Purpose: This study investigates the relationship among nutrition knowledge, food habit problems and dietary attitudes in nursing students. Methods: A total of 856 nursing students participated in the study. Data was analyzed by frequencies, t-tests, ANOVA, Pearson correlation coefficients, and multiple stepwise regressions via SPSS WIN 21.0. Results: The mean scores for nutrition knowledge and dietary attitudes were above average and the score related to food habit problems was high. Dietary attitudes correlated positively with nutrition knowledge, but dietary attitudes correlated negatively with food habit problems. Significant predictors of dietary attitudes included: food habit problems, interest in nutrition and health, exercise, and drinking. The regression model explained 16.4% of perceived dietary attitudes. Conclusion: To improve dietary attitudes among nursing students, nursing educators should develop nutritional educational intervention programs in order to promote nutrition knowledge and identify food habit problems.
This study investigated the nutritional status and the knowledge of the 204 elderly in Young-nam area. Their weight and height were measured and their dietary intake and nutritional knowledge evaluated. The sutjects were 74.7$\pm$5.9 years old in average. The BMIs were in the moderate range. Weights and BMI decreased significantly with age. The dietary assessment data showed that each energy intake of the males and the females was 90.9% and 97.0% compared with the Korean RDA, respectively. The dietary intake of vitamin A, calcium and iron was lower than that of the Korean RDA. The fiber intake of the subjects was 7.4g~7.8g. The MAR of vitamin $_{B2}$ was the lowest, 0.66 and that of phosphorus was the highest, 0.99. According to the nutritional knowledge level, the intake of protein, vitamin A, vitamin $B_1$and iron in the excellent group was significantly higher than that in the poor group. The correlation analysis revealed that the score of nutritional knowledge was positively associated with BMI, MAR and protein intake, while negatively with age.e.
The purpose of this study was to investigate dietary behaviors and nutritional knowledge among immigrant women in multicultural families. In addition, this study reveals a necessity for nutrition education, which is apparent to both immigrant women living in multicultural families as well as nutrition education experts. The survey was conducted with 30 immigrant women within multicultural families in Seoul. The dietary behaviors of the women were significantly different by their period of residence. The longer they had resided in Korea, the higher their dietary behavior score. However, there was no significant difference in nutrition knowledge by their period of residence. This study also conducted in-depth personal interviews with 8 immigrant women who lived in Seoul, and with 4 nutrition education experts. These interviews were performed to provide profound insights regarding the content and means of nutrition education for immigrant women. Nutrition education for immigrant women living in multicultural families should proceed at a basic level in terms of language and content, using bilingual (Korean and their native language) education materials. Education topics and content need to be developed differently according to the level of Korean comprehension and period of residence in Korea. Also, this multicultural approach should be adapted when planning nutrition education since immigrant women have various acculturation levels, and the content and means of education should be adjusted to these acculturation levels. Management after nutrition education is necessary for immigrant women who do not have sufficient understanding of the Korean language. Practical educational methods such as real cooking practices and food purchasing simulations must be developed. Finally, the results suggest that the government needs to establish a systematic plan for nutrition education among immigrant women living in multicultural families. Policy support such as training nutrition educators on multicultural individuals residing in Korea is necessary for active and effective nutritional education.

Tailored nutritional education is generally found to be more effective in changing behaviors and to be more fully implemented than a non-tailored equivalent. This study was conducted in order to develop tailored nutritional education materials on food additives in processed foods based on need and levels of knowledge of educational targets of elementary-school students in Seoul Metropolitan City. The focus group interview was conducted with six elementary-school nutrition teachers in order to gather information and to develop a tailored quantitative questionnaire for the survey. Based on the results from 138 nutrition teachers, all answered that education on food additives in processed foods for students is necessary and both teachers and students need to receive education regarding definition, safety, and use of food additives for each processed food, in the form of video, PPT, and teaching-learning plan. Nutritional education materials for two classes were developed using video clips (grocery shopping and cooking class) about food additives in processed foods, PPTs with activity papers, two teaching-learning plans, and school newsletters to parents. In conclusion, the current study warrants conduct of further studies short-term and long-term impacts and efficacy of tailored need-based nutrition education in promotion of healthy nutrition by conveying proper scientific knowledge regarding food additives in processed foods for elementary-school students.
The risks of the metabolic syndrome (MS) is known to be related to the dietary behavior. The objective of this study is to evaluate the association between the relative risks of MS and the dietary habit and to provide the ideal dietary habits for prevention of chronic disease of the middle-aged. Healthy subjects aged 40-64 years (male n=122, female n=173) were recruited throughout Seoul area. MS was defined according to NCEP-ATP III criteria except central obesity, and Asia-Pacific Area criteria for central obesity (2000) was adapted. Subjects were stratified into 3 groups according to the number of total risk factors:'MS group' was defined as the subjects who have three or more risk factors, 'Risk group' was defined as ones to have one or two risk factors, and 'Healthy group' defined as ones with no risk factor. In this study, 'Health group' comprised of $40.7\%$, the percentage of 'Risk group' was $49.0\%$, and the 'MS group' was $9.5\%$ of the total subjects. The MS incidence was associated with low education (p<0.001), low economic status (p<0.05), and low self-assessed health recognition (p<0.05). The risk of MS increased with adverse life styles such as cigarette smoking (p<0.05), irregular meal time (p<0.05), skipping lunch (p<0.05), low interests in balanced diet (p<0.05), and higher salt intake (p<0.01). Healthy group self-evaluated nutritional knowledge more highly (p<0.05) and scored higher nutritional knowledge (p<0.001). However, there was no difference in overall nutritional behavior among the three groups, which implies that nutritional education method should be developed for the subjects to practice their teaming efficiently.
This study aimed to compare the dietary habits, nutritional knowledge, and health-related behaviors of students by high school type using questionnaires. The subjects were 586 male students (academic high school students (AS); 294, specialized high school students (SS); 292) in Jinju, Gyeongnam. The frequencies of eating breakfast and snacks were higher in AS than in SS (p<0.05), whereas the frequency of drinking was higher in SS than in AS (p<0.05). The main reason for skipping breakfast was 'poor appetite' in AS (45.2%) and 'lack of time' in SS (56.5%) (p<0.05). Favorite snacks included 'pizza, hamburger' (33.0%) and 'bread, noddle, ramyun' (31.0%) in AS as well as 'pizza, hamburger' (32.5%) and 'fruit, fruit juice' (26.0%) in SS. A mean of 56.2% of students ate an unbalanced diet, and the main reason was 'untasty' (47.2%). The frequency of eating out was higher in SS than in AS (p<0.05), and the main menu while eating out was 'Korean food' in AS (96.3%) and SS (90.3%). The frequency of 'meat, fish, egg, beans' was higher in AS than in SS (p<0.05). On the other hand, the frequencies of 'fruit, fruit juices' (p<0.05), 'milk, milk products' (p<0.01), 'seaweeds' (p<0.05), 'instant foods' (p<0.001) and 'soda and ion drinks' (p<0.001) were higher in SS than in AS. The mean rates of drinking and smoking in students were 84% and 29.5%, respectively. The main reason for drinking and smoking was 'to relieve stress' in AS (38.0%) and SS (30.9%) (p< 0.001). In general, the nutritional knowledge level of SS was higher than that of AS. In conclusion, there were significant differences in the frequencies of eating breakfast, food intake, drinking and reasons for eating snacks, unbalanced diet, drinking and smoking between AS and SS. Therefore, it's necessary to provide proper nutritional education for students according to high school type.
This study was performed to investigate the dietary habits, body satisfaction and nutritional knowledge according to body image of middle school girl students (n = 284). The subjects were classified as lean, normal and fat groups according to body image. The weight, body mass index (BMI) and the score of body image were significantly higher in the students who recognized their body image as 'fat'. The satisfaction of present body image was significantly lower in students who recognized their body image as 'lean'. The interest in weight control and experience of weight control were significantly higher in students who recognized their body image as 'fat'. The necessity of nutrition education was higher in all groups (lean 67.2%, normal 59.0% and fat 52.8%). The products used to feel sweetened were sweetened ice (68.7%), processed milk (68.3%), confectionery (62.3%), carbonated beverage (55.3%), fermented milk (38.0%) and none (6.0%). The frequency of consumption of fruit juices and fried food was significantly higher in 'normal' compared to 'fat'. There was no significant difference in the frequency of consumption of snack and nutritional knowledge among the three groups. In the multiple regression analysis, the score of body image was negatively associated with the frequency of snack consumption in the 'lean'. The score of body image was positively associated with identification of nutrition labels and an interest in weight control but was negatively associated with satisfaction of present body image in the 'fat'. Based on these results, we conclude that, the middle school girl students need correct recognition of body image and continuous and practical nutrition education in order to maintain healthy dietary habits.
The purpose of this study was to investigate nutritional knowledge, practice of eating behavior guidelines, and problematic dietary habits in working high school students in comparison with non-working high school students. A survey questionnaire was formulated to obtain information on demographic variables, body size, part-time jobs, nutritional knowledge, practice of eating behavior guidelines, and dietary habits. The developed questionnaire was given out to 515 students attending a vocational high school in Yongin, Gyeonggi-Do. Those who had been working 5 hours or more per day for at least a month at the time of survey administration were defined as working students for this study. Proportions of working students were similar between male and female students (i.e. 49.5% for male, 50.5% for female). No significant difference was found in scores of nutritional knowledge between working ($8.43{\pm}2.29$) and non-working students ($8.60{\pm}2.19$). However, some dietary habits were found to be dependent on working status. While approximately 43% of non-working students reported skipping a meal, about 57% of working students did so (p<0.01). The proportion of students with any drinking experience was significantly higher among working students (92%) compared to non-working students (80%) (p<0.001). Working students were found to drink alcoholic beverages more often than non-working students (p<0.001). The mean score of practice of eating behavior guidelines was lower in working students than non-working students. The magnitude of this difference was modest ($51.33{\pm}0.63$ in working students, $53.40{\pm}0.51$ in non-working students), but reached statistical significance (p<0.01). Based on the findings from this study, it is suggested that specific behavior-oriented messages to improve certain problematic dietary habits need to be directed toward working high school students.
For the purpose of developing 'Web-Based Nutritional Education Program', this study analyzed nutritional problems of junior/senior high school students and set appropriate instructional goals for nutritional education program. Survey questionnaires were distributed from October 21,2002 to October 26, 2002 to a total of 564 students at three junior high schools and five senior high schools located in Seoul. The total number of questionnaires collected and used in our study was 479, which is 84.9% of the total questionnaires distributed. According to the survey results, three student groups (male and female students at junior high schools and female students at senior high schools) had lower than an ideal body weight. In case of their Basal Metabolic Indices (BMI), the female students and junior high school students showed a tendency to be underweight, while the other three student groups were within the normal range. The result of the survey showed that all four groups of students showed a deficiency in nutrient intake of calories, calcium and thiamin when compared with Korean RDA. Particularly, in the case of the female students at senior high schools, the deficiency of iron intake was a problem. The survey about food attitudes and food habits of the students showed that the senior high school students had more problems when compared with their junior high school counterparts (p < .001). Therefore, the instructional goals of nutritional education program were set as follows: 1) To improve the level of understanding and the perception of junior and senior high school students about the importance of a dietary lifestyle. 2) To change food attitudes and nutritional knowledge related to individual dietary 1ifestyle, so as to maintain good health through the enhancement of the students' physical activities. We found out that it is critically important to factor in the existing problems of food attitudes and food habits, as well as nutrient intake among junior and senor high school students when setting objectives for nutritional education programs. A functional ability and adequate nutritional status are the major determinants of health status, Self-rated health (SRH) is a worldwide method to assess health status and it is recognized as a predictor of morbidity and mortality in the elderly, This study was designed to evaluate the functional ability and nutritional risk according to SRH in the elderly. Four hundred nine free-living elderly people (118 male, 291 female), aged $\geq$ 65 years were interviewed by trained interviewers using structured questionnaires including demographic information, SRH, anthropometric measurements, functional ability, general health status, and nutritional risk. SRH was divided into three status such as “Good”, “Moderate” and “Poor” status. And all the data were analyzed by oneway ANOVA, spearman correlation, and x$^2$ analysis using SPSS 9.0 version at p 〈 0.05. Of all the subjects, 48.9% perceived their health status as “poor”, and their functional abilities (activities of daily living, instrumental activities of daily living) were more impaired than their counterparts (“good” and “moderate”). Poor self-rated health was also related to: a higher prevalence of illnesses (p 〈 0,001) especially in hypertension, arthritis. Self-rated health was significantly related to food security (p 〈 0.001), food enjoyment (p 〈 0.001) ,and nutritional knowledge (p = 0.0 13). Also NSI checklist total score was the highest in “poor” health status (p 〈 0.001). Better self-rated health was related to better food security, and better food enjoyment. However, smoking, alcoholic intake, exercise, eating behaviors, and demographic characteristics were not significantly different among the three SRH status. SRH was closely related to chronic diseases, functional ability, and nutritional risk in the elderly. Therefore, public health strategies for the elderly should be focused on the elderly who are “poor” in SRH, to improve nutritional status and functional ability, and to reduce risk factors of chronic diseases.
