The present study was performed to evaluate dietary behavior, food intake, and satisfaction with food-related life regarding the elderly residing in different regions of Korea. The survey was conducted on 631 individuals over 55 years old in either urban or rural areas. The survey was carried out using a questionnaire including dietary behavior, mini dietary assessment, and a food frequency questionnaire. The average age of the rural elderly was higher than that of the urban elderly whereas, education level and economic status were higher in the urban elderly compared to the rural elderly. The intake of dairy products, meats, instant foods, snacks, and the use of nutrient supplementation were significantly higher in the urban elderly than those of the rural elderly (p = 0.000). The intake of vegetables was significantly higher in the rural elderly (p = 0000). Furthermore, the rural elderly were more satisfied with food-related life and had better balanced diets than those of the urban elderly. Taken together, the results of this study revealed that customized nutritional management and education for adequate meals in different regions should be developed and provided in order to improve the quality of healthy living for the elderly.
This study was undertaken to investigate the dietary behavior and sugar intake of korean school children. The subject were 131 school lunch program children and 149 non school lunch program children lived in Soung Nam city. Sugar intake, food intake, dietary behavior and anthropometric measurement were studied through personal interview using 24-hour recall dietary data and records. Total daily energy and nutrient intake of children were higher than RDAs except for intake of Calcium and vitamin A. The nutrients intake of school lunch program children were significantly higher than that of non school lunch program children (p<0.05). The range of daily sugar intake was 10 g to 220 g and the total daily sugar intake was $63.0{\pm}37.4\;g$. Sugar intake of school lunch program children ($51.4{\pm}25.7\;g$) was significantly lower than non school lunch program children ($73.1{\pm}42.9\;g$) (p<0.0001). The more sugar intake increase more intake of Energy, Fat and Carbohydrate. The result of stepwise multiple regression analysis using the sugar intake of children as dependent variable, energy, vitamin $B_2$, protein, niacin, calcium school lunch program, education of fathers are significant explanatory variables, explaining 44.8% of variation. Result of this study suggest that school lunch program is desirable for good dietary behavior and decreation of sugar intake of school children.
This study was performed to investigate the effects of taste preference on dietary behavior and nutrient intake. The subjects were 191 female collegians in the Gyeonggi and Gangwon areas. Data were collected using anthropometric measurements, 24-hour recall, and self-administered questionnaires. The respondents were classified into sub-groups according to taste preference: sweet taste (liked and disliked group), salty taste (liked and disliked group), sour taste (liked and disliked group), hot taste (liked and disliked group), and bitter taste (liked and disliked group). The results of this study are as follows: subjects liked, in order of taste preference, hot>sweet>sour>salty>bitter tastes. There were no significant differences in height, weight, and BMI among the groups. The sweet-taste-liked group, tended to prefer Chinese food and fast foods for eating out over the sweet-taste-disliked group (p<0.05). Subjects in the salty-taste-liked group ate faster (p<0.05) and more than those in the salty-taste-disliked group (p<0.05). They also consumed more animal fat and meat (p<0.05) than their counterparts. Compared with the sour-taste-disliked group, subjects in the sour-taste-liked group tended to select Korean food or Japanese-style food for eating out, and fruits for a snack (p<0.05). The meal size of the hot-taste-liked group tended to be more regular (p<0.05) than that in the hottaste-disliked group. Overall, there were distinct differences in dietary behavior and food choices according to taste preference. Taste preference should be considered for dietary consulting and nutritional education.
From the onset of puberty or during its progress, eating and health behaviors are important in establishing optimum growth and healthy fitness in middle school students. This study investigated the dietary and health behavior of first grade middle school students(male 260, female 255) selected from 3 middle schools in Suwon. Results were analyzed using the statistical program(SAS ver. 8.1). Usual dietary habits were scored by the Likert scale of 5 points and obtained the mean and standard deviation. Obtaining significant gender difference, chi-square and student t-test were also done. Daily breakfast intake was 70% of all students but some of them ate alone(27.3%). The amount of food intake was slightly less(34.8%) but sufficient food for dinner(53.2%). The purpose of each meal was solving hunger(57.4%). However, they want to change their current eating habits because of an unbalanced diet. Usual dietary habits were similar in gender, but 'apply nutrition knowledge' and 'consider food combination' were better in female students (p<0.01), 'regular meals' were higher in males(p<0.01). With respect to health behavior, the subjects went for daily walks for less than an hour(39.9%) and got 7-8 hours of sleep per day(33.8%). The amount of sleep was sufficient(22.6%) in males but in insufficient (33.8%) in female students(p<0.01). Weight control efforts for reducing(female 27.5% male 20.8%) and for increasing(male 10.6%) differed according to gender(p<0.01). As the result of the above analyses, the direction of nutrition education would be oriented to the nutrition knowledge and food combination applying to the diets of male students and regular meals for females. And also sleep dissatisfaction needs to be altered with taking care weight control trials.
Under the assumption that people go through stages in making dietary behavior change, this study was attempted to apply the stages of a change model for fat intake by examining the associations of social psychological variables with stages of change in dietary fat reduction. Derived from social psychological theories, 10 social psychological variables on motivational beliefs(6), social influence(3) and self-efficacy(1) related specifically to selecting every day diets low in fat were constructed. Fat and energy intakes were assessed by a short form semi-quantitative food frequency questionnaire. The associations of stages of change with motivational beliefs, social influence, and self-efficacy variables and energy and fat intakes were assessed in 333 female adults from large cities in Korea. Dietary stage groups differed significantly on most of the social psychological variables in ways predicted by theory. Motivational factors that lead to a psychological state of readiness to take action were important in the early stages of the dietary change process. Social influences were more important in the stages as people decide to take action. Self efficacy and motivational beliefs, particularly, reduction of perceived barriers were important in maintaining fat reduction behavior. The results of our study indicate differences in stages of change in fat reduction behavior in terms of nutrient intakes and social psychological correlates and suggests that adding a time dimension to social psychological models increases our understanding of dietary change, which assist us in designing nutrition education interventions that are more appropriately targeted by stage of change. The purpose of this study was to investigate dietary behavior and nutritional knowledge related to sodium intake in high school students. A questionnaire survey was conducted in 400 high school students (200 boys) in Incheon, Korea. Survey data were analyzed according to gender and degree of obesity. The distribution of the degree of obesity was the highest in 231 normal weight individuals (57.8%), followed by 89 underweight (22.3%), 41 overweight (10.3%), and 39 obese (9.8%). The sodium-related undesirable dietary behavior score was 2.9 points out of 5 points. The detailed dietary behavior scores of 'I eat kimchi when I eat instant noodles or noodles' and 'I like dried fish with salt' were significantly higher in boys than in girls (p<0.05). It was found that boys consumed more frequently high sodium foods, such as pizza, hamburger, and hotdog than girls. According to the degree of obesity, the underweight group consumed more kimchi fried rice and potato chips frequently than the other groups (p<0.05). Preference for salty taste was not significantly different among the groups by gender and degree of obesity. Sodium-related nutritional knowledge score was 5.3 points out of 10 and which was significantly higher in girls or normal weight group than in boys or obesity group. These results suggest that nutritional education on sodium intake is needed because the nutritional knowledge of adolescents is relatively low. Moreover, intensive nutritional guidance is required, especially in boys or adolescents with undesirable degree of obesity.
Objectives: This study examined trends in the health status and dietary behavior changes by region using the raw data from the 2008 ~ 2019 Community Health Survey. Methods: This study analyzed the data of 2,738,572 people among the raw data of the Community Health Survey from 2008 to 2019. The regional differences in health status and dietary behavior were examined by classifying the regions into capital and non-capital regions, and the non-capital regions were classified into metropolitan cities and provinces. A chi-square test was conducted on the body mass index (BMI), diagnosis of diabetes and hypertension, frequency of eating breakfast, salty taste in usual diet, recognition of nutrition labeling, reading of nutrition labeling, and utilization of nutrition labeling. Results: In determining obesity using the BMI, the normal weight by year decreased, and the obesity rate by year was 34.6% in 2019, which increased by 13% compared to 2008. In addition, the diabetes diagnosis rate and hypertension diagnosis rate continued to increase with the year. Both diabetes and hypertension diagnosis rates were higher in the non-capital regions than in the capital region. Eating breakfast five to seven times per week was most common and showed a significant decreasing trend by year (P < 0.001). The percentage of respondents who said they eat slightly bland foods increased from 19.5% in 2008 to 19.9% in 2010 and then to 22.1% in 2013. The percentage then decreased to 19.9% in 2019, but showed an overall increasing trend (P < 0.001). According to the region, the capital region had a higher percentage than the non-capital region. The nutrition labeling's recognition rate and utilization rate increased yearly, whereas the reading rate decreased. Conclusions: The study results presented the primary data necessary to develop nutrition education programs and establish strategies for local nutrition management projects to improve disease prevention and dietary problems.
The aim of this study analyzed changes in dietary habits and lifestyles before and after COVID-19 targeting adolescents, using the food consumption behavior survey (2019 vs 2021). In the change in health-related factors, height decreased overall, and a significant difference was especially evident in males. Awareness that functional foods and eco-friendly foods contribute to health has increased. Among the results of dietary behavior, the frequency of skipping breakfast showed that the rate of not skipping breakfast and the rate of skipping breakfast more than 5 times increased at the same time(p=0.019). The rate of eating out decreased significantly after COVID-19, and it was analyzed that schools and school cafeteria, as well as Street carts or restaurants and academy, all increased significantly as places where snacks were not consumed. In order to analyze changes in food-related lifestyle, it was grouped into convenience-seeking, quality/safety-seeking, taste-seeking, and health/safety-seeking. 'Small packaged or pre-processed products' decreased. On the other hand, items such as 'Safety rather than price when choosing food' and 'Don't eat food that could go bad' improved. 'Tend to eat regularly' was higher than 2021 compared to 2019. Also 'Tend to purchase HACCP and GAP-certified products' are increased. Because of COVID-19 changes in lifestyle have affected the diet of adolescents. The results of this study suggest that it can be used as a guideline establishment and nutrition counseling material for the formation of correct eating habits for adolescents in the future pandemic era.

Melatonin, which is produced from tryptophan, exerts various biological functions, including the regulation of circadian rhythm, sedative agents, and antioxidant ability. Therefore, we conducted two experiments with early-weaned rats and pigs to investigate the antioxidant and sedative effects of melatonin. In the rat experiment, a total of 42 rats (21 days old) were used, and the antioxidant capacity was determined. Next, we used 120 early-weaned piglets (21 days old) to conduct a 5-week experiment to evaluate the reductive effect of melatonin on energy-wasting movement, including roaming and fight states. Dietary melatonin supplementation significantly improved growth in both rats and pigs compared to the control groups. Additionally, rats fed a melatonin-supplemented diet showed advanced antioxidant capacity with a decrease in hepatic malondialdehyde concentration compared to rats fed a basal diet. Moreover, dietary melatonin ingestion increased resting and feeding behaviors and reduced roaming and fight behaviors during Days 8-21 compared to the control diet group. Collectively, early weaned animals given dietary melatonin supplementation showed improved growth through upregulation of hepatic antioxidant capacity and minimization of energy-wasting behavior, including roaming and fight states, after pigs' social hierarchy establishment.
In this study, we examined changes in the food consumption patterns of Korean adults due to COVID-19 using the results of the 2019 and 2021 adult household member food consumption behavior surveys. In the weight and BMI analysis results, both men and women showed a significant increase in 2021 compared to 2019 (male; p<0.01 female; p<0.001). The frequency of breakfast skipping was found to increase with none and over 5 times. As for interest in domestic agricultural products, the proportion of 'not interested' and 'average' responses decreased, while the proportion of those who responded 'interested' increased (p<0.01). The rate of eating out was found to have significantly decreased in 2021 compared to 2019. As a result of the eating lifestyle analysis, the taste seeking type, quality safety seeking type, and health seeking type also showed an increase in 2021 compared to 2019, and a significant level was confirmed. In the purchasing competency index, the use of labeling for agricultural products, use of agricultural food information, and agricultural food purchasing environment items all showed significantly improved results in 2021 compared to 2019, and the eating competency index showed a significant increase in healthy eating and traditional eating habits. Through this study, we aim to suggest directions for establishing food marketing strategies and dietary education for adults in the event of a future pandemic.
