The purpose of this study was to investigate the perception and intake of Kimchi in middle school students in Gwangju area and analyzed the difference of Kimchi intake according to Kimchi perception level to provide basic data to help middle school students develop proper dietary behavior. The data were collected from middle school students in Gwangju area and 374 questionnaires were used for analysis. The main results of this study are as follows. First, the perception of Kimchi of middle school students was 4.10 for first grade and 3.92 for third grade, showed significant difference (p<0.001) between first grade and third grade. Second, the preference of Kimchi of middle school students by grade showed significant difference between first grade and third grade at 'Kimchi preference' (p<0.001) and 'Reasons for not eating Kimchi' (p<0.05) respectively. 81.7% in the first graders and 59.8% in the third graders, and the first graders more preferred Kimchi than the third graders. Third, the pattern of Kimchi intake of middle school students by grade showed significant difference between first grade and third grade at 'Frequency of Kimchi intake' (p<0.05) and 'Amount of Kimchi taken at one time' (p<0.05) respectively. Fourth, the education of Kimchi of middle school students by grade showed significant difference between first grade and third grade at 'My attitude toward Kimchi recommendation' (p<0.05), 'Necessity of Kimchi intake education' (p<0.05), 'Whether you think it is good food for Kimchi information' (p<0.001), 'Preferred method for the Kimchi education' (p<0.001) and 'Methods for increasing Kimchi intake' (p<0.05) respectively. Fifth, the preference of Kimchi of middle school students by the degree of Kimchi recognition showed significant difference at 'Kimchi preference' (p<0.001), 'Reasons for liking Kimchi' (p<0.05) and 'Reasons for disliking Kimchi' (p<0.05) respectively. The pattern of Kimchi intake of middle school students by the degree of Kimchi recognition showed significant difference at 'Frequency of Kimchi intake' (p<0.001) and 'Amount of Kimchi taken at one time'(p<0.05) respectively. The the education of Kimchi of middle school students by the degree of Kimchi recognition showed significant difference at 'My attitude toward Kimchi recommendation' (p<0.05), 'The experience of making Kimchi' (p<0.05), 'Necessity of Kimchi intake education' (p<0.001) and 'Whether you think it is good food for Kimchi information' (p<0.001) respectively.

The intake patterns and attitudes towards development of functional kimchi among middle and high school students in Busan area were studied. Nine hundred respondents, consisting of middle and high school students, were surveyed. A total of 833 completed copies of the questionnaire were used in this research. Respondents preferred kimchi due to its 'ot taste' (49.2%) and 'alty taste' (17.9%), but they did not like kimchi due to its 'our taste' (33.8%) and 'eotgal taste' (22.9%). Most students (64.3%) consumed kimchi at home, 68.1% of students ate kimchi more than twice a day, and 27.4% of students consumed 3~4 pieces (size of a piece: $3{\timess}4cm$) of kimchi per meal. Students showed a strong desire to develop kimchi with a good taste at school food services (65.1%). They also showed intentions to increase intake of kimchi if 'aste of kimchi' (80.6%), and 'ealth functionality of kimchi' (65.2%) are strengthened. Students wanted kimchi to contain the following fruits: pears (41.3%), apples (24.6%) and pineapples (10.3%). Finally, students showed a desire to develop kimchi that helps growth and development (59.5%), weight loss (40.4%), and learning ability improvement (32.8%). This study concludes that it is necessary to increase kimchi intake in school foodservices by developing new kimchi recipes that meet students' desires and by educating students about the health benefits of kimchi.
In this study we examined the relationships between an elementary schoolchild' cognition, attitude, and the frequency and amount of kimchi consumed. Referring to previous studies, we define cognition as being composed of benefit, identity, and globalization. We examined how each cognition affected attitude, and how attitude affected amount of kimchi consumed, on a scale of preference or non-preference. We confirmed that the 'identity' cognition and 'globalization' cognition of kimchi have a positive effect on 'favorable attitude'. The 'benefit' cognition did not have a significant effect on 'favorable attitude', but it did have a positive effect on 'identity' and 'globalization', which had a significant effect on 'favorable attitude'. We also confirmed that 'favorable attitude' has a positive effect on the 'frequency of kimchi intake' and 'amount of kimchi intake'. Given these results, it is necessary to develop and supply the educational contents that stimulate the identity and globalization of kimchi in order to improve children's intake of kimchi, emphasizing the benefits of consuming kimchi.

A survey on the children's thought for kimchi intake and practical amount of kimchi consumption were conduction in April of 1995 to get basic information needed for the development of special kimchi for the children. And the effects of nutritional guidance on consumming kimchi was also investigated. Total of 1100 students in 2nd, 4th, and 6th grade from public and private elementary school participated in this survey. The eighty three percent of student think they should eat kimchi mainly because kimchi is good for the health(48.0%) and kimchi is our traditional food(31.8%). However, only 26.5% of children consume more than 5 pieces($4{\times}5cm$) of kimchi per mela and 64.5% consume less than 1~2 pieces. This shows that children's opinion(p<0.001), preference(p<0.001) and actual consumption(p<0.001) for kimchi was found to be very significant. Thus the nutritional guidance is important as much as the development of children's kimchi. Children wanted kimchi which is sweet, mild hot and not too strong in flavor. Ingredients children wanted in kimchi were pear, apple, tangerine, carrot and onion. Children's most favorite foods cooked with kimchi were stir fried kimchi rice and kimchi stew. But children did not like kimchi hamberger, pizza topped with kimchi and rice cooked with bean sprout and kimchi.

This study was carried out to compare the differences in dietary habits, food consumption patterns, nutrient intakes, and serum lipid levels according to kimchi consumption in college students. The anthropometric and biochemical parameters of blood samples from the subjects were investigated, as well as a kimchi frequency questionnaire, 24-hour food recall and dietary habits. The subjects were divided into two groups according to their kimchi consumption level based on the quantitative kimchi frequency questionnaire-kimchi consumption under 50 g group and kimchi consumption over 50 g group. As kimchi consumption increased, consumption of white rice (p<0.05) and noodles increased, whereas the consumption of confections decreased. The kimchi consumption over 50 g group was more likely to eat balance meals (p<0.05), and consume fruits and vegetables (p<0.05) than the other group. On the other hand, the kimchi consumption under 50 g group was more likely to consume milk than the kimchi consumption over 50 g group. The energy and sodium (p<0.05) intakes in the kimchi consumption over 50 g group were higher compared to the kimchi consumption under 50 g group. Kimchi consumption was positively correlated with HDL-cholesterol and negatively correlated with body fat, BMI, and blood glucose level. In addition, kimchi consumption was positively correlated with cereals, meats, and vegetables intakes, and negatively correlated with milk and dairy product intakes. However, there was no significant difference between the two groups.
Purpose: The purpose of this study is to analyze nutrient intake and frequently consumed foods according to the intake frequency of Baechu (Chinese cabbage) kimchi by Korean adults. Methods: Data from analysis of 7,122 subjects aged 19~64 years from 2012, 2013 KNHANES were obtained from health behavior interviews and the 24-hour dietary recall method. Results: With the daily intake frequency of Baechu kimchi, subjects with two times a day were the highest proportion among total subjects. As Baechu kimchi intake frequency of breakfast, lunch, and dinner increased, the rate of skipping meals decreased significantly (p < 0.05). In addition, all food intake and daily nutrient intake increased significantly with increasing frequency of daily Baechu kimchi intake (Crude p for trend < 0.05, Adjusted p for trend < 0.05). With the frequently consumed foods by daily Baechu kimchi intake frequency in 2012 and 2013, among 509 foods top ranked foods were white rice, Baechu kimchi, beer, distilled alcoholic drink, milk, and pork. Conclusion: The results of this study could be used in the future to promote consumption of kimchi in the Korean population.

To investigate the dining habits in relation to Kimchi for the Koreans in Commonwealth of Independent States(CIS), a survey was conducted to 199 Koreans living in Moscow, Sahalin, Uzbekistan, and Kazakstan. Most of the respondents answered that thor keep the Korean food lifestyle, and especially the old age group and Koreans in Sahalin showed higher ratio for Korean food lifestyle. In the Kimchi preference and Kimchi consumption, 85.9% of the respondents like Kimchi because Kimchi is our traditional food and its taste is good, and 95% of them consumed Kimchi once or more everyday. In the kinds of Kimchi, 99% of the respondents had experiences in eating or seeing Chinese cabbage Kimchi, 91.5% cucumber Kimchi, 88.4% cabbage Kimchi, 82.4% white water Kimchi, 75.4% sikhae, respectively, while the frequencies of kakdugi, chonggak Kimchi, and leek Kimchi were relatively low. In connection with the utilization of Kimchi, many respondents answered that Kimchi is sometimes used in cooking of Kimchi cchigae or Kimchi bokkum. Most of Russians like Kimchi in spite of the hot taste and it shows the possibility that Kimchi can be spread throughout foreign countries.

The effects of aerobic exercises and/or supplementation of kimchi on changes of the body composition and plasma lipids of obese middle school girls were studied. Thirty eight girls, 28 obese girls and 10 normal weighed girls, were paricipated. Among obese girls, 8 were assigned to exercise group (FG) 12 were grouped as kimchi group (KG) , and 8 were asked to practice excercise and to take kimchi simultaneously(excercise kimchi group, EKG). Ten girls whose weight is normal asked to remain o their own diet during 6 weeks of experiment (control group, CG)/ EG practiced jogging and rope-jumping for 60 minutes four times a week and KG took 3 g of freeze-dried kimchi packed in a 500 mg capsule daily which is equivalent to 30 g of fresh kimchi, EKC, EG and KG showed beneficial effects on changes of the body composition and plasma lipids compared to those of CG, EG showed greater effect than KG in reducing body fat resulted decrease in BMI, fat mas,. abdominal fat, and triglyceride concentration and increase in HDL-cholesterol. KG seemed to have greater effect on lowering plasma cholesterol and LDL-cholesterol than EG/ But the greatest effects in terms of reduction in weight, BMI fat mass, abdominal fat, total cholesterol, LDL-cholesterol, triglyceride, and increase in HDL-cholesterol were observed from EKG. These results indicate that kimchi supplemenation while practicing excercise might improve the obese state by reducing body fat content as well as reducing plasma lipids.

This study was conducted to investigate the dishes and menu patterns consumed frequently for 1 year, using estimated record method with 30 housewives. The purpose of this study was to suggest the dishes and menu pattern for the basis data of the nutrition education program and menu development project. The results were following : cooked rice and kimchi had the highest number of frequencies. The dish group (classified by the cooking method) consumed in largest quantities per capita per meal is the rice group (146.5g). Most frequently consumed dish group were the rice (72.7%), kimchi (60.6%), beverages (33.6%), fruits and juice (26.2%), soup (25.1%), stew and casserole (25.1%) in the order. Some dishes in several dish groups had small number of frequencies. Thus they were not included in the frequently consumed dishes list although they are in the top list of their own dish group. The menu had traditional menu pattern based on cooked rice, Korean soup, and kimchi. Most frequently used menu patterns were rice+soup+kimchi, rice+noodle (or Mandu)+kimchi, rice+kimchi, rice+soup+kimchi+seasoned-vegetable in the order. These were very simple menu patterns with only 1~2 kinds of side dish. Therefore, it is necessary for middle-aged housewives to consume menu that the composition of main dish and side dish are adequate. This result can be used as basic data for nutrition education programs in middle-aged housewives.
In this study, Kimchi, soup and stew samples were collected from May to June, 2007, in the Jeonju area, and their salinity levels were analyzed. In addition, housewives were surveyed via questionnaire to assess food behaviors and consumption patterns. The average salinity of the Kimchi samples was $2.0{\pm}0.5%$. The average salinity of the soup/stew samples was $1.0{\pm}0.3%$ in the broth portion and $0.8{\pm}0.3%$ in the homogenized mixture of both broth and solids. The average salinity of all types of soup was $0.9{\pm}0.3%$, and that for stews was $1.1{\pm}0.3%;$ the average salinity of the stew was significantly higher than that of the soup (p<0.001). Beanpaste soup had a significantly higher average salinity $(1.0{\pm}0.3%)$ than clear soup $(0.8{\pm}0.3%)$ (p<0.05). The Food behavior scores of the respondents, with regard to sodium intake and salty taste preference, showed significant positive correlations to the salinity of the soup and stew samples (p<0.01). The consumption patterns of the Kimchi and soup/stews were also analyzed to determine whether there was a relationship to the saltiness of the food samples. The respondents were divided into two groups for each food category: Kimchi groups of below 2.0% salinity and above 2.1% salinity, soup/stew groups of below 0.8% salinity and above 0.9% salinity. The below 0.8% salinity soup/stew group used salt or soy sauce in meals significantly less frequently (p<0.01) than the above 0.9% salinity group. The lower salinity Kimchi and soup/stew groups gave significantly higher scores regarding answers that their Kimchi was 'bland' (p<0.05). The types of frequently consumed Kimchi were determined as Korean cabbage, Welsh, wild greens, radish, KKak Du Ki, and Yol Mu Kimchi. When compared to the above 2.1% salinity Kimchi group, the below 2.0% salinity Kimchi group gave higher scores regarding answers that they consumed 'more than half the broth in the bowel' and also gave significantly higher (p<0.01) scores in answering that they consumed only the solid ingredients, leaving the broth.
