  • The aim of this study was to evaluate the antioxidant activity, total phenolics, flavonoids, and vitamin C contents in peels of 11 commercial fruits commonly consumed in the Republic of Korea. The antioxidant activities were evaluated by ABTS, DPPH radical scavenging methods and reducing power. The peels of plum (Prunus spp.) and golden kiwifruit (Actinidia chinensis) exhibited the highest values of antioxidant activity and total phenolics, while the highest level of ascorbic acid was recorded in the peel of citrus fruit (p<0.05). There were positive correlations between the antioxidant activity assessed by both reducing power and ABTS methods and total polyphenol content ($R^2$=0.6356), suggesting that phenolic compounds are the major contributors to these activities. The results indicate that plum and golden kiwifruit peels can be used as natural antioxidant ingredients and in production of functional foods in the Korean diet.

  • This study was carried out to investigate the effect of mulching materials on the fruit quality of Miyagawa Early Satsuma Mandarin in the plastic house. The mulching time was 10 days after water irrigation breakage. The mulching materials used, in order of decreasing light reflectivity, were; micro-perforated vinyl sheets, non-woven fabric film, porous black P.E. film and non-mulching(control). Peel coloration by a values in the treatment of the micro-perforated vinyl sheets showed a 6.93 increase over the control group. The a/b values were similar to this trend, but there were no significant difference among the mulching treatment groups. The glucose level of fruit juice was much higher in the mulching treatment groups as compared with that of the control group, but there was no significant difference among the mulching treatments. Fructose content in the treatment of the micro-perforated vinyl sheets a 0.31mg%.m $L^{-1}$ increase over the control group. This group also showed a 1.36%.m $L^{-1}$ increase in sucrose and a similar increase trend in total sugar. The Brix value was 0.9 $^{\circ}$Brix higher in the micro-perforated vinyl sheet group(12.4 $^{\circ}$Brix) than in the control group(11.5 $^{\circ}$Brix) which result in a significant increase with micro-perforated vinyl sheet usage. However, the acidity level did not differ significantly among mulching treatments.

  • The study investigated the concentrations of Pb in soil, air and fruit of C. sinensis in selected landuse types in Port Harcourt Metropolis, Rivers State, Nigeria. Five fruits of C. sinensis were collected randomly in residential, commercial, industrial and natural forest (control). The weight, length and width of the C. sinensis fruits were measured. A total of three soil samples were collected around the C. sinensis trees where the fruits were collected into well labeled polythene bags and thereafter taken to laboratory for analysis. Pb concentrations in C. sinensis and soil samples were analysed using atomic absorption spectrophotometer (AAS). The concentration of Pb in the air was measured for 14 days using Aeroquel 500. The significant relationship between Pb concentration in the C. sinensis fruits, soil and air was determined using Spearman's rank correlation. Findings showed that the mean weight and width of C. sinensis fruits were highest in the residential landuse while the mean length of C. sinensis fruits was highest in the industrial landuse. However, the mean Pb concentration in the C. sinensis fruit was highest in the industrial landuse ($0.46{\pm}0.15mg\;kg^{-1}$), commercial landuse ($0.33{\pm}0.09mg\;kg^{-1}$) and the least was found in the natural forest ($0.25{\pm}0.06mg\;kg^{-1}$). The mean Pb concentration in the soil was highest in the industrial landuse ($0.177{\pm}0.16mg\;kg^{-1}$) and commercial landuse ($0.121{\pm}0.10mg\;kg^{-1}$). However, the mean Pb concentration in the air was highest in the industrial landuse ($0.85{\pm}0.09mg\;kg^{-1}$) and followed by commercial landuse ($0.30{\pm}0.17mg\;kg^{-1}$). The correlations between the Pb concentration in the C. sinensis fruit and soil (r=0.768, p<0.05) and air (r=0.642, p<0.05) were significant. The study concluded that the Pb concentration in the C. sinensis fruits was higher than the WHO standard; hence people should be discouraged to consume them, especially those from the industrial and commercial areas.

  • Limonoids are abundant as bitter taste in citrus fruit and other plants. Interestingly. limonoid UDP-glucosyltransferase (LUGT) effectively ameliorates the bitterness from limonoid. The high level of LUGT expression in Escherichia coli can result in the formation of insoluble aggregates known as inclusion bodies. We isolated the soluble LUGT protein when this inclusion body was renaturated with ${\beta}$-cyclidextrin treatment after protein denaturation by urea. Our present results suggest that the isolation of LUGT from inclusion body in cells leads to shed light to characterize the enzyme for food industry purposes.

  • Changes in the quality of Hallabong tangor during growth stage and with temperature pre-treatment after harvest were investigated. Soluble solids of Hallabong increased continuously until early December. The acid content of M16A, a variant species of Hallabong, decreased by 1% after October and continued to decrease until the middle of January. After ripening, treatment to reduce the acid content was required. Fruit firmness decreased gradually until November and was maintained at 1000 g-force after this time. Soluble solids and acid content were $13.3{\pm}0.83^{\circ}Brix$ and $1.07{\pm}0.52%$. Soluble solids increased in temperature-treated Hallabong with prolonged storage, but acid content did not decrease. Fruit firmness also decreased with storage period, regardless of temperature pre-treatment. Therefore, water management during cultivation, temperature treatment above $35^{\circ}C$ after harvest, and checking of the acid content and soluble solids with prolonged storage are recommended in achieving high quality Hallabong.

  • The purpose of this study is to set the Korean mandarine quality standards based on consumer preference survey. Until now the Korean mandarine's quality standards has been based on the fruit size. The Korean mandarine's quality in agricultural cooperative, citrus agricultural cooperative federation, and some agricultural corporation has been selected in accordance with its own brand of quality grade using a non-destruction sorting machine. But, setting the Korean mandarine's quality standards has been based on the convenient and routine method rather than the scientific and objective method, consumer's preference. According to the grade contents, the highest grade brand was required more than sugar $12^{\circ}Bx$ and less than acid 1.0% and the following grade brand was required more than sugar $11^{\circ}Bx$ and less than acid 1.0% uniformally. Thus, in this study, based on the consumers' preference of Korean mandarine, 4-level grades of sugar and 4-level grades of acidity were divided into the total 16-level grades. Based on them, 5-level grades were set.

  • Objective : Citri Unshius Pericarpium is the dried peel of mature fruit of Citrus unshiu Markovich and has been used to treat indigestion, vomiting, and removal of phlegm. This study investigated the hepatoprotective and antioxidant effect of CEE (Ethanol extract of Citri Unshius Pericarpium) in cadmium (CdCl2)-treated HepG2 cells. Methods : Component analysis of Citri Unshius Pericarpium was analyzed by UPLC with C18 column. Cell viability was determined by MTT assay. The enzyme activity of superoxide dismutase (SOD) and the level of reactive oxygen species (ROS) and reduced glutathione (GSH) were analyzed using commercially available kits. Results : Cadmium caused severe HepG2 cell death. Cadmium also increased ROS production, consistent with depletion of GSH and inhibition of the SOD enzyme. However, CEE treatment reduced cell death and relieved oxidative stress caused by cadmium toxicity. CEE lowered ROS levels and improved depletion of GSH levels. CEE also enhanced the enzymatic activity of SOD. In component analysis, hesperidin was the most abundant of the five marker compounds (Narigenin, Narigin, Narirutin, Hesperidin and Hesperidin), which assumes that hesperidin partially contributed to the antioxidant activity of CEE. Conclusion : These results suggested that CEE could be a potential substance to solve heavy metal-related health problems. In particular, inhibition of oxidative stress by CEE can be a way to treat liver damage caused by cadmium.
