Two experiments were conducted to investigate the effect of betaine on egg production, lipid metabolism, and osmoregulation in 18-to 42-week-old ISA Brown laying hens. In experiment 1, three hundred and sixty one hens were fed a com-soy basal diet contailing 16% crude protein (CP), 2800 kcal/kg metabolizable energy (ME), 0.33% methionine, and 0, 300, 600, or 1200 mg betaine per kg diet. Egg production, egg weight, feed consumption, feed conversion, and egg quality were measured every eight weeks. Betaine concentration in live and egg were determined along with serum cholesterol, abdominal fat, total serum protein and albumin levels. In experiment 2, twenty thirty-three-week-old laying hens were fed the same diets as those used in experiment 1 in individual cages and the amount of feed and water consumption were measured for two weeks. At the end of experiment 2, all birds were killed to determine blood plasma and ileal osmopressure, arginine vasotocin (AVT), and liver moisture content. In experiment 1, egg production between the treatments during the first eight weeks were not different, whereas the significant increment of egg production were noticed in the birds fed more than 600 ppm betaine after reaching the peak egg production stage (p<0.05). The egg weight was reduced significantly by the betaine supplementation for the first 8 weeks (p<0.05). Feed conversion tended to improve by betaine supplement. Egg quality was not enhanced by betaine supplementation. Liver betaine level increased with betaine feeding compared to the control but betaine concentration in eggs decreased with betaine supplementation. Betaine supplementation elevated the level of serum total cholesterol and triglyeerides compared to the control. Abdominal fat content was increased by betaine supplementation, whereas liver fat content decreased. In experiment 2, water consumption significantly increased in hens fed diets containing 300 and 600 mg betaine/kg (p<0.05) and osmotic pressure of ileal digesta increased with betaine supplement. Liver moisture content was not affected by betaine, but AVT increased in hens fed betaine. The overal results suggested the possibility of using betaine as a feed additives in the laying hens beacuse of its positive contribution to improving egg production and other metabolic parameters related to lipid metabolism.

This study was conducted to investigate the effects of dietary quercetin on growth performance, blood biochemical parameters, immunoglobulin, and blood antioxidant activity in broiler chickens. Three hundred twenty one-day old Ross broilers were divided 8 treatments (C(-), basal diet; C(+), basal diet with antibiotics; vitamin E 20 IU; vitamin E 200 IU; quercetin 20 ppm; quercetin 200 ppm; methoxylated quercetin 20 ppm; methoxylated quercetin 200 ppm) with 4 replicates and 10 birds per replicate. Birds were reared for 35 days and their feed intake and weight gain were measured weekly. At 35d, eight birds of average weight from each replicate were selected for blood collection and analysis. Weight gain of birds in the groups fed quercetin was higher when compare to NC but there was no significant difference. In the serum, creatinine, BUN and AST in quercetin groups significantly decreased compared to those of control (NC and PC) (P<0.05). The contents of IgA and IgM were significantly lower in quercetin groups than those of NC (P<0.05). SOD like activity and MDA content tended to decrease in quercetin groups, however, there was no significant difference among treatments. In conclusion, supplemental quercetin to poultry diet could be positive aspect on performance and blood metabolites. Optimum adding levels was more than 20 ppm.
Two experiments were conducted to examine the effects of betaine intake on blood and yolk cholesterol, abdominal fat, liver fat, tissue triglyceride(TG) and liver HMG-CoA reductase In laying hens. In Expt. 1, a total of 72 ISA-brown laying hens were individually assigned into four treatments from 18 to 21 weeks old. Com-soybean meal based diet were fed with the addition of 0, 300, 600 and 1,200ppm. In Expt. 2, 72 ISA-brown laying hens were housed into individual cage to evaluate the effect of dietary betaine(0, 600ppm) and energy(ME, 2,800, 2,900kca/kg) from 70 to 74 weeks. Serum total cholesterol, LDL and HDL-cholesterol and TG concentration in blood of hens fed betaine tended to increase compared to those of the control, but were not significantly different. However, betaine supplementation showed a statistically significant decrease in yolk cholesterol(P<0.05). There was no significant difference in abdominal fat among the treatments. Liver fats and 7c of birds 130 betaine was decreased compared with control. Serum total cholesterol, LDL-cholesterol and triglyceride concentration were significantly inc.eased by ffeding a diet containing 600ppm betaine in Expt. 2(P<0.05), but were not influenced by the dietary energy levels. Yolk cholesterol, abdominal fat and HMG-CoA reductase activity were affected neither by dietary energy nor betaine level.

A feeding trial was conducted to determine whether dietary vitamin C (200 mg/kg) and vitamin E (250 mg/kg) prevent any drops in egg shell quality under heat stress in broiler breeder hens. One hundred and sixty molted Ross broiler breeders were housed randomly in an individual cage at 83 weeks of age. Four dietary treatments with forty hens and four replications per treatment were control (no additional vitamins). vitamin C-. or vitamin E-supplemented. and combined supplementation of the two vitamins. After a ten-day-adaptation period at 25 $^{\circ}C$. the ambient temperature was kept at 32 $^{\circ}C$ for a three-week-testing period. Egg production dropped dramatically over week but it did not show a significant change among treatments (P<0.05). However. egg weight. SG. shell thickness. SWUSA. puncture force and shell breaking strength of the birds fed the diet with the combined vitamins C and E were significantly improved than those fed the basal diet during the heat stress period (P<0.05). The hens fed the vitamin C supplemented diet showed a tibia breaking strength of 37.16 kg statistically higher than those of the basal and the vitamin E supplemented groups (P<0.05). The hens fed the basal diet showed higher serum corticosterone levels. a mean of 5.97 ng/ml. than those of the rest of treatments (P<0.05). The heat stress elevated heterophils but decreased lymphocytes in serum. and it changed H/L ratios of all the treatments. The increases in H/L ratios were alleviated in the bird by feeding vitamin C and/or vitamin E supplemented diets. but they did not differ significantly (P<0.05). In conclusion. vitamins C (200 mg/kg) and/or E (250 mg/kg) supplementation to diets could prevent drops in egg shell quality and tibia bone strength by alleviating stressful effects from high temperature in broiler breeder hens.

This experiment was conducted to investigate the influence of dietary supplementation of granite porphyry (GP) on growth performances and meat sensory quality in commercial broiler chicks. A total of four hundred-fifty 5-day-old male broiler chicks were divided into 15 pens and fed one of five experimental diets for 5 weeks; 0% GP with antibiotics (Control), 1% GP with or without antibiotics, and 2% GP with or without antibiotics. Final body weight and daily weight gain of all GP supplemented groups were slightly higher than those of control. Feed conversion rate was improved in GP 1 % supplemented groups, although there was no significant difference. Feeding antibiotics in addition to GP did not influence the growth parameters. Relative weights of liver and abdominal fat tended to be reduced in broiler chickens fed GP supplemented diets. Feeding of 2% GP diet resulted in a significant improvement in meat sensory quality in terms of taste and tenderness(P < 0.05), but the effect of the 1% GP on meat sensory quality was not significant. The results of this study indicate that GP could be used as a favorable feed additive for production of sensory-enhanced broiler meats.
To increase IgY in egg yolks, hens were fed a feed supplemented with kelp meal $4\%$ cinnamon $0.3\%$ and mint $2\%$ respectively, and immunized 5 times with Streptococcus mutans(S. mutans) at 2 week intervals. Groups fed experimental feeds without immunization showed higher laying rate than the control group, without supplementary feed and immunization. After the immunization, the laying rates had been decreasing due to the stress of immunization. The laying rate was recovered after the termination of immunization. Egg weight was not affected by the immunization but diets. Feed intake was dependent on the laying rate. Total IgY concentration in eggs laid from hens fed feeds containing supplementary feeds was higher than that of control. Especially, total IgY was increased up to $7.9\%$ in eggs laid from hens fed feeds supplemented with $4\%$ of kelp meal. Anti-S. mutans IgY was detected at 4 weeks after first immunization. Activity of anti-S. mutans IgY was sustained at 5 week after the final immunization. As the average concentration of specific IgY during the experimental period showed that eggs from hens fed the feed containing $4\%$ of kelp meal increased the specific IgY by $8.5\%$ kelp meal supplement improved specific IgY production by immunization.
This studs was conducted to investigate the effects of dietary carbohydrase (multi-enzyme: $\alpha$-galactosidase and mannanase) on egg quality and nutrient digestibility in laying hens. One hundred forty four, 47-wk-old, ISA Brown commercial layers were used in a 28-d feeding trial after a 7-d adjustment period. Dietary treatments were 1) CON(basal diet), 2) ME 0.1 (basal diet +0.1% multi -enzyme), 3) ME 0.2 (basal diet + 0.2% multi-enzyme). Fer overall Period, hen-day egg Production, egg weight, egg shell breaking strength and egg shell thickness were not influenced by the multi-enzyme. As the adding levels of multi-enzyme increased in the diet, egg Yolk color and egg Yolk index tended to increase with significant differences. Digestibility of DM was not affected by multi-enzyme. However, digestibility of N increased significantly as the concentration of multi-enzyme in the diet was increased. In conclusion, supplemental carbohydrase in laying hen diets nay have some roles in improving the egg Yolk color and N digestibility.
산패된 미강을 닭과 돼지에게 급여하여 사육시킨후 도축한 고기에서 저장중 색깔과 지방산화 변화를 구명하기 위하여 실시하였다. 사료배합 조성에서 탈지강을 첨가한 것을 대조구로 하여 신선한 미강(유리지방산함량 8.2%)과 산패괸 미강(유리지방산함량 15.6%)을 돼지(삼원교잡종, Landrace $\times$Yorkshire$\times$Duroc)사료에 각각 20% 첨가하여 평균 종료체중 92kg이 될 때까지 56일간 사육하였으며, 닭(Avi-an 종) 사료에 각각 10%를 첨가하여 3주령부터 급여를 시작하명서 3주간 사육하였다.도축후 1$^{\circ}C$에서 24시간 후에 발골 및 세절하여 함기포장을 한 다음-2$0^{\circ}C$에서 3개월간 저장하였다. 산패된 미강급여구는 신선한 미강급여구에 비해 저장중 명도(L*)가 낮았고 적색도/황색도(a*/b*)는 높았다. 모든 급여구는 저장기간 동안 황색도(b*)는 증가하였고 적색도는 감소하였다. 저장 0일에 비해 3개월에 있어서 계육과 돈육의 적색강도 감소율을 보면 산패된 미강급여구가 66%와 67%로 미강급여구의 84%와 78%나 비급여구의 84%와 77%에 비해 유의적으로 낮게 나타나 가장 많이 변색되었다. 세절육의 냉동중 지방산화는 계육에서 더 많이 진행되었고 저장 1개월만에 급증하였다. 미강을 급여구가 신선한 미강급여구에 비해 산화억제력이 약했다. 따라서 닭과 돼지에 미강을 급여하면 탈지강 급여구에 비해 식육에서 지방산화를 더 많이 억제시키지만, 미강의 산패 정도가 식육의 산화에도 직접적으로 영향을 끼치는 것으로 나타났다.
This study was performed to investigate the development of smoked chicken using old laying hens. Seventy two-weeks-old, spent laying hens were fed commercial feed (control) supplemented with 100 IU ${\alpha}$-tocopherol plus 10% squid liver oil (treatment) for 15 days and slaughtered. Smoked chickens were manufactured with spent laying hens in this study, Moisture and crude ash contents in smoked chicken of treatments were higher (P<0.05) than those of control group due to the feeding 100 IU ${\alpha}$-tocopherol plus 10% squid liver oil. No differences were observed in fatty acid and amino acid composition between control and treatments. In sensory evaluation, the springiness of smoked chicken was evaluated optimum for 32% consumer. The elastic, blend, specific flavor and smell of the smoked chicken of the treatment were not different from those of the control. However, 46% of tested panel answered that the springiness was higher in the treated-group due to the feeding 100 IU ${\alpha}$-tocopherol plus 10% squid liver oil. These results indicated that smoked chickens would be developed with spent laying hen after feeding 100 IU ${\alpha}$-tocopherol plus 10% squid liver oil and sensory evaluation.

This study aimed to develop a high-productivity breed of Korean native Samgye chicken. We evaluated the production performance of six Korean native chicken combinations (KNC-SCYC, SCYD, SDYC, SDYD, SYYC, SYYD) and GSP-Hanhyup Korean native chickens, with Baeksemi chickens used as a control group. The performance test was conducted from hatching to 7 weeks of age on 756 chickens, and we measured survival rate, body weight, shank length, feed utility, and carcass yield. The overall survival rate was nearly 100% for all strains. However, body weight showed significant differences between strains at all ages (P<0.01), with Baeksemi weighing 863.8±76.9 g, GSP-Hanhyup weighing 804.7±72.5 g, and KNC-combinations weighing 543.0±61.8 g at 5 weeks of age. The duration needed to reach 850 g was estimated to be 34.5 days for Baeksemi, 37.5 days for GSP-Hanhyup, and 45.8-48.8 days for KNC-combinations. Carcass yield percentage was highest for KNC-SYYD combination at 63.3%, followed by Baeksemi at 60.4%, and GSP-Hanhyup at 56.1%. Shank length at 850 g body weight was 7.6 cm for KNC-SYYD combination, 7.8 cm for Baeksemi, and 8.0 cm for GSP-Hanhyup. The feed conversion ratio at 850 g body weight was 1.81 for Baeksemi, 2.17 for GSP-Hanhyup, and 2.27 for KNC-SCYC combination. Our results suggest that the KNC-SYYD combination and GSP-Hanhyup breed have the potential to be used in Samgye production due to their moderate growth performance, higher carcass yield, and shorter shank length, despite their lower growth productivity and feed efficiency when compared to Baeksemi.
