Health is easily overlooked because it doesn’t be changed good or bad due to sudden effort or indifference unexpectedly but kept in daily life. Especially, schoolchildren period, an important lifetime to develop both physically and mentally needs to be helpful to promote the growth of the body and keep well-balanced mind through balanced and nourishing diet. The purpose of this study was to develop nutrition education contents for discretional activities in elementary school. The present educational contents about food and nutrition was analysed in the curriculum of elementary school. The results showed the Korean language(20.8%) included an highest ratio in educational contents about food and nutrition, the next was the courses of physical education and wise life(18.1%, each). As the educational contents about food and nutrition in the textbook were dealt with food information (20.8%), Health․Disease(15.3%), and correct dietary habits by order. We could found more contents in the text for the higher classes than for the lower classes. But the most of the contents appeared lack of structure, profundity and continuity for the systematic nutrition education in its entirety. The developed nutrition education contents for discretional activities in this study consist of korean dinning cultures and foreign dinning cultures, correct dinning etiquette, how to choose healthy food, personal sanitary and health, nutrients and food tower, and problem for children’s nutrition as main subject. This six main subjects were composed of 23 subtitles. The teaching manual consisted of the educational goal, background, teaching plan and effect-evaluation plan, and the notice point for the effective lesson. The teaching plan was made for 30 hours and consisted of cooking course, singing/making lyrics, games in nutrition, debate on dietary habit, and role play etc which are oriented to practical learning. We intended to develop this program that attempts to improve in dietary habit of schoolchildren. It is because once formed an adults dietary habit is difficult to change. Schoolchildren’s period is the best adjustable stage. Therefore, nutrition education in elementary stage can change to dietary habit and build the awareness of health.

The purposes of this study were to examine understanding, attitudes, and behaviors of college students regarding the nutrition labels of food package and the relations among these factors and demographic background such as educational experience with label, major, home place and parents' status. The study was surveyed 471 undergraduate students enrolled in general education classes at local university. Generally, college students could understand nutrition label. Nutrition related class in college didn't influence Nutrition label understanding, use and purchasing behavior. Students whose mothers with higher than college education level and professional work showed strong dependability on nutrition label. Label use, understanding and purchasing behaviors significantly associated with gender of subjects. All the subjects looked at the amount of sodium most frequently among all the nutrients listed on the food package(88.8%). Of all the food labels, the manufacturing date(25.1%) was considered the most important and the refund and exchange(12.9%) was considered the least important information. This paper suggested that nutrition education program for college students needs to be developed in series from elementary school curriculum and to enhance the use of nutrition labels.
The purpose of this study is to provide fundamental data for development of textbooks and guides on diet education for middle school students. A survey was conducted for 250 middle school students in Daegu, who have completed the nutrition courses. The data were collected from the results of a self-administered questionnaire. The results obtained by this research are as follows: 1) For the education for dietary habit and attitude at school, more than half of students answered 'not being done'(55.1%), and 'needed'(41.1%). 2) When educating food and nutrition at school, both boys and girls preferred 'classes using media such as movies and slides'. 3) The boys wanted to learn 'proper dining etiquettes'(23.5%), and girls wanted to learn 'weight management'(43.8%) for further courses of food and nutrition(p < .001) in the educational demand analysis.

Objectives: This study aimed to develop a school-centered healthy eating environment for children in elementary care classrooms and prevent incorrect eating habits and obesity through the development and application of standardized healthy eating habit-forming educational materials. Methods: Ten schools in eight districts of Gyeonggi-do and 400 students from 19 care classes were selected. Based on the developed educational materials, the program was applied to students once in two weeks. 'Notices for Parents' forms were also sent to the students' home to educate their parents. Pre and post-surveys were conducted to evaluate the effectiveness of the education. The pre-education, education, and aftercare were conducted from September 28 to September 31, 2016, from October 3 to November 30, 2016, and from December 5 to December 9, 2016, respectively. Results: The healthy eating program for elementary care classes was designed to develop a school-centered healthy eating environment and provide standardized educational material for healthy eating habits. Twelve educational topics were developed: , , , , , , , , , , , and . Moreover, the materials were produced in four forms: for students, for after school caring teachers, for external specialists, and for parents. The effectiveness evaluation was conducted to confirm the application of the program. The average eating habits score was 3.3 ± 0.6, with no significant difference between before and after application. The score of overall satisfaction of the education was 3.9 ± 0.9. The most satisfying content was 'Did you get to know how to eat evenly?'. Significant increases were observed in two contents for parents regarding their children's knowledge changes after the education: 'Five nutrients needed for growing children' and 'Knowing sugar foods and sugar-containing foods'. On the other hand, their educational satisfaction was 3.6 ± 0.6, which was lower than the children's satisfaction. This might be because their education was conducted only through the 'Notices for Parents' form. Conclusions: In the long term, the healthy eating habit-formation education for lower elementary school children is expected to be beneficial. To prevent obesity and establish healthy eating habits of children, it is important to develop healthy eating education programs centered on elementary school aftercare classes, including the development of educational materials and an application system through connection with the home and community.
This study was designed to compare general characteristics and dietary habits between volunteers for a nutrition survey and non-volunteers using a questionnaire. Volunteers were recruited by advertising on the homepage of a university to assess nutritional status by examining dietary intake for three days and blood analysis. Non-volunteers were selected from some classes not related to nutrition. There were no significant differences in sex, monthly allowances, eating-out cost, drinking and exercise between the two groups, while the proportion of self-boarding was higher in the volunteer group than in the non-volunteer group, and smoking rate of volunteers was approximately 2.4 times lower than that of non-volunteers. Volunteers were less concerned about their diet than non-volunteers. No significant differences in concern about health, considering factors in their diet, self-evaluation of their diet, learning experience about nutrition, and vitamin/mineral supplement use were observed. The frequency and the place of eating-out for dinner were significantly different between the two groups. More proportions of volunteers tended to eat regularly and eat breakfast. Volunteers consumed seaweeds more frequently, and milk, fruits and fast foods less frequently than non-volunteers. Our results indicate that some characteristics and dietary habits of volunteers are different from those of non-volunteers. However, we could not show that volunteers were more interested in their diet and had desirable dietary habits than non-volunteers. Further research on the characteristics of volunteers who participate in nutrition survey may be helpful to interpret and generalize the survey results.
The purpose of this study was to develop menu planning in the elementary food service system. This survey conducted in 10 elementary schools located in Inchon area. Among 300 questionnaires, 258 responses were collected and were analyzed by SAS program. Household income levels, food habits and preference of menu were investigated using frequency and percentiles with chi-square test. The result showed that mostly people belonged to lower middle income classes. As for preference of school food service menu, elementary students chose correction of unbalanced diet and good nutrition, while mothers of them ranked correction of unbalanced diet and convenience of preparing food. Regardness of mothers for menu preference of the elementary school students came to an agreement overall.
The purpose of this study is to find out the effect of nutrition education on dietaty behavior, nutrition knowledge and weight control of middle school students. The study is based on the assumption that students' dietary behavior, nutrition knowledge and weight-control are considerably influenced by whether they get nutrition education or not. A total of 495 students aged between $14{\sim}16$ (249 boys and 246 girls) were surveyed one middle school located Siheungsi, Gyeonggido. The survey reveals that 55.4% of the boy students and 63.0% of the girl students have been provided nutrition education in curriculum related to nutrition, for instance home economics, technology class, and/or some other classes. The results showed that the students who have been provided nutrition education don't skip breakfast and have three meals regularly(p<0.05). The score of dietary behavior is based on Mini-Dietary Assessment. The average score of the students who have been provided nutrition education is higher than the students who have never been provided nutrition education(p<0.01), meaning the nutrition education are affected positively on dietary behavior. The average score of students' knowledge of nutrition is as follows. The average score of the students who have been provided nutrition education is 5.0/10, while the average score of the students who have never been provided nutrition education is 3.9/10. The gap of the average score does come up to an inevitable conclusion that the students who have been provided nutrition education are supposed to get higher score than those who have never been provided nutrition education(p<0.0001). And the students who have been provided nutrition education are more satisfied with their body shape than those who have never been provided nutrition education(p<0.05).

The lipid components of the gonad of sea urchin Hemicentrotus pulcherrimus, ark shell Scapharca bro-ughtonii and "Gaebul" (Korea name, a worm) Urechis unicinctus were investigated. The total lipid (TL) contents of the sea urchin, the ark shell and the "Gaebul" were 6.10, 0.67 and 0.79%, respectively. The percentages of phospholipid (PL) in TL were higher in the "Gaebul"(72.4%) and ark shell(64.9%) compared to the sea urchin (41.7%). The major lipid classes of PL were phosphatidylcholine and phosphatidylethanolamine, and the former was rich in the sea urchin (56.2%) and the latter in the "Gaebul"(34.4%). In the class of non-polar lipid (NL), the major lipid classes were different from species ; the sea urchin was rich in triglyceride(TG, 89.0%), the ark shell rich in TG (69.2%) and cholesterol (ST 26.8%) and the "Gaebul"rich in ST (70.7%). The prominent fatty acids of the sea urchin were 16 : 0, 14 : 0, 20 : 5n-3, 20 : 4n-6 and 20 : 4n-6 and 20 : 2NMID(non-methylene interupted dien). The percentage of 20 : 4n-6 was the highest of the investigated invertebrates, accounting for 19.8% in PL, but 22 : 6n-3 was not detected in the sea urchin. In case of the ark shell, the prominent fatty acids were 16 : 0, 18 : 0, 20 : 5n-3, 22 : 6n-3 and 22 : 2NMID, especially 22 : 6n-3(9.58%) was richer compared to that of the "Gaebul". The prominent fatty acids of the "Gaebul"were 20 : 5n-3, 16 : 0, 18 : 0 20 : 1n-9, 16 : 1n-7 and 14 : 0. The percentage of 20 : 5n-3 (22.0%) was highest in the PL of the "Gaebul"among the three invertebrates. These differences in the lipid components of all the sample is considered to be due to the different food habits and environmental condition of the invertebrates.
The purpose of this study is to find differences in dietary patterns through menu analysis by economic status. The data was obtained from the 1998 and 2001 National Health and Nutrition Survey of Korea. The main variables were economic status, sex, and area by urbanization. The economic status was classified into low, middle, high, and top classes using a poverty line based on the 1998 and 2001 minimum standard cost of living. The areas were divided into metropolis, small city, and rural areas. The dishes of 3 meals were classified into 29 categories by cooking method. The most frequent pattern was "rice + soup + kimchi". The frequency of this Korean basic dietary pattern was the lowest in the top income class and metropolis areas, while the highest in the low income class and rural areas. The frequency of Korean recommended dietary pattern, that is, "rice + soup or stew + kimchi + side dish" was the highest in the top income class. The metropolis group preferred side dishes using meat and a cooking method that saved time, but the rural group preferred side dishes using vegetables and cooking methods that take a longer time. In comparison of dietary pattern between male and female by economic status, the higher economic status, the male's dietary patterns showed more side dishes than those of female. But the main side dish was kimchi in male low class. Consequently, the major dietary pattern in Korea is rice-style, though the western pattern is increasing in the top income class, especially in metropolis areas. Therefore, to make a better dietary pattern, we should develop and spread low-priced recipes of various side dishes and teach financial skills such as ability to make a food budget for lower income classes. Also, we should emphasize the importance of the balance between meat and vegetables and traditional diet and western diet for the top income class, especially in the metropolis areas.
