A Study on Dietary Intakes and Nutritional Status in College Women Smokers -I. Anthropometric Measurements and Nutrient Intakes - (흡연 여대생의 식이섭취실태 및 영양상태 평가에 관한 연구 -I. 신체계측 및 식이섭취실태 -)

  • In order to investigate the dietary intakes and physical characteristics in college women smokers, interviews using questionnaires were done on 33 smokers and 42 nonsmokers residing in seoul area. General living habits, dietary habits, food consumption frequency and nutrient intake by quick estimation were investigated through direct interviews with subjects. Subjects height, weight and blood pressure were measured, and body fat percentage were statistically analyzed using Bio-electrical Impedence Fatness Analyzer(GIF-891). All data were statistically analyzed by SAS PC package program ; percentage or mean and standard error were examined for each item, and the significant difference was evaluated by chi-square test or Student's t-test at $\alpha$=0.05. In the analysis of taste and food preference, smokers consumed larger amount of alcohol and coffee than nonsmokers ; they also disliked sweet taste. The results of food consumption frequency data also showed that smokers consumed less fish, milk and fruits but consumed more instant foods than nonsmokers. As a result of anthropometric measurements, height, age, and 패요 fat percentage showed no difference, but there was a significant difference in weight, BMI, systolic blood pressure, and diastolic blood pressure. Energy intake in nonsmokers was 1640 ㎉/day(CHO : Pro : Fat=66.0 : 14.7 : 19.3), in smokers. Intakes of calcium, iron, vitamin C, vitamin A, vitamin B1, vitamin B2, and niacin in smokers were not significantly different from those of nonsmokers.

A Food and Nutrition System Analysis of South Korea

  • The food and nutrition system is a network of processes linking agriculture, food, eating, nutrition, and health. The system includes a series of nine stages (production, processing, distribution, acquisition, preparation, consumption, digestion, transport, and utilization) and two types of contexts (biophysical and sociocultural). Analysis of whole food and nutrition systems provides information about the structure and processes involved in the complete scope of food and nutrition, assisting in the identification of ″upstream″ influences and ″downstream″ consequences in the system. The current analysis gathered existing data about the food and nutrition system in South Korea from public sources and professional publications, and interpreted that information to consider how different elements of the system contribute to health. The findings revealed that South Korea has substantial domestic food production and processing supplemented by imports, widespread food distribution in markets and a growing number of Korean and Western restaurants, a relatively low percentage of household income spent on food, growing use of new food preparation methods such as microwave ovens, a rice/vegetable/fish based three-meal consumption pattern, few recorded digestive problems, increasing calorie storage as body fat, and a relatively low chronic disease prevalence compared to other developed societies. Examination of the full scope of the food and nutrition system provides a broad perspective using whole system thinking that can identify potential strategies for future research and intervention.

  • A wide-spread contamination of persistent organic pollutants (POPs) such as dioxins, PCBs, PBDEs in the aquatic ecosystem has generated a great concern over the potential risk for these substances to impact marine biotas and food web. Since a major exposure route of these substances to the humans is through the consumption of food including fish and marine byproducts, the consumption of contaminated products has been a great public health concern. Exposure to POPs has been associated with a wide spectrum of adverse effects including reproductive, developmental, immunologic, carcinogenic, and neurotoxic effects. This review covers the background information of key POPs substances and the recent development of toxicity studies including the mode of action. Because neurotoxic effects of some POPs have been observed in humans at low concentrations, polychlorinated biphenyl (PCB), a representative chemical of POPs, is focused to discuss the possible mode(s) of action for the neurotoxic effects. This review provides the updates of toxicity studies on POPs and paves ways to discuss a possible implication of contaminated marine biota over the human health among the marine biotechnology researchers.

A Study on the Nutrition Knowledge about the Eating and Food Consumption of Adults in Seoul

  • In this study, we want to investigate the nutrition knowledge, eating habits, and food intake patterns of adults who have a strong preference for sugary snacks or sugary drinks. In this study, 83 students, or 33.1% of the 267 adults, were found to belong to the sugary food group, and the results of the survey were as follows. In terms of the level of eating habits, both male and female adults see significant differences among the groups. In the question of the regularity of the three meals, the quality of breakfast, the balance of meals, the level of consumption of green vegetables, meat, fish and milk, the number of sugars was low, and the number of sugars, instant foods, ham and sausages was high. In terms of nutritional knowledge, both male and female adults had a low number of sugary foods, and there were significant differences among the groups. In terms of the frequency of food intake, the frequency of eating rice and mixed grain rice was low, and the frequency of eating ramen and bread was high.

A Study on Preference to Korean Spicy Fish Soups by Questionnaire Methods in Busan and Development of a Standardized Recipe (부산지역 생선횟집을 중심으로 생선 매운탕 소비실태 및 최적 조리법 확립)

  • A study on sliced raw fish consumption was conducted on 300 citizens of Busan (89 men and 192 women), attending high school and university, housekeepers and employees. A self-administered questionnaire was used to record the results. The results were as follows: 93 percent of the respondents appeared to like or not be reluctant to eating Maeun-Tang. Most of the panelists had eaten at a seafood restaurant. The taste of Maeun-Tang varied differently by the spicy fish soup recipe. 56 percent of the respondents appeared to want this dish to have a fiery taste. Therefore, 89 percent of the respondents appeared to desire Maun-Tang to have a standardized recipe. The qualities of four kinds of stock made of water (A recipe), anchovy added with sea tangle (B recipe), fish bone (C recipe) and vegetable (D recipe) were investigated by using sensory evaluation and instrumental analysis for amino acids and nucleotides. The C recipe score was 80.9${\pm}$15.9 and D, B recipe was $75.7{\pm}17.1$, $75.4{\pm}17.2$, respectively. The A recipe score was $61.8{\pm}22.8$. The Degree of smooth taste were D recipe >A recipe >B recipe>C recipe. The Degree of spicy taste were C recipe >B recipe >D recipe>A recipe. In sensory evaluation, the C recipe obtained the highest score for overall preference. However, no difference of extractive nitrogen content, nucleotide and amino acid contest were observed in the C recipe after cook of Maeun-Tang.

Ecophysiological Responses and Subsequent Recovery of the Olive Flounder, Paralichthys olivaceus Exposed to Hypoxia and Iron II. Survival, Metabolic and Histological Changes of the Olive Flounder Exposed to Iron (빈산소와 철에 대한 넙치 (Paralichthys olivaceus)의 생태생리적 반응 및 회복 II. 철에 노출된 넙치의 생존, 대사 및 조직학적 변화)

  • The effects of iron on gill tissue and metabolic rate represented by oxygen consumption of olive flounder, Paralichthys olivaceus were determined. The effects were further studied by means of survival rate of the fish exposed to a serial concentrations of iron. The olive flounder exposed to iron concentrations over 0.93 mg/$\ell$ showed curvature and terminal clubbing of gill lamellae at 2 weeks post-exposure. In iron concentration 4.89 mg/$\ell$, gill of the fish were seriously damaged just after 2 weeks, showing hyperplasia of filament epithelia, deformation of lamella epithelia, chloride cell damage, and separation of lamella epithelial layer, Gills exposed to 9.78 mg/$\ell$ iron concentration resulted in fusion and necrosis of the lamellae after 2 weeks. Significant decreases of metabolic rate of the fish were observed after 4 weeks at iron concentration 0,93 mg/$\ell$ and after 2 weeks at iron concentrations over 4.89 mg/$\ell$. Survival rate of the olive flounder decreased significantly after 4 weeks at the iron concentration over 4.89 mg/$\ell$. These results lead us to conclude that, as far as the iron effects are concerned, its concentrations should not exceed at least more than 0.93 mg/$\ell$ in the fish farm and coastal waters for normal growth of the olive flounder.

Evaluation of the Potential Human Health Risk Associated with the Microcystin Bioaccumulation in the Freshwater Fish from Lake Yeongcheon and Lake Daecheong (영천호와 대청호에서 담수어류의 microcystin 농축에 따른 인체 건강위해성 평가)

  • This study evaluated the potential human health risk on the basis of the level of bioaccumulation and EDI (Estimated Daily Intake) of microcystin-LR, one of hepatotoxic, in organs, including liver, muscle, viscera and gill, of fish from Lake Yeongeheon and Lake Daecheong when the cyanobacterial water-blooms broke out. The result has confirmed that Carassius cuvieri from Lake Yeongcheon contains higher level of microcystin-LR in its organs including liver. In Lake Daecheong, omnivorous Hemibarbus labeo and phytoplanktivorous Carassius cuvieri have shown high microcystin-LR level on average, especially higher for viscera, and Carassius cuvieri has appeared to contain higher level of microcystin-LR in the liver and the gill compared with other species. As a result of comparison between EDI of microcystin-LR from each organs and TDI (Tolerable Daily Intake) of WHO (Chorus and Bartram, 1999) to evaluate human health risk, the EDI levels from Carassius cuvieri's organs except museles have exceeded TDI level at the both lakes. Consequently, the study has proved that microcystin was bioaccumulated in the various parts of fish, and it can be ingested by human resulting in risking human health. Continuous monitoring and reducing consumption of fish, especially Carassius cuvieri, during the cyanobacterial water-blooming period will be needed to protect human health.

Distribution and Human Risk Assessment of Polycyclic Aromatic Hydrocarbons and Polychlorinated Biphenyls in Sediments and Fish from Suyoung Estuary of Busan, Korea (부산 수영강 하구역의 퇴적물과 어류에서 다환방향족탄화수소 및 폴리염화비페닐의 농도분포와 인체 위해도 평가)

  • Distributions of 15 PAHs and 82 PCBs were investigated in sediment and fish samples collected from the Suyoung Estuary of Busan, one of the most urbanized and newly contaminated areas in Busan. The concentrations of $S_{15}PAH$ in sediments ranged from 17.9 to 777 ng/g-dry and were mainly originated from combustion processes. The concentrations of $S_{82}PCB$ in sediments ranged from 0.55 to 12.5 ng/g-dry and were significantly correlated with those of 12 dioxin-like PCBs and 6 non-dioxin like PCBs. Higher concentrations of PAHs and PCBs were found in the upper river and the inner Suyoung Bay than in marina and the outer Suyoung Bay. No sites exceeded the ecotoxicological values of PAHs and PCBs in marine sediments. Benzo[a]-pyrene was not detected in fish samples and the concentrations of $S_4PAH$ (0.15~0.45 ng/g-wet) were lower than the maximum level set by EU. The levels of PCBs in fish samples were at less than 1% of the Korean maximum level and 2% of the EU maximum level. The concentrations of dioxin-like PCBs were $0.01{\sim}0.32pg-TEQ_{WHO-2005}/g-wet$, and the highest concentration was found in eels, which were at less than 5% of the EU maximum level. Dietary intakes of PAHs and PCBs through fish consumption were estimated, and their lifetime cancer risk and non-cancer risk were much lower.

Development and Characteristics of Cheese-topped, Semi-dried and Seasoned Broughton's Ribbed Ark Scapharca broughtonii with Improved Fish Odor and Texture (비린내와 조직감이 개선된 치즈 토핑 반건조 조미 피조개(Scapharca broughtonii)의 개발 및 특성)

  • Methods for the development of home meal replacement seafood tailored to consumer needs for the advanced use of Broughton's ribbed ark Scapharca broughtonii (BRA) in Korea are required. In this study, we developed a cheese-topped, semi-dried, and seasoned Broughton's ribbed ark (S-BRA) tailored for the younger generation with an improved texture and fish odor. The optimization of conditions to improve the texture and fish odor was performed using RSM. The design of the model was appropriate because there was no significant difference (P>0.05) between the predicted and actual values of moisture content, hardness, and overall acceptance, and the optimal preparation conditions were a vinegar content of 2.68%, a soaking time of 62 min, a drying temperature of 60℃, and a time of 162 min. The S-BRA manufactured under these optimal conditions exhibited a lower odor intensity compared to the unsoaked and undried control, suggesting that the fish odor of S-BRA has been improved. The moisture content related to the texture of the S-BRA was lower than that of the control, and the hardness was higher. Therefore, the S-BRA developed in this study will appeal to people of all ages, especially the younger generation; their consumption is expected to increase.

White meat fish allergy in Korean children: A single hospital based retrospective study (한국 소아에서 흰살생선 알레르기: 단일기관 후향적 연구)

  • Purpose: Fish allergy is rare in children, and there have been few studies on childhood fish allergy. This study aims to investigate the clinical characteristics and laboratory findings of white meat fish (WMF) allergy in Korean children. Methods: In this study, we enrolled 150 children with a history of WMF consumption who underwent serum specific immunoglobulin E to cod (cod-sIgE) at Ajou University Hospital from January 2019 to December 2022. The demographic characteristics, clinical symptoms, history of consuming 6 major Korean WMF (cod, cutlass, yellow croaker, brown sole, olive flounder, and anchovy), and cod-sIgE were investigated. Results: Sixty-five subjects (43.3%) had clinical responses to at least 1 of the 6 WMF (WMF-allergic), and 85 subjects had no allergic reaction to all 6 WMF (WMF-tolerant). The median age of first symptom onset in the WMF-allergic group was 15 months. Major causative WMF were yellow croaker (30.6%), cutlass (28.7%), cod (26.1%), brown sole (20.4%), anchovy (14.7%), and olive flounder (6.5%). Twenty-three of 65 WMF-allergic children (35.4%) had anaphylaxis. The median level of cod-sIgE was 4.61 kUA/L (range, 0.04-100.10 kUA/L) in the WMF-allergic group, and this value was significantly higher (P< 0.001) than that of the WMF-tolerant group (0.04 kUA/L; range, 0.04-3.08 kUA/L). The positive rates (≥ class 2, 0.7 kUA/L) of cod-sIgE for the 6 individual WMF ranged from 69% to 90%. Conclusion: We propose that WMF allergy can develop in young children, with 35.4% experiencing anaphylaxis. Cod-sIgE is considered a useful tool for diagnosing not only cod allergy but also other WMF allergy in children.
