Trypsin Inhibitor and Hemagglutinating Activities of Some Minor Beans in Korea (한국산 두류(頭類)의 Trypsin 저해(沮害) 활성(活性) 및 적혈구(赤血球) 응집(凝集) 활성(活性))

  • Trypsin inhibitor and hemagglutinating activities of some minor beans produced in Korea were determined in comparison with those of soybean and the effects of heat treatment on the activities were studied. The results are summarized as follows 1. The trypsin inhibitor activity (% [TU] inhibited/mg) of soybean, red bean, kidney bean, and mung bean were 79.9, 46.4, 43.2 and 17.7, respectively, on the dry weight basis and were 194, 222, 170 and 75, respectively, on the protein basis. 2. Heat destruction by boiling or autoclaving of trypsin inhibitor activity of red bean, mung bean, kidney bean, and soybean were $85{\sim}87,\;87{\sim}94,\;76{\sim}79\;and\;67{\sim}72\;%$, respectively. No significant difference was, however, observed in the effect between the two heating methods. 3. The hemagglutinating activity (unit/g) of kidney bean, soybean, mung bean and red bean were 48,300, 18,000, 136 and non-detectable, respectively, on the dry weight basis and were 190,600, 43,700, 581 and non-detectable, respectively, on the protein basis. Heat treatment destructed the hemagglutinating activity in all three beans.

Effect of Green Coffee Bean Extract Supplementation on Body Fat Reduction in Mildly Obese Women (경도비만 여성에서 생커피두 엑기스의 섭취에 의한 체지방 감소 효과)

  • In previous studies, we performed joint animal studies and clinical trials between Yonsei University and Oryza Oil & Fat Chemical Co. Ltd. We have shown that coffee bean extract has potent anti-obesity and hypotriglyceridemic activities as well as beneficial effects on body fat reduction.In this study, the effects of coffee bean extract (100 mg/capsule) on body fat reduction were evaluated in overweight/obese women (body mass index of 25~30 $kg/m^2$ or body fat > 30%) not diagnosed with any type of disease. Subjects were randomly assigned to a coffee bean extract group (n=10) or placebo group (n=10). We measured anthropometric parameters, abdominal fat distribution by computed tomography and blood components before and after the 8week intervention period. After supplementation, the coffee bean extract group showed body weight (p=0.08), body mass index (p=0.06), hip circumference (p<0.05), and upper waist circumference (p< 0.01). In addition, after 8 weeks, the coffee bean extract group showed a significant decrease in abdominal internal fat area compared to 0 weeks (0 weeks : $155.8cm^2$; 8 weeks : $145.9cm^2$, ${\Delta}$ change : $-9.9cm^2$, respectively). However, there were no significant differences in lipid profiles or serological measurements between the coffee bean extract group and placebo group. The results of our human study demonstrated that coffee bean extract supplementation for 8 weeks has beneficial effects on reducing abdominal internal fat area as well as hip and waist circumferences.

Standardization for the Preparation of Traditional Jeung-pyun (전통적 증편 제조의 표준화)

  • The added levels of dongdong-ju, soy bean and fermentation time were selected as factors affecting the quality of Jeung-pyun (Korean fermented steamed rice cake) through pretest. The standing height ratio was significantly raised after the 1st and 2nd fermentation by the soy bean treatment. As the amount of dongdong-ju and soy bean were increased, the values of specific volume and expansion ratio for Jeung-pyun were increased. The effects of fermentation time did not show any significant differences. The pH of Jeung-pyun dough was significantly higher when the amount of dongdong-ju decreased and the amount of soy bean increased. Reducing sugar content of Jeung-pyun significantly augmented with raised amount of soy bean. As the amount of soy bean was increased, the hardness, springiness and cohesiveness of Jeung-pyun measured by rheometer significantly decreased. The optimum conditions for Jeung-pyun preparation were found to be 30g dongdong-ju, 2g soy bean solid and 180 minutes of fermentation time per 100g rice flour basis. Soy bean treatment had primary influence on Jeung-pyun preparation.

Effects of Habitat Substrates on Growth of Menyanthes trifoliata (조름나물의 성장에 미치는 서식 기질의 영향)

  • Bog bean (Menyanthes trifoliata L.) is an endangered species in Korea and a perennial macrophyte with long rhizome, inhabiting in oligotrophic fen or edges of montane lakes. To decide appropriate substrate type for restoration of this plant, we investigated the effect of substrates (e.g. water, Sphagnum mat, paddy soil) on growth of bog bean. There were two water conditions on paddy soils: saturated and flooded. We planted 10cm rhizome in mesocosms and measured coverage, leaf area, leaf number and rhizome biomass. Bog bean growed until August in water and Sphagnum mat and until October in paddy soil. Rhizome biomass at the end of November were 49, 77, 239, and 312g in water, Sphagnum mat, paddy soil with water saturated, and paddy soil with water flooded conditions, respectively. The results indicate that bog bean can grow better in paddy soil which have higher nutrient than water or Sphagnum mat which represents natural habitat condition of bog bean. This reveals that actual ecological niche of bog bean is different from fundamental ecological niche in substrate. For successful restoration of bog bean in nutrient rich area, it is necessary to know the competitiveness of bog bean in various substrate conditions.

Analysis of Isoflavones for 66 Varieties of Sprout Beans and Bean Sprouts (66품종 나물콩과 콩나물의 isoflavone 분석)

  • Selection of high-quality varieties of sprout bean and bean sprout containing high levels of total isoflavones was performed by high performance liquid chromatography. The range and mean of total isoflavone contents of sixty six varieties of sprout beans were $247{\sim}2,256$ and $1209{\pm}470\;mg/kg$, respectively, with KLG10618, KLG11118, KLG10600, KLG10022, KLG1085 and sohokong containing the highest amounts of isoflavone among the samples. Medium-sized bean variety with green seed-coat color contained highest amount of total isoflavones among samples. The range and mean of total isoflavone contents of thirty varieties of bean sprouts were $768{\sim}3,343$ and $1,898{\pm}577\;mg/kg$, respectively, with soho bean sprout containing the highest total isoflavone content (3,343 mg/kg, dry basis). Total isoflavone contents of bean sprouts increased gradually during cultivation period, reaching maximum level on the 5th day of cultivation, and were the highest in the order of roots, cotyledon, and hypocotyl.

Evaluation of Phytochemical econtents and antioxidant activity of Korean common bean (Phaseolus vulgaris L) landraces (한국 재래종 강낭콩 유전자원의 phytochemical 및 항산화 활성 평가)

  • The Korean common bean (Phaseolus vulgaris L.) has been receiving increased attention as a functional food. The objective of this study was to reveal the phytochemicals genetic variation and antioxidant activity of 209 Korean common bean landraces. Antioxidant activity was evaluated with the DPPH (2,2-diphenyl-1-picryl-hydrazyl-hydrate), ABTS (2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid), ferric reducing antioxidant power (FRAP), and superoxide dismutase (SOD) assay. Antioxidant activities among common bean accessions showed wide variation. Four flavonoids (kaempferol, myricetin, quercetin, and naringenin) of the 209 Korean common bean landraces were measured using HPLC. Among them, kaempferol had the highest phytochemicals compared to the other three flavonoids. Using the relative antioxidant capacity index (RACI), it was found out that the IT104587 had the highest antioxidant activity. Meanwhile, in clustering analysis, the Korean common bean landraces were classified into three clusters. Among them, cluster II contained 64 landraces with higher antioxidant activities and phytochemicals than the other clusters, except DPPH. The results could provide information on the valuable Korean common bean landraces for the development of new common bean varieties.

  • In order to at day evaluate effect of dietary 2.0 % brown seaweed(Undaria pinnatifida) with bean extract on performance and nutrients utilization during acute phase response, one day-old broiler chicks were fed basal diet and diets substituted with 2.0 % brown seaweed and 2.0 % brown seaweed with bean extract instead of wheat bran in basal diet for 4weeks. Dietary 2.0 % brown seaweed with bean extract enhanced dietary ME value and protein accumulation due to the increased NB and decreased UAN excretion. increased feed intake during acute phase response and had the highest body weight among birds fed experimental diets. The resulted indicated that dietary 2.0 % brown seaweed with bean extract improved performance of broiler chicks due to the increased protein accumulation during acute phase response.
