Prevalence and Antibiotic Resistance Patterns in Listeria Monocytogenes Isolated from Food (식품에서 분리된 리스테리아 모노사이토젠스의 분포 및 항생제 내성)

  • Listeria monocytogenes continues to be a important food safety concern. The aims of the present study were to investigate the prevalence and antimicrobial susceptibility of L. monocytogenes. A total of 1,042 samples was collected from 2010 to 2011 in Seoul and twelve L. monocytogenes were isolated. Isolation rate was Gimbap (0.8%), Beef (yukhoe) (2.6%), Pork (cooked) (5.9%), Fish(cooked) (6.3%), and Salmon (11.1%), respectively. In this study, most of the isolates were susceptible to antibiotics. The most common resistance was cefotetan on 11 isolates, followed by cefotaxime on 7 isolates, cepefime on 6 isolates and tetracyclin on 3 isolates.

A Study on the Multiresidue Analytical Methods for Organophosphorus, Organochlorine, and n-Methyl carbamate Pesticides in Food (식품 중의 유기인제, 유기염소계 및 카바메이트계 농약의 다성분 분석법 비교)

  • A multiresidue method(MRM) for pesticides must be rapid and must test a wide variety of pesticides at relevant toxicological concentrations. In this study, three kinds of major analytical methods such as Korean Food Code Method, CDFA MRM, and Holstege's method are tested to compare the average recoveries, solvent consumption, and required time for the analysis of 18 organochlorines, 18 organophosphates, and 6 carbamates in spinach samples. Samples for pesticides analysis were extracted and cleaned up according to the respective methods and detected by gas chromatography with selective detectors, ECD and NPD, HPLC with postcolumn reaction system(PCRS). Average recovery of 42 pesticides by Korean Food Code method, CDFA method, and Holstege's method were 91.3%, 88.1%, 89.0%, respectively. Amount of solvent consumption and required time for the analysis of Korean Food Code method were from two and a half times to three times as much as those of another two methods. For the development and legal application of more rapid and effective MRMs, prolonged study is necessary.

Antimicrobial Resistance and Multi-Drug Resistance Patterns of Pathogenic Bacteria Isolated from Food Poisoning Patients in Incheon (인천지역 식중독 환자에서 분리한 병원성 세균의 항생제 내성 및 다제 내성 양상)

  • Antimicrobial resistance and multi-drug resistance patterns have been carried out on total of 210 isolated of Salmonella spp. and pathogenic E. coli isolated from food poisoning patients on January through December 2012 in Incheon, Korea. The highest percentage of antibiotics resistance was found to the following antimicrobial agents: tetracycline 43.8%, ampicillin 34.8%, nalidixic acid 23.8%, sulfamethoxazole/trimethoprim and chloramphenicol 12.4%, and ampicillin/sulbactam 11.4%. The highest percentage of resistance was 37.5% to ampicillin for Salmonella spp. and 59.0% to tetracycline for pathogenic E. coli. Overall the multidrug resistance rates of 1 drug was 26.2%, 2 drugs 9.0%, 3 drugs 9.5%, 4 drugs 7.1%, and 5 or more drugs 12.46%. The multi-drug (MDR) strains to four or more antimicrobial agents among the resistant organisms were quite high: 15.9% and 22.1% for Salmonella spp. and pathogenic E. coli, respectively. The study implies that limitation of unnecessary medication use is pertinent in order to maintaining the efficacy of drugs.

An Exploratory Study on the Semantic Network Analysis of Food Tourism through the Big Data (빅데이터를 활용한 음식관광관련 의미연결망 분석의 탐색적 적용)

  • The purpose of this study was to explore awareness of food tourism using big data analysis. For this, this study collected data containing 'food tourism' keywords from google web search, google news, and google scholar during one year from January 1 to December 31, 2016. Data were collected by using SCTM (Smart Crawling & Text Mining), a data collecting and processing program. From those data, degree centrality and eigenvector centrality were analyzed by utilizing packaged NetDraw along with UCINET 6. The result showed that the web visibility of 'core service' and 'social marketing' was high. In addition, the web visibility was also high for destination, such as rural, place, ireland and heritage; 'socioeconomic circumstance' related words, such as economy, region, public, policy, and industry. Convergence of iterated correlations showed 4 clustered named 'core service', 'social marketing', 'destinations' and 'social environment'. It is expected that this diagnosis on food tourism according to changes in international business environment by using these web information will be a foundation of baseline data useful for establishing food tourism marketing strategies.

  • Hydrothermal carbonization (HTC) is a carbonization method of thermochemical process at a relatively low temperature (180-250℃). It is reacted by water containing raw material. In this study, it was selected for effective disposal method of food waste because food waste in Korea has large amount water. 5 kg, 10 kg, 15 kg of food waste were reacted for 6 hours at 200℃ for selecting the optimum amount of raw material. Since the derived optimum amount, food waste was reacted for 2 hours, 4 hours and 6 hours at 200℃ and 1.5 MPa. After carbonization, it was analyzed to evaluated the properties by ultimate analysis, iodine adsorption, BET surface area and SEM. After analyzing the characteristics, it can be utilized as a basic data for applied.

A Study on Food Safety of Distribution Foods in the Northern Gyeonggi Area (경기북부권역에서의 유통식품 안전성 연구)

  • This study was performed to investigate food safety of 18,446 distribution foods in the northern Gyeongii area from 2010 to 2014 year. Food safety analysis was conducted by using Korean food code and food additives code. Fail determination about standards and specifications was 184 cases of 18,446 distribution foods, which represented about 1.00% fail rate of total cases. In the case of collected by food sanitation inspector, fail determination was 124 cases of 13,706 foods and showed about 0.90% fail rate. In the case of requested for food safety inspection, fail determination was 42 cases of 3,419 foods and showed about 1.23% fail rate. Results of fail determination by years, 61 cases (about 1.66%) detected fail among 3,683 foods in 2010 year, 37 cases (about 0.96%) detected fail among 3,863 foods in 2011 year, 44 cases (about 1.18%) detected fail among 3,721 foods in 2012 year, 25 cases (about 0.68%) detected fail among 3,669 foods in 2013 year, and 17 cases (about 0.48%) detected fail among 3,510 foods in 2014 year. In distribution of fail rate by month, september was showed the highest fail rate at 2.54% compared with other months. Fail determination by type of foods showed that 23 cases of perilla oil detected fail in 204 foods (about 11.27%), 32 cases of sesame oil detected fail in 394 foods (about 8.12%), 9 cases of pickles detected fail in 177 foods (about 5.08%), and 10 cases of red pepper powder detected fail in 283 foods (about 3.53%). For analysis of fail determination by examination items, microorganism was 28 fail cases (15.22%) and that was the highest level among examination items, linolenic acid and acid value were 27 fail cases (14.67%), iodine value was 19 fail cases (10.33%), content amount was 16 fail cases (8.70%), and sulfur dioxide was 9 fail cases (4.89%). In conclusion, the result of this study indicate that various fail determination items were detected of distribution foods on the market during the past five years and it was showed to higher hazard occurrence potential due to food. Therefore, more strict food safety control will be need for improving human health by prevent food health problem and ensure food safety.

A Study on the Damyang Area Restaurants in Bamboo food village (향토음식 특화 거리의 관광상품화와 활성화 방안 연구 - 담양 죽순 푸드빌리지를 중심으로 -)

  • This study intends to provide preliminary data for improving dining experience in the restaurants of Bamboo food village and help draw up guidelines for the improvement of these dining venues by surveying customer perception and satisfaction in 15-restaurants of the food village. The restaurants were surveyed mainly for satisfaction of the menu, especially, on the signature dishes of Damyang, "ddeokgalbi" (grilled short rib balls) and "daetongbab"-the grilled short rib balls and bamboo rice. The two dishes were more liked by people in the the 20- to 29-year age group with a score of 3.92 and 4.11, respectively. Although the 30-49 age group showed the highest satisfaction score on the fixed price menu, there was no statistically significant difference. The age group of 20-29 also showed the highest satisfaction on plating and table setting with a score of 4.09 and 4.04, respectively, and there was significant difference among age groups in this regard (p<0.05). All the age groups surveyed answered "time-honored taste" should be captured when working on menus, which suggests it should be the first choice for the restaurants in the food village when they develop their menus. When it comes to the restaurant environment, satisfaction on sanitary conditions was significantly different among the groups with a score of 4.21 given by 30-49 age group and 3.88 by the 50 and over group (p<0.05). In the category of service satisfaction, the two aforementioned age groups again showed significant difference in catering to customer needs with a score of 3.99 and 3.63, respectively (p<0.05), whereas welcoming customers and serving food was scored without statistical difference by age. Being asked what needs to be done to strengthen competitive advantage of the restaurants, all the age groups answered "taste" would matter the most while the 20 to 29 and 30 to 49 age groups picked "hygiene" and the 50 and over selected "table setting and ambience" next, which was statistically different with a p value of <0.05. Regarding the competitive advantage of the Korean restaurants in Damyang Bamboo food village, the first two younger groups (20 to 29 and 30 to 49) chose "table setting and ambience" and the eldest (50 and over) age group answered "location wise advantage," indicating significant difference by age. More than 80 percent of the people surveyed were willing to revisit the venues, which suggests improving restaurant environment in Bamboo food village and offering customers a better experience are very likely to build a image of culinary tourism for Damyang.

  • The environment which surrounds us such as climates, technology change rapidly. Forecasting the future of food by reviewing the subject at the moment would be meaningful, because we could understand the impact of new technology, set the new goal and create the future by speaking out on issues of our concern and by our choices. There are two points of view on our future, one is pessimistic view due to the food and the water shortage, as well as environmental contamination. Another is optimistic view mainly because of innovative technologies. Biotechnology would enable to develope the personalized food using nutrigenomics, nutrigenetics, and nutraceuticals. Nanotechnology and shelf-life extension techniques would contribute great deal to the development of the future food. Consumer's concern for the health and the wellness as well as palatability would affect the development of future food so that the involvment of food cookery scientists are more important to meet the consumer's needs and trends.

Study on Safety of Children Snacks in School Zone (학교주변 어린이 기호식품 안전성 조사)

  • This survey was conducted to monitor the safety of children snacks circulated in a stationary store or small shop around the elementary school from March to October, 2008, in Gwangju. A total of 309 samples was tested. Of these samples, 254 were confectioneries, 41 were ready-to-eat foods like kimbap, 4 were beverages and 10 were the others like fishery products. 259 were domestic products and 50 were imported. By the origin of imported samples, 17 were from china, 6 from U.S.A., 5 from india and etc. We found out that in acid value, 2 cases of fried snacks(3.9 and 4.4) proved to exceed regulatory guidance(2.0). And among ready-to-eat foods, two kimbap had Staphylococcus aureus, and one had Escherichia coli. which microorganism could cause food poisoning.

Effects of Korean Ginseng(Panax Ginseng, C. A. Meyer) Extracts on Rat Exposed to Heat Environment (고려인삼 추출물이 고온환경에 노출된 흰쥐에 미치는 영향)

  • It was investigated that how the periodic exposure to heat environment, and the treatment of korean white and red ginseng extracts had effects on the weight, diet uptake, blood components, organ weight, and the lipid peroxidation of liver in male S.D. rats. In the result of experiments using rats, chronic heat environment for 7 days at $38^{\circ}C$, 5 hrs per day, induced significant decrease of an average increase rate of body weight, but diet uptake was not affected clearly. In heat environment, the number of red blood cells and hemoglobin were not changed, but the number of white blood cells was significantly increased. The liver weight against body weight was decreased in rats. Also, MDA contents, related to lipid peroxidation, were remarkably increased in rat liver by heat environment. These physiological changes were attenuated by treatments of white and red ginseng extracts before and after exposure to heat environment, particularly in growth rate and lipid peroxidation of liver in rats. Also, red ginseng extracts had a better effect, though it was not that significant, than the white ginseng on the inhibition of lipid peroxidation and the weight change of liver. Although the investigation on the effective components and the study on the activity changes of associated materials are needed to perform, these present results imply that Korean ginseng may contribute to protection of body homeostasis against drastic climate changes.
