직무 만족도 향상을 위한 근무조건 개선과 함께 위생관리에 필요한 기기의 적정 확보가 우선적으로 필요하다고 판단된다.

HACCP 적용 학교 급식소의 조리종사자 대상 위생교육 프로그램 개발 (Developing Food Safety Education Program for Employees at School Foodservice Implementing HACCP)

  • Objectives: This study was performed to develop a food safety education program for school foodservice employees and evaluate its effectiveness. Methods: Food safety education programs were made into two levels; one for new employees in school foodservice and another for employees in charge of Critical Control Point (CCP) monitoring. The programs were for 40-minute-long lecture using PowerPoint. The effectiveness of these programs were assessed based on eleven evaluation items by school foodservice dieticians (n=30) and the Hazard Analysis Critical Control Point (HACCP) specialist (n=13). All statistical analyses are conducted by SPSS package program (ver 20.0). Results: According to the results of evaluating the food safety education program by dietitian and HACCP specialist, the overall satisfaction score was 4.14, evaluated by 5 point scale. There were no significant difference in results of evaluation between dieticians and HACCP specialists. The score of 'it is helpful to work' and 'pictures, images and charts are pertinent to study' were higher than others while the score of 'education contents is pleasant and interesting' and 'screen is pleasant and interesting' were the lowest among all evaluation items. Conclusions: To increase the school foodservice quality, employees should be offered regular food safety education and training through effective education media including prerequisite program and HACCP manual for school foodservice.

HACCP을 적용하여 생산한 김밥의 유통기한 설정 (Determining Kimbab Shelf-life with a HACCP System)

  • This study was conducted to estimate the shelf-life of Kimbab manufactured using a Hazard Analysis and Critical Control Point (HACCP). We performed a microbiological verification after applying the HACCP plan to Kimbab. Additionally, the shelf-life of Kimbab at each holding temperature was calculated as a regression equation between the aerobic plate counts and holding time during the storage period. The critical control points of the HACCP plan, that were applied to Kimbab, included: cold-holding of refrigerated foods, checking the endpoint cooking temperature of heated food, and cold-holding of cooked foods. As a result of the microbiological verification of Kimbab, the aerobic plate counts averaged 3.46 log CFU/g. In contrast, the coliforms, E. coli, Staphylococcus aureus, and Salmonella spp. were not detected in any of the samples. The estimated shelf-life of Kimbab was calculated to be 45 hours at $10^{\circ}C$, 29 hours at $15^{\circ}C$, 6 hours at $25^{\circ}C$ and 3 hours at $35^{\circ}C$. In conclusion, manufacturers should apply a prerequisite program and a HACCP system for a safe consumption of ready-to-eat foods and label products with a proper shelf-life. Distributors should control the proper holding time-temperature until sale and consumers should eat immediately after purchasing ready-to-eat foods.

업무용 친환경건축물의 득점체계 개선에 관한 연구 (A Study on the Improvement of Scoring System by Issues as well as Criteria in the Green Building Certification System for Office Building)

  • The purpose of Green Building Certification System is to promote the environment-friendly building construction as the life-cycle environmental performance of a certain building is assessed and certified nationally(domestically). By the way, a building can get the green building certificate just with the minimum standard in prerequisite assessment criteria and with the designated scores in totals. GBCS consists of 9 assessment issues and it has 4 grades. Nevertheless the 1st. grade green building has uneven scores in each issue. In other words, it has even 0 point in a special issue. Due to the above problem, the discrimination and reliability in the GBCS grading and scoring has to be secured. This study aims at a new grading and scoring system equipped with the discrimination and reliability through analysing the scores of prerequisite assessment criteria and the scores by issues in the actually certified green office buildings.

  • 의료시설 내에서 이동하고 있는 환자의 위치를 확인하는 것은 환자의 안전을 보장하고 의료서비스 질의 향상을 위해서 중요하다. 기존의 블루투스를 활용한 실내위치확인 시스템에서는 정확도 향상을 위해서 많은 사전 정보와 다수의 장치를 활용해야하는 문제가 있었다. 본 논문에서는 서로 다른 공간에 다른 패턴으로 비콘을 배치하고 동일한 수신신호강도를 갖는 비콘들을 그룹화하여 사전 정보 없이 소규모의 비콘만으로 공간을 인식하는 기법을 제안한다. 제안 기법에서는 인접 패턴간의 간섭을 고려하여 이를 최소화 할 수 있는 패턴 배치 기법을 연구했다. 또한 실험을 통해 제안 기법이 환자 위치 확인 시스템에 적용가능하다는 것을 검증하였다.

한국형 사전의료의향서의 구성 요건: 의료인을 중심으로 (Prerequisite for Korean Advance Directives: From the View of Healthcare Providers)

  • Purpose: The purpose of this study was to explore the main prerequisite for Korean Advance Directives [KAD] to ensure their better use. Methods: Data were collected from two focus group interviews and individual email responses. Study participants were 5 doctors and 6 nurses. All interview data were transcribed and analyzed using qualitative content analysis. Results: Three main themes emerged; establishing a philosophy of KAD, protocol to practice KAD, and the KAD document itself. A philosophy is needed to ensure individual needs, consensus to practice AD and identify principle agents. The core of protocol was found to be as follows; 1) process, 2) premise, 3) procedure, 4) contextual preparation, 5) timing, 6) feasibility. Component and feasibility need to be established for the document itself. Conclusion: For a positive acceptance of KAD in Korean society, a culture sensitive, reality based, and user friendly AD needs to be developed.

  • 국내외 기계공학분야 교육과정과 이수체계에 대한 고찰을 통하여 교육과정 및 이수체계 현황을 파악하고, 공학교육 내용과 지식의 논리적 구조에 근거한 합리적 이수체계 모델을 제시하여, 기계공학 프로그램의 운영 방향을 제시하고자 한다. 국내외 우수대학 기계공학 분야의 설계교육을 포함한 교육과정, 학문, 산업발전 동향을 고려하여 합리적 이수체계를 연구하였다. 특히 전면적인 선.후수 이수체계도입을 위한 방법을 연구하여, 교과 이수체계를 준수할 수 있는 제도적 방안을 제시함으로써 학생들이 공학지식의 논리적 구조에 따라 공학 관련 지식을 체계적으로 습득할 수 있도록 하고자 한다.
