살모넬라는 여러 가지 전염병 중의 하나이다. 살모넬라 오염을 막는 것이 제일 중요한 일이 된 적이 있었다. 과거에는 사료에서 살모넬라가 감염된다는 사실을 쉽게 공개하기가 어려웠으나 다행히도 이제는 문제 해결을 위해 다양하게 다루어도 된다는 것이 살모넬라 감염원인을 밝히는데 큰 도움이 된다. 살모넬라는 주위의 조건이 적당하면 빠른 속도로 증식이 가능한 세균이다. 살모넬라 감염을 해결하는데는 사료의 출처를 조사해야 한다는 것이 확인이 되었고 처리방법에는 비용이 적게드는 열처리방법이 사용되고 있다.
육계농장에서는 SE(Salmonella Enteritidis)감염도 있지만, 오히려 SE이외의 여러 가지 요인에 의한 혈청형 살모넬라에 오염되는 경우가 많다. 현재 육계농장에서는 계군을 살모넬라로부터 완전히 차단하는 것은 어렵다고 생각하고 있고, WHO에서도 살모넬라 오염을 가능한 한 감소시키는 쪽으로 살모넬라 대책의 지침으로 정하고 있다. 그러나, SE 및 ST(Salmonella Typhimurium)등 사람에게 병원성을 나타내는 혈청형에 의한 계군의 살모넬라 감염오염은 공중위생의 견지에서 완전히 제거하지 않으면 안되다. 여기에서 출하 및 수송시의 대책, 사료의 살모넬라 오염의 중요성 등 산란계와는 다른 점을 지적하면서 기하고자 한다. 일상의 위생관리에 관한 양계장에서의 대책과 살모넬라 검사법에 대하여는 제외하였다.
${\blacksquare}$ 살모넬라는 사람에서 전세계적으로 식품기원 질병의 주 원인으로 현저한 이환율, 치사율 및 경제적 손실의 원인이다. 모든 나라에서 계란과 가금육은 사람의 식품 기원 살모넬라 증의 주 공급원이다. ${\blacksquare}$ 가금 집단의 살모넬라 오염은 가금 육과 계란에 살모넬라가 출현하는 위험 인자 중의 하나로 본다. 동물들은 오염된 사료, 음수 및 환경으로부터 전염될 수 있다. 어린 동물과 소화 스트레스, 생산스트레스 또는 질병에 걸린 동물에서는 살모넬라 감염 감수성이 높다. 동물들은 다른 살모넬라-감염 동물들로부터 한편 직접 오염된다. ${\blacksquare}$ 살모넬라는 사료로 부터 사료를 섭취하는 동물로, 그리고 그 사료를 섭취한 동물에서 유래한 식품으로 전파한다는 증명이 있다. 유박과 어분 유래 단백질들은 EU 사료공장들과 배합사료 산업에 살모넬라 오염을 도입하는 주 위험 사료 원료들이다. 살모넬라 통제 프로그램은 가능한 추출 및 정제 공장들에서 초기 단계 부터 시작하는 것이 중요하다. ${\blacksquare}$ 살모넬라의 미 오염 보증을 위하여 가금사료 사슬의 여러 결정적 단계에서 실시하는 미생물학적 확인 방법의 확립이 매우 중요하다. ${\blacksquare}$ 전반적 가금사료 사슬에서 살모넬라의 효과적 통제를 위하여, 케민 농업식품은 모든 필요한 지원을 포함한 소비자를 생각하여 고안된 완전한 식품 안전성 문제해결 신계획 (FS$i$) 프로그램을 제공한다. 케민의 식품 안전성 문제해결 계획 (FS$i$) 프로그램은 추출과 정제를 포함한 사료 원재료 생산, 사료 공장, 완성된 사료, 음수, 동물 집단, 저장 시설들, 농장들, 수송 방법 빛 환경에서의 살모넬라 통제 방법을 포함한다.
최근 오리농장에서 살모넬라 발생이 늘어나고 있다. 살모넬라는 사육장 내 전염이 잘되어 국내에서 발생되고 있는 주요 오리질병 중 하나이다. 특히 살모넬라 혈청형은 사람에게 식중독을 유발할 수 있으므로 오리 사육단계에서 감염을 차단할 수 있어야 한다. 조류질병 전문가 건국대학교 수의과대학 송창선교수를 만나 살모넬라와 하절기 오리농장 방역 중점사항에 대해 들어보았다.

Effects of dietary killed salmonella and vancomycin on the performance and immune response was investigated in broiler chicks inoculated with Salmonella typhimurium. During 3 week(27 d) of age, experimental diet did not affect daily gain, feed intake and feed efficiency. Dietary killed salmonella and vancomycin decreased MnSOD activity. At 7day after Salmonella typhimurium inoculation, dietary killed salmonella and vancomycin increased, daily gain and feed efficiency of broiler chicks. At 7 and 15 day after salmonella inoculation, dietary killed salmonella and vancomycin decreased erythrocyte peroxidase activity, but elevated proliferation of PBMC stimulated with LPS and supernatant IL-1 level secreted by the PBMC. The results suggested that dietary killed salmonella and vancomycin improved the performance of broiler chicks due to modulate antioxidant system and innate immune response of broiler chicks innoculated with Salmonella typhimurium.

Effects of dietary lactose or killed Salmonella on the performance, immune response and anti-oxidant system was studied in chicks innoculated with Salmonella typhimurium. In 27 days of age broiler, dietary lactose decreased performance, while dietary lactose and killed Salmonella elevated plasma peroxidase activity and IL-1 level in supernatant of PBMC stimulated with LPS. When broiler chicks innoculated with Salmonella, performance, activities of erythrocyte MnSOD and plasma peroxidase were enhanced after 7 days of the innoculation. Dietary lactose and killed Salmonella increased activity of erythrocyte MnSOD, plasma peroxidase, proliferation of PBMC stimulated with LPS and IL-1 level in the supernatant after 15 days of the innoculation. The result indicated that dietary lactose and killed Salmonella have modulated innate immune response and antioxidant system in broiler chicks innoculated with Salmonella typhimurium.
Salmonella spp. is among the most important water-borne and food-borne pathogens and is one of the most common causes of human gastroenteritis and diarrheal diseases globally. In this study, Salmonella spp. isolated from food, environmental samples, and patients with food poisoning or diarrhea were investigated Salmonella serovars, antibiotic resistance using Vitek2, and genetic characteristics through pulsed-field gel electrophoresis (PFGE). Salmonella spp. of 339 strains, including 26 strains from food or environmental samples and 313 strains from patients, were isolated from Jeju Island of South Korea between 2020 and 2023. The monthly number of isolated Salmonella spp. gradually increased from March, with the highest number being in August. No significant differences in Salmonella spp. isolated from patients according to gender was observed. However, Salmonella spp. was most frequently isolated from people aged 70 years or older and least frequently isolated from those between ages 10 and 19 years. Salmonella spp. isolated from food or environmental samples were distributed among eight different serovars and the main serovars were identified in the order of S. Bareilly (26.9%), S. Rissen (23.1%), and S. Thompson (19.3%). Salmonella spp. isolated from patients were distributed among 27 different serovars and the main serovars were identified in the order of S. Bareilly (31.0%), S. Typhimurium (24.6%), and S. Enteritidis (11.5%). The main cause serovars of Salmonella spp. outbreaks are S. Bareilly, S. Enteritidis, S. Thompson. Antibiotic resistance tests indicated resistance to various antibiotics and some Salmonella spp. exhibited multidrug resistance. Salmonella spp. showed various genetic correlations among the 17 serovars. These results indicate that they can be used as basic data for epidemiological investigations by predicting the appearance of Salmonella spp. and providing a scientific basis.
Because some zoonotic Salmonella can be transmitted to human through poultry products, threatening human public health, Salmonella infections in poultry are increasingly worldwide subject to control measures and programs. Given the fact that there are numerous opportunities for Salmonella to gain entry to extensive, integrated poultry operations including the hatching, handling, feeding, and processing facilities, the whole supply chain of poultry meat should be an object of Salmonella control programs as well as biosecurity of poultry farms. This article reviews Salmonella food poisoning caused by poultry source and critical need to control Salmonella in poultry productions, and describes practical strategies.
In this study, the competitive polymerase chain reaction (cPCR) was used to develop a direct enumeration method of Salmonella spp. in pork meat. After comparing three DNA extraction methods, the modified guanidine thiocyanate-phenol-chloroform method was chosen for Salmonella DNA extraction in artificially inoculated pork meat. The previously reported 284-bp invA gene (Rahn et al. Mol. Cell. Probes 1992) was tested for specificity, and 57 Salmonella strains and 24 non-Salmonella strains were evaluated. All Salmonella strains tested were invA positive, and all non-Salmonella strains produced no false positive amplification products. The detection limit achieved was as low as 1,460 colony-forming units (cfu) per 0.1g of pork meat. For cPCR, the invA gene, which features a 82 bp-deletion, was cloned in the pGEM-4Z vector. A known amount of competitor DNA, which has the same primer binding sites, was co-amplified with Salmonella chromosomal DNA from the artificially inoculated pork meat. The cell-number determined by cPCR was approximately equal to the cfu from the most probable number (MPN) method. Finally, the whole procedure took only 5 hr.
