Yield Response and light Utilization to Planting Density in Soybean Cultivars for Bean Sprouting and for Cooking with Rice (나물콩 및 밥밑콩 품종들의 재식밀도에 따른 광이용 수량반응)

  • Soybean cultivars for bean sprouting, and for cooking with rice are related closely with Korean dietary tradition, but their yields have been kept in low level. The yielding responses of Danyup, a cultivar for bean sprouting and Gumjung, a cultivar for cooking with rice were compared with Paldal as standard cultivar in planting density within 10 to 80 plants per ㎡. Yield of Paldal increased as planting density increased from 10 plants up to 80 plant/㎡. But, Danyup reached at threshold as planting density reached up to 40 plants/㎡. Gumjung did not have significant difference in yield within planting density. Danyup had the highest yield, 445 kg/l0a at 80 plants/㎡. The highest yield of Paldal was 406kg/10a at 40 plants /㎡ while Gumjung had 373kg/ l0a at 40 plants. The yield responses of cultivars were influenced by canopy structure and light utilization. Paldal had short and straight canopy with determinate growth habit responded well at the heavy density, and had 6.2 in critical LA!. But Gumjung, tall and dense canopy with indeterminate growth habit had limited utilization of light within canopy with 5.4 in critical LAI and high rate of lodging. Gumjung was concluded as a low yielding cultivar, since it did not have good response to increasing source size and sink number.

Agronomic Characteristics of Black Soybean Collections in Korea (수집재래 검정콩의 작물학적 특성)

  • The improvement of superior black soybeans could be accomplished through maintenance and use of black soybean collections. This experiment was carried out to select pure-line from the domestic black soybean genotypes, and survey some agronomic characteristics of the collections. Nine hundred and sixty five lines of black soybeans were collected in 197 locations on spring, 1991. Higher distribution was present in broad leaves, purple flower color and tawny pubescence color which were approximate to be 97, 90 and 98%, respectively. In pod color of black soybean collections, 60% was brown and 27% was light brown and 10% was dark brown. The 61 to 70 days were required for flowering in 61 % of the collections. Growing days of 51 % of black soybean collections ranged 121 to 130, and those of 37 % were over 131 days.

Effects of Acidification on Physical and Organoleptic Properties of Soybeans (산절임이 콩의 물리적, 관능적 특성에 미치는 영향)

  • Three varieties of soybean were acidified by soaking in two kinds of vinegar which were persimmon vinegar and brewed vinegar. Chemical properties of soaking solution and physical and organoleptic properties of soybean during soaking at room temperature for 8 days were studied. The soybeans were acidified in vinegar solution at room temperature for 8 days. The results showed that soybean weight was rapidly increased until first two days and then gradually increased thereafter. Increase in total acidity and sugar concentration and decrease in pH of vinegar solution were also measured during initial soaking stage. The changes in pH and acidity were more significant in brewed vinegar than those in persimmon vinegar, The L values of persimmon vinegar solution after soaking the soybean were relatively lower than that of brewed vinegar. The a values of the vinegar solution used for black beans were increased while that of the vinegar solution used for white beans were decreased, The flavor and texture of acidified bean in persimmon vinegar were more soft and less benny than those acidified in vinegar. However sourness of the acidified beans in persimmon vinegar was much softer higher to those values of brewed vinegar.

Quality Characteristics of Bread Prepared by the Addition of Black Soybean Powder (검정콩 분말첨가 식빵의 품질 특성)

  • The quality characteristics of the bread prepared with black soybean powder(BSP) were evaluated. Breads were prepared by the addition of 0, 5, 10, 15, and 20% of BSP to the basic formulation. The pH's of dough with BSP were ranged from 5.13 to 5.77 and that of the control was 5.43. The volume of dough, loaf volume and loaf volume index of the bread with 5%-BSP was the highest. The peak viscosity of the doughs with BSP (200~545 BU) measured by the Amylograph were lower than that of the control (1077 BU). Color $L^{*}$ value of the bread crust and crumb with BSP decreased, and color $a^{*}$ values of the bread crumb with BSP increased, but $a^{*}$ and $b^{*}$ values of the crust with BSP decreased. The hardness, cohesiveness, springiness, and gumminess increased as the concentration of BSP increased. Degree of retrogradations(2.60~4.07) of the bread with BSP was lower than that(6.00) of the control after 48 hrs. From the result of the sensory evaluation, the overall quality score of the bread with 5%-BSP, 4.37, was the highest among samples compared with.ith.ith.

Anti-Platelet Aggregating Effect of Solvent Extracts from Korean Soybean Varieties and Isoflavone Derivatives (품종별 국산콩 추출물 및 Isoflavone 유도체의 혈소판 응집억제작용)

  • Soybean (Glycine max L.) is an increasingly important food source and functional food. Platelet aggregation plays an important role in thrombogenesis and atherosclerosis. Here, we studied the anti-platelet aggregating effects of solvent extracts from Korean soybean varieties and isoflauone derivatives. Nine Korean soybean varieties were extracted by solvents (methanol and buthanol and their extracts was investigated for the inhibition against tile aggregation of washed rabbit platelets induced by collagen or thrombin. Maximal inhibition of buthanol extracts against platelet aggregation induced by collagen was $95\%$ in Black-kong and Jinpum - kong. The potency of their inhibition was in the following order : Black > Jinpum > Bokwang > Hwangkum > Pureun > Malli > Danbaek > Danyeob > Jangsu - kong. The Black - kong only seemed to produce the maximal inhibition against platelet aggregation induced by thrombin. Total isoflavone content measured was Jinpum-kong ($1347.8{\mu}g/g$) and Black-kong ($918.7{\mu}g/g$). Maximal inhibition of isoflavone derivatives against platelet aggregation induced by collagen was $97\%$ in genistein. The potency of their inhibition was in the following order: genistein>daidzein>genistin. The isoflavone derivatives did not affect the platelet aggregation induced by thrombin. However, Black-kong cortex seemed to Produce the optimal inhibition against platelet aggregation induced by collagen. These results suggest that Black-kong and Jinpum-kong may be a good source for antiplatelet agents, and their antiplatelet effect be related to tile content and the chemical structure with the number of -OH group and the attached glycoside in the isoflavone derivative.

Diversity in Lipid Contents and Fatty Acid Composition of Soybean Seeds Cultivated in Korea (국내 유통 콩의 지방함량 및 지방산 조성변이)

  • The 117 soybeans seeds were collected from the nine provinces of Korea, and protein and lipid contents, and fatty acid composition levels were evaluated to investigate their relationship. The 100-seed weights of the black soybeans were varied $27.7{\sim}33.1g$, while the 100-seed weight of yellow soybeans were varied $24.6{\sim}36.6g$. Protein and lipid content of the 117 soybean seeds was 38.3% and 17.8%, respectively Protein contents of the 59 black soybean seeds (38.6%) were significantly higher than those of the 58 yellow soybean seeds (37.9%). However, lipid contents of the black soybean seeds (17.6%) were lower than those of the yellow soybean seeds (18.1%). Linoleic and oleic acid composition levels of the 117 soybean seeds were 53.75% and 22.08%. Unsaturated fatty acid levels of soybean seeds showed a statistically significant variability among the nine provinces of Korea, however, the differences were not found in the linoleic (18:2) and oleic acid (18:1) levels. Therefore, it was considered that the significant variability of unsaturated fatty acid were mainly due to the variations of linolenic acid (18:3) level. The composition levels of linoleic, oleic, palmitic (16:0), and linolenic acid in the yellow soybean seeds were 53.43%, 22.73%, 12.23%, and 8.24%, while those of the black soybean seeds were 54.13%, 21.48%, 12.47%, and 8.31%. Obtained results suggested that fatty acid composition levels were varied and possibly influence by the phenotype of seed coat colors. Oleic acid, mono-saturated fatty acid, showed the most remarkable variability between yellow and black soybean seeds, and the composition levels were higher in the yellow soybean seeds. Relationship between unsaturated fatty acid levels and 100-seed weights in the yellow soybean seeds showed a negative correlation (r=-0.513, P<0.01), but no relationship $(r=0.154^{ns})$ was observed in the black soybean seeds.

Comparison of Effect of Various Types of Soybeans on Mutagenicity and Growth of Human Cancer Cell Lines (콩 종류별 항돌연변이 및 암세포 증식 억제 효과 비교)

  • This study compared the inhibitory effects of methanol extracts from yellow and black soybeans (black soybean, Seomoktae and Seoritae) on mutagenicity using the Ames test and growth of human cancer cells (AGS human gastric adenocarcinoma, HT-29 human colon cancer, Hep 3B hepatocellular carcinoma cells). In the Ames test system using Salmonella typhimurium TA100, aflatoxin $B_1$ ($AFB_1$)-induced mutagenicity was significantly inhibited by treatments with the methanol extracts from either yellow or black soybeans in a dose dependent manner (p<0.05). The methanol extracts from various black soybeans tended to have a greater inhibitory effect compared to those from yellow soybeans. As for N-methyl-N'-nitro-N-nitrosoguamidine (MNNG)-induced mutagenicity, the methanol extracts (5 mg/assay) from black soybean, Seomoktae and Seoritae showed 51%, 61% and 53% inhibitory rates, respectively, indicating that Seomoktae, a type of black soybean, had a stronger antimutagenic activity against mutagens (both $AFB_1$ and MNNG). Methanol extracts from black soybeans showed an inhibitory rate of greater than 50% on the growth of human cancer cells (AGS, HT-29 and Hep 3B) and the inhibition was more effective in the methanol extract from Seomoktae. Our results suggested that the methanol extracts from black soybeans showed stronger inhibitory effects on mutagenicity and growth of cancer cells than those from yellow soybean. It is concluded that intake of black soybean can be recommended for improving health.

Variation of Anthocyanin, and Isoflavone Contents in Korean Black Soybeans Grown at Different Latitudinal Locations (위도가 다른 재배지역에서 생육한 검정콩의 안토시아닌 및 이소플라본 함량 변이)

  • This experiment was conducted to investigate the variation of anthocyanin, and isoflavone contents in five cultivars and two lines of Korean domestic black soybeans grown at different latitudinal locations, a high latitude, Suwon ($37^{\circ}$16'N) and a low latitude, Milyang ($35^{\circ}$30'N). Delphinidin-3-glucoside (D3G) contents of anthocyanin in Geomjeongkong # 3 and Ilpumgeomjeongkong, cyanidin-3-glucoside (C3G) content in Milyang # 113, petunidin-3-glucoside (Pt3G) contents in Milyang # 113, and Ilpumgeomjeongkong, and total anthocyanins in Milyang # 113 were highest among the seven black soybean cultivars and lines. D3G, C3G, and total anthocyanins in Geomjeongkong # 3, C3G, and total anthocyanins in Ilpumgeomjeongkong grown at high latitude were higher compared to low latitude. Daidzein, glycitein, genistein, and total isoflavone contents in Geomjeongkong # 4 were highest among the seven cultivars and lines. Daidzein contents of isoflavone in Geomjeongkong # 3, Milyang # 112, and Milyang # 113 grown at high latitude were higher compared to low latitude. Glycitein contents in Geomjeongkong # 3, and # 4 grown at high latitude were higher compared to low latitude, while it in Milyang # 113 grown at low latitude was higher compared to high latitude. Genistein contents in most black soybeans except Milyang # 113, and total isoflavone contents in Geomjeongkong # 4 and Cheongjakong grown at low latitude were higher compared to high latitude. The variations of anthocyanin except Pt3G and isoflavone contents seemed to be affected by environmental conditions like different latitude than the genotype because they showed the significant interaction between cultivars and locations.

Changes of Anthocyanin Contents During Maturity Stages in Black Soybean (검정콩 성숙시기에 따른 안토시아닌 함량 변화)

  • This study was performed in order to determine the relationship between anthocyanin generation and seed coat pigmentation in black soybean. Soybean genotypes were analyzed the individual anthocyanin contents by UPLC, which were sampled at 5-day intervals from the 35th day after flowering. Ilpumgeomjeongkong had begun to accumulate anthocyanin on the seed coat previous 35 days after flowering, and in case Heugcheongkong was 30 days. The seed coat coloration in Ilpumgeomjeongkong run on till the 45th day after flowering, and that of Heugcheongkong was between 55 and 60days after flowering. Cyanidin-3-Glucoside (C3G) was formed the earliest and accumulated the greatest among three anthocyanin pigments existed in black soybean. So we could be concluded that C3G affected on seed coat pigmentation greatly than other pigments. The anthocyanin contents at maturity in Ilpumgeomjeongkong was 4.4 times higher than at beginning stage of anthocyanin formation, while those of Heugcheongkong was 2.5 times.

Physiological Effect of Korean Black Soybean Pigment (한국산 검정콩 색소의 생리활성효과)

  • Physiological effects of Korean black soybean pigment were investigated. Major anthocyanin pigments of Korean black soybean were extracted with 1% HCl for 24 hours at $4^{\circ}C$. Inhibitory effects of angiotensin converting enzyme ($IC_{50}$) were 0.22 mg/mL (Kumjungkong #1), 0.28 mg/mL (Ilpumkumjungkong) and 0.38 mg/mL (Milyang #95). Inhibitory effects xanthine oxidase ($IC_{50}$) were 0.118 mg/mL (Kumjungkong #1), 0.165 mg/mL (Ilpumkumjungkong) and 0.163 mg/mL (Milyang #95). The cPLA2 inhibitory effects ($IC_{50}$) were $19.7\;{\mu}g/mL$, $10.7\;{\mu}g/mL$ and $25.3\;{\mu}g/mL$. The cytotoxic effects of anthocyanins from Milyang #95 were 66.0% against human colon cell line (HT29), 58.2% against human liver cell line (HepG2) and 64.4% against mouse liver cell line (Hepa), respectively.
