중국음식문화와 인삼

  • 인삼은 중국에서 두 가지로 분류하는데, 그 하나는 상당인삼이고, 다른 하나는 요동성인삼이다. 인삼은 대보원기작용으로 건강한 삶을 제공한다. 인삼은 오랜 역사를 가지고 있으며 질병을 치료하고 양생하는데 사용하여 왔다. 중국 전통풍습에 의하면 대한이 몸을 보하기 가장 좋은 절기인데 인삼을 주로 사용하였으며, 북방지역뿐 아니라 남방지역에도 많이 사용하여 왔다. 인삼제품복용방법은 여러 가지가 있는데, 인삼주, 인삼탕 외에 특색 있는 인삼요리 등 여러 가지 방식으로 중국음식문화와 함께 계승되어 왔으며, 이것은 중국인의 지혜를 나타내는 것이다.

A Study on the Ancient Israelite Food Culture (고대 이스라엘의 음식문화에 대한 고찰)

  • This study was conducted to examine how the Jewish nation, which disappeared in the history, has come to history again after 2000 years, considering the investigation of the Pentateuch from old testaments in the bible that might be recorded from B.C 1446 to 1406 about 3440 years ago. The foods in the era of the Pentateuch were classified by a strict rule which stipulated eatable clean foods and uneatable unclean foods. According to the Pentateuch, Israelites must not have blood, and the rule has still influenced them strongly. Sacrificial rites were classified into five categories: burnt offering, grain offering, peace offering, sin offering and guilt offering. The subdivisions of the seasons were Passover, Festival of Unleavened bread, Festival of First fruits, Festival of Harvest, Festival of Trumpets, Day of Atonement, Festival of Shelters; and those seasons were explained clearly by their meanings and even methods. Contrary to general food culture instructed by custom and tradition, the commandments transcribed the food cultures for the Food Sanitation Act in themselves long ago. Those commandments even remark the results brought to the observant and the disobedient stringently.

  • This study is designed to expand 'Q-Methodology' into the global marketing realm in attempt to find out how Canadian consumers will perceive Korean food. The ultimate aim of this thesis is to lay a basic foundation to globalize Korean food and heighten the potential and quality of Korean food. Korean food, well-known as slow diet, jumps on the bandwagon of the Korean Wave and spreads at a rapid pace. At this point, most Korean food becomes widespread under the influence of the boom of not just the Korean Wave but also the growing desire for health food. Hence, it is the most important to analyze consumers' types in order to learn how each individual nation perceives Korean Food. This can be used as the basic research and study to enhance the national competitiveness of Korean food. Q-methodology is adopted in this study to reveal the critical dimensions and characteristics of the target market and/or consumers for Korean Food using the Canadian respondents' subjective attributes. Three categories (pragmatic trend type, traditional culture seeking type, a beginner type) of Canadian consumer behavior regarding Korean Food are found and suggested in this study. The objective attributes of Korean food are not considered here, but the Canadian consumers' subjective behavioral attributes are.

  • This study was researched by practical method in a subjectivity study accessible in-depth, in sloughing off old habit of functional quantity analysis about food preference of an expressway resting place customer. The perception pattern come out in this study were divided into four types in Q-methodology. The result is as follows ; it is that divided '1[(N=7) : Cleanliness-selection Type], 2[(N=13) : Economy Type], 3[(N=9) : Selling-area Goodwill Type], 4[(N=10) : Self-satisfaction Type]'. Like this, it found that is very different type all over. Hereafter, this study is to ascertain acceptance behavior about reception type on food-preference of an expressway-resting-place-customer ; to offer a developmental suggestion about it.

"식료본초" 미용 식약(食藥)의 용법 분석(食疗本草 有关美容食药的用法分析)

  • 목표 : 미용은 요즘 현대인들에게 관심 받고 있는 분야 중 하나로서 본 논문은 이에 대한 동양 의학적 접근 방법을 토대로 미용에 효과적인 식약(食藥)을 분석하여 임상 연구를 위한 문헌적 근거를 제시하고자 한다. 방법 : "식료본초"의 미용에 관련한 음식 치료의 내용을 위주로 수집 및 정리하여 미용 식약(食藥)의 종류, 용법 및 작용 원리를 분석하고 설명하였다. 연구결과 : 미용 식약(食藥)은 내원, 미용 성질로 분류됨을 알 수 있고 용법은 상용되는 제형, 치료원칙 및 치법, 배합 제조 방식, 예방 및 치료 결합, 입약 부위 등으로 정리 및 분석하여 "식료본초"가 영양 성분과 외모 손상성 질병 치료에 대한 작용원리를 제시해 보았다. 결론 : 본 논문의 주요한 의미는 "식료본초"는 중국의 당(唐)나라 이전 시대의 음식요법의 큰 성과물이며, 중의미용 및 음식요법의 중요한 역할을 할 뿐만 아니라 향후 통계학적인 관점에서 미용 식약(食藥)의 용법과 특징 및 규율을 정리하여 임상에서 실제적인 도움을 줄 것으로 생각된다.

A Study on The Kinds and Characteristics of Fast Foods - By Highschool Students in Daejeon - (패스트푸드의 종류 및 특징에 대한 연구 - 대전지역 고등학생을 대상으로 -)

  • The purpose of this study was to distinguish which food is fast foods and to define the characteristics of fast foods. The 14 kind of foods(hamburger, pizza, fried chicken, raymyeon, hotdog, doughnut, fried fish cake, jajangmyeon udong, ice cream, dukbokki, spaghetti, sandwich, gimbab, and salad) and 5 characteristics of fast foods(takeout, franchise, fast serving, unhealthy, and cheap price foods) were selected based on the dictionary and previous research papers about fast foods for this study. A total of 306 male and female high school student in Daejeon area were participated. The data were gathered by questionnaire and analyzed by SPSS/WIN 18.0 program. The participants evaluated the fast foods as delicious and convenient foods but non-nutritious, i.e. high fat but vitamin deficient foods. Among the 14 foods examined, hamburger, pizza, and fried chicken were the foods which more than 90% of the participants acknowledged to fast foods. Dukbokki, spaghetti, sandwich, gimbab, and salad were the foods which less than 50% of the participant acknowledged to fast foods. Among the 5 characteristics of fast food examined, unhealthy foods showed the highest sensitivity, specificity, predictive value, and odds ratio(0.803, 0.712, 0.597, and 2.79, respectively), and cheap price showed the lowest values of those(0.565, 0.335, 0.242, and 0.85, respectively) for acknowledging foods to fast foods. As conclusion, hamburger, pizza, and fried chicken were the representative foods of fast foods. Fast foods are generally considered as fast served cheap price foods, but the participants did not think the fast foods as fast and cheap foods. The most distinguished characteristics of fast foods in the students' minds was unhealthy foods.

Dietary assessment according to intake of Korean soup and stew in Korean adults: Based on the 2011~2014 Korea National Health and Nutrition Examination Survey (한국 성인의 국물 음식류 섭취에 따른 식생활 평가 : 2011~2014 국민건강영양조사 자료를 이용하여)

  • Purpose: This study was conducted to conduct dietary assessment of Korean adults according to intake of Korean soup and stew. Methods: To accomplish this study, 20,926 adults aged 19 yr or higher who participated in the dietary intake survey (24 h recall method) were analyzed from the data of the 2011~2014 Korea National Health and Nutrition Examination Survey (KNHANES). The items included in the soup and stew were guk, tang, jjigae, jijimi, and jeongol. Results: Intakes of soup and stew of subjects were divided into quartiles; intake range by quartile was Q1: < 22.96 g, Q2: 22.96~98.75 g, Q3: 98.75~212.23 g, and Q4: $${\geq_-}212.24g$$. In the case of the Q4 group, male, married, employed, higher educated, and high income subjects showed increased intakes of soup and stew. In addition, sodium intake among nutrient intakes increased from 3,849.04 mg in Q1 group to 5,363.57 mg in Q4 group. Intakes of cereals/grains, potatoes/starches, legumes, seeds/nuts, vegetables, mushrooms, fruits, meat, fishes/shell fishes, milks/dairy products, oils/fats, and seasonings among all foods significantly increased from Q1 group to Q4 group. Lastly, in the multivariable regression analysis, male, higher age, married, eating breakfast, consumption of snacks, prepared meals from home/institution, average eating-out frequency per week, energy consumption, and sodium intake related parameters increased intake of Korean soup and stew. Conclusion: Excessive intake of sodium was related to high blood pressure and metabolic syndrome. Thus, there are needs to improve dietary guidelines and nutrition education for balanced intake of soup and stew.

A Segmentation Study of Temple Food for the Global Convergence - Focusing on Recognition and Preference - (글로벌 융복합을 위한 사찰음식 세분화 연구 - 인식과 선호도를 중심으로 -)

  • The purpose of this study is to investigate the recognition and preference for temple food between Korea and foreign national temple-stay participants. In order to achieve the research purpose, 220 research questionnaires were distributed to Korean and foreigners who have participated in a temple-stay. T-test and ANOVA analyses were performed for this study. The findings are summarized as follows. The highest recognition item for Korean temple food that the subjects perceived was 'I think Korean temple food is a medicinal food.'(4.31 points). In the value recognition score for Korean temple food, Asians(4.58 points) are relatively higher than Korean (4.23 points), North American (4.13 points) and European (3.94 points) participants. Participants in Asia appeared relatively higher than the others in the preference score on Korean temple food. The higher globalization strategy items of Korean temple food that the subjects perceived were 'Korean temple food needs a storytelling marketing'(3.94 points) and 'Korean temple food needs a modernization of cookware'(3.90 points).

The Historical Study of Chinese Food Culture (중국 식문화의 역사적 고찰)

  • China has not thousands years history and culture but more than 50 times huge territory compare to Korea. Moreover, China is a multiracial country which has 56 minority races including Han race. Today's food culture of China has been established based on historic, regional, and racial features. China is located adjacent to Korea and historically has had close relationship with Korea. Moreover, China and Korea have had interaction in politic, economic, and cultural respects. In this aspect, the food culture of China has had great influence to the food culture of Korea. Therefore, this study purposed to understand the food culture of China more deeply which has been passed over, through researching food culture based on Chinese foods in five thousands historic stream. As the result of researching Chinese food by times in terms of food culture, which has been well known by only cuisine, the food culture of China had been changed by rise and fall of several dynasties. In addition, food styles had divided the south and north by inflowing western food materials and deep relation to Buddhism, Confucianism, Taoism, and the principles of yin-yang.

  • In the Korean wave 3.0 age, it is needed to prepare how to globalize and hold Korean culture through development of various Korean wave culture contents from existing contents focused on media. The goal of this study is to establish the foundation for developing the various Korean wave culture contents as linking information about other culture contents as well as food culture by extending Korean culture contents service based on LOD. For this purpose, this study established and assorted the concept of food culture through the literature review and case study and analyzed the applicability of the services of food culture contents based on LOD. Futhermore, this study provides the basis on extension of Korean wave culture service and suggests the process of implementation of food culture LOD and service model.
