Nondestructive Estimation of Lean Meat Yield of South Korean Pig Carcasses Using Machine Vision Technique

  • In this paper, we report the development of a nondestructive prediction model for lean meat percentage (LMP) in Korean pig carcasses and in the major cuts using a machine vision technique. A popular vision system in the meat industry, the VCS2000 was installed in a modern Korean slaughterhouse, and the images of half carcasses were captured using three cameras from 175 selected pork carcasses (86 castrated males and 89 females). The imaged carcasses were divided into calibration (n=135) and validation (n=39) sets and a multilinear regression (MLR) analysis was utilized to develop the prediction equation from the calibration set. The efficiency of the prediction equation was then evaluated by an independent validation set. We found that the prediction equation - developed to estimate LMP in whole carcasses based on six variables - was characterized by a coefficient of determination ($R^2_v$) value of 0.77 (root-mean square error [RMSEV] of 2.12%). In addition, the predicted LMP values for the major cuts: ham, belly, and shoulder exhibited $R^2_v$ values${\geq}0.8$ (0.73 for loin parts) with low RMSEV values. However, lower accuracy ($R^2_v=0.67$) was achieved for tenderloin cuts. These results indicate that the LMP in Korean pig carcasses and major cuts can be predicted successfully using the VCS2000-based prediction equation developed here. The ultimate advantages of this technique are compatibility and speed, as the VCS2000 imaging system can be installed in any slaughterhouse with minor modifications to facilitate the on-line and real-time prediction of LMP in pig carcasses.

Dipteran Comparison on Carcasses by Decomposition at Different Abandoned Site (사체의 유기장소별 부패진행에 따른 발생 파리류 비교)

  • Because insect visitors was different depending on decomposition stage, dipterans occurred on chicken carcasses depending on postmortem intervals were compared by abandoned sites and decomposition from a serial study on arthropod occurrence from carcasses as forensic indicator. Species occurrence and decomposition of carcasses were different depending on abandoned sites (forest hill, open field, stream, greenhouse and roof), seasons (spring, summer, fall and winter), and situation (burying and non-burying). Development of carcass decomposition was faster at all sites in summer, carcass in greenhouse in winter, and unburied carcasses. Although visiting time of blow flies (Calliphoridae) (Phaenicia sericata, Lucilia illustris, Lucilia sp., Chrysomyia pinguis, and Chrysomyia megacephala) was different depending on abandoned season, their adults were generally collected from carcasses within 2 days. However, there were no visited flies at fresh stage of buried carcasses. The flesh flies (Sarcophagidae) were collected from all sites and seasons, and much faster from unburied carcasses than buried carcasses. Those were collected earlier from carcasses in greenhouse than other sites and occurrence was also shorter. In greenhouse, occurrence time of flesh flies were different depending on season; spring and summer - from fresh to active decay stage, fall - fresh to active decay stage, and winter - advanced decay to remains stage. Calliphora lata, Tricerotopyga calliphoroides, and Aldrichana grahami were dominant species and occurrences were different from other flies. These flies were active mainly from fresh to active stage. Larvae of sarcophagid flies were occurred earlier than those of calliphorid flies on buried carcasses.

Comparison of Water Retention and Loss of Chicken Carcasses by Different Water Chilling Condition (침지냉각 조건에 따른 닭 도체의 수분 흡수 및 감량 비교)

  • This study was conducted to investigate whether water chilling had effect on water retention, freshness or internal temperature of chicken carcasses during chilling or storage in two different chicken processing plants (designated as A and B). A total of 240 carcasses from chicken processing plants (n = 120 per chicken processing plant) was randomly sampled and evaluated the effect of water chilling on carcass characteristics (i.e., water retention, water loss or freshness during chilling or storage). Torrymeter value was used as an indicator of freshness in chicken carcasses. Water chilling did not affect carcass water retention between the processing plants. However, chicken carcasses processing in B plant exhibited significantly higher freshness (p<0.05) compared with those in A plant. This difference in freshness was mainly due to the longer transit time through the water chiller in A versus B plants. Water loss of carcasses during storage was not different between plants. It was found that carcass freshness can be affected by water chilling time as manifested in this study. Further study is warranted to see whether freshness or microbiological status of chicken carcasses may be affected depending on the chilling methods, i.e., air or water chilling.

The Effect of Soil Characters on Removal of Odorous Gases during Carcasses Degradation with Efficient Microorganisms (토질 특성에 따른 가축사체 매몰지의 악취 저감 연구)

  • The usage of efficient microorganism (EM) is increasing in concern for server purposes including odor removal during carcasses degradation. In this study, we have studied the type of soil and its effect on efficient microorganisms for the removal of odorous gases during buried carcasses degradation in lab-scale reactor. The carcasses are buried in the reactor with various soil types such as normal soil, 20% sandy and 20% clay soil with the efficient microorganism KEM. The efficient microorganisms KEM have the ability to stabilize the degradation of carcasses of the burial site. We have focused on the analysis of odorous gases such tri-methylamine (TMA), hydrogen sulfide ($H_2S$), methyl mercaptan (MM), dimethyl sulfide (DMS), dimethyl disulfide (DMDS), carbon dioxide ($CO_2$), and methane ($CH_4$) along with the changes of microbial community changed during complete degradation of buried carcasses for a year. The results suggested that the 20% sandy soil contain lesser level of $H_2S$ and MM (0.09 and 0.35 mg) but 20% clay has higher nitrogen compound removing effect and leave only less amount of ammonia and TMA (0.31 and 2.06 mg). The 20% sandy soil also has the ability to breakdown the carcasses more quality compared with other types of soil. Based on the data obtained in this study suggesting that, the use of 20% sandy soil can effectively control sulfur compounds whereas 20% clay soil controls nitrogen compounds in the buried soil. Depending on the type of the soil, the dominant of microbial communities and the distribution was change.

Effect of Dehairing Methods and Sex on Pork Quality and Cold Storage Stability (탈모방법과 성별이 돈육질 및 냉장저장성에 미치는 영향)

  • The aims of this work were to compare the effects of dehairing methods and sex on pork quality and cold storage stability. For this study, one half of40 pigs were dehaired by scalding in the same abattoir, and the other half by dehiding. Each treatment consisted of one half gilts and one half castrated male pigs. Meat quality traits were measured at 24 hr after slaughter, and thiobarbituric acid (TBA), metmyoglobin contents and total plate counts (TPC) were evaluated at 1, 7, 14 and 21 days of cold storage. The carcass weight and backfat thickness of pigs dehaired by scalding were significantly higher than those dehided (p<0.05). Compared to scalded carcasses, dehided carcasses had a lower longissimus dorsi muscle temperature (p<0.05). Furthermore, dehided carcasses had significantly lower drip loss than scalded carcasses (p<0.05). However, meat color parameters were not affected by the dehairing method. During cold storage, TBA values of scalded carcasses were slightly higher initially, whereas the dehided carcasses had higher TBA values at 21 days (p<0.05). The total plate counts (TPC) associated with scalding and dehiding treatment were not significantly different at any point during cold storage. The TPC exponentially increased in both scalded and dehided carcasses from 7 to 14 days of cold storage.

A Current Status of Natural Heritage Using the Bird's Carcasses in South Korea (국내 천연기념물 멸실신고로 본 자연유산 현황)

  • This study was conducted to investigate the status of carcasses of wild birds among natural monuments in Korea. In Korea, from 2016 to 2020, a total of 38 species and 5,036 individual carcasses of natural monuments were found. The year 2020 saw the highest numbers of species death with 34 and in 2019 the highest number was recorded with 1,095 individuals. In autumn, the largest number of species and the smallest number of individuals were confirmed dead. On the contrary, the smallest number of species and the highest number of individuals were confirmed dead in summer. The largest number of species died in November, and the largest number of individuals died in June. Kestrels accounted for about 20% of the total carcasses, making up the largest number, followed by eagle owls, brown hawk-owls, scops owls, goshawk, eagles and sparrow hawks. In spring and summer, domestic breeding species accounted for most of the carcasses and in winter, the proportion of overwintering individuals such as wooper swans and eagles increased. Reports of lost natural monuments are done by human and the status of the carcasses alone cannot inform the population characteristics of natural monuments when they stay in Korea. However, it is expected that the identified domestic population of strigiformes which has not been investigated in detail because they are nocturnal, and data on the status of carcasses of natural monuments in Korea will provide basic data for the protection of natural monuments.

Survey of pathogenic microorganisms contamination of chicken carcasses (도계육에서 병원성 미생물 오염도 조사)

  • Pathogenic microorganisms were monitored on the chicken carcasses in slaughterhouse of Jeonbuk area. It was conducted to evaluate the microbiological quality on 204 chicken carcasses. Staphylococcus (S.) aureus was isolated in largest number and its ration was 41.2%, Salmonella spp. 6.4%, Campylobacter (C.)jejuni 7.4%, C. coli 7.4%. Serotype of Salmonella (S.) spp. was identified as S. Infantis 46.1%, S. Enteritidis 23.1%, S. Typhimurium 7.7%, S. Montevideo 7.7%. In breed chickens, Salmonella spp. was detected broiler 4.1%, white semi-broiler 8.0% Korean native chicken 12.0%. C. jejuni was isolated broiler 7.4%, white semi-broiler 12.0%, Korean native chicken 0%, C. coli, broiler 7.4%, white semi-broiler 0%, Korean native chicken 18.1% and S. aureus, broiler 38.8%, white semi-broiler 40.0%, Korean native chicken 51.5%.

Chemical Components and Meat Quality Traits Related to Palatability of Ten Primal Cuts from Hanwoo Carcasses

  • To determine chemical components and meat quality traits related to palatability of 10 primal cuts, 25 Hanwoo carcasses were selected from 5 carcasses × 5 quality grades and used to obtain proximate data and meat quality characteristics. Significant differences (p<0.05) in chemical component and meat quality were found among the 10 primal cuts. The highest fat content was found in the kalbi, followed by dungsim, yangjee, chaekeut, ansim, abdari, suldo, moksim, udun, and satae. Protein and moisture contents in the 10 primal cuts were in reverse order of fat content. Moksim had the highest drip loss % and cooking loss % than all other primal cuts while kalbi showed the lowest (p<0.05) percentage of drip and cooking loss. Ansim had the longest sarcomere length but the lowest shear force values than all other cuts (p<0.05). The highest (p<0.05) score for overall acceptability was observed in ansim. Moksim, udun, abdari, and satae were rated the lowest (p<0.05) in overall acceptability among the 10 primal cuts from Hanwoo carcasses. In conclusion, ansim, dungsim, chaekeut, and kalbi had the highest overall acceptability due to their higher fat contents and lower shear force values.

Real Effect of pH on CIE L*, a*, and b*, of Loins during 24 h Chilling of Beef Carcasses

  • Twenty six male Hanwoo (Korean cattle) carcasses were measured for pH, temperature and instrumental color changes of loins during 24 h post-mortem carcass chilling at $4^{\circ}C$ in the cooler. The average internal temperature of loins was about $5^{\circ}C$ after 24 h of chilling, and with the exclusion of those with an ultimate pH>6.0 (dark-cutters), the average pH value was 5.5. When all carcasses were considered for the partial correlation coefficient between color and pH, with the temperature effect excluded, CIE $L^*$, $a^*$ and $b^*$ seemed to be affected significantly by pH during chilling process (p<0.001). However, when carcasses with dark-cutting condition were excluded, the correlation coefficients were much lower. In contrast, when the partial correlation coefficients between color and temperature, excluding the effect of pH on them, were analyzed, the relationship between color and temperature did not change much after values of DFD (dark, firm, dry) beef were excluded. The results suggested that the known interrelationship of color and pH in chilled beef loins be mainly due to the influence of temperature on pH and color.

Isolation and PCR detection of Listeria monocytogenes on raw beef and pork carcass (소와 돼지도체에서 Listeria monocytogenes의 분리 및 PCR 검출 방법에 관한 연구)

  • From February 2000 to December 2001, A total of 1,785 samples was taken from beef and pork carcasses in Seoul. Seven(0.69%) Listeria spp. were isolated from the 1,014 of beef carcasses, and five(0.65%) were isolated from the 771 of pork carcasses. The isolates were identified L monocytogenes by API listeria, and VIDAS LMO kit, serological test and PCR assay were preformed. A total 12 strains of L monocytogenes were isolated form samples tested and all of the strains were classified into serotype 1. PCR primers are selected to amplify a 520-base pair(bp) DNA fragment from the listeolysin O gene(hlyA) of Listeria monocytogenes. A 520-bp product was detected in PCR with DNA from L monocytogenes, but not from the other Listeria species tested.
