The purpose of this experiment is to investigate the feasibility of extracts (sample extract, MSE) mixed with hot - water extracts as health functional nutritional foods for prevention and treatment of liver damage. The experimental method was to investigate the effects of carbon tetrachloride on liver damage in rats by 60% of liver cirrhosis level. The effect of mixed extracts (MSE) was investigated by measuring the physiological functions, biochemical functions, and molecular biologic TGF - ${\beta}$ and P53 levels in liver - injured rats. with MSE doses administered differently(0.50ml, 0.75ml). A total of 30 rats were used for normal group, control group, positive control group, experimental group 1, and experimental group 2. The rats were given 6 times a week for 6 weeks at a fixed time once a day. The results of the experiment were statistically significantly higher in the control group than in the normal group and the positive control group, and statistically significantly lower in the experimental group (1 and 2) than the control group. There were some significant differences in the comparison between the experimental groups (1 and 2), but no significant changes were found. In conclusion, the results of this study are expected to be useful as functional food, and the variation of physiological activity and the degree of liver molecular biotechnology will be used for the research of the same field.
The purpose of this study was to analyze the nutrition labeling of Guk, Tang, Jjigae HMR products to provide consumers with appropriate information when selecting products, and to provide basic data on the national policies. In this study, nutritional labels of 176 products were analyzed with 57 Guk, 75 Tang, 44 Jjigae. In the menu frequency of products, Guk has the products of the specific purposes, Tang has animal protein product, Jjigae has popular products. As a result of comparing the portion size and 9 major nutrients of the product, the average sodium content of Guk was 1558.5 mg, Tang was 1472.3mg, Jjigae was 2118.0mg. By the storage temperature, the average sodium content of HMR product was 2022.9mg in freezing(below $-18^{\circ}C$), 1676.7mg in cold($-2{\sim}10^{\circ}C$), and 1250.9mg in room temperature($1{\sim}35^{\circ}C$). Therefore, it is necessary to focus on the sodium content of Frozen products in the attempt of reducing sodium in HMR products.
In the 2020 Dietary Reference Intakes for Koreans, an acceptable macronutrient distribution range (AMDR), similar to the one established in 2015, was determined for carbohydrates. AMDR is the ratio that signifies energy intake from carbohydrates to the total energy intake, and is a reference that indicates a decreasing risk of chronic diseases. The AMDR of carbohydrate was determined to be optimal at 55-65% for all ages above 1 year. For the first time, in the year 2020, the estimated average requirement (EAR) and recommended nutrient intake (RNI) for carbohydrates were established. The EAR was based on the amount of glucose used per day in the brain, and was set at 100 g/day for all ages above 1 year. The RNI was set at 130 g/day, by adding a double coefficient of variation using a 15% coefficient of variation, for all ages above 1 year. In pregnant women, the amount of glucose utilized by the fetus brain was considered additionally, and for lactating women the amount of lactose secreted into maternal milk was additionally taken into consideration. Since the EAR of carbohydrate indicates the minimum amount of glucose required by the brain and is not an appropriate intake amount as an energy source, it is incorrect to compare the carbohydrate intake with the EAR or RNI. To evaluate the nutritional status of carbohydrate, it is appropriate to use the AMDR. Carbohydrate intakes within the AMDR range has the possibility in reducing the risk of chronic diseases. Hence, it is important to consider the quality as well as quantity of carbohydrates consumed.
Vitamin A (Vit A) is a lipid-soluble vitamin required for diverse normal body functions, including good vision, reproduction, growth, development, and cellular differentiation. The therapeutic effects of Vit A have been demonstrated for the treatments of inflammation, low immunity, and cancer. The present review discusses the scientific evidence for establishing the 2020 Dietary Reference Intakes for Koreans (KDRI) for Vit A, issues caused by unit change of Vit A, and suggestions for the 2025 KDRI revision. Due to the changes in the standard bodyweight observed in several age groups, the 2020 KDRI had minor revisions as compared to the 2015 KDRI. In the 2015 KDRI, the Vit A unit has changed from retinol equivalent (RE) to retinol activity equivalent (RAE) and the activity of carotenoids became half with RAE compared to RE due to this unit change. Since the Vit A intake of Koreans relies heavily on plant-based carotenoids, the dietary intake of Vit A in Koreans as determined by considering the RAE was much lower than values obtained with RE. The analysis for Vit A intake by the Korean National Health and Nutrition Survey only reflects intakes of retinol and beta-carotene. Thus, it would be necessary to include the consumption of other provitamin A, such as alpha-carotene and beta-cryptoxanthin. Moreover, assessing the amounts of Vit A in foods should be customized to Korean diets since there are seasonal variations in the carotenoid concentration of plants. Moreover, other factors such as age- and sex-specific intake data and considerations of baseline micronutrient status, body mass index, and dietary patterns should be considered for developing more precise KDRI. In particular, the Vit A requirement needs to be met by consuming diverse foods, including animal foods.

The purpose of this study is to develop and evaluate a dietary education program to improve the caring ability and multicultural acceptance of middle school students. Based on the instructional system design of ADDIE model, the dietary education program was developed to contain five sessions including four theoretical lectures and one lab session. Visual thinking technique was used to train students to express their thoughts and emotion by writing and drawing. The dietary education program was conducted for four weeks (from November 19 to December 14, 2018) at a middle school located in Seoul on a total of 69 middle school students, out of which 34 were assigned to an experimental group and 35 were assigned to a control group. Separate paired t-test were conducted for the experimental group and the control group, respectively, to determine the changes in caring ability and multicultural acceptance scores before and after the dietary education. There were significant increases in caring ability (dietary-, emotional-, behavioral- and cognitive caring) and multicultural acceptance (diversity, relationship and universality) scores among the experimental group after the dietary program. However, no differences were observed among the control group. The results indicate that the dietary education program can be an effective tool to improve caring ability and multicultural acceptance of middle school students.

In this study, the effect of functional substances such as polyphenols and flavonoids contained in large quantities in red ginseng and herbal medicines on the antioxidant activity properties and flavor effect were investigated by increasing the content and activity of functional ingredients by convert red ginseng through a steaming heat-drying process compared to the traditional dry processing method of ginseng and herbal medicines. According to the experimental results, the addition of pre-heat treatment significantly increased antioxidant properties such as DPPH radical scavenging ability, polyphenols, and flavonoids. In addition, during the steaming and heat-dried red ginseng manufacturing process, the amino-carbonyl browning reaction was promoted, resulting in increased brownness and a savory flavor. However, the content of ginsenosides, the main medicinal ingredient in red ginseng, became the main cause of the bitter and harsh taste. In addition, the bitter and harsh taste of red ginseng has been significantly improved by roasting and producing powder, but on the other hand, Radix Angelicae sinensis, polymorphic angelica and Peony, which are used as main medicinal ingredients in oriental medicine for nutritional tonic prescriptions such as 10 herbal medicine and 4 herbal medicine have a very strong herbal medicine-specific flavor and have a bitter and harsh taste. It is so strong that in order to use it as an instant extraction material, it was reviewed that a steaming and heating manufacturing method was needed during the manufacturing process.
This study analyzed the differences in the general characteristics, mental and health-related factors, eating habits, and nutrient intake of Korean male youths before and after the outbreak of the coronavirus disease 2019 (COVID-19). The data of a total of 1,231 subjects, from among the participants in the 2018 and 2020 Korea National Health and Nutrition Examination Survey (KNHANES), were analyzed. The 2020 group had fewer married members than the 2018 group. The subjects in the 2020 group weighed more (P<0.05), had a higher waist circumference (P<0.01), and showed greater weight gain (P<0.05) than the 2018 group subjects. The aerobic physical activity of the 2020 group was lower (P<0.01) compared to the 2018 group. The members of the 2020 group had higher depression scores (P<0.01), suicidal tendencies (P<0.01), and need for counseling for mental problems (P<0.05) than those of the 2018 group. The prevalence of high fasting blood sugar levels and diabetes was higher in the 2020 group compared to the 2018 group. The frequency of breakfast (P<0.01) and dining out (P<0.001) and the proportion of breakfast (P<0.01) and dinner (P<0.05) taken with the family or non-family members was lower in the 2020 group than in the 2018 group. The rate of dietary supplement intake of the 2020 group was higher than that of the 2018 group (P<0.01). There were significant differences in the protein (P<0.05), riboflavin (P<0.01), and carbohydrate (P<0.01) intakes between the two groups. These results suggest that male youths had a higher waist circumference and high levels of depression, and showed a decrease in frequency of breakfast intake and dining out after the out break COVID-19 pandemic. Therefore, nutrition and health promotion programs are urgently needed to improve mental health, other health-related factors and nutritional status of male adults that are associated with the COVID-19 pandemic.
Purpose: This study compared the differences in health and dietary characteristics between middle-aged men and women according to their health-related quality of life. Methods: This study used the data from the 2019 and 2021 Korea National Health and Nutrition Examination Survey (KNHANES). The participants were men (n = 1,571) and women (n = 2,179) aged 40-59. A health-related Quality of Life Instrument with eight items (HINT-8) was used to measure the health-related quality of life. The participants were divided into four groups based on their HINT-8 total scores (high, mid-high, mid-low, and low). The general and health characteristics, mental health, and dietary behaviors were compared according to the quality of life. Results: Men with a lower quality of life had lower incomes, were more likely to be single, smoked and drank more, and perceived themselves as slim or obese. Women with a lower quality of life had a higher proportion of older age, obesity, lower education and income, hypercholesterolemia, and hypertriglyceridemia. Both men and women with a lower quality of life had higher proportions of subjectively perceiving poor health, weight gain over the past year, and considering themselves as obese. Both men and women with a lower quality of life had lower consumption frequencies of vegetables/mushrooms/seaweed and fruits. Conclusion: Both men and women with lower health-related quality of life had lower incomes, higher rates of perceiving their health as poor, and consumed vegetables/ mushrooms/seaweed and fruits less frequently, but they showed different characteristics in other aspects. Therefore, policy development tailored to men and women is necessary.
This study was conducted to survey isoflavone intake among adult women in menopause with diseases such as metabolic syndrome and osteoporosis and to analyze the relationship between each of these chronic diseases followed by isoflavone intake and the related health risk index. The average age of the subjects was 49.97 years old, while that of the pre-menopausal subjects was 45.14 years, and the post-menopausal subjects was 55.99 years. The average body mass index (BMI), waist-hip circumference, body fat percentage, blood pressure, blood sugar and blood lipid content of the post-menopausal subjects were higher in significant difference than those of the pre-menopausal subjects. The bone density of the hip and spine in post-menopausal subjects was lower in significant difference than that of the pre-menopausal subjects. After menopause, the subjects had a lower ratio of individuals at risk of anemia when compared with the subjects before menopause, but had higher health risk ratio related to each type of chronic disease, including obesity, hypertension, high cholesterol and osteoporosis than the subjects before menopause. The intake frequency of each soybean food was similar among subjects before/after menopause. The most common soybean based foods consumed by the subjects were soybean, soybean curd and soybean paste. The average daily intake level of isoflavone among subjects before menopause was 25.48 mg, while that of subjects after menopause was 32.25 mg. Evaluation of the distribution of the isoflavone level revealed that the pre-menopausal subjects consumed 3.29~78.36 mg and the post-menopausal subjects consumed 3.18~116.59 mg. The intake level by each individual varied greatly. The pre-menopausal subjects had a low BMI index and systolic blood pressure as much as their isoflavone intake level was high. Additionally, the post-menopausal subjects had a low menarche age and high menopause age when their isoflavone intake level was high, the BMI index and waist-hip circumference ratio was highest among individuals with lowest isoflavone intake level. This study showed that there was a possible relationship between soybean isoflavone intake and health problems such as obesity, high cholesterol, and osteoporosis in women after menopause with diseases such as metabolic syndrome and osteoporosis, even if this relationship was not great.

The purposes of this study were to compare price sensitivity analysis for using environmental-friendly agricultural products in university foodservice between Jeonnam and Gyeongnam areas in Korea and to suggest the optimum guideline for price increase. The questionnaires were distributed to 600 university students respectively in Jeonnam and Gyeongnam area from July 15 to July 25, 2008; among them, 570 students from Jeonnam area and 490 students from Gyeongnam area responded. The results of this study were as follows. First, Indifference price (IDP) were 890 won (Jeonnam area) and 1,050 won (Gyeongnam area); Optimum price point (OPP) were 1,030 won (Jeonnam area) and 1450 won (Gyeongnam area). Price stress range were 140 won (890~1030 won) in Jeonnam area and 400 won (1050~1450 won) in Gyeongnam area. Second, point of marginal cheapness (PMC) were 500 won (Jeonnam area) and 790 won (Gyeongnam area) whereas point of marginal expensiveness (PME) were 1,170 won (Jeonnam area) and 1820 won (Gyeongnam area). Range of acceptable price (RAP) were 670 won (500~1170 won) in Jeonnam area and 1030 won (790~1820 won) in Gyeongnam area. Third, on the basis of IDP percentage and RAP, students in Jeonnam area were more sensitive to meal price increase than students in Gyeongnam area. In contrast, on the basis of Price Stress, students in Gyeongnam area were more sensitive to meal price increase than students in Jeonnam area. Hence, when using environmental-friendly agricultural products in university foodservice, in Jeonnam area, meal price increase should be recommended to be in RAP (500~1170 won), and in Gyeongnam area, meal price increase should be recommended to be in RAP (790~1820 won).
