Current status, perception and practicability of restaurant staffs related to reducing sodium use in Seongnam, Korea (성남 지역 외식업소의 나트륨 저감화 현황과 종사자의 저감화 실행에 대한 인식 및 실천용이도)

  • Purpose: With the increase of going out to eat, reducing the sodium in restaurant foods has a crucial impact on reducing sodium intake. This study aimed to assess the current status and perceptions of restaurant staffs related to reducing sodium use in restaurants. Methods: Restaurant managers and chefs (n = 312) in Seongnam area completed a questionnaire on the current status related to sodium use, the barriers to practice for reducing sodium use, support needs, and the practicability of methods for reducing sodium use in restaurants. Results: The percentage of restaurants in the preaction stage (including the precontemplation, contemplation, and preparation stages) for reducing sodium use was 79.7%. Logistic regression analysis showed that measuring salinity while cooking was associated with measuring seasoning (OR, 4.761; 95% CI, 2.325 ~ 9.751), action/maintenance stages of behavior change (OR, 2.829; 95% CI, 1.449 ~ 5.525) and providing salinity information of restaurant foods (OR, 6.314; 95% CI, 2.964 ~ 13.45). Maintaining taste and hindering the cooking process were the main barriers to reduce sodium use. The total practicability of actions for reducing sodium was higher in staffs who worked in restaurants that measured seasoning and salinity while cooking (p < 0.05 and p < 0.01, respectively). The hardest item to practice was 'purchase foods after comparing sodium content in the nutrition labeling'. 'Avoid serving salt-fermented foods as side dishes', 'serve small portions of kimchi and less salty kimchi', and 'put up promotional materials for reducing sodium intake' were selected as easy items to perform. The majority (82%) was willing to reduce sodium in restaurant foods under the support of local government and they desired the promotion of participating restaurants and education on cooking skills to reduce sodium. Conclusion: Measuring seasoning and salinity while cooking is a meaningful practice that is associated with stages of behavior change and the practicability of actions for reducing sodium. It is necessary to provide support and education with a gradual approach to staffs for reducing sodium in restaurant foods.

Changes in the constituents and UV-photoprotective activity of Astragalus membranaceus caused by roasting (황기의 볶음 조건에 따른 성분 및 자외선 광보호 활성 변화)

  • Purpose: Astragalus membranaceus (AM) is an important traditional medicinal herb. Pharmacological research has indicated that AM has various physiological activities such as antioxidant, anti-inflammatory, immunoregulatory, anticancer, hypolipidemic, antihyperglycemic, and hepatoprotective activities. The bioactive substances responsible for the physiological activities in AM, including many antioxidant substances, change during the roasting process. This study investigated and compared the changes in the antioxidant constituents of AM caused by roasting. Methods: DPPH (1,1-diphenyl-2-picryl hydrazyl) and $ABTS^+$ (2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt) radical scavenging activities and their total phenolic content (TPC) were measured. High-performance liquid chromatography (HPLC) analysis was performed to confirm any changes in the isoflavonoids of roasted AM (R-AM),. The cell viability of UVB-induced HDF (Human dermal fibroblast) cells treated with AM and R-AM extracts was investigated. The comet assay was used to examine the inhibitory effects of R-AM extracts on DNA damage caused by oxidative stress. Results: The DPPH and $ABTS^+$ radical scavenging activities were $564.6{\pm}20.9$ and $108.2{\pm}3.1$ ($IC_{50}$ value) respectively, from the 2R-AM. The total phenol content was $47.80{\pm}1.40mg$ GAE/g from the 1R-AM. The values of calycosin and formononetin, which are the known isoflavonoid constituents of AM, were $778.58{\pm}2.72$ and $726.80{\pm}3.45{\mu}g/g$ respectively, from the 2R-AM. Treatment of the HDF cells with R-AM ($50{\sim}200{\mu}g/mL$) did not affect the cell viability. Furthermore, the R-AM extracts effectively protected against UVB-induced DNA damage. Conclusion: The findings of this study indicate that R-AM increases its isoflavonoid constituents and protects against UVB-induced DNA damage in HDF cells.

The Vegetation Effect of under Neutralizing Layer Type on the Acid Drainage Slope (산성배수 비탈면의 중화층 종류에 따른 녹화효과)

  • This study is composed of nine treatments [Control : "no neutralizing layer+vegetation layer" 3 cm, Treatment 1 : "no neutralizing layer+vegetation layer" 5 cm, Treatment 2 : "no neutralizing layer+vegetation layer" 7 cm, Treatment 3 :"neutralizing layer (cement 3 %)+ vegetation layer (cement 1 %)" 3 cm, Treatment 4 : "neutralizing layer (cement 3 %)+vegetation layer (cement 1 %)" 5 cm, Treatment 5 : "neutralizing layer (cement 3 %)+vegetation layer (cement 1 %)" 7 cm, Treatment 6 : "neutralizing layer [$(Ca{\cdot}Mg)CO_3$] +vegetation layer" 3 cm, Treatment 7 : "neutralizing layer [$(Ca{\cdot}Mg)CO_3$]+vegetation layer" 5 cm, Treatment 8 : "neutralizing layer [$(Ca{\cdot}Mg)CO_3$]+vegetation layer" 7 cm] to find out the vegetation effects according to neutralizing layer types of the acid drainage slope. There were no significant differences observed in soil hardness and soil moisture content of neutralizing layer type while highly difference of moisture content was observed according to the neutralizing and vegetation layer thickness. As for soil acidity, strong acid was shown in the control, treatment 1 and treatment 2. Neutralizing effects were outstanding in treatments of 3, 4, 5 (cement treatment group), 6, 7 and 8 (limestone treatment group). Concerning plants growth characteristics, surface coverage rates, number of germinating woody plants, plant height, and plant root status, there were excellent effects observed in the experimental groups mixed with cement (treatments 3, 4 and 5) and limestone (treatments 6, 7 and 8). At the initial stage, however, plant roots were negatively affected in cement layer treatments of 3, 4 and 5. However, no difference was shown in each layer thickness on the acid drainage slope whereas 3~5 cm thickness neutralizing layer was appropriate in consideration of economic feasibility.

A Study on Minimum Cabin Crew Requirements for Korean Low Cost Air Carriers

  • In recent 3 years, Korea's low-cost airlines have expanded their areas of passenger transportation not only to domestic market but also to Japan, China, Southeast Asia and US territory as a total of 6 companies (8 airlines including small air operation business carriers). Currently, three more airlines have filed for air transportation business certification as future low-cost carriers, and this expansion is expected to continue. To cope with the aggressive airline operations of domestic and foreign low-cost carriers and to enhance their competitiveness, each low-cost airline is taking a number of strategies for promoting cabin service. Therefore, the workload of the cabin crew is increased in proportion to the expansion, and the fatigue directly connected with the safety task performance is increased. It is stipulated in the Enforcement Regulations of the Korea Aviation Safety Act that at minimum, one cabin crew is required per 50 passenger seating capacity, and all low cost carriers are boarding only the minimum cabin crew. Sometimes it is impossible for them to sit in a floor level emergency exit for evacuation, which is the main task of the cabin crew, and this can cause confusion among evacuating passengers in the event of an emergency. In addition, if one of the minimum cabin crew becomes incapacitated due to an injury or the like, it will become a serious impediment in performing emergency evacuation duties. Even in the normal situation, since it will be violating the Act prescription on the minimum cabin crew complement, passengers will have to move to another available airline flights, encountering extreme inconvenience. Annex 6 to the Convention on International Civil Aviation specifies international standards for the determination of the minimum number of cabin crew shall be based only on the number of passenger seats or passengers on board for safe and expeditious emergency evacuation. Thereby in order to enhance the safety of the passengers and the crew on board, it is necessary to consider the cabin crew's fatigue that may occur in the various job characteristics (service, safety, security, first aid)and floor level emergency exit seating in calculating the minimum number of cabin crew. And it is also deemed necessary for the government's regulatory body to enhance the cabin safety for passengers and crew when determining the number of minimum cabin crew by reflecting the cabin crew's workload leading to their fatigue and unavailability to be seated in a floor level emergency exit on low cost carriers.

A Case Study on Improvement of Records Management Reference Table by Reorganizing BRM : The case of Reorganization of Seoul's BRM and Records Management Reference Table (BRM 정비를 통한 기록관리기준표 개선사례 서울시 BRM 및 기록관리기준표 정비사례를 중심으로)

  • Unlike other government agencies, the city of Seoul experienced a three-year gap between the establishment of a function classification system and the introduction of a business management system. As a result, the city has been unable to manage the current status of the function classification system, and this impeded the establishment of standards for records management. In September 2012, the Seoul Metropolitan Government integrated the department in charge of the standard sheet for record management with the department of function classification system into a new department: "Information Disclosure Policy Division." This new department is mainly responsible for record management and information disclosure, and taking this as an opportunity, the city government has pushed ahead with the maintenance project on BRM and Standards for Record Management (hereby "BRM maintenance project") over the past two years, from 2013 to 2014. The study was thus conducted to introduce the case for the improvement of standards for record management through the BRM maintenance project by mainly exploring the case of Seoul. During the BRM maintenance project, Seoul established a unique methodology to minimize the gap between the operation of a business management system and the burden of the person in charge of the BRM maintenance project. Furthermore, after the introduction of the business management system, the city government developed its own processes and applied the maintenance result to the system in close cooperation with the related departments, despite the lack of precedence on the maintenance of the classification system. In addition, training for the BRM managers of the department has taken place twice -before and after the maintenance-for the successful performance of the BRM maintenance project and the stable operation of the project in the future. During the period of maintenance, newsletters were distributed to all employees in an effort to induce their active participation and increase the importance of records management. To keep the performance of the maintenance project and to systematically manage BRM in the future, the city government has mapped out several plans for improvement: to apply the "BRM classification system of each purpose" to the service of the "Seoul Open Data Plaza"; to reinforce the function for task management in the business management system; and to develop the function of a records management system for the unit tasks. As such, the researchers hope that this study would serve as a helpful reference so that the organizations-which had planned to introduce BRM or to perform the maintenance project on classification system-experience fewer trials and errors.

Accuracy Analysis of Target Recognition according to EOC Conditions (Target Occlusion and Depression Angle) using MSTAR Data (MSTAR 자료를 이용한 EOC 조건(표적 폐색 및 촬영부각)에 따른 표적인식 정확도 분석)

  • Automatic Target Recognition (ATR) using Synthetic Aperture Radar (SAR) has been attracted attention in the fields of surveillance, reconnaissance, and national security due to its advantage of all-weather and day-and-night imaging capabilities. However, there have been some difficulties in automatically identifying targets in real situation due to various observational and environmental conditions. In this paper, ATR problems in Extended Operating Conditions (EOC) were investigated. In particular, we considered partial occlusions of the target (10% to 50%) and differences in the depression angle between training ($17^{\circ}$) and test data ($30^{\circ}$ and $45^{\circ}$). To simulate various occlusion conditions, SARBake algorithm was applied to Moving and Stationary Target Acquisition and Recognition (MSTAR) images. The ATR accuracies were evaluated by using the template matching and Adaboost algorithms. Experimental results on the depression angle showed that the target identification rate of the two algorithms decreased by more than 30% from the depression angle of $45^{\circ}$ to $30^{\circ}$. The accuracy of template matching was about 75.88% while Adaboost showed better results with an accuracy of about 86.80%. In the case of partial occlusion, the accuracy of template matching decreased significantly even in the slight occlusion (from 95.77% under no occlusion to 52.69% under 10% occlusion). The Adaboost algorithm showed better performance with an accuracy of 85.16% in no occlusion condition and 68.48% in 10% occlusion condition. Even in the 50% occlusion condition, the Adaboost provided an accuracy of 52.48%, which was much higher than the template matching (less than 30% under 50% occlusion).

First Observational Finding of Submesoscale Intrathermocline Eddy in the East Sea using Underwater Glider (수중글라이더를 활용한 동해 아중규모 중층성 소용돌이 발견)

  • Zonal hydrographic section measurements at $39.7^{\circ}N$ were conducted between $129.0^{\circ}E$ and $131.3^{\circ}E$ from August 7 to 25 in 2017 using an underwater glider. The glider traveled about 440 km for about 18 days along the 106 line of the regular shipboard measurements in the National Institute of Fishery Science (NIFS) and obtained twice a hydrographic section with high horizontal resolution. Even under the strong East Korea Warm Current with maximum speed of 0.8 m/s across the section, the glider successfully maintained the designated path within an RMS distance of 400 m. By comparing with the NIFS shipboard hydrographic section, it is confirmed that high spatial resolution measurements obtained from a glider were necessary to properly observe front and eddy variability in the East Sea where a typical spatial scale is smaller than the open oceans. From the glider section measurements, a new lens-shaped eddy was found in the thermocline. The lens-shaped anticyclonic eddy had 10~13 km in horizonal width and about 200 m in height like a typical submesoscale eddy resided within the thermocline, which was firstly named as Korea intrathermocline eddy (Keddy). The Keddy has the distinguishing characteristics of a typical intrathermocline eddy, such as a central core with anomalously weak stratification, a convex shaped lens bounded by the stratification anomaly, an interior maximum of velocity at 170 m, no surface appearance of the geopotential field, a small or comparable horizontal width relative to the first baroclinic Rossby radius of deformation, and the Rossby nubmer of 0.7.

A Study on the Formation of an Archive Book Based on Its Placeness : Focusing on the Archive Book, "Home of Roh Moo-Hyun" (장소성에 기반한 기록집(記錄集) 구성에 관한 연구 『노무현 대통령의 지붕 낮은 집(2019)』을 중심으로)

  • Given that the concept of reproducing landscape is similar to that of recording historical sights, places can become special space where memories are archived through meaningful activities. Therefore, place and landscape are the important concepts for understanding the Home of Roh Moo-hyun. This research was initiated when Roh Moo-hyun Foundation's decided to return the Home of Roh Moo-hyun to the public. A research report was published as the first result of this initiative. Then an archive book was recently published based on the first research report. The research report was about philosophical and aesthetic meanings and contents, the layers of accumulated memories, the records based on the accumulated memories, and the attributes of the place, and the possibility of archiving, whereas the purpose of the archive book is to restore and to curate the original meaning of the Home of Roh Moo hyun through cultural events. There are 'three memories' of layers in the Home of Roh Moo-hyun. The first memory is about 'life and dreams' that President Roh Moo-hyun dreamed about after his retirement to the hometown. The second memory is about 'the loss of time' for 10 years of time after the decrease of the President Roh Moo-hyun. The third memory is 'the memory of citizens', which started with the public opening of the Home of Roh Moo-hyun. 'Low Roof House of President Roh Moo-hyun' is the archive book that comprises the three memories which are accumulated in the home of Roh Moo-hyun and 'record language' full of meanings.

Changes in fundamental frequency depending on language, context, and language proficiency for bilinguals (한국어-영어 이중언어 화자의 사용 언어, 문맥, 언어 능숙도에 따른 기본 주파수 변화)

  • The purpose of this study is to determine whether the mean fundamental frequency (F0) changes depending on language, task, or language proficiency for Korean-English bilinguals. A total of forty-eight Korean-English speakers (28 balanced bilinguals and 20 Korean dominant bilinguals) participated in the study. Participants were asked to read aloud two types of tasks in English and Korean. For statistical analyses, the language ${\times}$ task two-way repeated ANOVAs were conducted within the balanced bilingual group first, and then group ${\times}$ language two-way mixed ANOVAs. The results showed that the females in both bilingual groups changed their mean F0 depending on the language they used and the tasks (p<.05), whereas no significant results were found in the males in either group under any conditions. The mean fundamental frequency in the Korean reading task was significantly higher than that in the English reading task for females in both balanced and Korean dominant bilingual groups. Thus, changes in mean F0 depending on language and context may reflect gender-specific characteristics, and females seem to be more sensitive to the socio-cultural standards that are imposed on them.

Occurrence and eradication of Plum pox virus on Ornamentals in Korea, 2016-2017 (2016-2017년 국내 핵과류에서의 자두곰보병 발생 및 방제)

  • Plum pox virus (PPV) is a significant viral disease in Prunus spp. worldwide. A nationwide survey was started in Prunus spp. orchards, since PPV was first detected from peach in Korea, 2015. During 2016-2017, samples were collected from 30,333 trees in 1,985 orchards of stone fruits in 8 provinces and 4 cities, Korea and tested by RT-PCR using specific PPV primer set. As a result, 21 trees including peach (9 trees), Japanese apricot (4 trees), plum (1 tree), apricot (7 trees) in 10 orchards were infected and controlled by eradication program. Amplicons of the expected size (547 bp) were obtained from total RNA of seven peach trees in 2016, and directly sequenced. BLAST analysis revealed the highest nucleotide (NT) identity (99%) with a PPV D isolates (LC331298, LT600782) in Genbank. The seven isolates from shared nt sequence identities of 98 to 100% with one another. Phylogenetic analysis showed the isolates in peach clustered closely with the PPV-D isolates from Korea, Japan, USA, and Canada. This is, to our knowledge, the first report of the presence of PPV in Prunus spp. orchards in Korea, 2016-2017, we hope that our results and efforts will contribute to effective measures for eradication of PPV.
