This study investigates the effects of restaurants' physical environments on customers' words of moth and return intention. Data was collected using a self-administered questionnaire from restaurants during summer of 2020 and received 627 useful responses. The data was analyzed using the hierarchical multiple regression. The results showed that restaurants' physical environments was statistically significant influencing factors on customers' positive word-of-mouth and return intention. Hygiene environmental variables did not moderated the relationship between restaurants' physical environments and customers' word-of-mouth whereas hygiene environmental variables did moderated the relationship between restaurants' physical environments and customers' return intention. The results of this study suggested that restaurant business owners need to maintain clean environment and to continuously educate employees to protect customers from COVID-19 spread.
This study aims to analyze importance and performance factors on the quality of food service event attributes in participants and organizers, so that it could provide helpful information to build up a detailed marketing strategy and present considerations for revisit increase and more efficient business results as well. Importance on food service event attributes scored a higher level than performance on the whole. Notably, in regard to the attributes of food service event, it was found that respondents put higher stress on vessel(4.10 points), natural seasoning(4.06 points), reservation service(4.04 points), parking service(3.95 points), customer level(3.85 points), organizer's service (3.84 points), polished atmosphere (3.83 points) and taste of food (3.83 points) than anything else. In terms of IPA analysis on food service event attributes, it was important to continuously maintain 'vessel', 'reservation service', customer level', 'sauce taste', 'recency', price', 'chefs fame', etc. Some items such as 'parking service', 'natural seasoning', 'polished atmosphere', 'taste of food', 'see off service', 'cleanliness' are in need of intensive care and operation.

As of 2022, dessert cafe trends are changing faster, customers' needs are becoming more demanding, and Koreans' consumption tendencies are changing rapidly, so this study investigates servicescape and customer engagement factors for dessert cafes through big data to identify servicescape and customer engagement factors.
The purpose of this study is to examine the structural relationships among restaurant service quality, customer value, customer satisfaction, and loyalty. Also, in the structural relationships, it intends to examine the mediating influence of customer value. In order to achieve the purpose of this study, consumers in their 20s and 30s who had the experience visiting to Korean style restaurants, fast food restaurants, pizza restaurants, and family restaurants in Daegu were surveyed through quota sampling. The survey was conducted for a month from May 20 to June 20, 2011, and total 459 copies of questionnaire were used for final analysis using IBM SPSS 19.0 and IBM AMOS 19.0. Analysis result showed that the restaurant service quality such as encounter service and food quality had a significant effect on customer value, customer satisfaction, and customer value on customer satisfaction and loyalty. In addition, it was found that the mediating role of customer value was significant in the influence of service encounter and food quality on customer satisfaction and loyalty.
The purpose of this study is to empirically determine the structural relationship between employee constructs such as internal service quality, employee satisfaction, and organization commitment and customer constructs such as perceived value, customer satisfaction, and loyalty to suggest an effective business strategy for restaurant business. To do this, the study consulted with the Korea Restaurant Association, the representative of Korean food service and got the intention of participating in the research from the Daegu branch. As a result, 51 restaurants registered in the Daegu branch who showed their intention to participate were selected as an initial sample. Also, other restaurants were introduced through snow-ball sampling method by the owners of restaurants who finished responding to the survey, and total 100 restaurants were examined. A survey was conducted to external customers who visited restaurants and internal customers working there. For final analysis, 741 questionnaires of internal customers and 970 questionnaires of external customers were used. The result of analysis showed that team-work & communication in internal service quality has a significant effect on employee satisfaction, employee satisfaction on organization commitment, and organization commitment on value perceived by customers. Also, perceived value has a significant effect on customer satisfaction and loyalty, and customer satisfaction on loyalty.

This study is preliminary founding start-ups of restaurant entrepreneurs to study the characteristics of management in order to provide useful information was studied. Survey period is from 2013 March 15 to August 31. This study aims to clear the relation between perceived risk and user's attitude and behavior toward a food service event. To accomplish this, theoretical reviews and empirical analysis were jointly carried out. For the empirical analysis, a survey was conducted from April 3 to April 6, and total 291 copies of the questionnaire were used for the statistical analysis, SPSS 15.0 and LISREL 8.30. The results of the test of the hypotheses can be summarized as follows: First, the analysis shows that there is significant difference between the perceived risk and attitude of a food service event user. The perceived risk of food service event users causes effect that is contradictory in attitude. As users' perceived risk is less, attitude improved. Second, the analysis of the relationship between user's attitude and behavior intention showed that user's attitude affected behavior intention. Therefore, under these circumstances, there should be more concern in solving perceived risk among food service event users and a special program for promoting satisfaction with an event. And food service event director should make more efforts in nutritive value, organic food, time saving, etc.
Purpose: The purposes of this study were to investigate eating behavior of university students through social commerce and to analyze factors affecting university students' attitude regarding social commerce. Methods: Questionnaires were distributed to 445 university students in Changwon, Korea from March 28 to April 28, 2013. A total of 339 questionnaires were used for the final analysis, which excluded improperly-completed questionnaires. Results: The major factor considered for eating behavior through social commerce was price (37.2%). Purchasing experiences of foodservice products according to types of foodservice were 64.9% for coffee shop, 59.3% for fast food restaurant, 53.4% for family restaurant, 46.0% for specialty restaurant, 35.7% for pizza restaurant, 35.4% for buffet, and 31.9% for bakery. Factors affecting satisfaction with social commerce for purchasing foodservice products were 'service quality of foodservice company', 'communication of social commerce', and 'discount rate of social commerce'. Factors affecting repurchasing intention of foodservice products through social commerce were 'service quality of foodservice company', 'site design of social commerce', and 'discount rate of social commerce'. Conclusion: In order to increase satisfaction with social commerce, 'service quality of foodservice company', 'communication of social commerce', and 'discount rate of social commerce' should be increased. And, to increase repurchasing intention of social commerce, 'service quality of foodservice company', 'site design of social commerce', and 'discount rate of social commerce' should be increased. In addition, two factors 'service quality of foodservice' and 'discount rate of social commerce' were found to have an effect on satisfaction and repurchasing intention of social commerce. For development of social commerce and foodservice industry, cooperative relationship between social commerce and foodservice industry is needed, and a reasonable price strategy should be established. The university students considered price as a major factor of eating behaviors and did not consider menu and taste as a major factor. From a longer perspective, such an eating behavior would have an effect on university students' dietary life and it would cause nutrition and health problems for university students. Thus, it implied that further studies from the perspectives of nutrition and health regarding eating behavior through social commerce service should be conducted.
This study examines life satisfaction of restaurant customers in Busan and their quality of life in order to verify the causal relationship of two variables. A survey was conducted from restaurant customers in Busan from on April 1st to April 30th, 2010 for an empirical analysis. Three hundred and sixteen questionnaires were selected as a valid sample for a demonstration analysis. The summary of this study is as follows: First, fife satisfaction have a positive influence on the quality of life such as personal growth, self acceptance, and independence. However, autonomy factor is rejected. Second, there is no difference in fife satisfaction by gender and education. Third, there is no difference in quality of fife by gender and education except for self acceptance factor.
The purpose of this study was to investigate the effect of social servicescape on customer satisfaction, customer trust, and customer loyalty. Data were collected from 311 adults who lived in Daegu where they had used Japanese restaurants. For data analysis, frequency analysis, factor analysis, regression analysis and multiple regression analysis were used. Through the factor analysis, the social servicescape of Japanese restaurant was identified as two components of human service and customer similarity. As a result of the multiple regression analysis, two components of social servicescape have positive effects on customer satisfaction and customer trust, and have a partial positive effect on customer loyalty. The results of regression analysis showed that customer satisfaction had a positive effect on customer trust and customer loyalty. In addition, customer trust has a positive effect on customer loyalty. The results of this study confirmed the influence of social servicescape on Japanese specialty restaurants and suggested practical and theoretical implications.
