  • The international coffee trade is conducted almost exclusively with green coffee. The main coffee producing countries include Brazil, Columbia, Indonesia, Mexico and the Ivory Coast. About 99 % of the coffee grown throughout the world belong to two coffee plant varieties that are commonly known as Arabica and Robusta. The quality of green coffee can be assessed according to several ISO standards (1,2,3,4,5). However, no official international standards for the authenticity of green coffee have been issued. It is important to know the country of origin of the coffee for the purposes of fair international trade. The geographic origin of the coffee is often stated on the label of coffee products such as speciality roasted and soluble coffees. Near Infrared Spectroscopy (NIR) is an accepted technique for quantitative analysis of various parameters in routine QC analysis of food products. It would appear to be a promising candidate as a tool for identification of green coffee origin and numerous feasibility studies have appeared in the literature on its use for soluble, roasted and green coffee variety identification as well as identification of arabica or robusta coffees. NIR spectrophotometers when configured in the reflectance mode are able to perform a complete profile of the NIR spectrum on whole beans. The data can then be interpreted by discriminant chemometrics data analysis. This is the approach used in the present study.

Product Nutrition Information System for Visually Impaired People (시각 장애인을 위한 상품 영양 정보 안내 시스템)

  • Nutrition information about food is written on the label paper, which is very inconvenient for visually impaired people to recognize. In order to solve the inconvenience of visually impaired people with nutritional information recognition, this paper proposes a product nutrition information guide system for visually impaired people. In the proposed system, user's image data input through UI, and object recognition is carried out through YOLO v5. The proposed system is a system that provides voice guidance on the names and nutrition information of recognized products. This paper constructs a new dataset that augments the 319 classes of canned/late-night snack product image data using rotate matrix techniques, pepper noise, and salt noise techniques. The proposed system compared and analyzed the performance of YOLO v5n, YOLO v5m, and YOLO v5l models through hyperparameter tuning and learned the dataset built with YOLO v5n models. This paper compares and analyzes the performance of the proposed system with that of previous studies.

  • GMO labeling system in South Korea stipulates three labeling methods: GMO labeling, no labeling and Non-GMO labeling. Products labeled as Non-GMO are not allowed for unintentional commingling of GMO without tolerance. However, consumers vary their acceptance of Non-GMO label on the unintentionally commingled products and willingness to pay according to the mixing rate, rather than devalue the whole products as useless. Additionally, consumers do not believe that the acceptable mixing rate should be discriminated between non-labeled products, which allow up to 3% of unintentional GMO contamination, and Non-GMO labeled products. Information on unintentional GMO mixing mainly refers to the mixing rate, but the Non-GMO content remaining even after commingling is also important information. The decline in value is alleviated when consumers are exposed to positive information, such as Non-GMO content, rather than when exposed to negative information, such as the mixing rate. Loss Aversion Coefficient is relative depending on whether the information representing the loss is positive or negative. Information that a Non-GMO labeled product contains X% GMO is more sensitive than information that (100-X)% Non-GMO remains.

Rapid Identification of Cow and Goat Milk in Milk Products Using a Duplex PCR Technique (Duplex PCR을 이용한 유제품 안에 있는 산양유와 우유의 신속한 동정에 대한 연구)

  • A duplex PCR technique was applied for specific identification of cow and goat milk in milk products by using primers targeting the mitochondrial 12S rRNA gene. Duplex PCR using primers specific for cow and goat generated specific fragments of 223bp and 326bp from cow and goat milk DNA, respectively. Duplex PCR was applied to 15 milk products purchased from the market to verify label statements. The labeling statements of four market milk products, three yoghurt products, and one whole milk powder product were confirmed in the duplex PCR. The labeling statements of five of seven infant milk powder products were also confirmed by duplex PCR but the other two products were shown to be contaminated with either cow or goat milk. The proposed duplex PCR provides a rapid and sensitive approach to detection of as little as 0.1% cow milk in goat milk and one-step detection of cow or goat milk in milk products.

Comparing Compliance and Efficacy of Isocaloric Oral Nutritional Supplementation Using 1.5 kcal/mL or 1 kcal/mL Sip Feeds in Mildly to Moderately Malnourished Indonesian Children: A Randomized Controlled Trial

  • Purpose: This study set out to evaluate the compliance to, and efficacy of oral supplementation, using a 1.5 kcal/mL or 1 kcal/mL sip feed, in children with mild to moderate malnutrition. Methods: This was a parallel, randomized, controlled open-label trial in children aged 3 to 6 years with a weight for height Z (WHZ) score <-1 and ${\geq}-3$, who were randomized to receive a total of 600 kcal/day from either a 1.5 kcal/mL or a 1.0 kcal/mL pediatric sip feed for 28 days. Assessments included daily study product intake, body weight, tolerance and dietary intake from solid food. Results: Of 110 children recruited, 98 ($mean{\pm}standard$ deviation of age $49{\pm}7months$) completed the study. Both sip feeds were well tolerated, with high compliance ($80{\pm}24%$ and $81{\pm}22%$ of prescribed volume in 1.5 kcal/mL and 1.0 kcal/mL groups respectively, p=0.79). Both study groups gained similar weight during the 28 days intervention period ($0.42{\pm}0.40kg$ in 1.5 kcal/mL group vs. $0.49{\pm}0.49kg$ in 1.0 kcal/mL group, p=0.43). There were no significant differences between the groups in weight gain and in the change in WHZ score over the intervention period. Dietary analysis at the end of the study did not show replacement of solid food by the oral nutritional supplements. Conclusion: In children with mild to moderate malnutrition, both 1.5 kcal/mL and 1 kcal/mL pediatric sip feeds had high compliance and were well tolerated, and were equally effective in promoting weight gain in the 28 days study period.

  • Objectives: This study aimed to compare the factors of dietary and health behavior according to the employment in women in early adulthood and to analyze their relationship. Methods: In this study, adult women aged 20~29 who participated in the Korea National Health and Nutrition Examination Survey (KNHANES) 2016~2019 were classified into two groups depending on their permanent worker status, namely tenured employees (n = 254) and temporary employees (n = 377). Dietary habits (prevalence of skipping meals, food nutrition label use, etc.), nutrient intake, and metabolic syndrome factors were analyzed. Results: The tenured employees' group showed a significantly lower proportion of subjects who skipped breakfast (P = 0.0254) and significantly higher daily energy intake (P = 0.0264) than the temporary employees' group. However, there were no significant differences in the intake of energy nutrients and most of the micronutrients per 1,000 kcal of energy intake between the two groups. The proportion of subjects who consumed energy nutrients under 75% of the estimated energy requirement (EER) was 38.11% in the tenured employees' group, which was significantly lower than the 48.30% in the temporary employees' group (P = 0.0159). In economically active women aged 19~29 years, the odds ratio of low HDL-cholesterolemia prevalence was 1.80 times higher (95% CI, 1.06-3.06) in the temporary employees' group compared to that in the tenured employees' group after adjustment for confounding factors (P = 0.0295). Conclusions: In conclusion, among Korean adult women in their twenties, temporary employees showed inappropriate eating habits such as skipping breakfast, and had abnormal blood lipid levels.

  • In this paper, we study image clustering without labeling using machine learning techniques. We proposed an unsupervised machine learning technique to design an image clustering model that automatically categorizes images into groups. Our experiment focused on inception convolutional neural networks (inception V3) with k-mean methods to cluster images. For this, we collect the public datasets containing Food-K5, Flowers, Handwritten Digit, Cats-dogs, and our dataset Rice Germination, and the owner dataset Palm print. Our experiment can expand into three-part; First, format all the images to un-label and move to whole datasets. Second, load dataset into the inception V3 extraction image features and transferred to the k-mean cluster group hold on six classes. Lastly, evaluate modeling accuracy using the confusion matrix base on precision, recall, F1 to analyze. In this our methods, we can get the results as 1) Handwritten Digit (precision = 1.000, recall = 1.000, F1 = 1.00), 2) Food-K5 (precision = 0.975, recall = 0.945, F1 = 0.96), 3) Palm print (precision = 1.000, recall = 0.999, F1 = 1.00), 4) Cats-dogs (precision = 0.997, recall = 0.475, F1 = 0.64), 5) Flowers (precision = 0.610, recall = 0.982, F1 = 0.75), and our dataset 6) Rice Germination (precision = 0.997, recall = 0.943, F1 = 0.97). Our experiment showed that modeling could get an accuracy rate of 0.8908; the outcomes state that the proposed model is strongest enough to differentiate the different images and classify them into clusters.

Exploring consumer awareness and attitudes towards eco-friendly packaging among undergraduate students in Korea

  • The global waste crisis has been escalating and its consequent impact on soil, water, air pollution, and eventually climate change acceleration has shed light on the importance of reducing waste. Amidst COVID-19 and the following surge in single-use plastics for food delivery, waste generation is on the incline. Companies and governments have embarked on developing various eco-friendly packaging technologies, but their effectiveness on the consumers is vague as definitions of eco-friendly packaging are vague, and research on its link to purchase intention remains scarce. Thus, the adoption of eco-friendly packaging has been slow. To address this issue, this study analyzes the awareness and purchase intention of four visual attributes of eco-friendly packaging-material, verbal statement, eco-label, and color-along with the environmental consciousness among undergraduate university students in Korea through online surveys and the ordered logit regression model. The study distinguished the attributes into evidence-based and conjectural categories. The findings revealed that eco-friendly visual attributes had a positive effect on purchase intention amongst undergraduate students in Korea; however the level of environmental consciousness had marginal effect on the purchase intention of eco-friendly visual attributes. The level of effectiveness also varied with each visual element. Analyses revealed that visual attributes to eco-friendly material had marginal effect on purchase intention; color was deemed not an "Eco-friendly attribute" by most students, and although eco-friendly labels were deemed as an eco-friendly attribute, trust in the labels varied according to environmental consciousness. These findings have implications for businesses and policymakers aiming to promote eco-friendly consumption within packaged food products.

A Survey on the Recognition of Confectionery Bakers Working in Gyeongnam Province for Food Allergy (식품알레르기에 대한 경남지역 제과제빵 종사자들의 인식도 조사)

  • The aims of this study were to investigate the perception of confectionery bakers working in Gyeongnam province for food allergy and to find ways to improve and manage food allergy in confectionery and bakery. The questionnaire was composed of general questions and other questions related to food allergy in confectionery and bakery, and the questionnaires were distributed to the bakers working in Gyeongnam. Sixty nine of 102 confectioneries and bakeries responded to this study, and 60 (87.0%) out of 69 people were aware or had heard about food allergy. However, 54 (78.3%) out of 69 lacked prior education about the management of food allergy. Fifty one (73.9) of 69 people responded that they strongly considered food allergy in the manufacture of the products, but they were not educated about the management of food allergens and symptoms of food allergy. Confectionery bakers were aware about food allergies, but did not label food allergen on the products and have a specific management for food allergens at the work site. Therefore, it is necessary to educate the confectionery bakers about food allergy and to develop and distribute a manage program of food allergens in the field. The result from the present study could be used as basic data for the investigation of awareness for food allergy of confectionery bakers working in Korea.

Physicochemical Analyses and Korean Consumers' Acceptability of Environment-Friendly and Conventionally Grown Cucumber (친환경오이와 일반오이의 이화학적 특성 및 소비자 기호도)

  • Environment-friendly agricultural products are consumed widely, but little is known about consumers' acceptability. The objectives of this study were to 1) determine consumers' acceptability of cucumber when consumed raw, 2) determine differences in appearance liking between environment-friendly and conventionally grown cucumber samples, and 3) analyze the physicochemical properties of cucumber. White dadagi, gasi, non-pesticide mini cucumber, organic gasi, and organic Joseon cucumber samples were evaluated for consumers' acceptability using a nine-point hedonic scale; White dadagi, organic Joseon, and organic gasi cucumber samples showed the highest acceptability scores. However, there were three consumer segmentations differing their degree of cucumber liking and preference. Consumers liked the appearance of organic gasi best. Consumers' preference of cucumbers did not change upon evaluation of the acceptability of the appearance of whole fruit with and without a label indicating an environment-friendly status. Additionally, the physicochemical properties of the cucumbers-including color (skin and flesh), length, circumference, weight, water activity, brix, and texture (hardness and fracturability)-were measured. All measurements showed significant differences among samples, with the exception of water activity and hardness. White dadagi was 3.8 brix, which was the highest among cucumbers, followed by non-pesticide mini cucumber and organic Joseon. White dadagi, organic Joseon, and organic gasi showed greater fracturability than the other cucumber samples.
