The purpose of this study is to present basic data for an improvement of school foodservice by indentifying students' preference level for school meal menu and assessing students' nutrition intake. The subjects participated in this study were 544 high school students on 1st grade served by self-operated school foodservice in Daegu. The frequency analysis, t-test analysis, and correlation analysis were carried out for the data analysis using SPSS 12.0 program. Based on the results toward students' preference and serving frequency, the most frequently offered food was soup sorts and then followed by the categories of boiled rice, kimchi, broiled food and hard-boiled food. Boiled rice, rice with assorted vegetables, mandu soup, salad and braised beef rib were highly preferred to the students. Male students scored higher preference to the menu related with meats than female students. However, the students' preference and serving frequency on the menu were not correlated significantly in this study. A substantial correlation was found between the degree of preference and the rate of intake (p<0.01). It would be generalized that preferences to menu items strongly sffected the level of intake by students. The nutrient analysis of food intake revealed that both male and female students were not consuming sufficient level of calorie, calcium and vitamin $B_2$. In conclusion, the results indicate that the students' preference is a very important variable influencing the consumption level of meal as well as balanced nutrient intake by students served in school foodservice. Menu planning should be integrated into school foodservice management for quality control. As limited control of the menu may also negatively influence on the food leftovers and ecological issues, professionals related to the school foodservice including administers, educators and dieticians need to check up the students' preference regularly and reflect their perception on the menu planning to improve the quality of school foodservice. The nutrient intake currently provided through school foodservice should be also assessed more thoroughly. These data could be incorporated into continuous quality improvement and strategic planning in school foodservice.

This study examined the beauty food activities of water and ethanol extracts from Tetragonia tetragonioides. Content of phenolic compounds extracted with water and 50% ethanol extracts were 3.29 mg/g and 4.14 mg/g, respectively. 1,1-Diphenyl-2-picrylhydrazyl free radical scavenging activities of water and ethanol extracts were 98.45% and 91.20%, respectively, at $200{\mu}g/mL$ of phenolics. 2,2'-Azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) radical decolorization activity was 97.28% for water extracts and 97.83% for ethanol extracts at $100{\mu}g/mL$ of phenolics. Antioxidant protection factor (PF) was 1.77 PF for water and ethanol extracts at $200{\mu}g/mL$ of phenolics. Thiobarbituric acid reactive substances of water and ethanol extracts were 94.77% and 95.64%, respectively, at $100{\mu}g/mL$ of phenolics. Tyrosinase inhibitory activity, which is related to skin-whitening, was confirmed to be 34.96% for ethanol extracts at $200{\mu}g/mL$ of phenolics. Elastase inhibitory activity and anti-wrinkle effect of 50% ethanol extracts were 78.9% at $200{\mu}g/mL$ of phenolics. Collagenase inhibitory activity of ethanol extracts was 61.29% at $200{\mu}g/mL$ of phenolics. Astringent effect was not detected in water extracts but was 7.82% for 50% ethanol extracts at $200{\mu}g/mL$ of phenolics. Hyaluronidase inhibitory activity as a measure of anti-inflammation was confirmed to be 81.04% for water extracts at $200{\mu}g/mL$ of phenolics. Based on these results, Tetragonia tetragonioides extracts can be used as a functional material and functional beauty food with antioxidant effects.

This study was carried out to investigate food label perception and utilization classified by age and sex. Questionnaires were collected from 938 male and female customers aged in their 20's to 50's from February 4th to March 30th 2014. Regarding checking food labels at the time of purchase, 73.8% of consumers checked food labels, and there was a significant difference by age and sex. Female more often checked food labels than males, and the 40's group showed a higher ratio of checking food labels than other age groups. The main reason for checking food label was 'confirming expiration date' (60%), 'ingredients' (16.4%), and 'nutrition contents' (13.7%). The main reason not checking food labels was 'too small and insufficient to understand' (50.3%), 'too difficult to understand' (16.4%), and 'have no concern' (14.9%). There was a significant difference by age, as in the 50's group showed a higher ratio of 'too small and insufficient to understand' than the other age groups, and 20's and 30's groups showed a higher ratio of 'too difficult to understand'. The overall satisfaction score was 2.96, awareness score was 2.88, and reliability score was 2.93. A total of 96% answered that food labelling education is needed. Therefore, food labelling education for consumers is required to encourage consumers to purchase healthy foods.

The purpose of this study was to identify the status of task performance and working conditions for nutrition teachers in order to determine new ways to improve the current nutrition system and increase job satisfaction among teachers. From the 14th of July to the 26th of September 2014, email questionnaires were distributed to and collected from 311 nutrition teachers nationwide, including teachers at elementary, middle, and high schools. The results are as follows. First, over 90% of nutrition teachers indicated that their work was demanding. In particular, 63.5% of nutrition teachers at high schools worked more than 40 hours of overtime per month. Second, 73% of nutrition teachers provided nutrition education, but the percentage significantly decreased at upper levels of school. Nutrition teachers had difficulties teaching due to the absence of standard teaching materials and a lack of time due to excessive work. Teachers also wanted 30 hours of job training once per year during their vacation organized by the regional Department of Education. Third, around half of the nutrition teachers considered that promotion and transfer professions are necessary for systematic foodservice and education. An additional allowance was demanded by nutrition teachers at schools that serve two or three meals per day. Considering the results, alleviating the workload of nutrition teachers and more time preparing nutrition classes for student are required. Fair evaluation of job performance that considers work conditions of nutrition teachers should be considered.

In this study, hot water extract from sea buckthorn (Hippophae rhamnoides L.) leaves fermented with Hericium erinaceum mycelium (SBT-HE) was assessed for protection against oxidative modification of biological macromolecules and cell death. Antioxidant activity of SBT-HE was evaluated based on 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical, 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical, and peroxyl radical scavenging assays. SBT-HE showed 65.06% DPPH radical scavenging activity at $500{\mu}g/mL$, 98.83% ABTS radical scavenging activity at $50{\mu}g/mL$, and 44.03% peroxyl radical scavenging activity at $100{\mu}g/mL$. SBT-HE significantly inhibited DNA strand breakage induced by peroxyl radical. SBT-HE also prevented peroxyl radical-mediated human serum albumin modification. SBT-HE effectively inhibited $H_2O_2$-induced cell death and significantly increased cell survival by 21.59% at $100{\mu}g/mL$. SBT-HE also reduced intracellular reactive oxygen species levels in $H_2O_2$-treated cells. The results suggest that SBT-HE can contribute to antioxidant activity and protect cells from oxidative stress-induced cell injury.
The bamboo is a plant whose culm grows straight up. This growing characteristics has been widely utilized in industry and craft. But the developments of handcraft making and horticultural techniques in recent years become to demand the bent bamboo culms. This study has been conducted at the experimental grove located at Hyunnae Ri, Okkye Myun, Myungju Gun, Kangwon Do since 1960. Although it has been known that the secret for which bamboo shoots complet growth within 40 odd days lies in their rhizomes, this writer felt the bamboo culm sheath might be another factor in addition. Hence some were stripped of sheath in this bending study as the following: 1. Time of sheath stripping. 2. Direction of sheath stripped for arbitrary bending. 3. Accuracy of bending following the size (growth) of bamboo shoots. The following results were obtained: 1. Bamboo shoots begin to appear in April. But the bamboo shot up in June showed the best bending result with 68% of bending efficiency. 2. Bending of the culm was facilitated by stripping off the sheath located on the side of the direction toward which bending was desired. By doing this, the culm could be bent as much as 90 degrees. But the culm totally stripped of sheath could be bent in any direction. 3. In order to determine the accuracy of bending of bamboo shoots growing, sheath were stripped off the shoots of which height ranged from 10 centimeter to 150 centimeters. The shoots with height of 110 centimeters showed the best result with 90%.

Atopic dermatitis (AD) is a form of allergic skin inflammatory characterized by late eczematous skin lesions. The incidence of AD is increasing, and it causes problems with administrative costs. Therefore, development of an AD treatment with no side effects is needed. The purpose of this study was to evaluate tuna heart ethanol extract (THEE), a functional extract from by-product of tuna. AD was induced by spreading 2,4-dinitrochlorobenzene (DNCB) on the backside of BALB/c mice. The effect of THEE was tested by measuring skin clinical severity score, secretion of cytokines and IgE, and proliferation. Secretion of $TNF-{\alpha}$, IL-4, IL-5, IL-13, and IgE significantly decreased in a THEE-independent manner. In contrast, levels of IL-10 and $IFN-{\gamma}$ significantly increased in mice sera and splenocytes. In addition, THEE alleviated AD symptoms compared to the DNCB only group. In conclusion, these results demonstrate that THEE has an inhibitory effect on AD and may be a useful substance for the development of cosmeceuticals.
In general, the snow injury in forestry is an unusual disaster. The degree of snow injury varies greatly depending on stand density and the local topography. This study was conducted to investigate the snow injury in analyzing the demaged by snow-fall in Jinju, Gyeongsangnamdo. The results obtained were summarized as follow; Among 466 total damaged trees, 425 trees were broken and 41 trees were uprooted, the ratio of damage were 5.22%, 2.49%, 0.92% and 0.2% for Pinus densiflora, Pinus thunbergii, Pinus rigida, Alnus hirsuta respectively. The 95% of the damage trees were in the range of 3 to 11 m for height and in the range of 3 to 20 cm for D. B. H.. The directions of the damage trees had a large influence by direction of the wind, but they shown at high tendency to aspect of the slope relatively. The 82% of the damaged trees ranged from 11 to 24 age. The ratio of broken height ($H_B/H$) indicated that the damage was most frequent in the part of stem as 24%, 45%, 31% in the part of the root collar (0.1), stem (0.2-0.4), crown (0.5-1.0) respectively. In general, trees with stem-form coefficient ($H_B/D$) over 0.7-0.8 are apt to suffer by snow damage. The average of stem-form coefficient of trees in this area was 1.06. Therefore, the ratio of damage was high tendency as 3.14%. These results indicate that it is necessary to apply pertinent tending which will increase in resistance of snow damage. As avalanches from the flank of soil erosion rise in an importance matter in present, it should also be considered to measures for prevention and restoration.
The Capacity of wood to absorb water is very important as the basis data for wood industry, particularly in preservatives impregnation, manufacturing of improved wood, selection of packing boards, etc. In this study differences in Water absorbing Capacity of wood by structual section, water soaking time were investigated. (1) The species used in this investigation were Larix olgensis Henry Var. Koreana Nakai and Juglans mandshurica Max., and dimension of these testing wood block was $30{\times}30{\times}100cm$; and these were soaked in fresh water of $25{\pm}1^{\circ}C$ for 8.5day and 0.5 day, before measurement. (2) The result showed that the water absorption by cross sections was greater than by either radial or tangential section and there were no differences between radial and tangential section. (3) The water absorption of Juglans mandshurica Max. which has the relatively low specific gravity was greater than Larix olgensis Henry Var. Koreana Nakai which has generally high specific gravity. (4) The result showed an increase in the absorbed water with increase in the length of soaking time. However the water absorption rate during the early period of soaking was very high and thereafter the rate decreased with passage of time. More than a half of the total water absorption was achieved during the first 2 days approximately. (5) The relationships between the length of the soaking-time and water absorption were found to be as follows : Larix olgensis Henry Var. Koreana Nakai Cross section : $y=111.1{\times}^{0.6516}$ radial section : $y=32.2{\times}^{0.5146}$ tangential section : $y=36.5{\times}^{0.5112}$ Juglans mandshurica Max. Cross section : $y=216.1{\times}^{0.5914}$ radial section : $y=27.9{\times}^{0.5832}$ tangential section : $y=50.9{\times}^{0.4769}$ Where : y is amount of water absorption ($mg/cm^2$) x is water-soaking time (days).

This study was performed to investigate the effect of ethanol extract of Pimpinella brachycarpa (PB) on serum and liver lipid metabolism in rats. Male Sprague Dawley rats were administered 1% cholesterol and 0.25% sodium cholate to induce hypercholesterolemia. PB ethanol extract (200 mg/kg/day or 400 mg/kg/day) was also administered orally to rats with high cholesterol diet for 6 weeks. We divided 40 rats into five groups; normal diet group (NC), high cholesterol diet group (HC), normal diet and PB ethanol extract (200 mg/kg) administered group (NC-PB), high cholesterol diet and PB ethanol extract (200 mg/kg) administered group (HC-PBL), and high cholesterol diet and PB ethanol extract (400 mg/kg) administered group (HC-PBH). The growth rate and liver weight of the high cholesterol diet group was higher than those of the normal diet group, whereas those of the groups administered PB ethanol extract were gradually decreased. There was a signigicant increase in the activities of serum alanine aminotransferase (ALT), asparate aminotransferase (AST) and alkaline phosphatase (ALP) in the high cholesterol diet group. The administration of PB ethanol extract decreased serum ALT, AST and ALP activities in a dose-dependent manners. The high cholesterol diet group showed increased serum triglyceride, total cholesterol, free cholesterol and LDL-cholesterol levels, and decreased atherogenic index, HDL-cholesterol and phospholipid levels as compared with the normal diet group. PB ethanol extract administrated groups showed increased HDL-C/T-C, HDL-cholesterol and phospholipid levels, and decreased serum triglyceride, total cholesterol, free cholesterol, and LDL-cholesterol levels as compared with the high cholesterol diet group. There were no differences in the concentrations of serum triglyceride, phopholipid, LDL-cholesterol, HDL-cholesterol and free cholesterol between normal diet groups. The hepatic concentrations of total cholesterol and triglyceride were also lower in PB ethanol extract administrated groups than in the high cholesterol diet group. These results suggest that ethanol extract of PB exerts hypocholesterolemic effect by reducing serum and liver cholesterol contents.
