블로그에 의한 유전자변형식품 홍보와 교육 효과 (Effect of Genetically Modified Food Promotion and Education by Blog)

  • Purpose: The objective of this study was to determine the effects of genetically modified (GM) food promotion and education through the blog. Methods: Education program for consumer-oriented GM foods by the blog was developed and survey was performed by the visitors for totals of twelve weeks. The blog was formed by information (definition, mark etc.) offering style and named as "Correct knowing of genetically modified organisms (GMO)." Event was held to enhance the promotion of the blog from the week 9 to week 12. Results: Visitors of the final week increased 4 times, as compared to those of the starting the event week 9. Most of the 138 consumers (94.5%) did not have prior GMO education experience. The 97 consumers aged 20 years old showed significantly the highest ratios in the experience of blog or website (p<0.01). Comparing before and after the blog education, notification on GM foods and willingness to buy GMO products, the benefit of GMO, willingness to check GMO mark when buying GMO products showed positive change of GM foods (p<0.05). Conclusion: Over 80% answered that the blog helped to understand the GM foods. Thus, we conclude using blog is effective way of GM food promotion and education and continuous efforts are needed to maintain an active blog for the consumer's rights of knowledge about GM foods.

신바이오틱스의 생리활성에 관한 연구 고찰 (Studies on the Biological Activity of Synbiotics: A Review)

  • This paper defines the common features of synbiotics based on the definition of probiotics and prebiotics, and reviews the effectiveness of synbiotic food. The concept of synbiotics is defined as 'a mixture of prebiotics and probiotics that have a beneficial effect on the host, as a dietary supplement that alters living organisms in the gastrointestinal tract and improves their survival.' Synbiotic food contains ingredients with beneficial microbes that are expected to improve interactions between microbial and useful substances. Synbiotic foods may have anti-cancer and immune system-boosting effects. Improved digestion, healthier bowel movements, and overall increased intestinal health has been reported were reported after increasing the healthy microorganisms within the intestinal tract. In addition, depending on the type of food containing the symbiotic ingredients, more consistent weight control, improvement of cardiovascular health, and lower blood glucose levels may also be expected. Unlike previous studies, this review of synbiotics has shown that it is necessary for synergistic effects to take place among microorganisms and components to be further studied. Further research is needed on the safety and ingestion of microorganisms contained in synbiotics.

칼로리 제한에 노화과정의 조절 (Modulation of the Aging Process by Food Restriction)

  • Aging is the progressive accumulation of changes with time associated with responsible for the ever-increasing susceptibility to disease and death which accompanies advancing age. Lipid peroxides easily produced in the membrane system by the chain reaction of free radicals which occurred from various environmental factors. The amount of lipid peroxides produced in biological system increased with aging process, and lipid peroxidation damages involved in aging process and pathological disorders. Although lipid peroxides have such deleterious effects on the organisms, there are numerous substances and mechanisms which prevent the reaction of peroxide formation and protect the subject from its toxicity. This review provides an overview of how does lipid peroxidation of unsaturated lipids take place by free radical, and what is the intervention of lipid peroxides in pathogenesis of some human diseases, and also how does food restriction influences the aging process and various pathological disorders. The major focus of this paper is to review the evidence indicating that food restriction retards the aging process, and possible mechanisms of its actions. Therefore, it discussed the effects of age and food restriction on life-span, membrane yield, lipid peroxidation, fatty acid composition and peroxidizability, cholesterol and triglyceride levels, prostaglasndin and thromboxane synthesis, which may be concerned with blood flow, membrane fluidity, homeostasis and glomerular filtration rate in living body.

Synergistic Antimicrobial Action of Thymol and Sodium Bisulfate against Burkholderia cepacia and Xanthomonas maltophilia Isolated from the Space Shuttle Water System

  • A combination of thymol and sodium bisulfate was found to be an effective biocidal agent against strains of Burkholderia cepacia and of Xanthomonas maltophilia that were found in the space shuttle water system. Potassium iodide (KI), the biocidal agent used in the past, had a minimum inhibitory concentration (MIC) of 50,000 ppm against the two B. cepacia (541 STS-81 and 1119 STS-91) strains, whereas that of thymol and sodium bisulfate was 2,400 and 950 ppm, which was 21 and 53 times lower than that of KI for B. cepacia, respectively. The MIC value for the combination of thymol and sodium bisulfate was 4 times lower than that for thymol or sodium bisulfate alone against B. cepacia (541 STS-81, 1119 STS-91) or Pseudomonas cepacia (ATCC 31941). The fractional inhibitory concentration (FIC) of the combination of thymol and sodium bisulfate for all organisms tested was less than 0.5, indicating a strong synergistic effect.

  • 1990년 5우러 23일 27열의 식중독이 보고되었다. 그들은 미국 New Jersey 주의 Gergen Country에 있는 한 회사의 개업기념 야유회에 참석한 직원과 가족들 중 일부였다. 섭취한 음식에 대한 설문조사로 ziti 가 전파매체였던 것으로 생각되었다. (Chi Square 9.05) 잠복기는 9시간, 증세 시속시간은 평균 24시간이었다. 대변검사결과 Clostridium perfringens와 엔테로톡신이 분리되었다.

Biosensors and their Applications in Food Safety: A Review

  • Background: Foodborne pathogens are a growing concern with respect to human illnesses and death. There is an increasing demand for improvements in global food safety. However, it is a challenge to detect and identify these harmful organisms in a rapid, responsive, suitable, and effective way. Results: Rapid developments in biosensor designs have contributed to the detection of foodborne pathogens and other microorganisms. Biosensors can automate this process and have the potential to enable fast analyses that are cost and time-effective. Various biosensor techniques are available that can identify foodborne pathogens and other health hazards. Conclusions: In this review, biosensor technology is briefly discussed, followed by a summary of foodborne pathogen detection using various transduction systems that exhibit specificity for particular foodborne pathogens. In addition, the recent application of biosensor technology to detect pesticides and heavy metals is briefly addressed.

Brachionus rotundiformis (rotifera)와 Tigriopus japonicus(copepoda; harpacticoida)의 혼합배양에 있어서 광주기 변화가 두 동물먹이생물의 증식에 미치는 영향 (Effects of Photoperiod Exchanges on the Growth of two Common Live Food Organisms (rotifer, Brachionus rotundiformis and Harpacticoida Copepoda, Tigriopus japonicus) in the Combination Cultures)

  • 해산어의 종묘생산 과정에서 로티퍼 B. rotundiformis와 코페포다 T. japonicus는 매우 대표적인 동물먹이생물이다. 그리고 이 두 종의 혼합배양 방법은 대량배양과 안정배양을 목적으로 하였을 때 매우 유용한 방법으로 널리 알려져 있다. 이 연구에서는 로티퍼 B. rotundiformis와 코페포다 T. japonicus의 혼합 배양 과정에서 미칠 수 있는 배양조건으로서 광주기가 미칠 수 있는 영향을 검토하였다. 그 결과 로티퍼 B. rotundiformis와 코페포다 T. japonicus의 혼합 배양에서는 배양 환경 조건 중 광주기 조건에 따라서 혼합배양수조내 로티퍼와 코페포다의 증식 양상이 매우 달라짐을 알 수 있었다. 로티퍼의 증식율을 비교하면 반일 광주기 조건의 최고 밀도에 비하여 전일 광주기 조건하에서 로티퍼의 최고 밀도는 200% 이상 향상되는 것을 알 수 있었다. 그러나 코페포다 T. japonicus의 증식은 12L:12D<24L:0D<0L:24D의 순으로 전일 암주기 조건의 광주기 조건하에서 가장 높은 증식이 관찰되었다. 그리고 코페포다의 증식과정을 각 발생 단계별로(nauplii, copepodites 그리고 female carrying eggs) 계수한 결과, 세 가지 광주기 조건별로 각 발생단계별(nauplius, copepodid 그리고 female carrying eggs)의 증식 양상은 매우 큰 차이를 보였다.

소음.진동에 따른 참전복(Haliotis discus hannai)의 전중량 및 먹이섭식량 변화 (The Change of Total Weight and Food Consumption of Abalone, Haliotis discus hannai under a Vibration and Noise)

  • This paper describes the amount of food consumption and the change of total weight of abalone under a vibration with noise that can be occurred due to piling work. This experiment was conducted in the aquarium in Yosu National University. In normal situation the juvenile stage shell's(total length is 1~1.5cm) amount of food consumption was 0.81g, the middle stage shell(total length is 3~3.5cm) was 13.61g, and the adult stage shell (Total length is 7~7.5cm) was 43.l9g per 5 organisms in 24 hours, while the experimental group was observed low numerical value compared normal groups. The abalones' food consumption and total weight in both groups, the intermittent and continuance impact with noise and vibration, was reduced during this experiment. The abalones' food consumption and total weight in the experimental groups without vibration were recorded slightly high numerical value than the experimental groups with noise and vibration. Based on this experimental data we could conjecture the noise and vibration are harmful factors to bring up a physiological stress to abalones. Especially, the vibration impact by piling works could produce a considerably unfavorable effect to the abalones than noise impact.

식품의 안전성 검사기기 (Equipment and Materials for Food Sanitation)

  • 먹거리의 국제화에 따라 식품이나 식품원료의 수입이 급증하고 식품규제에 대하여 국제적 조율이 강조되는 등 먹거리를 둘러싼 환경이 크게 변하고 있다. 식품산업도 고품질을 유지하면서 안전성을 확보하는 것이 시급해졌는데 안전성 확보에는 미생물학적, 물리적 위해(이물질 혼입 등)와 함께 식품첨가물, 잔류농약 등의 화학적 위해분석을 빠뜨릴 수 없다. 이들 먹거리의 안전성 평가기술의 대표적인 것이 HACCP이다. HACCP절차는 식품가공과 식품저장의 모든 형태에서 식품안전을 확인하는 필수요소이다. 전통적인 최종제품검사가 품질 결함을 찾아내기 위한 것이라면 HACCP은 식품의 안전성 결함을 방지하기 위하여 제품계통이나 가공인자 그리고 실제운전에 규제사항을 설계하는 것이다. 본보는 HACCP시스템에 필요한 기기를 중점적으로 요약한 것이다.

인천지역 식중독 환자에서 분리한 병원성 세균의 항생제 내성 및 다제 내성 양상 (Antimicrobial Resistance and Multi-Drug Resistance Patterns of Pathogenic Bacteria Isolated from Food Poisoning Patients in Incheon)

  • Antimicrobial resistance and multi-drug resistance patterns have been carried out on total of 210 isolated of Salmonella spp. and pathogenic E. coli isolated from food poisoning patients on January through December 2012 in Incheon, Korea. The highest percentage of antibiotics resistance was found to the following antimicrobial agents: tetracycline 43.8%, ampicillin 34.8%, nalidixic acid 23.8%, sulfamethoxazole/trimethoprim and chloramphenicol 12.4%, and ampicillin/sulbactam 11.4%. The highest percentage of resistance was 37.5% to ampicillin for Salmonella spp. and 59.0% to tetracycline for pathogenic E. coli. Overall the multidrug resistance rates of 1 drug was 26.2%, 2 drugs 9.0%, 3 drugs 9.5%, 4 drugs 7.1%, and 5 or more drugs 12.46%. The multi-drug (MDR) strains to four or more antimicrobial agents among the resistant organisms were quite high: 15.9% and 22.1% for Salmonella spp. and pathogenic E. coli, respectively. The study implies that limitation of unnecessary medication use is pertinent in order to maintaining the efficacy of drugs.
